hey y'all I'm Paula Deen and today
0:03
you're in for some good old southern
0:06
hospitality cause I'm throwing a
0:09
cocktail party and before we get started
0:11
I've just got a head down to one of my
0:13
favorite shops here in Savannah called
0:15
kitchen caboodle and I'm gonna be
0:18
picking up an ice ring that I've just
0:20
gotta have for my punch and what a fun
0:22
surprise it was to bump into my boys it
0:25
looked like they were planning a little
0:26
party of their own well I'm gonna have
0:28
to hurry if I'm gonna get everything on
0:30
the table on time just start I'm gonna
0:33
create my creamy onion canapes and pecan
0:37
stuff dates that are simply scrumptious
0:40
and then it's my cedar plank salmon
0:42
topped with them with sabi cream that's
0:45
gonna be the main attraction for the day
0:48
and finally no southern cocktail party
0:51
would be complete without my perfect
0:53
punch so y'all put on your party dress
0:56
and grab your favorite friend cuz we're
0:59
gonna party

1:31
hey y'all I'm finally taking time out
1:35
tonight to have a cocktail party for a
1:38
few friends and I've gotten everything
1:41
working in under way but I've scoured my
1:44
cabinets and I can't find my ice ring
1:46
and I can't do this party without one so
1:49
I'm going to see my friends down at
1:50
kitchen caboodle and I hope you'll come
1:52
along with me because their shop is just
1:55
adorable
2:02
in the world I still not recognize those
2:05
voices I'm having a cocktail party
2:10
tonight so it you're gonna do it some
2:14
martinis great right we're gonna grill
2:17
tonight
2:17
Bobby's actually what are you doing I'm
2:19
gonna cook tenderloin and fire roasted
2:22
corn and I get to pay about this is what
2:24
y'all oughta be
2:26
[Music]
2:29
[Laughter]
2:33
I'm actually making a Southern Comfort
2:35
punch and y'all y'all saw how people use
2:38
making those eyes rings cannot find my
2:41
ice ring anywhere so that's all I knew I
2:43
could run down here and find them from
2:45
Jamie so that's what I'm doing honey
2:47
here well that's great it's so good to
2:49
see my boys I see mama loves you so much
2:59
all right oh hey gonna get that for
3:02
month yeah I think we should I hope that
3:08
you have a full set of these purses
3:11
maybe in the back I'm sure we do okay
3:14
you want to give this for mom make sure
3:16
to ring this up well yeah I'll stick it
3:17
in her bag all right let me go look for
3:21
this glasses thank you very much
3:22
I can't tell you I've looked everywhere
3:24
for that hey mom well listen I have
3:27
gotten to run I'm running so late oh you
3:30
don't get that for me please cousin and
3:32
telling me I'm sorry I couldn't wait
3:34
okay I'll see y'all later
3:35
all right mother y'all have a great
3:37
party what did you do gel on your
3:39
buddies I said hey
3:45
I can't wait to see the expression on
3:49
her face once you see the net
3:58
how'd y'all like kitchen caboodle in it
4:01
the cutest shop you've ever seen and
4:03
naturally I can always count on them to
4:06
have just what I need for my kitchen
4:07
they know that I'm just a nut over tea
4:10
towels and look at this one that they
4:13
stuck in my bag it make you well I'm
4:17
gonna do a little twist
4:18
try salmon for my cocktail party tonight
4:21
so we've got our piece of cedar that has
4:24
been soaking about four or five hours
4:26
and we go all out board with a little
4:29
olive oil
4:31
he's ready for our fish we're just gonna
4:34
transfer our fish to a piece of cedar
4:37
just wipe a little olive oil on him all
4:40
right now all we're gonna do is salt and
4:43
pepper him nicely and he's ready to go
4:46
in the oven
4:47
now this is a great dish prepared on the
4:49
grill outs not over charcoal but I've
4:52
opted to just throw this in the oven and
4:54
cook it and he's gonna take probably 12
4:57
to 15 minutes total cooking time all
5:09
right so we're gonna let that cook for
5:11
about 10 to 12 minutes and while our
5:13
fish is cooking I'm gonna come over here
5:16
and make up with sobby cream sauce to
5:18
