you know i don't know if there's
0:01
anything any more fun martha
0:04
than two southern women getting in the
0:06
kitchen together today my friend martha
0:09
hall foose and i are gonna be dishing up
0:11
some of our favorite dishes starting
0:14
with her delicious tomato soup and then
0:16
moffa is going to be making some creamy
0:18
homemade mayonnaise to go with our
0:20
fabulous pimento cheese sandwiches look
0:23
at it it looks like softened butter mafa
0:26
well i know how you feel about that
0:29
and going on the side we've got the
0:31
crispiest waffle fries y'all
0:34
this one's that crunch isn't that
0:35
wonderful
0:36
and finally topping it all off we've got
0:39
martha's specialty sweet tea pie and
0:42
sweet tea now you know you can't leave
0:45
on that one
0:50
oh my goodness
0:51
look y'all it's martha hall foose
0:55
she is the author of screen doors and
0:58
sweet tea this book is so wonderful
1:00
y'all a good old southern girl from
1:02
mississippi it don't get no more
1:04
southern than mississippi you know you
1:06
make me sound like a yankee
1:08
it's the deep deep south yes it is the
1:11
deep deep south now what are we making
1:13
mafa we're going to make a tomato soup
1:15
and we're going to broil these tomatoes
1:17
uh in the water bake broil them so that
1:20
skin's going to char and get really
1:21
black okay we're going to start with
1:23
three pounds of ripe tomatoes you can
1:25
use any kind you like and we're just
1:26
going to cut them in half and get that
1:28
little core out of there notching out
1:30
this and then you'll kind of squeeze out
1:31
all the seeds and any sort of little
1:33
remnants that are in there
1:35
and we're going to chop up a medium
1:37
white onion you can just rough chop so
1:39
martha actually went to france y'all to
1:42
study
1:43
uh and i can't pronounce the school that
1:46
you went to
1:47
it's called a cola note and primarily
1:49
it's a baking school but i did a little
1:50
bit of everything over there
1:52
and were you married at the time no no
1:55
no no
1:56
oh so you were a single woman
1:58
marlon paris
2:00
uh um opened the door to my hotel the
2:02
first day i was there and i felt like
2:04
mary tyler moore that girl i slung the
2:06
thing open paris i'd like to get out of
2:08
yazoo city to paris so
2:10
paris here i come
2:12
oh how fun we're gonna heat up this uh
2:15
little pot right here and we're gonna
2:16
cook that down in three tablespoons of
2:19
okay
2:20
i've got your butter covered
2:23
you know people always think tomatoes
2:24
and olive oil but tomatoes and butter
2:26
come together and rice please yes lady
2:31
yeah we're gonna get that melted up and
2:33
we're just gonna add those rough chopped
2:34
onions in there okay and i'm going to
2:36
pop these in the broiler
2:41
let our tomatoes boil in the oven for
2:43
about 12 minutes until the skins are
2:45
nice and charred while we're waiting for
2:47
those tomatoes to boil let's make some
2:49
homemade mayonnaise oh my gosh i love
2:51
homemade mayonnaise and i can't wait to
2:53
see your recipe cause my great answer's
2:56
my nose my nose yes you see what i'm
2:59
saying y'all about that southern accent
3:03
well what i'm going to do first is we
3:05
need to get some eggs separated okay and
3:07
to measure out a cup and a half of
3:08
canola oil and i like to use canola oil
3:11
for my mayonnaise because it has a just
3:13
a neutral sort of flavor
3:17
[Music]
3:19
put our egg yolks right in our bowl here
3:22
okay martha brought with her
3:26
uh her
3:27
old mayonnaise maker y'all
3:29
i used to have one of these and this is
3:33
what the women made
3:34
made their mayonnaise in little nut at
3:37
the bottom would mix up all the egg
3:39
yolks yeah and then this little hole in
3:41
the top as you pump it up and down let
3:43
the perfect amount of little oil drizzle
3:45
down there to get that velvety emulsion
3:47
wonderful i love this muffler i love
3:49
that too
3:50
and um if you ever see it on your garage
3:52
sale pick it up yeah because they're
3:53
getting hard to get it i know we're not
3:56
going to use your mayonnaise maker today
3:57
but we're going to use a little thing
3:59
called a hand mixer we want to get a
4:01
really great
4:02
emulsification so what we need to do is
4:05
drizzle in that oil slow and steady you
4:08
can see it's starting to become
4:10
opaque in color yes and you just it's a
4:13
labor of love but once you go homemade
4:15
mayonnaise it's hard to go back it's
4:17
hard to go back isn't it and you know
4:19
you can flavor it any way you like you
4:21
can put a big old tablespoon of hot
4:22
sauce on the end if you like or some
4:24
fresh herbs
4:26
michael would love that
4:28
the acid in the lemon juice and the
4:30
vinegar is really going to cook the eggs
4:32
so they're not actually raw
4:34
look at it it looks like softened butter
4:36
mother well i know how you feel about it
4:41
all right now what we're going to do is
