0:00
- Y'all, this has got to be
0:02
one of my favorite times of the year
0:03
because I'm making the 12 days of Christmas cookies,
0:08
and those are always so good.
0:12
I made six kinds in the last few videos
0:17
and I wouldn't throw none of 'em out.
0:21
I tried to eat every one of 'em.
0:24
- [Eddie] You did a lot of sharing last time too.
0:25
- Yes, oh, I did a lot of sharing, yes.
0:29
Michael actually wound up in the hospital
0:31
with a big kidney stone that he was not able to pass.
0:36
So the nurses got to enjoy 'em too.
0:39
And the emergency room people.
0:42
- [Eddie] And the pharmacy.
0:43
- Yeah, the pharmacy.
0:46
So the recipe that I'm sharing with y'all today,
0:48
I formulated this recipe,
0:51
I think when I was writing "Just Desserts" cookbook,
0:56
but I called it "Loaded Oatmeal",
0:58
and Eddie, you can see it is really loaded Oatmeal cookies.
1:04
It's got a lot of different spices.
1:10
if we don't have enough calories, I'll frost them.
1:14
And they are delicious cookies.
1:17
So I hope that y'all will take the opportunity
1:20
to make these over the holidays.
1:24
So it looks like a lot of stuff,
1:26
but it's really, really not.
1:28
I set that so I could remember,
1:30
but now I'm gonna take it out.
1:32
I'm gonna start with my shortening,
1:36
and that's a vegetable shortening.
1:37
And I always buy, it comes in blocks,
1:40
and I always buy the butter flavor
1:43
just because it looks
1:50
You know the color of it.
1:53
Alright, so I'm gonna cream this
1:56
now I'm gonna add my brown sugar.
1:59
Alright, so we've got
2:08
that we're gonna beat in.
2:13
Come on, come on shell.
2:18
And then we're gonna add our buttermilk.
2:23
All right now, I'm gonna slowly add my buttermilk.
2:38
Okay, now we're gonna put that aside for a minute.
2:57
All right, so that's all purpose flour,
3:03
baking powder, and salt.
3:10
And then we've got ginger.
3:36
I think that's all spice.
3:39
And the last one would be cloves.
3:44
I don't know, I might have said the wrong name with the-
3:47
- [Teresa] But those are the-
3:48
- But those are the- - That is the correct seasons.
3:52
- [Teresa] Seasonings.
3:54
- Yes, so we're gonna sift this
3:55
and we're gonna add it to our wet.
3:57
And then we're just gonna stir in our nuts,
4:02
and I'm choosing a walnut for this particular recipe,
4:06
and raisins and quick cooking Oatmeal.
4:29
All right, I think that got it all.
4:31
And let's see how much,
4:38
- [Teresa] It's on the next paper.
4:40
Let's see, yeah, two teaspoons.
4:43
- [Teresa] It's a long recipe.
4:44
- It is a long recipe.
4:45
- [Teresa] It looks intimidating, but it's not.
4:48
The hardest part is measuring out all your spices,
4:52
you know, and getting set up.
4:53
But once you get set up,
5:14
Ooh, that's gonna be so good.
5:17
Alright, that's our oatmeal.
5:20
Now if there's anything in here
5:22
that your family doesn't like,
5:23
like if y'all are not raisin eaters,
5:26
you know, just leave them out,
5:27
or you know, substitute 'em
5:29
with something that you do like.
5:31
- [Eddie] Yeah, chopped cherries or-
5:33
- [Teresa] Chocolate chips.
5:34
- Yeah, you could do anything you want to.
5:39
This was just, you know, my preference.
5:42
I do love raisins in a cookie.
5:46
When you bite into it
5:47
and it gives you that little burst of sweet.
5:51
I mean, I really like that.
5:55
I say rounded teaspoons.
5:56
That looks like a round to me.
6:00
You can make these as big,
6:04
here you gotta scoot over.
6:07
Alright, I just took two pans of cookies out of the oven.
6:11
They're ready and I've got 'em over here
6:13
on a cookie sheet, on a-
6:19
- [Eddie] Cooling rack.
6:20
- I can't think of the name of it.
6:23
It's how I always do my cookies.
6:25
I hang them over the sink and try not to make a big mess.
6:30
But anyway, I am now getting ready
6:32
to make the brown butter icing.
6:41
over kind of medium heat,
6:45
and I wanna make sure that I do stir this.
6:50
Let me find my favorite spoon for this and that's it.
6:55
You know, it's funny, a wooden spoon,
6:56
but I still have my favorite wooden spoons.
6:58
It just feel good in my hand and feel good in the pot.
7:06
And I've got three cups of powdered sugar.
7:09
Theresa went ahead and sifted it for me.
7:12
That way it'll lessen the amount of lumps in our icing,
7:18
because sometimes if it's not sifted, you know,
7:21
it's hard to get those lumps out.
7:22
So by sifting it, it will make sure
7:27
that the lumps are out.
7:28
Okay, you can see that it's starting to brown a little bit,
7:32
and you see Eddie when I pull it back?
7:35
But butter can burn very, very quickly.
7:39
But by letting it cook a little while,
7:41
that also takes the opportunity to,
7:44
there's a lot of water in butter,
7:46
so that gives it an opportunity
7:49
for some of that butter to evaporate.
7:52
So that's three cups of flour sifted,
7:57
I meant powdered sugar sifted.
8:01
And you can see the brown now.
8:13
You can see it turning brown.
8:16
You know what I'm gonna do?
8:29
I'm gonna put it all in this bowl with the powdered sugar,
8:34
and then I'll take the beater to it.
8:41
gives it that kind of dark caramelly color.
8:45
And we've got some water up here
8:47
to get it to the consistency that we need.
8:52
And you know, a little liquid goes a long way
8:57
Alright, now I'm gonna
9:00
add about a teaspoon of, oops,
9:08
About a teaspoon of vanilla flavoring.
9:13
So at this point, you need to decide,
9:18
well, do I want to drizzle or do I want a frost?
9:22
So to drizzle, you might need a little bit more water,
9:28
but to really drizzle.
9:38
And this will thicken,
9:40
this will thicken as you go.
9:53
Theresa and Eddie just ate a naked cookie
9:58
and they said it was good naked.
10:10
Like I said, I like to do 'em this way
10:13
'cause I feel like I get my fair share.
10:21
you know, you only gonna get a little drop.
10:24
So I may have to go back and double this recipe.
10:29
Okay, y'all, because I frost the entire top of our cookie,
10:34
I have like a dozen and a half
10:38
that's gonna have to go naked.
10:40
And they're right down here
10:41
and they're almost as good naked y'all
10:55
They are so delicious.
11:00
And the raisins and the nuts, just make it to me.
11:03
But hopefully this will be one of your favorite,
11:08
I know it's one of mine and Theresa's.
11:11
- [Teresa] And Eddie's.
11:14
Is Oatmeal one of your favorites, Eddie?
11:16
- [Eddie] Yeah. I like-
11:17
- You know, it's good for you.
11:18
It's got oatmeal in it.
11:19
- [Teresa] That's how I justify it.
11:23
- [Teresa] Cholesterol helps with the cholesterol.
11:25
