- Today is all about Southern specials
0:04
and Jamie and I have two very special Southern girls
0:07
in the kitchen with us today.
0:09
First, y'all, Jamie and I are going to kick it
0:11
off with a melt-in-your mouth artichoke dip
0:13
and then our sour cream pork chops
0:16
with a vidalia onion gravy.
0:18
Cheers.
0:19
- For dessert, an over the top punchbowl layer cake.
0:24
Oh, these girls eat the same way I eat.
0:27
(country music)
0:37
I've got two very special girls
0:39
that's coming on with us today.
0:43
Jamie and Bobby grew up with these two girls.
0:45
They were the daughters of my best friend,
0:47
Susan Beecham Dupuis.
0:49
I want to hurry up and get the girls out here.
0:52
So let's get started on an old-timey Southern favorite,
0:55
hot artichoke dip.
0:57
- What can we put in there to make it different?
1:00
- How bout some cream cheese?
1:02
- How bout some cream cheese, y'all?
1:03
- (laughs)
1:04
This is kind of a redo of this recipe.
1:07
You know, cream cheese makes everything better right?
1:10
- Makes it creamy.
1:11
- We're going to drain--
1:12
- 14 ounces of artichoke hearts.
1:14
- Yeah.
1:15
I've got one cup of mayonnaise.
1:20
Okay.
1:22
So Jamie and I were in the kitchen yesterday,
1:25
and I had such a good time with you, son.
1:28
- We always have fun.
1:29
We're like--
1:30
- We do always have fun, don't we?
1:31
- We give all these other folks in here with us
1:33
fits because we cut up the whole time.
1:35
- (laughs)
1:37
- There's about a half a cup.
1:38
You know, and I'm going to do some more.
1:39
I'm going to put some more on top
1:40
- Yeah, we'll want some on top.
1:41
So, I've got you a cup of mayonnaise,
1:45
your cup of sour cream,
1:47
and that mayonnaise makes it so good and rich,
1:52
and your cream cheese.
1:55
This is great if you're having the gang over
1:57
for a card game or a pool party.
2:01
How long has it been since you've seen the girls?
2:03
- It's been a few years, I think.
2:05
I'm going to put this in now.
2:06
- Yeah. Suzette married into the restaurant business.
2:10
- Nothing easy about the restaurant business.
2:11
- And Amy, Amy went on to get her degree in education.
2:18
- Which is pretty damn scary.
2:20
- (laughs)
2:24
- When you know the full backstory.
2:26
- She is a teacher.
2:30
- Let's put a little hot sauce.
2:32
- Okay.
2:33
- This is the only hot sauce I would ever use.
2:35
- Yes, and this is just to taste.
2:37
- It's got a funny looking old lady
2:38
on the front, you can't miss it.
2:39
- (laughs)
2:41
Does she have horns?
2:44
No she does not.
2:45
- They Photoshopped them out.
2:47
- She's a sweet old lady.
2:51
When she ain't busy being bad.
2:53
- Now tell us about the color of your hair.
2:55
Yeah.
2:56
- Listen y'all, I have had every color hair known to man.
3:00
- At one time you had it, you called it frosted,
3:03
and it was about four different colors.
3:04
It was a 1971 frosting.
3:06
- (laughs)
3:07
Here son, may I borrow your--
3:09
- It was more like the tail of a lemur.
3:12
- (laughs)
3:17
- And there wasn't money for us to get haircuts either.
3:19
So there's a good chance that any of the hair that you see
3:21
in these pictures today would be a homemade haircut.
3:24
- I would be the barber.
3:25
- Mama cut both my ears one time.
3:28
- One night when he was six years old,
3:30
I said, "Now son, Mama's gonna cut your hair."
3:32
I went to cut around this ear,
3:35
laid it open with the scissors.
3:37
- Because my hair used to come down
3:38
to the bottom of my ears.
3:40
That that was the line.
3:42
- Yes, oh my God.
3:45
- Just took the bottom off of it.
