Today I'm brunching it. I'm teaching a
0:02
home viewer some of my best tricks,
0:04
y'all. First, I'm going to make a
0:07
scrumptious orange coffee cake with the
0:09
most decadent glaze. And Crystal's going
0:12
to love them.
0:13
Then Crystal and I are going to be
0:15
fixing up her favorite brunch recipe,
0:17
breakfast pizzas. Now, we'll do a a
0:21
dance to the pancake god.
0:25
And we're firing up the deep fryer,
0:27
y'all, with my deep fried sweet potato
0:30
home fries. Nothing like the sound of a
0:32
fryer,
0:34
especially if it's full of ters, y'all.
0:36
And finally, a grilled peach salad with
0:38
a tangy Dijon dressing that you don't
0:41
want to miss.
0:45
I've got a little vister coming in. Uh,
0:48
a little girl that I've never met, but I
0:51
got an email from her asking if I could
0:54
help her with some breakfast pizzas. So,
0:57
you know, I can't have her come without
0:59
me having a little something for her
1:01
that she was not expecting. So, I'm
1:04
going to make her an orange coffee cake.
1:07
And this is so simple, y'all. I'm going
1:10
to be showing her ways to kind of
1:16
if I don't die of a heart attack first.
1:20
I'm going to have her this wonderful
1:23
coffee cake made. Now, the first thing
1:25
I'm going to do, I kind of want the
1:27
coffee cake to have a little bit of
1:30
maybe a sunflower look to it. So, I'm
1:33
going to put that first biscuit in my
1:36
pan in the center. And then I'm just
1:39
going to take
1:41
my biscuits and I'm going to cut them in
1:43
half. And I'm gonna kind of just put
1:46
them around like that so that they make
1:48
a flower.
1:53
It's nothing like a canned biscuit,
1:55
y'all. To help you out in a pinch. I
1:59
just love them.
2:01
And I'm using the jumbo. I may have to
2:04
come back and adjust them in a second
2:07
because my pan's about full and I still
2:10
got two biscuits left.
2:13
And I say no biscuit shall be left
2:16
behind.
2:19
[Applause]
2:21
Just like that. Now I've got some melted
2:23
butter over here behind me. And I'm
2:25
going to take our biscuits
2:28
and brush them
2:30
with a little of this melted butter.
2:35
[Music]
2:38
And this is going to help it get crispy
2:40
and golden brown. Looks good just like
2:43
that, doesn't it, y'all? Yes, indeedy.
2:47
All right, I'm going to take some
2:49
walnuts.
2:51
Now, you can use pecans or any kind of
2:54
nut you want. And I'm just going to
2:56
mince up about a/4 of a cup of nuts. You
3:00
know, I'm not worrying if it's over that
3:02
amount because the mo nuts the better.
3:06
All right, I'm going to come in here and
3:08
I'm going to take 1/3 of a cup of sugar.
3:13
And then I'm going to zest
3:16
about 2 teaspoon of orange zest.
3:20
So, there we go.
3:23
I'm just going to mix that zest into
3:26
that sugar.
3:28
And now we're just going to toss in our
3:30
nuts. And I've got our butter
3:34
over here. Just
3:36
bathe in those biscuits.
3:39
Do you know if you don't have a fresh
3:41
orange on hand? Oh, you know you can buy
3:45
orange zest in your spice section at
3:48
your grocery store so you don't have to
3:50
worry about them going bad or anything.
3:53
So, on top of our biscuits goes my sugar
3:57
and my zest
4:00
and my nuts.
4:03
So, I'm going to put this in the oven,
4:05
y'all, for about 20 minutes at 350°.
4:09
[Music]
4:15
Now, our glaze is going to consist of
4:18
about 2 oz of cream cheese. But you
4:21
know, I say who's counting.
4:24
So that looks like about two to me,
4:26
doesn't it to you?
4:30
And I love that cuz I really like that
4:33
cream cheese flavor that's going to go
4:36
on top of these coffee cakes.
4:39
And I'm going to mix this with a half a
4:42
cup of powdered sugar or confectionate
4:44
sugar.
