- Hey y'all, I'm Jamie Dean, I'm in mama's kitchen
0:02
and I'm helping y'all cook something good for your family.
0:05
Today we're doing cinnamon nut pancakes.
0:08
Who doesn't love cinnamon nut pancakes?
0:10
All the kids are about to be on big school break,
0:12
you're gonna run out of things to cook.
0:14
Throw away the Pop Tarts, we're doing pancakes.
0:18
Picked a great day today too,
0:19
because Theresa had an idea
0:21
and I don't know if it's gonna work,
0:23
but we're going to try it
0:24
and we'll all find out together.
0:26
She thought it would be so cute
0:28
to put these cookie cutters and do pancakes shaped like
0:33
St. Nicholas, gingerbread man and a Christmas tree.
0:37
So these have plastic coating on one side,
0:39
so I've put the plastic coating up, the metal is down.
0:43
I give this about a 63% chance of working.
0:44
It's gonna be fun to see.
0:46
Let's get started.
0:47
Okay, so I don't have a sifter,
0:49
so I'm gonna to do mom's trick.
0:51
In a little bowl, I'm gonna put our flour,
0:55
we have sugar. (bowl clanging)
0:58
All right, make sure I get all my butter out.
1:01
We've got cinnamon,
1:04
a little bit of salt and baking powder.
1:10
So if you don't have a sifter at your house,
1:13
you can just do this.
1:14
Now this isn't gonna get all the clumps out of it for me,
1:17
but it will make sure that all of my stuff
1:19
is evenly distributed.
1:22
So this is a dry and a wet.
1:24
So this is our dry, properly sifted
1:28
and now in this large bowl, we're going to add an egg,
1:33
we have buttermilk, we have regular milk,
1:42
we've got our butter.
1:49
I'm gonna put my vanilla in.
1:50
- [Theresa] half teaspoon.
1:52
- [Jamie] Half a teaspoon
2:00
And I'm going to whip this together.
2:02
(whisk whipping)
2:10
Now, I'm slowly going to work our dry in with our wet
2:17
and we're gonna make our batter.
2:22
It's better to be patient here
2:23
because sometimes you can find that it's hard to get
2:28
all your dry mixed in really good.
2:29
You see how you get little pockets
2:31
and some of it kinda clumps up?
2:35
And if you have a hand mixer, you can use that, as well.
2:38
I'll be honest with you, mom has a hand mixer,
2:39
but I didn't feel like crawling on the floor
2:41
to figure out where to plug it in,
2:44
so I'll just use the hand mixer that the Lord gave me.
2:49
- [Theresa] It's a good arm workout.
2:50
- Yeah.
2:51
Well, between carrying Davis around
2:55
my arm gets plenty of work during the day.
2:57
This is a beautiful pancake batter.
3:03
We make a lot of pancakes at the house.
3:06
Somebody was so nice, they sent us when Jack was born,
3:08
which has been 15 years ago now,
3:11
sent us a round pan with animal shapes in it, animal faces,
3:19
and it's a mold for pancakes and I still use it today.
3:22
It's got about nine animals in it,
3:24
we pour it in there and you flip them over
3:25
and then you've got a lion, a monkey, it's awesome.
3:29
- [Theresa] So in other words,
3:30
I should've gotten you some pancake molds?
3:33
- I like your idea better. Let's see what happens.
3:36
Okay, so I'm gonna turn this up, while this is heating,
3:38
y'all give me one minute to get myself together.
3:40
We'll be right back.
3:42
I love a good surprise.
3:43
Okay, now I've got some glazed and roasted pecans here.
3:49
The very last we're going to fold into our batter.
3:54
This is gonna be so good
3:56
and I have complete confidence that this is gonna work.
3:58
I have changed my mind.
4:01
I'm going from 63% to 100% this is gonna work.
4:06
So I'll put down some nonstick,
4:08
we've been heating it up for a second.
4:10
And so I'm going to very carefully-
4:13
- [Theresa] So Jamie, you said the secret to this
4:15
possibly working is for your pan to really be flat.
4:20
- [Jamie] Yeah, my concern was that if these cookie cutters
4:24
are not completely-
4:27
- [Theresa] Well, Santa Claus looks good so far.
4:29
- [Jamie] at the bottom of this pan,
4:31
- [Theresa] Oh.
4:32
- [Jamie] that there could be a little leakage.
4:34
- [Theresa] which is happenin' in a little bit on the tree,
4:37
at the front end, I'm just gonna point out
4:39
so that they know my fault.
4:41
- [Jamie] What no, it's nobody's fault.
4:43
There is no wrong in the kitchen y'all.
4:45
If you got an idea, just try it, who cares?
4:48
You're not making a video at the house for people to see,
4:50
try it and it might be wonderful.
4:53
- [Theresa] And it's Christmas, so the kids will love it.
4:55
- Who cares?
4:57
You know, very brave was the man that ate the first oyster.
5:01
You got to go out on a limb to get the fruit.
5:03
If you wanna do cookie cutter pancakes,
5:05
well, then you just try it.
5:08
- [Theresa] Well be back.
5:10
- Don't go anywhere.
5:10
We'll see.
5:13
(Theresa laughing)
5:17
- [Theresa] Well, I'm just going to say,
5:19
we were a little heavy handed on the pouring of the mold.
5:22
- We were?
5:23
(both laughing)
5:25
- [Theresa] Well-
5:26
- [Jamie] Okay y'all look, it's bubbling.
5:27
Who cares? This is going to be delicious.
5:28
I would so much rather have fun
5:31
and then worry about every little thing under the sun.
5:34
So listen, what we're gonna do while we're waiting on those,
5:37
is we're gonna do a pecan butter, real quick.