3:47
- I'm only a little jumpy now because of it.
3:53
The worst haircuts in the world belong to me.
3:55
- Oh, my poor baby.
3:56
- And then, when I was old enough to afford haircuts,
3:58
I decided to go with the mullet.
4:00
- (laughs)
4:00
- So I stayed in the terrible hair realm for a long time.
4:05
Okay.
4:05
- All right, so 350, about 25 minutes.
4:09
All right Jamie, come on down
4:10
because we're going to do sour cream pork chops--
4:14
- With fresh vidalia onions.
4:14
- --with a vidalia gravy.
4:16
- Yes, ma'am.
4:17
- So I got our pan heating up.
4:18
- Okay, I'm gonna salt and pepper these chops.
4:20
- Yeah.
4:21
- We've got four nice, thick pork chops that are boneless.
4:24
I'm gonna add the stuff that's gonna make our gravy,
4:28
and I'm gonna need one cup of beef stock,
4:32
a teaspoon of yellow mustard, do that,
4:36
and a little paprika.
4:40
- Right in there.
4:41
- Right in there.
4:42
This is all ready.
4:43
- I got some parsley for you, too.
4:45
- Okey-doke.
4:46
And that's it.
4:48
Okey-dokey.
4:50
So we're gonna cook these pork chops now.
4:53
About three or four minutes on each side.
4:55
Where is your brother?
4:56
- I don't know, Mama.
4:58
I'm not in charge of him.
4:59
- Well, I'm going to get him on the phone,
5:01
cause I talked to him last night
5:04
and I said, "Now Suzette and Amy is here."
5:07
I maybe shouldn't have given him a heads up.
5:09
- (laughs)
5:10
- He's probably at home sitting on the toilet,
5:14
a nervous wreck wondering what these girls
5:16
are gonna say about him.
5:18
(laughs)
5:20
Jamie cut up about a cup and a half of vidalia onions.
5:24
- You know, what's so nice about having a girl
5:26
as a close friend is that I dated a few of her friends.
5:29
- (laughs)
5:30
We would take the kids every year, y'all,
5:32
to Panama City on school break.
5:35
- They would take 10 up, the high school would.
5:38
Up to no good.
5:41
No good.
5:44
- No good, y'all.
5:45
I volunteered as cook, babysitter, dish washing,
5:50
(indistinct) but we had the best time.
5:54
Let's go ahead and pour all of our stuff on top of it
5:59
and we're going to put this on simmer
6:03
and we're just going to let this cook.
6:05
I think the girls are gonna love it.
6:07
Coming up next, we reminisce with the girls
6:10
as we taste the artichoke dip
6:11
- And some things never change
6:14
as Jamie and Suzette are still battling for who's best.
6:18
- So let it be known, I won.
6:23
I so hope y'all are enjoying the show.
6:26
And if you do.
6:28
Be sure to click like, subscribe and
6:30
notification bell so you'll never miss a video.
6:34
And we'll be right back after the break.
6:44
- Well y'all--
6:45
- And, here we go!
6:46
- (laughs)
6:47
- Well y'all we finally got the girls out.
6:50
Now, this is Suzette.
6:52
This is Amy.
6:54
You know, I didn't have to give birth
6:56
to any girls, thank you Lord.
6:59
But these are like my girls because
7:01
your mama and I were best friends.
7:03
I'm so glad y'all are here!
7:06
- So good to see y'all!
7:07
- Group hug!
7:10
- Bring me one of those.
7:11
- Oh my goodness.
7:12
- Suzie, Itch.
7:13
- That's hot.
7:14
- Oh, yummy.
7:15
- Yeah, so let me tell y'all,
7:16
now when Amy was a little girl,
7:18
she was mean as a snake, y'all.
7:21
I remember one time we were out shopping
7:23
to the outlet store with y'all
7:25
and Amy run around with that straggly hair,
7:28
and I looked at her one morning
7:31
and I was a big fan of Tubby and Lulu.
