12 days of Christmas cookies, y'all
0:04
I called and y'all answered. I just love, love, love seeing all my friends out there
0:13
what their favorite Christmas cookie is. And I got the sweetest letter from Ann Elson
0:22
And Ann is from Ohio. And she said, Paula, first off, I just want to say
0:28
I absolutely adore you. as did my mother that passed away in 2008 when I was only 33 years old
0:36
And that is so young. And I was 23 when I lost my mother
0:42
And I don't care how old you are. It's just hard to say goodbye to your mother and your father
0:48
So in 2007, I went to visit my brother in Jacksonville. Then we went to Savannah for the weekend
0:54
And Mom was not able to join them. So we went to your brother's restaurant, Uncle Bubba's
0:59
and I got your fried chicken. I took some of it back to the condo
1:04
froze it, flew it home with me in my checked bag. And by the time I arrived back in Ohio
1:10
it had thawed. We reheated it, and Mom was in hog heaven
1:20
Laugh out loud. I have enclosed my favorite Christmas cookie, and we would love to see you make it on your channel
1:30
God bless. Much love, Ann. Elson, and Ann, much love back to you
1:35
I can't tell you how it makes me feel when I get letters like yours
1:46
So thank you. Thank you for your love and your support and reminded me of my Uncle Bubba, my brother
1:57
Uncle Bubba's was, it was good, it was good. So Ann has sent us pecan tarts, and they sound wonderful
2:08
We make something similar, but not really. A little miniature pecan muffin, but I have not made one like this one, Ann
2:17
so here we go. it makes 12 muffins. And I first thought that maybe you were making miniature
2:26
putting them in a miniature, but you're not. You have told me to use a regular muffin tin
2:33
which I appreciate that so much. So, all right, I'm gonna need
2:42
I'm gonna need my beaters. Sorry. That's all right, it's all right, it's all right, it's all right
2:48
Sorry, sorry, sorry. I forgot to put the beater back. So you're not perfect after all. No
2:59
I thought she was perfect, y'all. You're perfect enough for us, Teresa
3:08
Thank you. Okay. Okay, so I've got three ounces of cream cheese
3:22
I've got brown sugar. So let's see if she gives us any special instructions
3:32
Make the crust. And the crust is actually the butter. The butter includes cream cheese, butter, flour, and salt
3:40
Yes, ma'am. So, using a cookie scoop, scoop out a ball of dough
3:47
into 12 muffin tins. I will do it. All right, so third of that
3:57
yeah three ounces of cream cheese which would be is it half No it like anyway your cream cheese
4:07
if you have an eight ounce, but you can buy it in a three ounce
4:11
but I never do. They don't sell three ounces anymore. No. They don't
4:15
But they do tell you on the eight ounce package, the ounces, so you can measure your three and cut it
4:20
I didn't realize, cause see, I never bought that to start with. because I could use a lot of cream cheese in this house
4:37
This is gonna be our crust, and I'm gonna add a little salt
4:41
and then I'm gonna add my flour. And just cream that all together
4:53
Now Ann doesn't say to use a, Ann doesn't say whether we're supposed to grease
5:06
our muffin tins or not. So there's a lot of butter in here
5:10
So I'm assuming, and you know what assume is, but I'm assuming because of all the butter in the crust
5:18
is you might not have to worry about it sticking. but I made just the fun of it
5:25
Give it a quick spray. All right, I think she could put a tablespoon
5:34
with a cookie scoop. Scoop out a ball of dough. Now where is my cookie scoop
5:46
I know it's around here somewhere. I think this might be it
5:56
I'm gonna give that a little spray, so it doesn't stick. All right
6:18
After we get these filled, then I'm gonna come back and spread them out
6:23
you know, like a pie crust. Down on the bottom and up the sides
6:30
Okay, Eddie, I've got 12 of them filled. Now what I need for you to help me with
6:36
is show me which ones look short to you. Definitely that one, yes
6:43
Which other one? Maybe that very first one I did
6:55
Because I was definitely guessing. What'd you think, Ed? Which one
7:07
The front one. The very first one? Okay. That looks pretty, pretty even, doesn't it
7:13
Okay, Miss Teresa. Yes, ma'am. In your dirty bowl. Oh no, I'll use that
7:21
I can use it for the filling, because it does not matter, because it's all going down in the same place
7:27