serve along with it and this is really
5:22
really tasty if you like really kind of
5:25
hot hot stuff so I have just poured my
5:30
whipping cream in here and in this dish
5:32
I'm gonna make my wasabi paste and in
5:36
order to bring it from this state to the
5:39
state that you see on your plate in the
5:41
restaurant you simply add water to it
5:44
and it only takes a little bit and get
5:51
that going until I have a paste worked
5:54
up all right so we got our wasabi going
5:57
on and I'm gonna just beat this until it
6:01
forms nice soft peaks
6:07
all right that looks good now we're just
6:09
gonna come over here and fold in some
6:13
fresh lemon juice a little salt and our
6:19
wasabi and you can put as much or as
6:25
little as you want but Michael and I
6:29
really like it with a lot of kick see
6:32
I'm gonna tie all this up to sit along
6:35
with our salmon oh it looks really
6:38
really good doesn't it
6:40
right now smell our fish and I'm ready
6:44
to see if it's about ready oh it's just
6:48
Cicely and smelling so good and aroma
6:55
from the cedar coming up into the salmon
6:58
is unbelievable and it requires so
7:02
little garnish this dish really stands
7:05
on its own I'm gonna get me just a
7:08
little then I'm gonna cut this tail very
7:10
very neatly so nobody will know I've
7:12
been there
7:13
wow it looks and smells like perfect
7:17
salmon and then I'm gonna come back over
7:21
here and get me just a little bit of
7:25
wasabi cream it's incredible in a few
7:34
minutes I'm gonna be showing you how to
7:35
make those wonderful pecans stuffed
7:37
dates wrapped in bacon and creamy onion
7:41
canapes
7:48
[Music]
7:56
hi I ran out of bacon I had to run get
7:59
some more
7:59
this next appetizer then I want to show
8:02
you I've been making since I was a young
8:05
bride in my 20s now all we're gonna do
8:07
is start with a whole date you may find
8:13
that some of the dates have seeds in
8:14
them and you'll just have to remove the
8:16
seed but these have already been removed
8:18
and I'm gonna take a pecan and just tuck
8:21
right in that fat rich date and then I'm
8:25
gonna come over here and I'm gonna get
8:26
my bacon and I'm gonna cut this into
8:29
fourths I'm gonna cut it right down the
8:32
middle first and then go to my other two
8:35
pieces and cut those right down the
8:36
middle giving me four equal pieces and
8:39
I'm gonna take my date and just wrap my
8:41
bacon and toothpick it holding that
8:47
bacon on and on to the tray they go all
8:51
right we've got enough to go ahead and
8:54
cook and the great thing about these is
8:56
we can cook them early in the day
8:58
because these don't have to be served
9:00
hot I have to tell you though they
9:03
aren't good warm so you'll just need to
9:06
watch your oven and bring the bacon to
9:08
the degree that you like it we're gonna
9:13
put these in a 400-degree oven I'm gonna
9:15
bake them about 10 to 12 minutes so
9:18
while those are making we're gonna start
9:20
on caramelized onion canapes now I've
9:23
got my pan nice and hot and I'm gonna
9:26
put a couple of tablespoons of olive oil
9:29
and we are gonna use just a regular
9:32
onion and we're gonna slice it into
9:34
onion rings just like that you can hear
9:38
our pan sizzling and we want to cook
9:41
these over like a medium heat because we
9:44
don't want them to burn we just want to
9:45
caramelize them
9:49
in fact I've already got some that I
9:51
caramelized now did up my bread earlier
9:55
and toasted it and I chose to use a very
9:59
thin slice of bread the thin works very
10:02
nicely because it kind of gets like a
10:04
cracker and just choose the biscuit
10:08
cutter of your choice and I kind of
10:11
rather like the small ones for this
10:13
appetizer I can actually almost get two
10:17
rings out of there and then I'm going to
10:18
throw those to the side and I'll use
10:20
those scraps as croutons later on so you
10:23
just want to put these on a cookie sheet
10:25
and put these in the oven and dry them
10:28
out the main thing about these is you
10:30
want them crispy now we're gonna go in
