- Hey everybody, it's Bobby Dean here
0:02
with a great recipe for you for the holidays.
0:04
It's hard to believe that it's almost Christmas 2022,
0:10
And this is the time of year
0:11
when we like to do lots of baking.
0:12
We like to do casseroles, more heavy dishes
0:14
and our really yummy great stuff
0:17
that just reminds us of our moms and our grandmoms.
0:20
But, you know what, you can't eat those things every day.
0:23
And sometimes you gotta lighten 'em up a little bit.
0:25
So I'm gonna show you a really good
0:27
green bean casserole recipe today
0:29
that is a little, slightly...
0:32
It's a little bit lighter
0:33
than what your mom and grandma make.
0:35
So let's get started with a little canola oil in our pan.
0:42
And on like a medium heat.
0:46
- [Theresa] Has it started? Yeah.
0:49
I'm gonna add some onions,
0:53
which you must have in your green bean casserole.
1:09
And we're gonna cook this for, I don't know,
1:11
maybe 8 or 10 minutes just to get it kind of,
1:18
We'll leave it sort of crispy.
1:19
And I'm not gonna tear up my beans.
1:21
I'm just gonna sort of fold them in with that oil
1:25
and let the heat do its work for just a few minutes.
1:28
Now this is gonna be a two part recipe.
1:30
So we'll get the first part going.
1:32
And, well actually, we'll finish the first part
1:34
and then we'll take a little break.
1:35
And we'll get to step number two and then off to the oven.
1:39
So while my green bean, onion, mushroom, oil,
1:45
and pinch of salt mix is going right here,
1:47
I'm gonna move on to step number two, okay?
1:49
So in a pot I've got going on, well, medium heat
1:58
A little medium heat.
2:01
Just about everything I cook
2:02
is somewhere between low and medium.
2:07
That's about where you can cook everything
2:08
unless you really gotta singe some meat
2:10
or something like that.
2:11
So we're gonna make, it's not exactly a roux,
2:14
but think roux, so flour.
2:30
Gonna whisk, whisk, whisk on the heat.
2:34
Get everything sort of married together.
2:42
- [Theresa] You got it going on.
2:46
Just wanna make sure my green beans don't burn,
2:48
'cause I only wanna just cook them sort of...
2:50
I wanna keep them pretty crisp.
2:53
Now to our flour mixture here, we're gonna add some 2% milk.
3:01
And I'm going to stir this constantly.
3:06
It's gonna be about an 8 or 10 minute process, okay?
3:18
That smells so good already, my beans and onions.
3:25
Reminds me of, I don't know.
3:27
You know how food is.
3:30
Every time I'm cooking and I smell these delicious aromas,
3:34
they just bring me back to, you know, a place in time.
3:39
Might not have been better. (laughing)
3:42
But makes me think of mom and dad, my grandma Paul.
3:49
To that milk mixture, we will add some chicken broth,
3:55
the magic ingredient.
4:03
Golly, Christmas 2022,
4:05
I just can't believe that it's already here.
4:08
I'm busy, and I'm sure that you are.
4:15
We all gotta eat and you gotta find time to cook
4:18
for your family, with your family,
4:20
for your friends, with your friends.
4:23
It's important to eat well.
4:27
All right, I'm gonna stir this constantly for a few minutes.
4:29
And why don't we take a break and we'll come right back.
4:32
The sauce mixture looks perfect.
4:34
I'm just gonna sprinkle in a little bit of salt.
4:39
It's a really nice, a really nice amount of thickness.
4:45
So we've got our green beans, mushrooms,
4:48
little salt, onion, oil combination just right.
4:55
It's still kind of al dente.
4:56
We're gonna go over to our pan, or excuse me,
4:58
our baking dish that we've got sprayed.
5:06
those beautiful veggies, mushroom.
5:10
Sorry, Theresa, I know I'm kind of hiding this from you.
5:13
- [Theresa] It's okay.
5:19
- There we go, wonderful.
5:21
One mister mushroom left, two.
5:27
All right, now let's see if we can get this
5:32
Man, I love green be casserole.
5:33
I love casserole of all sorts.
5:35
My mom used to make, still does,
5:38
great green bean casseroles, potato casseroles.
5:44
- [Theresa] Squash, broccoli-
5:45
- Yes, squash casserole, broccoli casserole,
5:49
tuna casserole, anyone?
5:51
- [Theresa] Sweet potato casserole.
5:52
- Sweet potato casserole.
5:55
All right, now our mixture looks really, really nice.
6:01
Oh, you know what I forgot?
6:02
You know what I forgot.
6:03
You know what I forgot.
6:04
- [Theresa] Oh, the cheese.
6:05
- I gotta add to that some cheese.
6:07
Now, come on, don't let me forget the cheese, please.
6:09
- [Theresa] I almost let you forget it.
6:10
- A little Parmesan cheese into our mixture.
6:13
I'll just stir that in.
6:19
That will take one second.
6:24
You know what though?
6:25
It seems to be, seems to be the rule that I forget
6:28
one thing per recipe, at least one thing.
6:33
All right, now our sauce right over our green beans.
6:40
Let that get into every little-
6:43
- [Theresa] That's so pretty.
6:44
- [Bobby] Crease and crevice.
6:58
This smells so, so good.
7:11
- [Theresa] There's a spatula in the second door down
7:14
or the top drawer right there where you're at.
7:16
- [Bobby] That is what I need is a spatch
7:23
to get every, sorry Theresa.
7:26
- [Theresa] It's okay.
7:27
- [Bobby] Everybody can get a good look
7:28
at the bottom of this.
7:32
But my mom would whip my legs
7:38
if I wasted any of this - [Theresa] Yes she would.
7:40
beautiful sauce that we made.
7:45
And that takes a few minutes now.
7:46
So when you're cooking this,
7:49
it's gonna take you about 10 minutes
7:50
to get oo that thickness.
7:53
And if you need to add a little more flour, you know,
7:55
whatever you might need to do to it.
7:58
But mine turned out really, really nice.
8:07
Smells great, looks great.
8:11
I think mama would be proud.
8:13
- [Theresa] Look at how clean.
8:14
- [Bobby] Pretty clean.
8:16
It's not perfect, but it's pretty clean.
8:19
And now since this is a healthier dish,
8:28
gonna sprinkle on some, little spill.
8:31
Sprinkle on some almonds right on top,
8:33
some slivered almonds.
8:37
And also, no casserole dish would be complete.
8:42
- [Theresa] Do we put that on before or after we cook it?
8:44
- [Bobby] Oh, we put it on before
8:49
I'm gonna bake 'em right on there.
8:53
- And some fried onions.
8:55
Now you can make these yourself if you wanted to,
9:01
I'm pulling 'em right out of the bag.
9:05
You can get these in your local grocery.
9:07
You know where to find them.
9:10
Does that look good to you, Theresa?
9:12
- [Theresa] It looks fabulous.
9:13
- Now let's go into the oven at 350 for about 20 minutes.
9:18
And I'll see y'all in about 20 minutes.
9:22
This lighter green bean casserole
9:23
looks and smells fantastic.
9:25
It's out of the oven, it's beautiful.
9:29
This recipe and many others like it
9:31
are in my mother's magazine "Cooking With Paula Deen".
9:34
It's a great magazine.
9:36
And right now for a limited time,
9:38
you can get a year's subscription for 16.99, 17 bucks.
9:42
And that is a real bargain.
9:51
Whoo wee, show that off.