7:34
Well, they had this little friend
7:36
with this straggly hair named Little Itch.
7:39
I said, "Oh my God, child, you look just like Little Itch
7:42
from Lulu and Tubby."
7:44
30 something years later, y'all,
7:46
we still call her Little Itch.
7:48
- Little Itch.
7:48
- Little Itch.
7:49
- Little Itch.
7:50
Suzette used to challenge--
7:51
- I'm gonna put a little bit--
7:53
- --Jamie to arm wrestling.
7:55
She would beat his brains out.
7:57
- I can probably still take you down.
7:59
- I stay you still got it, sister.
8:00
- I'll let you win.
8:01
I'm still strong.
8:02
- Let's save it for dessert.
8:03
- I know you're strong as an ox-- - We'll do it after.
8:05
- --you get it from your mama.
8:06
- I know.
8:07
- I think we need a challenge here, don't you?
8:09
- I do.
8:10
I double dog dare you, Jamie.
8:11
- Yes.
8:12
- Come on.
8:13
Let's do it.
8:17
- You take it girl.
8:18
- We gonna do it professional?
8:19
- Yeah.
8:20
- You ready?
8:21
- I'm ready.
8:22
- I'm not as strong as I used to be.
8:23
- I'll count, I'll count.
8:24
- All right, ready?
8:24
- Get ready.
8:26
Get set.
8:27
Go!
8:30
- I can't do it.
8:30
- Yes you can, Suzette!
8:32
- [Amy] You can do it.
8:33
- You can do it, sister.
8:35
(laughter)
8:39
- You dog!
8:42
- So let it be known that I won, but I cheated.
8:45
So we'll never know.
8:47
You're still strong.
8:47
- I know!
8:48
- I still wouldn't foot race you though.
8:49
- I can't run.
8:50
(laughter, talking over each other)
8:53
- It didn't take you but 43 years, son.
8:55
Way to go.
8:56
- I know.
8:57
- I'm out of breath
8:58
- I am too.
8:59
My arm hurts.
8:59
(laughter)
9:02
- [Paula Narrating] Coming up next,
9:03
- I give the girls a quick
9:04
run down on our punchbowl cake.
9:06
- So that's 'Baking a Cake 101' today, y'all.
9:09
- and later it's time to start layering
9:12
this beautiful masterpiece.
9:13
- Who's ready to taste.
9:15
- [All] I am.
9:21
I hope y'all are enjoying the show
9:23
and I want to hear from you.
9:24
Tell me what recipes or videos you'd like to see me
9:27
make by just leaving a short comment below.
9:31
Now, let's get back to the show, y'all.
9:40
- Girls!
9:41
- [All] Ohh!
9:42
- [Paula] Tasting time again, girls.
9:44
- Looks great.
9:45
- I'm gonna bring our pork chops.
9:46
- You need some help, Mom?
9:47
- Woo! I got it son.
9:48
- [All] Ooh!
9:49
- Heavy, heavy, heavy pan.
9:51
I'm gonna just move these pork chops around the edge
9:55
because I'm going to add us--
9:57
- Not sour cream.
9:58
- Yes I am.
10:00
I'm gonna add a cup of sour cream
10:03
to our vidalia onion gravy.
10:07
We gonna put this on top of our grits.
10:10
- It's gonna be delicious isn't it?
10:11
- Oh, what you talking about?
10:12
- What you talking bout, Willis?
10:14
(laughter)
10:17
- Yum.
10:18
- Here, you got it, Mama?
10:19
- How is it, girls?
10:20
- Yeah, I'm just trying to get everything good and wet.
10:22
- [Amy] That looks good.
10:27
- All right, dig in!
10:28
- Let's taste.
10:33
- I got to try to the grits with that sauce.
10:35
- Yes, look at that.
10:37
- Ooh, y'all.
10:37
- [Amy] Cheers me.
10:39
- Cheers.
10:41
- [Suzette] Is it hot?
10:42
- [Jamie] It's hot.
