hey y'all I'm Paula Deen and y'all want
0:04
to get ready for pork pork and more pork
0:06
my kitchen is just full of it today and
0:10
these recipes are sure gonna be bellied
0:13
pleasing but first I've got to head over
0:16
to striplings general store and pick up
0:18
one of my favorite cuts of meat an old
0:21
country-style backbone and then I want
0:24
to head back to the kitchen where I'm
0:26
gonna cook y'all up a perfect breakfast
0:28
food my piggy pudding and then I'm gonna
0:32
cook those backbones up with some nice
0:34
fluffy rice and then I'm gonna be fixing
0:37
the perfect savory side dish from any
0:40
kind of pork the traditional baked apple
0:43
and finally a peanut butter grill pan
0:47
who would have thought that a peanut and
0:50
a pig would taste so good together
0:53
so y'all get out your wet nap because
0:56
this little piggy is going to market
0:59
one's gonna have backbone and rice and
1:02
one is gonna have grilled ham and in
1:05
order for all the little piggies to have
1:07
this this little piggys going to the
1:10
market and I'm not talking just any
1:12
market I'm talking about the best
1:15
country market in these parts
1:17
we're heading to striplings general
1:20
store to see my friend Skeeter he's just
1:22
a good old southern butcher boy so
1:24
what'd you say let's get in and see what
1:26
he's got for me today how you doing
1:33
doing fine how about you good I'm glad
1:36
to see you again
1:37
good to see you and do you know this is
1:39
the only place in the whole world that I
1:41
can find country-style backbone well
1:45
when we make our sausage we couldn't run
1:47
off the fresh hogs if you got some oh
1:49
how come y'all the only ones doing it
1:51
like this we do it the old-fashioned way
1:53
and we take it a time he cut the
1:56
old-fashioned cuts on me old-fashioned
1:58
is still the best it's still down south
2:00
it's still the best all right
2:02
thanks I need about three of those
2:04
please excuse me this just one more
2:06
thing before I leave do you know I've
2:07
never been in this store that I didn't
2:09
leave with beef jerky y'all have the
2:12
best in the
2:13
entire world so I want two pounds of
2:16
beef jerky boy this gotta be the best
2:22
dadgum jerky in Georgia but now it's
2:25
time for me to get on back to my kitchen
2:26
and start on my piggie party thanks
2:29
Peter
2:30
I just love Skeeter Skeeter is so good
2:39
there's no store like striplings well
2:41
actually that's untrue there's two
2:43
places that I just love shopping for
2:46
meats and that striplings in Lake
2:50
Blackshear Georgia right outside of
2:52
Albany and Cordele and the other places
2:54
raised butcher shop on Montgomery Street
2:57
in Savannah but the big boys are not
3:00
carrying a lot of the cuts of meat that
3:03
I'm used to cooking and if you can find
3:06
you a little independent butcher you
3:09
know be nice to him you know slip him a
3:11
50 at Christmas time but take care of
3:13
that butcher because he can really take
3:16
care of you and I can't hardly wait just
3:19
start on this backbone that I have that
3:22
Skeeter cut for me but before we do that
3:25
I'm gonna start on piggy PUD mmm we're
3:29
just gonna give that pan a quick spray
3:31
and this first recipe I'm gonna show you
3:34
is just great for weekend breakfast or a
3:37
Sunday night supper all right now we're
3:40
just gonna throw these in here some
3:42
brown and serve link sausage and while
3:46
those are getting going we've got some
3:49
fresh apples soaking up some lemon juice
3:51
so they won't brown on us you're not
3:53
cutting mine fairly thin this cooks in
3:57
like 25 minutes all right now I'm gonna
3:59
go over here and drain the apples
4:06
I think our sausage er Clemmy brown
4:16
enough ain't nothing like a little pig
4:19
yo all right I'm gonna take and
4:24
cornbread mix and it does have sugar in
4:27
it so it's sweet which is gonna give us
4:31
our sweet and our savory all right and
4:34
I'm gonna take our sausage and toss them
4:39
into our greased casserole dish and then
4:43
I'm gonna take the drained apples toss
4:47
them in and then I'm just gonna toss it
4:51
all around and then we're just gonna
4:57
pour I'd cornbread mix over that and
5:02
that's how you put piggie putting
5:05
together now we're gonna throw this in
5:06
the oven and we're gonna bake it for
5:10
about 20 or 25 minutes all right I've
5:20
got that in the oven and while that's
5:21
baking I'm gonna start probably one of
5:24
my favorite dishes in the whole world
5:26
and that's backbone and rice all that
5:29
meat around that bone is so unbelievably
5:32
tender and just in case the pork doesn't
5:37
have enough fat in it I'm gonna start
5:40
with a stick of butter all right I'm
5:46
gonna add some diced onions all right
5:53
I'm just gonna throw my backbone in here
5:58
and filling this pot full a backbone all
6:03
right now I'm just gonna cover it with
6:05
water
6:12