4:48
I'm just going to take my fork and cut
4:50
that sugar into my cream cheese.
4:54
Because I want this to have a little bit
4:56
of an orange kick, I'm going to add just
4:59
a wee little bit of juice
5:02
that's going to make this kind of more
5:04
pourable and give it that flavor. And
5:08
see, to me, that's just like perfect.
5:12
So, when those hot coffee cakes come out
5:14
of the oven,
5:17
I'm just going to drop that on top
5:20
and Crystal's going to love them.
5:23
So, while I'm mixing this up, come on
5:25
over here to my computer and I'll show
5:28
you the email that Crystal wrote me.
5:30
Dear Paula, my family loves pizza so
5:33
much I decided to make it for them for
5:36
breakfast. I would love if you could
5:39
help me turn my breakfast pizza into
5:42
something really, really special. Love
5:45
Crystal.
5:47
I hear the knock right now, y'all. Come
5:49
on. Let's go meet her.
5:51
Crystal,
5:53
darling.
5:54
I'm great. How are you?
5:56
Good. It's nice to meet you.
5:58
Nice to see you. I've been waiting for
6:00
you to get here. It's time for a
6:02
one-on-one cooking lesson. When you see
6:05
all these bubbles, that means it's ready
6:07
to flip. Fried sweet potato home fries
6:09
that are to die for. That's going to be
6:11
my new favorite way. And a refreshing
6:14
grilled pee salad. Wa!
6:18
I so hope y'all are enjoying the show.
6:21
And if you do, be sure to click like,
6:24
subscribe, and the notification bell so
6:27
you'll never miss a video. And we'll be
6:30
right back after the break.
6:32
[Music]
6:34
Y'all, if you're just joining us, I'm in
6:37
the kitchen with Crystal Dalva. She
6:40
needs my help to doctor up one of her
6:42
favorite recipes.
6:44
So, you you make a breakfast pizza.
6:46
I love the breakfast pizza. My family
6:47
loves it, but there's just something
6:49
missing. I thought you could help.
6:51
Well, why don't we see if we can't take
6:55
that recipe that you've been making and
6:57
bump it up a little bit.
6:58
Sounds great. Well, what I'm thinking,
7:00
Crystal, is maybe a pancake crust. So,
7:04
let's get started on the pancake batter.
7:06
Say, um, 2 and 1/2 cups of allpurpose
7:09
flour.
7:10
Okay.
7:10
This is my half a cup measure. This is
7:13
my one cup measure.
7:15
Thank you. I love them, too. I use them
7:17
all the time. And I've got you a knife
7:19
here to level off your flower.
7:23
You're engaged to be married.
7:25
Yes, I am. In 2 years.
7:27
Tell everybody. how I propose to you.
7:29
So he came over with a cake in a bag and
7:32
he told me that his mother had bought
7:35
him a cake for good luck on finals
7:37
finals week in school. So I'm like, "Oh,
7:38
that's really nice."
7:39
Spoons of baking powder
7:40
and he told me that they forgot to eat
7:44
it at dinner time.
7:44
Uhhuh.
7:45
So he wanted to share it with us.
7:47
Half a teaspoon of baking soda.
7:50
And my mother went to open the cake. So
7:52
she starts to giggle. I'm like, "Oh, she
7:54
must have wrote something funny on
7:55
there." So I'm like, "Okay." Okay.
7:57
Teaspoon of sugar, sweetie.
7:58
Thank you.
7:59
And a pinch of salt.
8:02
So, I'm like, I want to read what's so
8:04
funny on this cake. So, I go over, I
8:06
open the cake, and there it says, "Will
8:08
you marry me on the cake?" And I turn
8:10
around, he's on one knee with the ring,
8:12
and my mother is there.
8:14
Yeah.
8:15
So, your mother was actually the first
8:17
one he proposed to.
8:18
Yes.
8:20
Oh, that's cute. All right. Now, let's
8:23
gather up our wet ingredients. We need
8:26
two eggs. Y'all are planning on waiting
8:29
till after everybody graduates from
8:31
college.
