Y'all know at our house, Teresa's house, everybody's house in my family, it's not Christmas dinner until there's a squash casserole put on the table
0:15
And Sandy, my sister-in-law and I were talking yesterday. She said, I've got to get somebody a gift
0:22
And I said, well, honey, I got the perfect gift. She said, well, tell me, what is it
0:26
I said, a subscription to my magazine. It's like $16.99 for a year
0:33
It's the gift that keeps on giving. And Sadie said, well, I'm going to order it tomorrow
0:41
But think about it now. She'll have something to look forward to
0:48
I am proud of this little magazine. I truly am. and when I'm doing
0:55
fundraisers or trying to help out different groups you know we'll have we'll put little stories in here
1:03
this month I must not have helped anybody because it's not in there
1:07
that's an actual SIP so this is of all casseroles interesting but the casseroles the squash casseroles that I'm going to make today
1:19
is actually in the magazine. This is this issue. It's coming. It's out on the stands right now
1:26
It's way until February. So we're going to make a pimento cheese squash casserole
1:34
There's a lot of different ways to cook squash and I've never cooked it this way
1:38
until today for y'all. Well, actually the first time I ever made it
1:42
I had made it for the magazine. So, but this will be the first time
1:47
I've ever made it to share with y'all. So that's what it's going to look like when we get through
1:52
So I love the idea of it going into a cast iron
1:58
So that's what I'm going to do for us today. So how much squash am I starting with
2:03
Ten cups. Ten cups of yellow squash. And Teresa prepped this for us
2:09
God bless Teresa. And she does it on a mandolin. And squash is so much better on a mandolin, y'all
2:18
so much better. So we're going to put this. Let me see if I can do this without sending it everywhere
2:29
All right, so we're going to put our squash, our onions. She got this all so neat
2:41
And squash has Splosh has a lot of water in it y So I just gonna start off with like a cup
2:52
I may have to put a little bit more. And a teaspoon of salt
3:00
And I'm just gonna turn that on and we're gonna cook it, you know, until it's nice and soft
3:07
We don't want to, I don't know, It just depends on how you like yours
3:12
I like my squash cooked. Get back in there, you ain't getting away
3:20
I like mine cooked soft. But we tell you here in the magazine, our hint there is, you know, not to overcook it
3:30
So you can actually see your slices of squash. But you can do it any way you want to, however you like it
3:37
But this is going to be delicious. So we're just going to cook this for a few minutes
3:42
And then we're going to turn this stuff into squash macaroni and cheese
3:46
Femina cheese. Not macaroni and cheese. Femina cheese. Okay, y'all. Our squash is ready
3:52
But it's very important that you drain this well. And this kind of colander right here, it just doesn't have enough holes in it, you know, to drain it good
4:04
So I'll put it in like a strainer. You know, just mash it and get as much of that water out as I can
4:14
Because, you know, I told you from the beginning, squash is just pure water
4:21
Okay, our squash is really nice. You can just held together enough that you can tell it's squash
4:29
All right, so I'm going to add a cup of sour cream
4:37
Is that a half a cup of mayonnaise? I can't remember. Those are all like two-thirds of a cup
4:43
A sour cream, two-thirds of a cup of mayonnaise. Okay, good. Thank you
4:54
Our salt. Our pimenta. Just want to make sure
5:04
You know what? No, I'm not. I think I saw Teresa doing this. I did it several times, but you know, they're like squash
5:11
I know. A lot of water. See that? Look at that. A bunch came far and out
5:28
I have found that in order to really get the juice out of things that contain a lot of water it just with my hands Paula the only thing I didn put out was some pepper
5:39
so that would be the only thing you might have had. Okay. I want to stir that egg into that sour
5:47
cream and mayonnaise, because I don't want it to get on that hot squash and turn to scramble
5:56
Okay, now we go. It's safe now. All right, a black pepper
6:11
About a half a teaspoon that was. And then like a cup and a half or a cup inside the squash
6:21
and then some on top. Ooh, doggies. This looks good. Real good
6:41
Now I just sprayed my black skillet, so it's ready. In we go
6:56
I love any kind of casserole dish that I can cook in a caster and skillet
7:03
We're gonna bake this for about 25 minutes. It's not gonna take long
7:07
because remember that squash just came off the stove, so it's good and hot
7:12
All right, next thing I'm gonna do is our cracker crumbs. And you'll wanna use a nice buttery cracker
7:21
And you'll want to melt your butter. I'm going to melt this little butter
7:31
maybe a fourth of a a fourth of a stick I'm going to melt that
7:41
and then I'm going to grab our cracker crumbs and to me
7:48
do we have the cracker crumbs in there? you think they're right next to your salt
7:53
Oh, they burned in a bowl. Sorry about that. Thank you. Now to me, in order to get that crust
8:03
just right on casseroles, I don't put just the cracker crumbs on there
8:08
and then try to dot it with butter. No I got to see that everybody gets a little drink A little drink of butter Because it really does make a difference
8:23
Okay, that took but a second to melt that butter. Did it come off with just one sleeve of..
8:33
It says a third of a cup, but I know you. You know, to me, this is just white top, so..
8:41
any kind of vegetable casserole, this is what just takes it to the dance
8:52
Okay, so we got our nice buttery cracker crumbs, and I'm just gonna sprinkle that around on top
9:05
Sometimes I'll I'll wait till the last five or 10 minutes of cooking the casserole
9:14
and then I'll put the crumbs on it because I don't want them to get too dark
9:21
That's it. That's it, kitties. Pimenta and cheese squash casserole
9:32
Yum. Y'all, that's our squash casserole. Our pimenta cheese squash casserole. Ooh
9:45
Ooh, that's my hot oven. Ooh, doesn't that look delicious? You know, Teresa, I like my hot food hot, my cold food cold
9:57
And I know you don't. I'm a diet. It doesn't matter if you burn the upper
10:03
It's just delicious, y'all. Truly is
10:12
Yeah, I wish I didn't use two packs of those crackers. I wish I had used all two of them now
10:21
because that just, that's what takes it to the house. You know, it's those buttery crackers. Mm
10:30
So easy. Y'all make sure y'all try this one and let me know, okay
