- There is certain candies or cookie-like things
0:03
that you have to have at Christmas.
0:04
You know that Theresa, don't you?
0:06
- [Theresa] Mm hmm.
0:07
- And my cousin, Don, well,
0:10
before COVID.
0:12
Now this will be the first Christmas
0:14
that we're going to celebrate,
0:18
like a normal Christmas,
0:19
in two year,
0:21
two Christmases.
0:22
Has it been, I know last year, you know,
0:25
I didn't see or do anything,
0:29
but Christmas is going to be as close to normal
0:32
as I can get it
0:33
this year.
0:34
And cousin Don and his wife, Darlene,
0:36
would always come spend Christmas with us
0:39
and stay two or three weeks.
0:41
Well, they're coming again
0:43
and Don's going to be here on Friday
0:45
and they have bought them a RV
0:49
(laughs)
0:49
So my cousin is somewhere
0:51
out on the highway driving this RV.
0:54
And let me go ahead and apologize for him
0:57
because he'll stop, stop, stop, stop, go.
1:00
(laughs)
1:02
That would be my cousin out there.
1:03
If you see something like that going on
1:05
in an RV.
1:06
But he's going to get here Friday
1:08
and I'm going to work his little fanny off.
1:11
I'm going to have him shooting some old videos with me
1:15
and just busy, busy in this kitchen.
1:20
So I can't wait for them to get here.
1:23
And he always makes this crack candy every Christmas.
1:30
- [Theresa] So, see, you'll have some for him
1:31
when he gets here.
1:32
- Yes, I will have some ready for him to eat
1:34
and he'll be most proud.
1:36
So, you know, this,
1:38
and I'm sure you probably had this recipe
1:41
at some point
1:41
because it's so dadgum easy.
1:45
I want it to be called redneck candy.
1:47
(laughs)
1:48
Shouldn't it?
1:49
- [Theresa] It's so good.
1:49
- It is so, so good.
1:52
I'm going to start with two sticks of butter,
1:54
getting those melted.
1:56
And
1:59
the base to our cookie candy.
2:02
You know, to me it's not a cookie
2:04
and it's not really a candy,
2:06
it's kind of a candy cookie.
2:08
- [Theresa] Anything with (indistinct).
2:09
- Yeah, you know, kind of.
2:10
- [Theresa] It's kind of like a toffee, really .
2:12
- Yes, kind of, well,
2:13
it's got toffee in it.
2:15
So, first you start with saltine crackers
2:22
which makes for such an easy, easy cookie.
2:26
And we're going to use one and a half sleeves.
2:29
I'm going to take out the broken ones
2:32
and we're using a parchment paper.
2:36
Now, if you don't,
2:40
if you don't want to use parchment paper,
2:43
you don't have to,
2:44
you would just want to spray your pan real good
2:47
and go line up our saltines
2:50
just like this.
2:51
Like I said, I'm taking out the broken ones.
2:55
- [Theresa] I'm going to turn on the stove,
2:56
if that's okay?
2:58
- Oh, yeah, yeah, yeah,
2:59
we can start that melting.
3:05
Yeah, so we really don't want to cook anything.
3:09
Once we add the brown sugar, Theresa,
3:11
just needs to kind of cook
3:14
for about three minutes.
3:17
Is that mounted enough?
3:20
- That's up to you.
3:21
- All right, yeah.
3:22
As long as we can mix that brown sugar
3:24
in with it.
3:28
So I'm gonna add these crackers back to that sleeve
3:34
because that'll be wonderful on top of it.
3:37
I think, didn't Michael make some split pea soup.
3:42
He'd love that
3:44
on top of the soup he made.
3:48
Okay, so.
3:51
- It's almost melted.
3:52
- Yeah we're going to let that cook
3:53
for just a few minutes.
3:56
Let me see what you, you turned it down,
3:58
didn't you?
3:59
Or did you turn it up?
4:00
Anyway, that's good.
4:01
So, over here,
4:05
we have one cup of milk chocolate.
4:09
We have one cup of tiny
4:12
more so semi-sweet chocolate.
4:15
And then we've got a cup of toffee.
4:19
And you find this in your baking section.
4:21
And this toffee also comes
4:23
within a chocolate coated toffee.
4:27
And if that's all you can find,
4:29
that's fine to use,
4:30
it really doesn't matter.
4:33
All righty,
4:35
Theresa.
4:36
- [Theresa] I'm going to let you take over.
4:37
- Thank you, thank you.
4:38
- [Theresa] I just didn't want it to burn.
4:39
- I don't want it to burn either.
4:43
So,
4:46
those of you out,
4:48
out in,
4:50
what would that be called?
4:51
Cyber land?
4:53
Or computer land?
4:57
How would we refer to our friends
4:59
that we can't meet face to face yet?
5:04
Social media land?