5:40
So I've got the rest of our pecan
5:42
glazed and roasted nuts there
5:46
and I'm just gonna, it's like a compound butter,
5:48
it's like all other butters,
5:49
we're just incorporating one flavor into another.
5:55
So if you want to let this soften a little bit,
5:57
I've been so enamored with our pancakes.
5:59
- [Theresa] You spent half the day.
6:02
- [Jamie] This is gonna go right on top of our hot pancakes.
6:05
So it's not necessary, you don't need this to be
6:07
super smooth or blended, this is just gonna be
6:10
a little dollop on top before we add our syrup.
6:14
- [Theresa] I'm gonna go back over here
6:15
and see what's happening.
6:17
- [Jamie] Yeah, I was just wondering
6:18
what was happening over there, too.
6:19
Okay, so what I realized is that
6:22
these things are gonna be really hot.
6:26
So I got my tongs.
6:27
- [Theresa] You can tell I'm not-
6:28
- And I didn't spray the inside of them.
6:30
These kind of came together at the last minute,
6:32
didn't it T-bone?
6:33
- [Theresa] You can kinda tell
6:35
that I didn't think this out really well.
6:38
- You don't have to use cookie cutters,
6:39
if you wanna use your animal pancake pan at the house,
6:43
or just do regular round pancakes.
6:44
- [Theresa] It's Christmas!
6:46
- It is. So, come on.
6:52
- [Theresa} Jamie Deen.
6:53
- I think if I would have sprayed
6:55
the inside of these things,
6:57
it would have been a rousing success, that's my fault.
7:00
Okay, so let me see.
7:02
Well, I'm not giving up yet.
7:03
What do I have? What do I have?
7:05
(utensils shuffling)
7:08
What's in my drawer?
7:09
I'll pull something out of my rear end.
7:12
Okay so, I'm gonna use this and see if I can-
7:17
You know what I need?
7:18
I need a good old fashioned butter knife.
7:24
I need this little, bitty, deal right here.
7:26
This is gonna work.
7:27
I see it coming from a million miles away.
7:31
I'm just going to help him turn loose right there.
7:34
Get him turned loose right there.
7:38
Let's go, baby.
7:40
Let's go, baby.
7:41
Let's go!
7:42
- [Theresa] look at that.
7:44
You had little faith in me.
7:46
- [Jamie] What color is the other side do you think?
7:48
- [Theresa] I'm scared.
7:49
(Jamie laughing)
7:50
- [Theresa] Perfect!
7:52
- [Jamie] Yay! Oh yee of little faith.
7:56
- [Theresa] That's you, not me.
7:58
- [Jamie] It was, it was uh-
8:00
- [Theresa] I started to loose faith though,
8:01
because you made me.
8:03
- [Jamie] If I would've sprayed the inside of these
8:05
cookie cutters with some nonstick-
8:08
- [Theresa] This would've been beautiful.
8:10
- [Jamie] we'd have been in business,
8:11
but you know what Theresa?
8:12
- [Theresa] Well, we're teaching everybody what not to do.
8:14
- [Jamie] Love ya and I always have.
8:16
What was it with our pumpkin seeds
8:18
that you and I did together?
8:20
- [Theresa] Gosh, if y'all haven't watched
8:22
our pumpkin seed recipe,
8:23
you need to see that one, too.
8:24
Because again.
8:25
- [Jamie] Y'all know me as the one
8:27
that's not afraid to take chances or to look foolish.
8:30
I have never, ever, in my life-
8:32
- [Theresa} Look how good that Looks.
8:33
It's little ginger bread man.
8:36
- [Jamie] walked around, acting like I was Julia Child,
8:38
but I am not afraid to try new things.
8:42
I think it's a great idea
8:44
and just like every recipe that I've ever made in my life,
8:47
when I get done with it the first time,
8:50
I always have ideas for the next time I'm gonna cook it.
8:53
And the next time I cook this,
8:59
I'm not using cookie cutters.
9:00
I'm gonna make plain old, regular, round pancakes.
9:03
- [Theresa] You're boring.
9:04
- If I would've sprayed the inside of these,
9:08
I'm just fortunate enough that I'm-
9:10
- [Theresa] Look at that.
9:12
- that I didn't reach down and grab this with my bare hands,
9:15
cause I know this cookie cutter is hot.
9:17
- [Theresa] I didn't even think about that,
9:20
I've learned a few lessons on this one, as well.
9:24
I'm sorry, kids will love this.
9:26
- [Jamie] They will.
9:28
- [Theresa] I mean-
9:29
- [Jamie] Who wouldn't?
9:30
- [Theresa] They could be a little thinner, too
9:32
if you wanna, just so you don't worry about the brown.
9:35
- [Jamie] And the good news is that it took so long
9:38
for us to do that, that they cooked all the way through,
9:41
even though I never flipped'em.
9:43
And here are your Christmas cookie cutter pancakes.
9:48
And what a perfect place for our butter right there on top.
9:51
- [Theresa] Christmas tree.
9:53
We have Christmas tree and we have Santa Claus.
9:56
- [Jamie] Santa.
9:57
- [Theresa] So if anybody wants to be adventurous, Target.
10:00
they're a dollar, the little cookie cutters.
10:02
So it's not a big expenditure, if it doesn't work.
10:06
- [Jamie] And you know what? It worked.
10:11
Y'all wanna wait here until the butter melts?
10:12
Or are we just going to assume
10:13
this is going to melt perfectly all through here
10:16
and we'll go put syrup on it,
10:17
we're gonna eat them and they're gonna be muah!
10:19
Chef kiss.
10:20
Love you, Theresa.
10:21
Love y'all too.
10:22
Thanks for tuning in where it's not always perfect,
10:24
but you can bet it's always good.
10:26
I'll see y'all around the kitchen.