8:31
Graduate college, go for a masters.
8:34
Oh, thank y'all are so smart.
8:36
Yes. Finish.
8:38
What is his major?
8:39
His business. He's doing business and
8:41
marketing as well.
8:41
Uhhuh. So, we'll need two cups of milk.
8:45
All right. So, you can just add that to
8:47
your eggs. Whisk it up.
8:49
Sure.
8:49
And now I just need for you to add your
8:52
wet to our dry.
8:54
Sure. And I'm going to step over here
8:56
and give our griddle a little spray.
9:01
Now I'm going to add just a little bit
9:02
of vegetable oil. Not much, just a
9:07
little bit. And a tip for your pancakes
9:11
and your waffles, you don't want to
9:13
overbeat them,
9:15
okay?
9:16
Like you would a cake, you know, you
9:18
don't want to do it for like several
9:21
minutes. So, you might want to take your
9:23
whisk.
9:23
Okay.
9:24
Because this is going to have lumps in
9:26
it.
9:26
It's going to have lumps in it, but uh
9:28
you know, a few is okay.
9:30
Okay,
9:31
that looks good. I love pancakes.
9:33
Yes.
9:34
I'm hoping that the pancake gods will be
9:37
with us this morning.
9:39
You think that's good?
9:40
I think that is good.
9:42
She loves.
9:43
So, come on over here. Now, I'm going to
9:46
let you dip out your pancake
9:49
um batter.
9:50
Sure. because you probably have more in
9:52
mind the size that you want.
9:54
So just two.
9:55
Yeah.
9:57
[Music]
10:00
So that's like an individual pizza size,
10:03
isn't it?
10:04
Perfect size.
10:07
And right now we'll do a a dance to the
10:10
pancake god. Do you happen to know what
10:13
it is?
10:14
No.
10:15
You know,
10:15
I love it.
10:18
So, I'm just going to look in here.
10:21
[Music]
10:24
When you see all these bubbles coming
10:26
at, y'all, that means it's ready to
10:28
flip.
10:31
All right, let's see.
10:35
Oh, perfect.
10:39
Let's bring him over here.
10:42
All right, Crystal, we're going to come
10:43
back and make a few more pancakes. But
10:46
first, I want to get started on the next
10:48
dish, sweet potato home fries.
10:52
So, what we're going to do is just peel
10:54
these potatoes. And if you would cut
10:56
them into cubes.
10:58
Sure.
10:58
Just like for potato salad. About that
11:00
size.
11:01
Sure.
11:01
And we're going to boil these for about
11:03
10 minutes before we fry them up. And
11:06
I'm going to go down here and I'm going
11:08
to fiddle with this grill and get us
11:11
some more pancakes going.
11:15
[Music]
11:22
Okay. So, how are you coming?
11:23
I'm doing great.
11:24
I've got us at least five pancakes ready
11:29
for five little pizzas.
11:31
Four for me, one for you.
11:33
You know what? That'll work. We're going
11:36
to fry the sweet potatoes and put
11:38
together those breakfast pizzas. I like
11:40
the way you think.
11:42
And we're making the most amazing
11:44
grilled peach salad. Oh gosh, those look
11:46
so good. Getting those pretty grill
11:48
marks on them.
11:51
I hope y'all are enjoying the show. And
11:53
I want to hear from you. Tell me what
11:56
recipes or videos you'd like to see me
11:58
make by just leaving a short comment
12:00
below. Now, let's get back to the show,
12:04
y'all.
12:07
Well, we're in here in the kitchen
12:10
cooking up some wonderful breakfast and
12:13
brunch things with my little friend
12:15
Crystal here. She wrote in to me and
12:18
said she needed a little bit of help on
12:20
some breakfast pizzas that she was
12:22
making. So, we are working on those
12:25
breakfast pizzas. Yeah, just give that a
12:27
shake, Crystal. Now, we need to scramble
12:30
up some eggs because we're going to make
12:35
a scrambled egg pizza.
12:38
Now, I'm going to need five eggs. And
12:40
Crystal, my secret to good eggs is a
12:44
little sour cream in them.