10:42
- Yeah, cheers me.
10:45
- [Jamie] I'm already chewing.
10:46
Yeah.
10:47
- I like the sauce on the grits.
10:50
- Well listen, I could stand up here
10:52
and eat this rest of the day,
10:54
but we got a cake to make.
10:56
We're gonna make a five flavor pound cake.
10:59
A standard pound cake.
11:01
Two sticks of butter.
11:02
- Not two sticks.
11:03
- Yes, honey.
11:04
(laughter)
11:06
I know it's a little shy.
11:08
We could really stand three,
11:10
but we're just gonna do two today
11:12
cause this is a diet pound cake.
11:14
(laughter)
11:15
- [Paula] All right, so in goes the butter
11:17
and Jamie's gonna add three cups of sugar.
11:24
And we're just going to beat that till it's creamy.
11:26
So Suzette, if you would measure out three cups
11:30
of the all-purpose flour.
11:32
Amy, if you would be cracking our five eggs.
11:36
- Okay.
11:37
- And then when you get through with that
11:39
we need half a teaspoon, or a teaspoon, of zest
11:44
from the orange and lemon.
11:46
Why don't you go ahead and measure up our flavorings
11:52
and just put them into our buttermilk?
11:56
Because we're gonna add that buttermilk alternately
11:59
with our dry ingredients.
12:02
- So Mom, I've got the flavorings in the buttermilk.
12:04
One teaspoon of vanilla, a quarter of a teaspoon
12:07
of almond, a quarter teaspoon of my favorite smell
12:11
in the world: coconut.
12:13
- (all agreeing)
12:13
- So that's three and now orange is four and lemon is five.
12:16
So that's our five flavors.
12:18
Right?
12:19
- Right, that sounds great, yes.
12:20
And this orange smells so good.
12:22
- [Suzette] It does.
12:23
- And Suzette has in our dry ingredients,
12:26
three cups of all purpose flour,
12:29
one and a half teaspoons of baking powder,
12:32
a quarter of a teaspoon of salt.
12:35
So that's 'Baking a Cake 101' today, y'all.
12:39
- I know we needed it!
12:40
- So we're going to start, Suzette,
12:42
and I'm going to add our eggs and beat
12:44
well after each addition.
12:46
- And you did one egg?
12:47
- One at the time.
12:49
And then we get our eggs in.
12:51
We're gonna start with our flour and our buttermilk.
12:58
There you go.
13:03
- [Suzette] All right.
13:04
- Now we're gonna start with our dry.
13:07
- (all) Whoa!
13:09
- You're killing me, son, you're killing me.
13:11
(laughter)
13:13
- You know, I feel like I've stepped
13:14
back in time, about 30 years.
13:17
- Who is dumping stuff?
13:18
- I know, but you turn that beater on so high!
13:20
- How else do you suspect that
13:21
I'm going to get it mixed up?
13:23
- And that's-- Whoa!
13:24
And that's the way they did when they were little.
13:26
They were on just like this.
13:28
- [Jamie] Here comes the wet.
13:29
- All right, there you go.
13:33
- You meant for that to happen.
13:34
- Watch it, son!
13:36
We put in our teaspoon of lemon
13:39
and our teaspoon of orange zest.
13:42
Alright. There we go.
13:44
Looking good.
13:46
All right, about half that, son.
13:48
All right, now.
13:49
Just do it just like that.
13:51
Just pick up that bowl.
13:52
- [Suzette] All right.
13:54
- [Paula Narrating] All right, girls.
13:55
Earlier, I buttered and flowered our cake pan.
13:58
Suzette, if you'll just turn his pan now,
14:00
- Okay.
14:00
- honey, while he's pouring.
14:01
- Sorry.
14:02
- That's all right.
14:03
All right y'all, we're gonna put this in the oven
14:04
at 325 degrees and we're going to bake it
14:08
for an hour and 15 minutes.
14:11
Let's just make sure that's kind of level.
14:16
There we go.