5:07
- [Theresa] Video world?
5:08
- Yeah, video world.
5:09
I knew I was looking for something like that, Theresa,
5:12
and I knew you'd come up with it.
5:17
If y'all have never made this
5:20
and you make another kind of candy,
5:21
share the recipe with me
5:24
because I have so much fun sharing.
5:30
People out there in social media land,
5:33
when y'all send me your recipes.
5:35
- [Theresa] We've gotten amazing recipes.
5:37
- I know, I know.
5:38
- [Theresa] It's crazy.
5:39
- And it's just wonderful
5:42
when y'all share with us.
5:45
People enjoy those.
5:47
- [Theresa] Well candy is such a great thing
5:49
because it can be a gift.
5:50
- Yes.
5:51
- [Theresa] A giftable.
5:52
- Absolutely
5:53
- [Theresa] You can take it to a cookie swap.
5:54
- Uh huh, yeah a cookie swap
5:56
or just anybody,
5:59
your Sunday school teacher,
6:01
the children's teacher,
6:02
it just makes a nice little gift.
6:04
And you can go out and find,
6:08
go to yard sales,
6:09
and find some pretty jars
6:12
and put a ribbon on those
6:14
and decorate them up.
6:15
And so they have something they can keep too.
6:22
Okay.
6:25
This just looks delicious.
6:31
You know, my mother,
6:34
always made divinity at Christmas time,
6:37
always.
6:39
And she made the most delicious,
6:43
beautiful divinity that I've ever seen.
6:48
And, you know,
6:49
I've got mama's recipe,
6:53
but I just,
6:56
they'll never come out like mama's.
6:59
Hers looked like an ice,
7:01
a perfect ice-cream cone topping.
7:05
And so, so good.
7:08
I may try
7:12
making some divinity, this,
7:14
this Christmas, Eddy.
7:16
- [Eddy] You've never done that.
7:18
- You know, it takes two people,
7:18
it takes two people,
7:19
because you have to pour that hot syrup
7:21
very, very slowly into a fine stream.
7:25
And then once your divinity gets ready,
7:28
it'll lose it's shine that quick.
7:32
And you have dip, dip, dip.
7:40
Okay, this has got a light boil to it.
7:47
Let me see.
7:48
Can you get down in there, Eddy?
7:50
Can you,
7:51
can you see in that pot?
7:59
Yeah.
8:01
So after it starts boiling,
8:02
you want to let it boil
8:05
for about three minutes.
8:09
Just make sure everything
8:11
is incorporated well.
8:23
Okay, I think it's been about three minutes,
8:26
I bet you, Eddy,
8:27
since it first started boiling.
8:31
Turn that off.
8:32
Oh, and you know what we need to do?
8:35
I need to heat the oven.
8:39
Preheat the oven.
8:42
All right, so,
8:43
I'm just using a ladle
8:46
because it'll give me a little bit more control
8:51
over where my hot syrup is going.
8:55
- [Eddy] You know what I discovered,
8:56
I think you got a little leak in that now.
9:00
We're going to have to plug,
9:01
plug that.
9:02
- What?
9:03
- [Eddy] Your ladle.
9:04
- No.
9:05
- [Eddy] I think the tin has worn out
9:07
in a section.
9:08
- No.
9:09
- [Eddy] Yeah.
9:09
- No, that can't be,
9:12
that can't be.
9:14
Oh, I bought this, Eddy,
9:19
I'm sure,
9:20
from a yard sale
9:24
and I just adore it.
9:26
All right, now I'm going,
9:28
I'm just going to take my spoon
9:30
and spread that hot syrup
9:33
over everything.
9:37
Just like that.
9:44
Oh, that syrup is very, very hot.
9:49
So handle that with care, y'all.
9:57
You want to do this kind of gently
9:59
because it will move your crackers around.
10:09
Now I thought you were telling me
10:10
I had a hole in this pan
10:11
and I was going to say
10:13
oh my gosh, that's awful.
10:15
- [Eddy] No, when I was washing it the other night,
10:18
I had filled it up with water
10:22
because I think there was pea soup in there.
10:24
- Yeah.
10:25
(laughs)
10:26
- [Eddy] And I,
10:27
when I was holding it up,
10:28
water was, like,
10:29
squirting out of that.
10:30
- Oh no,
10:32
no.
10:34
Okay,
10:35
that's pretty well distributed.
10:43
Looks pretty good to me.
10:47
All right,
10:48
so we're going to put this in the oven, y'all,
10:49
350 preheated, 350.
10:52
And we're going to let it cook
10:53
for three to five minutes.
10:55
So it's been maybe four minutes
11:01
and it looks like our oven might be working.
11:10
I hope, I hope, I hope.
11:13
So, the caramel has melted a little bit more,
11:18
I'm gonna see if I can get it,
11:19
spread it out.