12:46
So, if you'd put a little spoon of
12:48
Just one.
12:50
Yeah, that'll be great. Yeah, that's
12:52
perfect. That's perfect. rather than
12:54
putting cream in them. Uh, I just like
12:56
that little bit of sour cream and it
12:59
makes the eggs so creamy, y'all. All
13:02
right. Now, I'm going to put a little
13:03
bit of salt.
13:05
And Crystal, you can just go ahead and
13:07
get some butter in our pan and get our
13:09
eggs going. All right. Now, I'm going to
13:11
get our potatoes
13:13
and you take care of the eggs.
13:16
We've got our pancakes down here. So,
13:21
I'm going to just put our sweet potatoes
13:23
into the fryer. Still got a little water
13:26
on them.
13:28
It's all right. It won't last but just a
13:30
second.
13:32
All right. So, we're going to drop these
13:34
down. And remember y'all, we par boil
13:36
these so they're done. Uh, all we want
13:39
to do is just brown them off.
13:43
Nothing like the sound of a fryer,
13:46
especially if it's full of ters, y'all.
13:50
While you're scrambling those eggs, I'm
13:52
going to make us what will be our
13:55
marinara sauce
13:56
for our pizza.
13:58
Now, what's in that?
13:59
Well, I've decided that some diced
14:01
tomatoes would be good. Now, I'm going
14:04
to take some cream cheese that has come
14:08
to room temperature,
14:11
and I'm just going to dump that in my
14:12
bowl.
14:15
And these are good tomatoes. They've got
14:18
onions in them. They're not just a plain
14:20
old tomato.
14:21
So, you just get that preseasoned.
14:23
Oh, yeah. I'm just going to squish that
14:26
all together.
14:29
Just working it. Working it, honey.
14:33
Doesn't that look good? Pretty color.
14:36
All right. Now, we've got some bacon
14:37
over here that I cooked off earlier.
14:41
And if you would be just chopping that
14:44
bacon up. I'm going to take our our
14:47
pizza crust.
14:50
Can't wait to try it.
14:53
I can't either. And I'm going to put our
14:57
marinara sauce
15:00
on our crust.
15:02
Mhm.
15:05
I hear you.
15:09
All right. Now, let me step down here.
15:11
When you get done with that, you can
15:12
take your bacon and stir it into your
15:15
egg.
15:16
There we go.
15:19
All right, Crystal, your eggs are
15:20
looking good. So, I'm ready to put them
15:23
together. If you are, I am. Well, grab
15:26
those eggs and on they go.
15:32
All right, our sweet potatoes are ready.
15:35
If you would chop us up a little fresh
15:38
basil. I think the fresh basil would be
15:40
wonderful. Now, I'm going to dump our
15:42
sweet potatoes out onto some paper towel
15:45
to help drain some of that oil.
15:48
Do you season them at all?
15:49
I'm glad you asked me that because here
15:51
is the question. Do you want them
15:54
seasoned with salt or do you want them
15:55
seasoned with sugar?
15:58
I like salt.
15:59
Okay. Well, I tell you what, why don't
16:03
we, so you can compare taste. salt one
16:07
end and sugar the other.
16:09
I like the way you think.
16:12
And that way you'll be able to taste and
16:14
compare right there on the scene.
16:19
Do you know sweet potatoes are good for
16:20
you?
16:21
Are they?
16:22
Absolutely.
16:24
That could go bad.
16:26
So tell me what you think.
16:30
Are they good?
16:32
I love them fried.
16:34
That's going to be my new favorite way.
16:36
Put a little of this on the pizza. I
16:38
think they look great.
16:39
I think they tummy is growling.
16:41
Is it? Well, and now a little
16:43
mozzarella.
16:46
Now, all we are going to do is bake
16:48
these until they're piping hot again and
16:53
the cheese melts.
16:55
So, put that in the oven, honey.
16:58
We've got our oven preheated to 400° and
17:01
within a couple of minutes, we're going
17:03
to have a piping hot pizza. Can't wait,
17:08
y'all. You don't want to miss this
17:10
grilled peach salad. You're going to so
17:12
want this recipe.