14:19
- There you go.
14:21
- Into the oven 325, an hour and 15 minutes,
14:25
and because today is a special Southern day
14:28
with you girls being in here with us,
14:31
we're going to take this cake
14:33
and we're gonna just kinda take it over the top.
14:36
We gonna turn it into a punch bowl cake.
14:40
- [Paula Narrating] Coming up next
14:41
- All right, let's eat it.
14:42
- We dig in to this delectable dessert.
14:45
- That's good, Paula.
14:49
I so hope y'all are enjoying the show.
14:52
And if you do.
14:54
Be sure to click like, subscribe and
14:57
notification bell so you'll never miss a video.
15:01
And we'll be right back after the break.
15:10
- All right, our cake is out of the oven, it's cooled.
15:14
We're going to turn this into a punch bowl cake, y'all.
15:17
But before do that, why don't we sample
15:20
our pound cake?
15:24
- Okay.
15:25
There you go.
15:27
Is it good?
15:27
- I want some of the top, Mama.
15:29
- Oh, okay.
15:33
- That's delicious.
15:33
- Isn't it delicious?
15:35
It's from that butter.
15:37
All right, I'm going to give everybody a job.
15:40
All right, Amy, I need for you
15:42
to quarter those strawberries.
15:45
Suzette, I need for you to drain this crushed pineapple.
15:49
We got a 20 ounce can.
15:52
We have got three bananas here, son, and slice your bananas.
15:58
Now I've got the custard part already ready
16:00
and it's just a coconut instant pudding that I whipped up.
16:05
So we've got all the ingredients we need.
16:08
We're going to turn this into a trifle,
16:12
and I'm just going to break half of our cake.
16:15
And Jamie's just squeezing a little lemon juice
16:18
on the bananas just to keep them from turning brown.
16:20
All right, so I'm going to take our coconut pudding
16:25
and just spread it around.
16:27
Kind of put that all over our cake.
16:31
You got the pineapple draining?
16:32
- [Suzette] I got it.
16:33
- All right, I'm going to take half of it.
16:36
This has kind of, like, got all
16:37
the ingredients for a banana split doesn't it, Jamie?
16:40
- Yep. It's missing the chocolate, that's it.
16:42
- Yep.
16:43
And then I'm gonna take the strawberries, use that juice,
16:46
and then we're just going to put those around.
16:49
All right, now we need whipping cream.
16:52
- [Amy] Lord.
16:53
- Whatcha say, Little Itch?
16:54
- I said "Mmmm".
16:55
(laughter)
16:57
- Now cake, son.
17:01
And then the last half of our custard,
17:04
the last of our pineapple.
17:06
All right, now bananas, son.
17:08
The rest of those strawberries,
17:12
and then the whipped cream.
17:14
- Yum!
17:15
- Yes, and then I'm just going to
17:17
take the back of that spatula.
17:19
- [Suzette] We're like vultures.
17:20
- I know.
17:22
Amy, pass me a strawberry.
17:24
- Okay.
17:26
- Gonna fan it
17:28
and put it in the center of that cake.
17:32
Isn't that beautiful?
17:34
- It really is.
17:35
- [Paula] So who's ready to taste?
17:37
- (all) I am.
17:38
- You're getting all the way down at the bottom.
17:40
- I'm trying to get some juice for you, Mama.
17:46
- You know, I've kidded every one of y'all today.
17:50
Talking about how bad y'all were, you were bad.
17:52
- (laughs)
17:54
- You weren't much better.
17:55
- Especially you, Itch.
17:57
- But no, I wasn't much better.
17:59
But I'm so proud of the way y'all have turned out,
18:02
and we just love y'all to pieces.
18:06
And it's time to say goodbye.
18:08
- All right.
18:09
- Perfect timing, my dessert is (indistinct)
18:11
- God, you lapped that up, brother.
18:13
- It was good.
18:14
- Well you can fill it back up, son.
18:18
Hey, y'all, it's Paula Deen.
