0:00
- I am so thankful for my friends out there,
0:07
for just joining me here in the kitchen.
0:09
And I am especially grateful for the request
0:14
for your favorite Christmas cookie recipes,
0:17
because y'all sent 'em in and it makes us
0:20
so very, very happy to share your favorite cookie recipe
0:25
with the rest of the world.
0:31
I am looking at a recipe that looks so good.
0:36
I've not ever made a cookie like this,
0:39
and it's one from Sandy Davis.
0:43
Not a lot of note or no chit chat or anything.
0:47
But I so appreciate it, Sandy.
0:52
And I don't even know,
0:56
I don't even know where you're from,
1:00
All right, so we are gonna make
1:01
your white chocolate cranberry pistachio cookies.
1:08
So in this bowl I'm gonna beat up a half a cup
1:12
of butter that's at room temperature,
1:20
a half a cup of packed brown sugar,
1:23
and a half a cup of white sugar,
1:26
along with a fourth of teaspoon of salt.
1:32
let me get my little one out
1:36
and we are just gonna beat that.
1:38
And Sandy says to beat it, gosh, three to five minutes.
1:43
She said this is a very, very important step.
1:47
So that's gonna ensure you a soft, chewy cookie.
1:57
So we're gonna start with the butters, the sugars,
2:01
and we're gonna cream 'em all until fluffy
2:03
and pale in color, three to five minutes.
2:06
And in a separate bowl we're gonna combine
2:09
the flour and the bakin' soda.
2:14
And she tells us to use a wooden spoon
2:20
to combine those two ingredients.
2:28
Carefully stir the flour mixture into the butter mixture
2:33
And then we're gonna stir in the white chocolate chips,
2:36
dried cranberries and pistachio nuts.
2:39
And we are gonna drop these by spoonfuls
2:42
onto a greased cookie sheet,
2:44
or I'm using parchment paper,
2:46
but I think I'll probably since she said a sprayed one,
2:50
I'll probably be sprayin' a little bit
2:52
of nonstick on top of our parchment paper.
2:55
And we're gonna be baking them for eight to 10 minutes
2:59
in a 375 degree oven.
3:04
There's no frosting on these,
3:06
so we get to enjoy these very, very quick.
3:12
And I thank you so much, Sandy.
3:16
And I worry about other people's recipes,
3:20
but they all have the full ingredients right, Theresa?
3:23
- [Theresa] Yes, ma'am.
3:24
- To this link. They will- - [Theresa] Oh, yes.
3:27
There'll be a link at the bottom, I mean,
3:28
at the end of the video.
3:30
- [Theresa] At the end of the video.
3:32
- Okay, I just wanna make sure.
3:34
All right, our butter, our brown sugar,
3:42
So here we go. Three to five minutes.
3:46
We beat that for somewhere between three and five minutes.
3:51
Now I'm gonna add my one egg
4:00
and then I'm gonna beat it some more.
4:09
I think two's better than one, don't you, Eddie?
4:12
- [Eddie] Definitely.
4:13
- When it comes to vanilla flavor.
4:22
I forgot to add my fourth of a teaspoon of salt,
4:27
but it's not too late, so there we go.
4:31
So in this bowl I'm gonna add
4:37
my flour and my baking soda.
4:44
It looked like soda, but let me just make sure.
4:49
Yes, it's baking soda.
4:52
So she said use a wooden spoon
4:53
and stir those two things together.
4:58
So, that's good. We don't have to sift.
5:06
Y'all see an arm reachin' in,
5:08
playin' with my dishes up here,
5:09
it's just Theresa. (chuckles)
5:22
the flour into our cream mixture.
5:29
So I'm gonna do just that.
5:36
And to be safe, I guess I'll do a little bit at a time.
5:41
I think I'm gonna use my spatula.
5:47
To our cookie mixture we're gonna add
5:50
dried cranberries, which I adore.
5:54
I love these in sweet and savory dishes.
5:56
- [Theresa] Me, too. - Love 'em in a salad.
5:59
And pistachio nuts that have been lightly chopped.
6:08
the recipe calls for one cup
6:11
of either white chocolate chips or chocolate.
6:16
But so it's strictly whatever you want.
6:21
Have I heard right that white chocolate
6:23
really ain't chocolate? (laughs)
6:25
It's close enough. - [Theresa] Oh.
6:27
When they name it white chocolate,
6:29
I got the impression that she switches to milk chocolate
6:31
because of somebody in her family.
6:34
- [Theresa] And I have white chocolate chips,
6:35
so that's why we used white chocolate.
6:37
- Yeah, Sandy says she uses chocolate chips
6:39
because of Andrew, so. (laughs)
6:42
Either way it's gonna be good.
6:45
So I'm gonna mix these ingredients together
6:47
and then I'm gonna drop them by the spoonfuls
6:51
onto our cookie sheet.
6:54
Now I am gonna spray.
6:55
I'm gonna put a little spray on that parchment paper.
7:07
All the things I love.
7:09
So I'm fixin' to spoon up Miss Sandy's cookies,
7:15
and she said to use a heapin' teaspoonful.
7:18
Heapin', heapin', heapin'.
7:23
On a greased cookie sheet.
7:26
Now I'm using parchment paper,
7:27
but I did put just a light coat of that
7:31
on top of the parchment paper already.
7:34
So I don't wanna see no sticking going on around here.
7:40
And this is a very firm dough.
7:45
And to me that looks like a heapin' teaspoon.
7:51
I love the colors in this cookie, you know?
7:57
- [Theresa] It had me at pistachio.
7:58
- [Paula] Uh-huh. (laughs)
8:00
- [Eddie] Yeah, I think you usually see white chocolate
8:02
with pistachio and cranberries.
8:05
- [Paula] Uh-huh. - [Theresa] Mmm-hmm.
8:08
- And that's the way she suggested doing it.
8:12
Except for Andrew, she has to use the chocolate.
8:17
Okay, we've got 'em all dipped up,
8:21
and this is about, it yields about a pan
8:25
and three quarters of a cookie.
8:27
And I'd have to look and see what Sandy says they yield,
8:32
because it really depends on how everybody scoops
8:37
as to how many cookies you're gonna get.
8:39
So in the oven, 375 for 10 to 12 minutes.
8:43
Sandy, I love your cookie recipe, girl.
8:47
I've never, never made a cookie like this before,
8:51
and it's so very interesting with the pistachio nuts
8:58
And what else was in there?
9:01
- [Theresa] White chocolate.
9:02
- Yeah, the white chocolate.
9:03
- [Eddie] Kind of a healthy cookie.
9:06
(Paula and Theresa laughs)
9:08
- [Theresa] If that's if you can call cookie healthy.
9:11
- Tastes very healthy to me.
9:13
Those cranberries are gettin' it on in my mouth.
9:24
And so I wanna say thanks one more time
9:29
for you sharing your recipe
9:35
on this YouTube channel
9:40
in the 12 day of Christmas cookies.
9:44
Every Christmas we have the 12 days of Christmas,
9:49
and we're in it to win it with you, Sandy.