10:33
for the good stuff that makes it rich
10:35
and a little sinful and we're gonna do
10:38
that by mixing up an 8 ounce package of
10:41
cream cheese with a little seasoning
10:45
salt a teaspoon of Worcestershire and
10:51
you can use your imagination on this you
10:53
can kind of put this together any way
10:55
you like I'm gonna put some cracked
10:58
pepper and for a little heat I'm gonna
11:02
put in just a little cayenne pepper and
11:05
just mix that together and I've got my
11:08
cream cheese it such a soft state that
11:11
you'd only have to use a mixer you can
11:13
just do it right up with a spoon all
11:16
right I'm gonna turn these off and move
11:19
them out of our way and I'll finish
11:20
those off in a little while but I want
11:24
to go ahead and put these together and
11:25
get these in the oven and now I'm gonna
11:27
take our bread and just smear a little
11:29
of the cream cheese on it I just love
11:32
making appetizers with breads they're
11:35
hearty and filling and everybody loves
11:38
good bread so I'm gonna move this out of
11:42
our way
11:43
and bring our onions up here right now
11:46
we're gonna take our camera last onion
11:48
and we're gonna place a little bit on
11:51
those spread round and aren't they
11:53
pretty they're kind of interesting on
11:55
those little rounds of bread now I'm
11:58
still not quite finished with these but
12:00
I smell this bacon so I've gotten to
12:02
check these dates and see if they're
12:05
ready when they are I knew I smelled
12:07
them look how yummy those look all right
12:11
now we're gonna finish this off quickly
12:14
by just putting a little dab of one of
12:20
my favorite condiments mayonnaise all
12:23
right right now I'm gonna sprinkle them
12:25
with paprika because the paprika is
12:29
gonna give them a nice Brown look and
12:31
these truly don't take but just a couple
12:34
of minutes in the oven and that's it
12:36
just that simple right now I'm just
12:48
gonna loosen these from the pan and put
12:51
these right up here and by the time I
12:53
get through doing this our creamy onion
12:57
canapes should be ready right let's see
13:00
if the mayonnaise is kind of melted down
13:02
oh yeah they look good all right these
13:11
looks so good and you see those truly
13:17
don't take but just a minute I think
13:20
they're just gonna love these two dishes
13:23
just gonna try one
13:34
the onions and the mayonnaise in the
13:37
cream cheese is so so good but this is
13:40
people food Remy you don't like dates
13:45
mmm after all these years these are
13:51
truly still one of my favorite little
13:53
appetizer bites you don't stick around
13:55
because we're fixing a whip up the life
13:58
of this cocktail party
14:00
[Music]
14:07
ah you know every time I make something
14:19
like this I can't help but think of my
14:21
mama and daddy they used to make what
14:24
they called a sledgehammer punch and I
14:26
asked him one time I said well why do
14:28
you call it a sledgehammer punch and
14:30
they laughed and said because when it
14:33
hits you it feels like a sledgehammer
14:35
hitting you upside so I can't help but
14:40
think of them now the first thing I'm
14:42
gonna do is take my mold that I found
14:45
from kitchen caboodle
14:46
and I'm gonna put a few rings of oranges
14:50
in the bottom just a few and I'm gonna
14:53
stick a cherry down there I'm not gonna
14:55
put too much because this is actually
14:58
gonna float a little bit on us and I'm
15:01
gonna pour just a little bit of lemonade
15:04
just a little and we'll move that cherry
15:09
back up there and now I'm gonna put this
15:12
into the freezer and I'm gonna freeze
15:14
just this little bit and I have one here
15:18
that I've already frozen and I'm gonna
15:22
come back and I'm gonna put another
15:24
layer of fruit and I'm just gonna kind
15:28
of mix things up I'm gonna put some
15:30
lemon slices and some lime slices
15:34
because when we unmold this onto our
15:37
punch we just want to see lots of layers
15:40
of colors I'm gonna put a little mint
15:42
and I'm actually gonna slip that mint
