0:00
- Hey all, is Jamie Dean
0:01
and I'm in mama's kitchen.
0:03
And it's almost Thanksgiving.
0:05
So Thanksgiving is my favorite holiday
0:07
of the year by the way,
0:08
because Scottish football
0:10
and there's lots of family,
0:11
and there's lots of food.
0:12
I've got family all through the house today,
0:14
my great greats here, my cousin Carl is here.
0:17
Everybody's coming together
0:19
around the table this time of year,
0:21
especially here at momma's house.
0:22
It is so good, and one of the staples
0:24
that we have every year is a pumpkin pie.
0:27
So that's what we're gonna do for you today.
0:29
So if you don't have anything else to do,
0:35
and all your things that you need,
0:38
make yourself a pie dough.
0:40
Or you just go buy one from the freezer,
0:44
poke it and cook it, which is what I do.
0:47
But there are lots of beautiful ways
0:49
that you could dress up a pie.
0:50
If you wanna go pinch and fold,
0:52
and if you wanna make your own, please do.
0:54
We're so busy around here
0:56
I barely have time to go to the grocery store
0:58
to buy the frozen one,
1:00
to get my pie in the oven.
1:01
So that's what I've done today,
1:02
we've got our pie crust has been pre-baked off
1:05
and it's ready to go.
1:06
And here is the filling,
1:08
this is a really easy recipe.
1:11
I always say that, but for the most part,
1:13
our recipes that we do here are fairly easy
1:15
'cause everybody is busy.
1:17
We got eight-ounce package of cream cheese here
1:19
and I'm just gonna soften up
1:21
with my hand mixer a little bit
1:26
just to get it a little mix-ey.
1:34
Okay, just real quick lightly.
1:37
Into this we gonna add our pumpkin,
1:41
get me a good tool to work with here.
1:47
What we have here is two cups
1:49
of mashed canned pumpkin.
1:53
So we're gonna add our pumpkin
1:55
into our cream cheese.
1:59
This is good enough for me to eat just this way,
2:01
I love cream cheese and pumpkin.
2:03
We're gonna whip this together.
2:07
Okay y'all, I'm gonna turn this back down.
2:08
Now to this am gonna add our sugar,
2:11
this is 1 cup of granulated sugar.
2:26
We also gonna beat in
2:30
a little bit of salt.
2:31
This is about a good pinch,
2:35
a little bit of pepper got in there too.
2:37
That's about a quarter of a teaspoon of salt.
2:42
And we're also gonna mix in,
2:46
I got three eggs, one whole egg
2:49
and then two egg yolks.
2:51
Okay, so three yolks,
2:54
one whole egg, two egg yolks.
3:03
We're also gonna add one cup of half and half.
3:23
we have a quarter of a cup of melted butter.
3:32
I'm gon mix this up before we put our spices in.
3:39
All right, I've got all this stuff combined,
3:41
so let's add some of our flavors in here.
3:44
This is a half of a teaspoon of ground ginger.
3:53
This is, no I'm sorry,
3:54
that's a quarter of a teaspoon of ginger.
3:57
This is a half a teaspoon of our fresh cinnamon,
4:02
and then we're gonna add one teaspoon of vanilla.
4:14
one more time around the band with the mixer.
4:21
now we're gonna pour this carefully into,
4:26
how do I release this?
4:28
We're gon be be all right, let me do this
4:32
It can drip in there.
4:35
We're gonna pour this into our pie flan.
4:48
And I've got some filling left over,
4:50
you know what I might do?
4:51
Is take this extra that I have
4:54
and put it in a little muffin tin,
4:58
and do some little pumpkin muffins
5:02
Ooh, I just tasted that
5:03
and even though it's got raw eggs in it,
5:04
it is 1000% delicious.
5:08
I got my oven on 350,
5:10
this is gonna bake for about 50 minutes.
5:15
And soon I'm gonna be eating pumpkin pie,
5:21
All right Joe, our pie is out of the oven.
5:27
I had so much Pie filling leftover
5:30
that Theresa and I put an extra pie in the oven.
5:34
Extra pie, how awesome is that?
5:37
Now all we have to do
5:38
is wait patiently for this to cool.
5:41
Probably only about 15 or 20 minutes, I guess.
5:46
We just sit here and wait for this to cool.
5:51
and let's just see what's happening down in here,
5:53
I ain't waiting 15 minutes.
5:55
Maybe nobody won't notice. (giggles)
6:01
Oh, I'm gonna burn my face off again I can tell.
6:04
- [Theresa] Looks good. - [Jamie] I know it.
6:06
Should I try to cut a piece? - [Theresa] Nah.
6:09
- ohh all right, It is so hot y'all.
6:22
- [Theresa] And yet you go in again.
6:23
- [Jamie] Gosh, it's like a pumpkin fluff.
6:29
- [Theresa] Add some whipped cream?
6:31
- The half and half with a pumpkin,
6:35
I could probably almost cut this
6:37
but I'm gonna let it cool or just let me,
6:42
I hate to leave it looking so ugly.
6:50
Look and instead of making a cut
6:51
where only one piece was ugly,
6:53
I cut it where two pieces are gonna be ugly.
6:56
Not really thinking straight
6:57
when I got pumpkin on the brain
7:03
well - [Theresa] We do recommend
7:04
that you let it cool.
7:05
- [Jamie] You are gonna have to let this cool.
7:10
But when you're cooking food in the house,
7:12
I always say, if you ain't selling it, who cares?
7:15
This pie is fantastic.
7:17
Although I did cut it too soon,
7:20
You'll be thankful that you have this pumpkin pie
7:22
at your table this Thanksgiving.
7:24
Appreciate y'all tuning in,
7:26
I'll see you all around the kitchen.
