- Oh, Hey, y'all, it's Jamie Deen.
0:01
I'm back here in mama's kitchen.
0:03
We've rounded the corner of Thanksgiving.
0:05
We're on the home stretch to Christmas.
0:07
My favorite time of the year,
0:09
college football playoff season.
0:11
Listen, this is a great recipe
0:13
and it is a wonderful idea for you
0:15
to have a Christmas morning menu already planned.
0:19
My mom used to do this
0:21
and she would have everything ready
0:22
just to pop into the oven in the morning,
0:24
on Christmas morning,
0:25
because it's a busy day.
0:27
So, I'm gonna share this with y'all today,
0:28
sausage, egg and potato breakfast casserole.
0:32
I've taken one pound of sausage
0:33
and I've already browned this off,
0:35
that's pretty boring to watch.
0:36
And then in the same skillet,
0:38
I'm gonna put in
0:41
my onions
0:44
and
0:46
our bell peppers.
0:49
I'm doing this right in
0:51
the renderings of the sausage that we have
0:53
because that's gonna give it a lot of really good flavor.
0:57
This is gonna cook for just a few minutes.
0:59
So, when I was young growing up,
1:00
my mom would always come up with something different
1:03
on Christmas mornings.
1:04
And I don't know what it was that she did.
1:06
It was a chicken breast wrap,
1:08
I wish she were here
1:09
and I could ask her.
1:10
One Christmas morning breakfast sticks out above all others
1:14
but this sausage, potato, egg casserole
1:16
is something that we've done many, many, many, many times
1:19
and my boys love it too.
1:21
This is a popular dish around my house.
1:23
And, really, one of the
1:24
neatest things about this,
1:26
it is a one skillet deal.
1:28
If you can get all these different flavors into one skillet,
1:32
it really helps with your cleanup in the kitchen.
1:35
So, Patrice has come in
1:36
and she's got all these dishes dirty with all of my things.
1:40
Thank you, Theresa.
1:41
So, you think,
1:42
well, he's worried about one pot
1:43
and he's got 17 different bowls on the counter.
1:46
Well, that's because Theresa is fantastic at what she does.
1:49
She calls me and says,
1:50
"Hey, Jamie, you wanna do some videos?"
1:51
And I'm like, "Sure."
1:53
And I just go get my three or four shirts together
1:55
and I show up
1:56
and she's got everything done
1:57
and I'm happy to be here.
1:59
So, this is gonna cook for about three minutes.
2:01
We're gonna let this cook down.
2:02
This is pretty boring.
2:03
So, why don't y'all freshen up your coffee
2:05
and we'll be back as soon as this gets done.
2:08
Okay, now you see,
2:09
this has been going for about three minutes.
2:10
Now, notice I'm using yellow, red peppers here.
2:14
I was gonna say, you could use yellow.
2:16
I like any color pepper other than green.
2:19
Do y'all think red and yellow and green peppers
2:21
taste different?
2:23
I think cilantro tastes like soap.
2:26
So, maybe I just have a weird mouth.
2:30
- [Theresa] I don't notice it.
2:30
Well, I think the yellow one and the red are sweeter.
2:33
- That's what I like.
2:34
So, I'm gonna take these out of this pan,
2:37
I'll put them down in the renderings.
2:38
Now, I'm still gonna be using this pan.
2:40
So, what we're gonna do now
2:42
is I'm gonna wipe this out.
2:46
I'm gonna get this out
2:48
because what we're gonna do now
2:51
is spray this.
2:52
You see, this is
2:54
what we're gonna make our breakfast casserole in.
3:00
Butter flavored nonstick spray, imagine that.
3:05
Okay, so we've got our sausage done,
3:07
our peppers and our onions are done.
3:09
So, now it's time to get into the meat
3:10
of what we're working with here today,
3:12
which is
3:15
eggs.
3:16
We have four eggs.
3:20
And we're gonna add to the eggs,
3:23
one cup of milk.
3:28
I'm gonna beat this up.
3:40
Don't wait till breakfast to have this.
3:42
We love to have breakfast for dinner around the house.
3:45
I love breakfast for dinner.
3:47
Now, to these eggs, we're going to stir in.
3:50
We've got a 15 ounce bag of hash browns.
3:55
We're gonna get our vegetables down in here.
4:03
We've got our pound of sausage
4:05
that we've cooked and drained.
4:11
And I have a cup of mozzarella
4:14
and a cup of cheddar.
4:17
We're gonna add half of these
4:19
and save the rest for the top.
4:25
And we're gonna mix all this together.
4:30
This is basically your grand slam breakfast
4:32
from The Waffle House, all in one skillet.