4:43
we're going to add our flavorings in
4:44
here okay so we're going to add a little
4:46
bit of dry mustard a teaspoon of dry
4:48
mustard
4:49
[Music]
4:50
um you can add cayenne to taste
4:53
okay now i'll add about a teaspoon
4:56
and then a little bit of sugar i'm gonna
4:58
add about a teaspoon of that
5:01
okay and cannot forget our teaspoon of
5:04
salt
5:05
and
5:07
a little bit of vinegar and lemon juice
5:09
about a teaspoon of each and you can
5:10
eyeball it
5:12
[Music]
5:14
we're going to leave it out on the
5:15
counter for four hours yes ma'am all
5:18
right and that is pretty much it for
5:20
mayonnaise all right so i'm gonna take
5:22
these tomatoes out okay
5:24
beautiful
5:26
see that's just gonna peel right off
5:29
y'all and having those you know when you
5:31
cook tomato soup sometimes those skins
5:32
peel all up in there and you get those
5:33
little like rolled up paper pieces and
5:35
yes knocks that right out of the
5:37
equation
5:38
perfect y'all and look at that the
5:40
skin's just going to pull right off
5:43
this is great yellow tomatoes if you
5:46
have them or orange tomatoes or do a
5:48
two-tone protein is really concentrated
5:50
those flavors so are we just going to
5:53
put these into the onion pot we are
5:55
we're going to dump these right in with
5:57
our butter sauteed onions some of these
5:59
for about 20 minutes and the tomatoes
6:01
are really going to break down uh-huh
6:03
great perfectly done all right can i
6:05
take this juice and all yes ma'am that's
6:07
all every bit of that juice
6:10
[Music]
6:17
mafa now what have you got planned for
6:20
that wonderful homemade mayonnaise i
6:22
know you got something good and
6:24
tasty pimenta cheese please
6:27
pimento cheese sandwiches y'all in the
6:29
south we don't go on a picnic we don't
6:32
go on a boat ride without homemade
6:34
pimento cheese
6:36
coming up next we can't have tomato soup
6:38
and pimento cheese sandwiches without my
6:40
crunchy waffle fries y'all what a
6:43
perfectly southern lunch it is
6:46
and later i can't wait for you to see
6:49
this dessert martha is showing us her
6:52
fabulous sweet tea pie oh sweet tea pie
6:55
shut up
6:59
i so hope y'all are enjoying the show
7:01
and if you do
7:03
be sure to click like subscribe and the
7:06
notification bell so you'll never miss a
7:09
video and we'll be right back after the
7:12
break
7:16
y'all welcome back we're making tomato
7:19
soup we've got our homemade mayonnaise
7:21
made and the next thing we're gonna do
7:23
is one of my recipes and it's waffle
7:26
sweet potato fries
7:28
so how are you coming with the mandolin
7:31
good it's making fast work of it good
7:33
good
7:34
always use the hand guard yes always
7:37
how fancy you think you are all right so
7:39
i'm gonna grab the sweet potatoes y'all
7:42
i'm gonna drop them in
7:44
and these are only going to take a
7:46
minute to cook
7:47
because mafa's cutting them extra thin
7:50
and we've got our peanut oil set to 350
7:53
degrees look at these mafa they're
7:56
beautiful aren't they beautiful color i
7:59
love sweet potatoes they're so good for
8:02
you lots of vitamin a yes
8:05
yum yum yum
8:07
and i swear i think they're ready martha
8:09
love that sweet salty crispy yes
8:13
so i just want to shake the grease off
8:15
of these
8:17
i'm going to just sprinkle them with a
8:18
little kosher salt
8:21
that is a thing of beauty yes look at
8:23
that
8:25
yes yes yes you want to reach in there
8:26
and get you one i do want to get
8:28
anywhere
8:29
[Music]
8:32
they're so thin look at them light and
8:35
crisp
8:37
listen that crunch
8:39
isn't that wonderful
8:40
well come on down here honey because my
8:42
stomach's growling those tomatoes are
8:45
just cooking up they are cooking down so
8:48
what are we going to do next we're going
8:50
to finish off our soup
8:53
we're gonna finish off our soup we're
8:55
gonna add two tablespoons of chopped
8:58
basil and i'm gonna try to stab the
9:00
potato chips good luck with that one
9:03
all right what do you want me to grate
9:05
the cheese up in this bowl for our
9:07
delicious pimento cheese sandwiches and
9:09
y'all i'm gonna be grating about two
9:12
cups of cheddar a nice sharp cheddar
9:15
cheese i like it nice and sharp and now
9:18
i'm gonna strip down some little oregano
9:20
leaves yeah i love that spicy oregano
9:23
yes and then this is just going to hang
9:25
out we're going to add those herbs right
9:26
at the end so they stay fresh tasty okay
9:29
i'm going to get to work grating up two
9:31
cups of colby cheese mm-hmm
9:36
yes
9:37
and this is grating up sorry about
9:39
bodine y'all
9:40
he sees like two winches in the kitchen
9:43
with good food
9:46
so and i like the sharp
9:49
cheddar on this you know i do too i do
9:51
too you need a sharp cheese and the
9:54
colby really gives it a nice contrast
9:56
too
9:57
and you know what let's this herbs look
9:59
