0:00
- Hey, y'all it's Jamie Deen here,
0:01
again, today, and I am thankful.
0:03
Thankful for y'all tuning in.
0:05
I'm thankful for the season that it is,
0:07
which is Thanksgiving.
0:09
And I'm also very thankful for dressing,
0:12
one of my favorite things to eat.
0:13
So today we're in mom's kitchen,
0:15
she's off doing some work
0:16
and we're gonna put together
0:17
a buttermilk cornbread dressing.
0:20
Now the first step to buttermilk cornbread dressing
0:22
is you need butter, milk, cornbread.
0:26
that my mother has this laying around.
0:28
Her cornbread mix that we use,
0:30
and she actually calls for buttermilk in this recipe.
0:33
So Theresa has prepared one box
0:36
of cornbread mix using buttermilk,
0:38
and we've crumbled this up, you see.
0:40
I did a little bit of prep work before y'all got here today.
0:43
This is two cups of onions,
0:45
two cups of celery, and some minced garlic.
0:50
You know Theresa wants me to tell you,
0:51
so it's a tablespoon of minced garlic.
0:55
And I've got a couple of,
0:59
let's see, tablespoons of butter in here,
1:01
a quarter of a cup of unsalted butter.
1:03
So we melted down the butter and we've sweat,
1:07
we sweated these vegetables.
1:10
So when you sweat an onion
1:11
or celery or whatever,
1:12
you could see that none of this has been brown,
1:15
but I've taken most of the crunch out of it.
1:18
So you cook it on a low heat with butter,
1:20
and I'll put a little bit of salt and pepper in.
1:23
This is the beginnings of a million fantastic recipes.
1:27
Celery, onion, and garlic with butter,
1:29
little salt, pepper, and we sweat this down.
1:32
See none of it has brown,
1:34
but it's all gonna be perfect
1:35
for our cornbread recipe.
1:38
So that's where we're gonna start today.
1:40
We're gonna take these four cups of vegetables,
1:44
we're gonna mix this into our bowl.
1:46
I'm doing this out of order.
1:48
This recipe came from one
1:50
of my mom's magazines and now.
1:53
- [Woman] Why are you making dressing then?
1:58
Dressing is one of those things
2:00
that I only eat it one time a year.
2:03
Like how often do y'all really
2:04
eat cornbread dressing throughout the year?
2:06
And it's only my fault because I love it so much.
2:09
I could eat it every month,
2:12
but I save up all year long
2:14
and I love my mama's dressing.
2:16
Oh my gosh, I love it.
2:18
So, to this we're gonna add two cups.
2:22
We're using low sodium chicken stock.
2:27
I have two lightly beaten eggs.
2:31
This is a really, really simple recipe.
2:34
We're gonna use one 10.5 ounce can
2:38
of Cream of Chicken Condensed Soup.
2:42
Were using the condense because it's got a lot,
2:46
a lot, a lot of flavors in a condensed soup.
2:54
To this, we also are gonna add a tablespoon
3:00
and we've got half a teaspoon of salt
3:03
and half a teaspoon of pepper.
3:06
We're gonna incorporate this all together.
3:08
I'm gonna use my whisk.
3:12
Kind of get this soup beat up a little bit.
3:17
This is a very, very, very wet recipe.
3:20
So, if you've made cornbread dressing before,
3:23
if you're a little worried about it being too wet,
3:27
Dry dressing is the worst.
3:29
As much as I like dressing I dislike dry dressing.
3:34
So you see mom's recipe has got a lot,
3:36
a lot of liquid in it.
3:39
And to this, we're gonna add our cornbread
3:42
that Theresa has made and crumble.
3:47
You see, now it's gonna start,
3:51
it looks like, kind of like a soup.
3:53
And you see how this cornbread is soaking this liquid up.
3:58
- [Woman] Oh, it smells good and I'm hungry.
4:00
- It is good, good, good.
4:08
Thanksgiving has always been a really fun time
4:10
around my mom's house,
4:11
and since we've had our restaurant
4:12
for over 30 years now,
4:14
there's always a lot of people,
4:16
whether it's students
4:17
or whoever it might be
4:18
that don't get the opportunity to go home
4:20
and have Thanksgiving with their family,
4:23
so my mom has always had an open house Thanksgiving.
4:27
So there's no telling who's gonna come from,
4:30
you know, our network of friends
4:31
or people that we work with or restaurants,
4:35
It's always a really fun mix of people.
4:38
And my friend Dolphus,
4:40
who is probably 6'8",
4:44
and he's lost a good bit of weight,
4:45
but he's 350 pounds or so.
4:49
I always try to sit next to big D
4:51
'cause it makes me look small.
4:53
My plate is always bigger than his.
4:56
I eat too much on Thanksgiving.
4:59
It's kind of my thing.
5:00
So, we got our baking pan
5:03
and I sprayed it with some nonstick
5:07
and we're gonna work our corn bread down into here.
5:11
I've got our oven going at 350 degrees,
5:16
and this is gonna take probably
5:19
between 45 and 55 minutes or so.
5:24
and get this cooked all the way through.
5:26
Look how beautiful that is.
5:27
I mean this is just screaming the holidays.
5:30
So, I'm gonna pop this into the oven,
5:32
and don't go anywhere
5:33
because when you get back,
5:35
you'll see me eat dressing with both hands.
5:39
All right, y'all my timer just went off,
5:44
and here's our dressing.
5:46
Tell you what, my mama's oven cooks
5:49
faster than my oven at the house.
5:51
I'm gonna have to ask her about that.
5:53
Let's see what we got here.
5:57
Oh, dressing, dressing, oh, look at that.
6:03
- [Woman] Look how good.
6:05
- See it's got that moistness down low,
6:09
the top's a little bit dryer than,
6:11
I'm gonna blame my mama's fast
6:12
cooking commercial oven on that.
6:15
Now, if you get something that looks like this,
6:17
if you wanted to dab a little bit
6:19
of chicken stock or something on the top
6:21
to kind of soften it,
6:23
but as y'all can see once you get on the inside
6:26
that is moist and delicious right there.
6:29
If y'all been watching,
6:31
I've done a few of these videos and I love to do them.
6:33
I love to work with Theresa.
6:34
I love to see you all.
6:36
I love to do all this.
6:38
I damn near burnt my mouth shut
6:40
about three weeks ago
6:41
because I ate something too fast
6:43
when it came out of the oven.
6:45
I'm going back in though.
6:48
I know it's too hot, but I got to.
7:00
Close, I almost did it.
7:03
This has got all the flavors of Thanksgiving in it for me.
7:06
Garnish this with a little bit of sage,
7:10
When we're working at the restaurant,
7:11
when we first started doing Thanksgivings,
7:13
we would just do so much cornbread dressing
7:17
of the day is when I would get to sit down and eat
7:19
and I would take biscuits,
7:21
put dressing, cranberry, Turkey, biscuits.
7:25
I would eat everything on one biscuit.
7:28
This is certainly good enough to go in one
7:29
of my Thanksgiving biscuits.
7:31
I'm thankful for y'all
7:32
and I'm thankful for dressing.
7:33
Thanks for tuning in.
7:34
We'll see y'all around the kitchen.
7:36
Mmm, happy Thanksgiving.