All right, so I'm gonna, I'm gonna spray my hands, so hopefully the dough won't stick to me
7:40
instead of the pan. So, Ann just says to press them out
7:53
You wanna make sure you don't have any holes at the bottom. And of course we not gonna have a tremendous amount of crust but coming up the sides but I think it be a plenty
8:10
So that's the way we're gonna handle that. And I think we're on our way to a winner
8:19
Not W-I-N-T-E-R, but W-I-N-N-E-R. And I had a hard time getting the pie crust even
8:32
I think, because some are kind of thin. You know what? I'm gonna be making these again
8:37
but you know what, girl? I am gonna increase my pie dough, my pie crust
8:47
with a little bit more ingredients. So if I mess up too bad, I'll have some extra
8:54
But these look wonderful. Now, I've got them on the bottom and up the sides
9:01
the best I could. So now Ann says to put your pecans on the bottom
9:10
And this is usually the way I do my regular pecan pies
9:16
I like to put my nuts down on the pastry and then pour my liquid
9:27
the filling part on top of it, so it just works out good
9:31
And I thought I saw, oh no, it's a nut. I thought I saw a piece of shell, but I didn't
9:40
All right, now let's see. We start out with how many nuts? One cup of chopped pecans
9:47
And was this a cup, Teresa, did you manage? Yes ma'am. Okay, so I don't know how many
9:55
I might can get a little heavier on my nuts, which is great
10:07
So I'll go back and use these till I don't have a nut left
10:17
Where am I shy, Eddie? Where? That one
10:27
This one? The middle one. The middle one? Hmm, okay. Okay
10:37
I don't want anybody to not have the right amount of nuts
10:45
The right amount of nuts. This one looks short to me, right there
10:50
So I'm gonna steal. No, I'm gonna borrow. I'm gonna borrow little nuts from the others
11:00
All right, so it's time to make our filling. And it too is simple
11:07
And Ann tells us not to beat this with an electric mixer
11:13
but to do it by hand. And that's two eggs. And I think that's a cup of brown sugar
11:20
Let me check. I think it's on the bottom of it. Yeah, a cup of brown sugar
11:29
And you can use light or dark. Dark brown sugar will just give you a little darker muffin
11:41
All right, and now with the butter. I just love pecan pie
11:53
And I don make them very often because I want to eat the whole pie by myself Tell you what the one the pecan pie that you serve at Creek House is so good Isn it delicious Yes Delicious delicious
12:10
I didn't discover that until too late. Have they quit serving that
12:15
Did they take that out of the game? No, no, no. They still haven't. Oh, oh, you're too full
12:19
Is that right? Well, no. I mean, you've been open for three years and I've just discovered it
12:24
Oh! Oh! Oh! Oh, you said it was too late. I didn't know what you were talking about
12:34
Okay, I'm gonna divide this equally. Where's my little pickle-scooter
12:43
There it is. I'm gonna try to do this perfectly even
13:04
This recipe is very, very easy, and the only thing is that what takes me so long
13:09
is trying to get everything just perfect as far as dividing the muffins perfectly even
13:23
But this is gonna help by using my, a butter scooper, a cookie scooper
13:31
And I got it. And I hope I got them pretty much even
13:38
And I hope I do not disappoint. Don't wanna disappoint you with your recipe
13:48
because it looks too wonderful. How long does it say, Teresa? At 350 for 20 minutes, Teresa
13:56
Ann, I so enjoyed reading your sweet email to me. It looks like you just warmed my heart
14:05
You give love and then you get it. And I'm hoping that you're getting the love that I'm sending to you
14:12
Not only did I have a sweet, sweet letter full of love, I got a sweet, sweet recipe that Ann sent in along with her email
14:22
and they're pecan tarts and the crust, y'all, y'all remember at the very start
14:30
our crust is flour, cream cheese, can't remember now, butter, butter, cream cheese
14:41
It's right here in front of you. Show me. One three-ounce package of cream cheese, a stick of butter, a cup of flour, and a dash of salt
14:52
Mm. My own pecan pie. I get to eat the whole pie
15:03
I don't make many pecan pies, I am because I just wanna eat the whole thing
15:09
So this is just a perfect satisfier. And I do love a cream cheese crust. Mmm
15:21
Mmm. Yum. So thank you so much, y'all. I just love what y'all send to me
15:34
I appreciate it. The tarts are delicious. Can you imagine with a scoop of ice cream