and I'm gonna throw in a few bay leaves
6:16
I'm gonna put a little salt and a little
6:19
pepper and then I'm gonna sprinkle in
6:22
just a little cayenne pepper because
6:25
Michael likes hot stuff and I'm gonna
6:29
probably let that cook for 45 minutes to
6:32
an hour the one thing you'll just want
6:34
to make sure is that your pork is done
6:36
don't want to eat any raw pork all right
6:40
so we're just gonna let that cook away
6:42
and I'm gonna come over here in this
6:44
other oven cuz I have a piggy pudding
6:47
waiting on me look how good this looks
6:59
all right I want to just smear this with
7:02
a little butter before I eat it and it's
7:11
important that I get my fruit in today
7:16
so one piece of apple gonna drizzle that
7:23
hot pure maple syrup I'm not stingy with
7:28
a syrup at all cuz it kind of drinks it
7:31
up you know
7:37
hmm it's a perfect Sunday night supper
7:42
for Sunday morning breakfast and when we
7:45
come back I'm gonna finish up the
7:46
backbone in rice and later on we're
7:49
gonna be doing a grilled peanut butter
7:51
ham along with some baked apples
7:54
[Music]
8:00
[Music]
8:08
y'all know pig in apples just go
8:10
together you've seen the whole roasted
8:13
pigs with the apple in its mouth
8:16
well that's not done just cause it's
8:17
pretty it's done because they actually
8:20
taste good together so that's what we're
8:23
fixing to do next but before I move on
8:26
to that I want to come down here put our
8:27
rice in our backbone so that's balling
8:32
pretty good I'm just gonna pour that
8:35
rice in I think I want to add some more
8:39
black pepper so that looks good and I'm
8:46
gonna let it come back to a ball I'm not
8:48
gonna turn it down yet all right so I'm
8:52
gonna put the lid back on it and when I
8:55
hear it starting to rattle I'm gonna
8:58
turn it down and let it simmer for about
9:01
ten more minutes or until it's done
9:04
but in the meantime I'm gonna start
9:05
getting our apples ready for our Pig and
9:08
all I'm gonna do is core this Apple and
9:11
just love baked apples and then I'm
9:16
gonna just cut the top off of that a
9:19
little bit and be sure when you call out
9:22
your apples you don't want to cut
9:25
through the bottom because you want this
9:27
Apple to act just like a serving bowl
9:28
all right now we're gonna take sugar and
9:32
cinnamon and a little fresh ground
9:36
nutmeg stir that together all right
9:41
let's see let's go back over here our
9:44
rice is come to a nice ball I just want
9:47
to give it another quick stir now we're
9:53
gonna turn that down and just let it
9:55
cook till it's absorbed most of that
9:58
water actually liquid that's no longer
10:01
water y'all that's pork stock all right
10:06
now I'm just going to pour our sugar
10:09
mixture in the center of each Apple
10:13
these are gonna be so delicious all
10:17
right now we're gonna take a pad of
10:19
butter and kind of stick him down in
10:22
there and then when we get these done
10:24
I'm gonna take some apple juice and just
10:28
pour around our dish so instead of using
10:31
water this will give it even a stronger
10:35
taste of Apple now we're just gonna take
10:37
some tinfoil and cover our apples
10:40
because we kind of want them to just
10:42
steam in that apple juice I'm gonna cook
10:47
them for about an hour and then I'm
10:49
gonna start checking on them cuz I
10:50
really like my apples nice and tender
10:58
okay let's take a look at our rice yet
11:02
oh my goodness it's absorbed all the
11:09
liquid
11:10
I just love green onions with my
11:13
backbone and rice I'm cool cut just a
11:16
little bit and throw it right there on
11:18
top I like it just like this but you'll
11:27
find this your dish sets your rice is
11:30
gonna keep absorbing your stock all you
11:32
have to do is just add a little hot
11:34
water to it in come some of that
11:36
fabulous backbone this is such a plain
11:40
dish it's so ordinary looking but it's
11:46
so powerful in flavor and I'm just gonna
11:50
add me a little parsley leaf I see a bay
11:53
leaf down in here will want to pick that
11:56
out
12:04
mmm I can't tell y'all how good this is
12:12
when we come back I'm gonna share with
12:14
y'all is a fabulous peanut butter
12:16
grilled center-cut ham so y'all don't go
12:19
anywhere
12:20
[Music]
12:27
[Music]
12:34
I'm fixing to get an important piece of
12:38
machinery out of my pantry for this next
12:42
dish one day I tried mixing up all this
12:45
stuff by hand and it was hard I learned
12:48
quickly that you either got to have a
12:50
food processor or a blender so I'm
12:54
starting on my buddy Ron's
12:56
peanut butter grilled ham and this
13:00
marinade needs to soak in about ham for
13:03
about three or four hours so I'm gonna
13:04
get started I'm starting with a chicken
13:06
stock and fresh garlic and grated onions
13:14
and when you use a grated onion it gets
13:17
all of that juice and flavor out of it
13:19
