I'm back in Mama's Kitchen today,
0:02
sharing delicious easy recipes for you and your family.
0:05
And today, I'm doing really one of my favorite things.
0:09
Salad is my favorite food, chopped salad.
0:12
I have a dream to open a place.
0:14
Maybe I shouldn't share it.
0:15
Y'all don't steal my idea.
0:16
It's gonna be called Deen's Greens.
0:18
I'd like to sell salad by the pound,
0:21
with fresh delicious chicken and salmon
0:24
and homemade croutons, homemade salad dressings.
0:26
Does it sound awesome?
0:28
All I need to do now is split myself in half,
0:31
and then half of me can tend to my wife and three kids,
0:33
and the other half, might have to split myself into thirds.
0:37
It's a good idea, anyway.
0:38
And we're gonna start with a homemade salad dressing today.
0:40
We're doing cranberries.
0:42
It's fall time, y'all.
0:43
So you know that we're gonna have cranberries,
0:45
and there's gonna be pumpkins
0:46
and all kinds of things around this time of year.
0:49
So let's start with our salad dressing.
0:51
It's a really easy dressing, and it's the base
0:54
of most of the salad dressings that I make.
0:56
We've got apple cider vinegar, we've got some honey,
0:58
some stone ground mustard, some salt.
1:01
And look at this, whole fresh cranberries
1:04
are gonna go into our salad dressing today.
1:07
If you want to, if you're not a big honey person,
1:09
the other sweet to bring into this salad dressing recipe
1:12
would be some maple syrup.
1:14
Little bit of maple syrup with some apple cider vinegar
1:17
and some mustard and some oil makes a delicious, easy.
1:23
We're making something else today.
1:25
Our fresh cranberries are in here.
1:27
I've got our apple cider vinegar.
1:30
Now getting honey through that hole is gonna be a trick.
1:33
I'll just take it off.
1:35
I hated to mess with it because, as I've said earlier,
1:40
I don't really use food processors a bunch.
1:43
And I think if I get the top off of here,
1:45
I might not get it to work later.
1:48
But Theresa and Eddie are here.
1:51
- [Theresa] I'm terrible with the food processor.
1:53
- You're not terrible with anything.
1:55
So we've got our mustard.
1:59
A little bit of salt right here.
2:01
Now we're gonna blend this up for about
2:03
maybe 15 seconds or so.
2:27
See what we got here.
2:33
Boy, this is a homemade salad dressing right here,
2:35
if I've ever seen it.
2:37
Before I dress our whole salad, I'm gonna taste this.
2:46
The vinegar and the sweet from the honey
2:48
are really delicious.
2:49
And the tart cranberry is gonna give this salad
2:52
a really big, bold flavor.
2:55
I did this first 'cause there's not much on this end.
2:58
I've got got some prepared salad mix here.
3:00
I think I'm only gonna use one.
3:02
There's four or five of us here today,
3:04
and I don't wanna waste any salad.
3:06
On this, we're gonna add celery,
3:10
which gives it great texture and also a fantastic flavor.
3:14
We've got some fresh oranges that we're gonna put on here.
3:18
Look how pretty this is.
3:19
Now if you want to do a special Thanksgiving salad
3:21
this year, how about one with oranges and pecans
3:26
and fresh cranberry dressing?
3:29
Y'all use any kind of cheese that you'd like.
3:31
We got some goat cheese going on here today.
3:36
And then I'm gonna just spoon this
3:40
onto our dressing, onto our salad.
3:44
Kind of drizzle this around, and then when it's time to eat,
3:49
we can give this a good turn
3:50
and make sure that everything is coated well.
3:57
Two of my favorite things in a salad
4:00
is you get it looking pretty
4:02
and you use fresh ingredients in it.
4:05
And look at that, y'all.
4:07
We have, really that's a fall harvest salad
4:09
that anybody can get behind.
4:11
And look how simple it was.
4:13
All you need is me and Theresa and Eddie at the house,
4:15
and look how fast y'all can make a salad.
4:18
I'm Jamie Deen, this is good food.
4:20
We'll see y'all around the kitchen.
4:25
This is a little bonus footage for y'all.
4:27
The professionals would cover all this up
4:30
and never admit to making a mistake.
4:32
I didn't put any oil in my cranberry dressing, y'all.
4:36
So I put 1/3 of a cup of oil in here,
4:38
and now the world is right again.