17:14
Easy peasy. And I'm going to surprise
17:17
Crystal with my scrumptious orange
17:20
coffee cake. I just wanted to have a
17:22
little something sweet for you.
17:26
I so hope y'all are enjoying the show
17:28
and if you do, be sure to click like,
17:32
subscribe, and the notification bell so
17:35
you'll never miss a video. And we'll be
17:38
right back after the break.
17:42
I thought we needed a little salad. So,
17:45
how does a grilled peach salad sound to
17:47
you?
17:47
That sounds great.
17:48
I think it does, too. if you would just
17:52
slice our three peaches. Just some nice
17:55
little wedges. And while you're doing
17:57
that, I'm heating the grill. I've got
17:59
our greens ready over here. And I'm
18:02
going to make us a little dressing. And
18:04
I'm going to just eyeball all of this.
18:07
I'm going to begin with tablespoon of
18:10
Dijon, three tablespoons of rice wine
18:13
vinegar, a little salt, and if you would
18:17
now, when you get the peaches done, put
18:20
a little olive oil on them to keep them
18:22
from sticking, and a little salt and
18:23
pepper. That's great. And I'm going to
18:26
do about a/3 of a cup of olive oil. Add
18:31
a little olive oil,
18:34
little bit of salt.
18:36
Uh, I've got my greens and I'm using
18:40
masculine greens. I'm just going to add
18:42
some chopped pecans. Let's go ahead and
18:44
get those peaches on our grill.
18:48
And I'm going to add third of a cup of
18:50
feta cheese.
18:54
Oh gosh, those look so good.
18:57
[Music]
18:59
Now, do you just want slight grill
19:00
marks?
19:02
Yeah.
19:03
Yeah. I mean, we don't want them like
19:05
burn. See, that's looking so good.
19:08
Getting those pretty grill marks on
19:10
them. Looking good. So, I think these
19:13
are ready. What do you think?
19:15
They look great.
19:17
All right. So, I think I'm going to turn
19:18
this off. If you want to start grabbing
19:21
them off
19:23
and just tossing them in there on top.
19:25
Yes,
19:26
they smell delicious.
19:29
Whoa.
19:30
One of them's trying to get away.
19:34
Okay, sweetie. And I'm going to just
19:36
start
19:38
tossing those peaches in there. And it's
19:40
going to kind of wilt our lettuce a
19:42
little bit. The heat from the peaches.
19:45
All right. And I'm going to drizzle that
19:48
with our vinegarette.
19:51
Can smell the vinegarette heating up the
19:53
peach.
19:53
You can look at that. Looks very good,
19:57
doesn't it?
19:58
So, Crystal, I've got a little surprise
20:00
for you. Before you got here, I made you
20:03
one of my favorite coffee cakes of all
20:05
time.
20:06
So, if you would, darling, go in that
20:08
small oven and grab our coffee cake.
20:12
Just sit it right here because I've got
20:14
to put a little drizzle on it.
20:18
And I'm going to be putting your salad
20:20
on your plate.
20:25
That looks delicious.
20:26
You're going to so want this recipe.
20:28
It's easy peasy. Now, I'm going to just
20:33
put us a little drizzle. This is
20:35
powdered sugar with a little orange
20:37
juice. I just wanted to have a little
20:39
something sweet for you.
20:42
Always have to have something sweet.
20:44
So, here's your salad.
20:45
Thank you.
20:46
There's your napkin.
20:47
Thank you.
20:49
And I'm going to put
20:52
a little coffee cake.
20:55
This is delicious, Paula.
20:56
You like it? The combination of the
20:58
sweet peaches.
20:59
Uhhuh.
21:00
With the cheese and the salad. And it's
21:02
warm.
21:02
It is delicious.
21:03
Good.
21:07
[Music]
21:11
That glaze is perfect.
21:13
Ain't that good?
21:16
See?
21:16
So, here we go.
21:19
[Music]
21:20
I love it with the pancake.
21:22
That is out of this world.
21:24
Thank you.