so this is gonna have a real strong
13:22
oniony flavor and I've got some honey
13:25
and it's gonna help sweeten up that ham
13:29
and peanut butter all right I've got
13:38
some soy sauce it's gonna make it salty
13:42
along with that sweetness of the honey
13:44
and this is just a Kitchen Bouquet
13:47
that's gonna make it dark really doesn't
13:50
have much flavor to me but they they say
13:52
it actually adds flavor all right so
13:55
we're just gonna blend that up
14:02
all right hmm it's just a bunch of
14:10
interesting flavors and that onion is
14:12
real real strong in it and I'm just
14:14
gonna pour this over our ham so we just
14:18
want to make sure before we put our ham
14:21
in the fridge that it's completely
14:24
covered and then during the day during
14:27
the three or four hours and I'm gonna
14:29
marinate it I'll keep flipping it around
14:31
in that pan I'm gonna have to wash my
14:33
hands I got sticky honey all over them
14:39
all right so I'm gonna throw this in the
14:41
fridge normally this would be cooked on
14:54
an outside grill over charcoal but today
14:57
I'm gonna grill it right here on this
15:00
cast-iron griddle and just give that a
15:02
quick squirt cuz I don't want it to
15:06
stick and I'm just gonna shake that off
15:11
just a little bit
15:18
that looks so good all right so I'm
15:22
gonna let that just grill away for a
15:26
while I'm gonna go back here to the oven
15:30
and check our apples cuz I think they're
15:32
probably ready I can see the steam
15:38
coming out they look so good and I want
15:51
to tell you a little bit about the
15:52
marinade what I'm gonna do when I grill
15:56
that other piece and take it all out I'm
15:58
gonna pour this up in a saucepan and I'm
16:00
gonna bring it to a rolling bowl so it's
16:04
nice and thick it's gonna be wonderful
16:07
alright let's come over here and check
16:09
on our ham
16:19
right so let's take our ham up but me
16:27
and my family I'd cut a seat just
16:32
serving size about the size of a folk
16:34
chop all right now I'm gonna put a
16:38
little extra sauce on mine and I'm gonna
16:42
sprinkle it with a few peanuts and to
16:45
make me think I'm eating healthy I'm
16:48
putting some green stuff on my plate and
16:55
I can't hardly wait to dig in I'm gonna
16:59
go ahead and while I'm tasting this one
17:03
I'm gonna put the other one on and let
17:06
it be cooking
17:09
well that's cooking I'm gonna be tasting
17:12
oh it looks so good I want to get me a
17:18
little bite of Apple too I thought it
17:23
was gonna be a princess bike but look
17:24
how big it turned into by the time I put
17:28
everything on it a new way to enjoy him
17:36
it's wonderful and I got to leave for a
17:40
minute but when I come back I'm gonna
17:41
show you all the cutest little piggy
17:44
napkins that I've made to go along with
17:46
this cute little piggy meal
17:50
[Music]
17:52
you
18:03
I'm just having more fun today with this
18:06
here piggy piggy show I've even made
18:09
some napkins for the family I've made a
18:12
Papa pig for Michael I've made a baby
18:15
pig for Anthony and a baby pig for
18:18
Michelle and these are the little pigs
18:20
that still live at home with us and I'm
18:22
actually working on my own right now
18:25
I bought just a plain linen napkin and
18:27
this is a stencil that I used and you
18:30
can go to your craft store and just find
18:33
any kind of stencils that you want
18:35
today's meal I'm actually doing the pig
18:38
stencil this is a special paint that you
18:41
can buy at the craft store and it won't
18:43
wash out of fabric so you'll want to be
18:45
careful that you don't get it on your
18:47
clothes so I'm just gonna Pat this paint
18:50
on this pig and I'm just gonna block
18:55
that a little bit and then I'm gonna
18:58
come in here and just press the piggy
19:03
down
19:09
I met a cute little pig and now I'm
19:12
gonna write my name on my napkin and
19:16
these napkins are great if you haven't
19:18
cut me over and you want to leave them
19:20
with a little parting gift they can take
19:22
this home and all you have to do for the
19:24
piggy tail is take a pipe cleaner and
19:29
just roll him around your finger to form
19:31
his tail and then wrap your napkin up in
19:34
it this the cutest little napkin I wish
19:39
I would look at this I've got my best
19:41
friend here with me my fork I can't
19:43
hardly wait to dig into all these
19:45
scrumptious dishes and I literally don't
19:47
know where to start with the grilled
19:49
peanut butter ham the piggy pudding the
19:52
backbones in rice just look at how good
19:55
the apples turned out you can see all
19:57
the cinnamon and nutmeg and sugar and
20:00
butter just pouring out of it but Michel
20:03
and the kids and I are definitely ready
20:04
to just pig out
20:06
and speaking of pigs this little piggy
20:11
since y'all loving best dishes to all
20:14
you other little piggies out there until
20:18