15:44
inside the orange so it won't float I'm
15:49
gonna finish putting some cherries
15:51
around it and a little bit more mint
15:54
over here now you can kind of shake this
15:57
up any way you want to I'm gonna pour
16:00
another layer of lemonade and then this
16:04
will go back into the freezer and will
16:07
freeze this top layer in that pretty I'm
16:11
gonna stick I think just a few more
16:13
slices around and you want to use a
16:16
lemonade or even a ginger ale you don't
16:20
want to nest
16:20
early use water as your ice ring melts
16:24
the water will weaken your punch and you
16:26
don't want to be serving a weak punch at
16:28
your party so this is ready to go into
16:30
the freezer in that pretty it's gonna
16:33
look luscious on top of our punch
16:42
speaking of punch I'm gonna start this
16:45
particular punch with an orange
16:47
concentrate and some banana daiquiri mix
16:53
and some fresh lemon juice all right so
16:59
we're gonna add some ginger ale I'm
17:01
gonna start with a 2 liter and maybe add
17:04
half of another one all right I've got
17:08
to wait for that fist to go down to see
17:10
where we are all right now we're gonna
17:13
put a little bit of this bottle in there
17:17
and now for the Southern Comfort look
17:21
that's gonna kill those bubbles now on
17:24
your Southern Comfort you can make this
17:26
as strong or as light as you like I've
17:29
used about a half a bottle right now I'm
17:34
gonna come in and taste that and see if
17:36
it's strong enough actually I don't
17:43
believe that strong enough for the men
17:45
so I'm gonna go a little bit more oh my
17:48
goodness that little bit turned into the
17:52
whole stinking bottle didn't it all
17:57
right that foam you can see since I put
17:59
the alcohol me and it's really starting
18:01
to disappear on us and it's ready for
18:04
our ice ring oh and it's pretty pretty
18:14
pretty pretty and this should come out
18:18
very very easily and it did we're just
18:24
gonna slip our ring right down into our
18:28
punch and you can see how pretty that is
18:32
and I think the cook needs to have a
18:34
glass don't y'all get that juice it's
18:39
been right around the ice ring looks
18:45
good and so quick and simple to make
18:48
here's to you oh it's delicious I'll see
18:57
y'all in a few minutes I'm gonna give
18:59
you some tips on how to make your
19:01
cocktail party go smooth as silk
19:11
[Music]
19:18
all right for a few quick tips it's
19:20
gonna make your party go smoother you
19:22
can actually take your bacon-wrapped
19:24
dates and pop them in the microwave and
19:26
get your cooking time down to about two
19:29
minutes and on your creamy caramelized
19:31
onion canapes if you don't have time to
19:34
fool with the bread you can actually do
19:36
this on a cracker but while we're
19:38
talking about bread I want to show you
19:41
the set of biscuit cutters they actually
19:45
come in a little canister and they range
19:48
in little to big and these are a
19:51
wonderful investment that would last you
19:53
a lifetime and on your salmon o-cedar
19:56
check with your grocery stores or the
19:59
fish market because you want to be
20:00
careful where you get your cedar because
20:02
you certainly don't want to get any
20:04
that's got any chemicals in it that
20:06
could actually harm someone I'm getting
20:10
so excited about my cocktail party
20:12
tonight I stay so busy that sometimes I
20:14
I don't get to do this as often as I'd
20:17
like to but I'm looking so forward to
20:19
having a few friends in tonight and I
20:21
hope that they're gonna just love the
20:23
cedar salmon with the wasabi sauce and
20:26
the creamy onion canapes and one of my
20:29
favorites the bacon-wrapped pecans
20:31
stuffed dates and I know they are gonna
20:34
love this Southern Comfort punch with
20:37
that pretty ice ring in it I hope that
20:40
y'all have a great time at your own
20:42
cocktail party and I'll use a few of
20:44
these things and until then America I
20:47
wish you best dishes and love from my
20:51
cocktail party to yours