4:36
Make sure that we incorporate,
4:38
we get our eggs all the way through here.
4:39
This is gonna be a breakfast casserole.
4:41
It's almost like a souffle.
4:45
So, anything that's not coated with this egg,
4:47
isn't gonna bake up like we want it to.
4:56
It kind of looks like Christmas with the yellow in there.
4:58
- [Theresa] It does, it needs a little green.
5:02
- Now, into this,
5:03
we are going to add, after I get this turned up.
5:08
I think that's good.
5:09
We're going to add,
5:12
oh, you know what?
5:17
Sometimes it happens, y'all.
5:19
I missed something.
5:20
So, I'm gonna saute this garlic off
5:24
while I'm finishing up my bowl.
5:26
- [Theresa] It'll just make that pan even that much better.
5:29
- Just let that
5:31
cook a little bit to get that flavor in there.
5:33
We're gonna add a teaspoon
5:36
of chopped fresh chives.
5:49
And here is our green.
5:51
- [Theresa] There we go.
5:53
Now it looks Christmasy.
6:01
Any salt and pepper?
6:04
- Thank you, Theresa,
6:05
what would I do without you.
6:06
- [Theresa] Just checking.
6:09
- Now, to this, I don't know what the measurements are.
6:12
So, we've got our sausage in there.
6:13
So, it's gonna have,
6:15
it's gonna have a little salty flavor,
6:18
probably gonna go a big pinch
6:22
and a big pinch.
6:23
I haven't measured salt and pepper in a really long time
6:28
because I don't really use a lot of salt when I cook
6:31
unless I'm doing like a protein.
6:33
I did steaks last night
6:34
and I really like to get a good coat
6:36
with salt and pepper on the steaks.
6:39
My garlic is cooked up here.
6:46
I can smell it.
6:52
Now, we're gonna add our garlic.
6:57
Make sure I get this incorporated really good in here.
7:01
So, our pan that we've done our sausage,
7:04
our onions, our garlic
7:06
and our bell peppers in
7:08
is now ready to hold our casserole.
7:10
Don't forget to spray this.
7:12
You wanna be able to scoop this out easily when it's time.
7:20
Look at that, y'all, doesn't that look good?
7:24
So, we've got our oven set for 350.
7:26
This is gonna go in at 350
7:27
and probably after about 20 minutes,
7:29
I'm gonna give it a check.
7:32
Make sure I get all the goodness out of there.
7:34
Nice and even.
7:37
And then, let's coat it with the last of our cheese.
7:43
So, we've saved a little bit of our mozzarella.
7:47
- [Theresa] That looks fabulous.
7:48
- It's gonna be delicious.
7:49
- [Theresa] And it smells great.
7:51
- And our cheddar cheese.
7:55
See how easy that is, y'all?
7:57
So, this is our sausage, egg and potato breakfast casserole.
8:00
It's a one skillet wonder that's going in the oven at 350.
8:03
We'll check it out in about 20 minutes,
8:05
don't get hungry.
8:07
Ho
8:08
ho
8:09
ho,
8:10
breakfast casserole is ready.
8:12
Look at this, y'all,
8:14
love it.
8:15
This is set up perfect.
8:16
See how it pulls across?
8:18
Look at that.
8:19
All the egg and cheese,
8:20
this is cooked perfectly.
8:22
So, if you wanna cut this
8:24
and get you a pot cutter and scoop it up,
8:26
that's fine.
8:27
But, what I would recommend is you just take a spoon
8:31
and you just dish up what,
8:32
whoever you might be cooking for.
8:34
This would be for Davis.
8:37
This would be for Brooke.
8:40
This would be for Jack.
8:43
And then this would be for me and Matthew.
8:45
(both chuckle)
8:49
I know if y'all have seen me over here
8:51
cooking at mama's house,
8:52
you have seen me burn my mouth beyond repair several times
8:56
and I have not yet learned.
8:57
I'm just gonna go ahead
8:58
and get right in.
8:59
So, this is our sausage breakfast casserole
9:02
with eggs and cheese, fresh peppers.
9:07
- [Theresa] Let me let them see the gooeyness
9:08
while you burn your mouth up.
9:11
Yum.
9:14
- This is a really.
9:16
- [Theresa] Ooh, you can see the steam coming off of it.
9:19
- Really simple recipe.
9:20
It's perfect for Christmas morning or Christmas Eve
9:24
or any time you have company come over.
9:26
It's a one skillet wonder, y'all,
9:27
it's delicious.
9:29
I hope you enjoy it.
9:30
Don't eat it too fast out of the oven
9:31
you'll burn yourself.
9:32
Happy holidays, y'all.
9:33
Love one another.