11:20
Now we want to do this fairly quickly, y'all,
11:24
because, all right,
11:25
I'm going to turn our stove off
11:29
and we're going to set these back in here,
11:35
in the oven for a few minutes
11:38
and let the leftover heat
11:42
just melt all of our chocolate
11:44
and our toffee
11:46
and our nuts
11:47
and everything.
11:53
That looks very uneven
11:55
but I'll make it up with this bowl.
12:01
I do love milk chocolate though.
12:05
And that bowl is milk chocolate.
12:09
In fact, I think normally,
12:11
I use just milk chocolate.
12:14
(cat meows)
12:15
What, pumpkin?
12:21
What, pumpkin?
12:25
Okay.
12:30
Next with the toffee,
12:31
- [Theresa] Hmm.
12:34
which the toffee just brings it right on over the top.
12:44
- [Theresa] I forget how easy this is.
12:45
- It's so easy.
12:49
Right, does it look like I'm getting it even?
12:53
- [Theresa] Maybe some like right in that area,
12:55
like kinda of the center.
12:55
- Oh, right there.
12:57
Eyes are not what they use to be.
13:03
Maybe right there?
13:05
- [Theresa] I'd put a little bit more, like,
13:06
right in here.
13:07
- Okay, right there.
13:08
- [Theresa] There you go, mm hmm.
13:10
- All right, now,
13:11
to me,
13:14
this is the best part,
13:17
the nuts.
13:22
I am a nut lover.
13:27
And it's so hard to believe people, that, say
13:31
- [Theresa] Well, think about people that are allergic.
13:33
- Yeah.
13:34
- [Theresa] I mean, that would be a terrible.
13:35
- Yeah, but, you know,
13:36
when they tell me
13:37
now don't put any nuts in the cream cheese icing.
13:41
- [Theresa] What?
13:42
(laughs)
13:43
What, are you serious?
13:49
- Does that look pretty even, Theresa?
13:51
- [Theresa] Yes, ma'am.
13:52
- Good.
13:53
All right, so,
13:54
back in the oven these go.
13:57
The oven's been turned off.
14:00
We don't need it to cook,
14:01
we just need to melt.
14:15
There we go,
14:16
three minutes.
14:17
Mm mm mm.
14:20
So that was three minutes, y'all.
14:23
And they will cut easier
14:27
if you cut them while they're warm.
14:29
And I would try to cut them
14:35
the size of the saltine,
14:39
like that.
14:43
Now where can I,
14:47
where can I find that other saltine.
14:51
It's hard to tell.
14:56
- [Theresa] I know all that butter melts
14:58
into those saltines.
14:58
- It just melts into it.
15:03
All right, I got out one cracker.
15:05
(laughs)
15:11
Heavenly days, y'all.
15:24
The salty from the saltine crackers
15:30
with the sweet,
15:33
so good.
15:48
Yeah, you'd think you could tell.
15:51
- [Theresa] I have to be honest,
15:52
the time that I think I made this,
15:53
which has been,
15:54
I didn't,
15:55
I let it cool off.
15:56
- Yeah.
15:57
- [Theresa] And then it kind of broke up.
16:00
- Yeah, Yeah.
16:01
- [Theresa] It may not have broken up beautifully into,
16:02
but it broke up like pieces of candy.
16:04
- Right.
16:05
- [Theresa] Like crack candy.
16:07
- Yeah.
16:08
(laughs)
16:10
So I think you get the gist
16:15
or as Aunt Peggy said.
16:17
I got so (indistinct) at her one day.
16:20
Oh, and if Michael was here,
16:21
he'd laugh all over again too,
16:23
because he was there when she said it.
16:26
Oh, you get the zest.
16:28
(laughs)
16:30
I love you, Aunt Peggy.
16:32
Eddy and I just got back from Albany.
16:37
I went to Albany, Indiana book signing
16:40
at Anne's garden shop.
16:43
And it's, you know, Theresa,
16:45
that was the first book signing I've done since COVID.
16:48
- [Theresa] I know.
16:49
- And it was a huge turnout,
16:52
huge turnout.
16:54
- [Theresa] I bet Anne was,
16:55
did Anne know what to do with herself.
16:57
- She was running around, honey,
16:58
working her head off.
17:00
- [Theresa] I don't think people ever realize
17:02
how many people are really going to show up.
17:04
- Well, you, you don't ever know.
17:07
- [Theresa] I've learned.
17:08
- Okay.
17:08
I'm thinking she'd show up, right here,
17:09
at this crack party.
17:10
- [Theresa] I can tell.
17:17
- Delicious.
17:19
Would you like some crack?
17:21
- [Theresa] I sure would.
17:28
- Your family is going to love it.
17:30
Or whoever you share it with,
17:31
they going to love it.
17:33
Merry Christmas.