like they've cooked down why don't we
10:01
give it a little sprinkle of sugar okay
10:04
and uh how much sprinkle half a teaspoon
10:07
maybe and then we're gonna add some salt
10:10
and some pepper
10:12
out of our cool little box here
10:15
make sure you get one of my little boxes
10:18
i love a party favor
10:19
[Music]
10:21
i do too
10:22
so let that finish up okay muffin and
10:25
here's my bowl so you can add our
10:27
cheeses together
10:28
got cheese coming out of everywhere
10:31
all right now see you've got some sage
10:33
sitting over here on the counter it's
10:35
going to be our secret ingredient in the
10:36
pimento cheese i can't wait to see what
10:39
it's going to do to the miniature it's
10:40
wonderful and you know there's a great
10:41
description where they call it an opaque
10:43
cicada's wing because that's what the
10:45
little leaves look just like a little
10:47
cicadas wings so if you want to chop up
10:49
a little half a teaspoon or so just a
10:51
half a teaspoon you know nice and fine
10:54
so we are not going to use much not a
10:56
ton of it and then we're going to drain
10:59
our pimentos because you don't want that
11:00
liquid in there because you don't want
11:01
your feminine cheese to be slimy
11:05
and then we're going to also add a
11:08
teaspoon of dry mustard okay
11:13
touch of cayenne
11:15
and we need some fresh lemon juice you
11:17
want to okay let's grab that and how
11:18
much how much lemon juice about a
11:20
teaspoon
11:21
and i'm going to start sprinkling these
11:23
pimentos in here
11:25
we're going to use a cup of our
11:26
delicious homemade mayonnaise
11:29
may i don't yes ma'am do the honors
11:32
so you got some worcestershire sauce we
11:35
do about a half a teaspoon or so
11:39
and you've got a little cayenne pepper
11:41
sauce right and this girl has a hot
11:44
tongue well
11:45
all right now how much of this oh just a
11:48
good little shake maybe about it quarter
11:50
fourth of a teaspoon okay
11:52
that looks delicious martha i can't wait
11:55
to taste it so what do you say let's get
11:58
this lunch all right you take the
11:59
pomegranate cheese and i'll take this
12:00
soup
12:02
yes i'm hungry honey
12:05
oh my goodness it looks so good smells
12:08
so good and i love your bread choices
12:12
look at this beautiful pumpernickel
12:14
bread
12:15
yum
12:16
[Music]
12:21
crispy sweet potato fries
12:26
what a fabulous perfectly southern lunch
12:29
it is
12:31
[Music]
12:35
cheers
12:36
[Music]
12:41
fabulous with that bread
12:44
eating it creamy homemade mayonnaise
12:47
[Music]
12:54
buttery tomatoes and onions
12:57
you would never
12:59
ever want canned tomato soup ever again
13:02
if you have it this way these
13:04
delicious those fresh herbs and that
13:06
oregano gives it a nice little cookie
13:09
finishing off with a little sugar really
13:10
brings out the mm-hmm tomato flavor and
13:12
the sweet potato fries are so delicious
13:15
with the sandwich
13:16
what's next mafa
13:18
sweet teapot
13:20
oh sweet she pines shut up
13:23
y'all
13:24
she just said sweet tea pie
13:26
sweetie pie
13:28
sweetie pie
13:30
oh my god i'm just got this side i'm
13:31
spitting sandwich everywhere coming up
13:34
you can't beat this combination of sweet
13:37
tea pie and later some sweet tea to wash
13:40
it down this recipe has the paula deen
13:43
stamp of approval
13:45
[Music]
13:47
i hope y'all are enjoying the show and i
13:50
want to hear from you tell me what
13:52
recipes or videos you'd like to see me
13:54
make by just leaving a short comment
13:56
below
13:58
now let's get back to the show y'all
14:03
martha promised us
14:05
pie
14:06
y'all
14:08
so get us going girl we're going to make
14:10
a sweet tea pie love it that's the house
14:13
wine of the south into the house yes all
14:16
right now i'm cracking and separating
14:18
eight eggs right we're gonna use eight
14:20
yolks okay two sticks of butter right up
14:22
your alley this pie here
14:24
and so i'm gonna add those right in
14:26
there this recipe has the paula deen
14:28
stamp of approval
14:31
i'm going to measure out here three
14:32
quarters of a cup of strongly brewed
14:35
orange peacoat tea
14:37
okay and that's been set to cool because
14:39
we don't want it to melt our butter so
14:41
we're gonna make this way ahead of time
14:42
so to our butter here i'm gonna whiz
14:45
this up with two cups of granulated
14:47
sugar
14:48
as soon as i get this separated
14:50
i will measure out your two cups of
14:52
sugar i'm gonna get this so it's kind of
14:54
uh mushed up and ready
14:59
[Music]
15:05
now what we're going to get you to do is
15:07
slowly add
15:09
those egg yolks a little bit at a time
15:11
so we can get that incorporated okay
15:14
martha was telling me that when she was
15:16
in high school she went to
15:19
a state fair the mississippi state fair
15:22
pie baking contest this was how this pie
15:25
started and i thought for sure
15:27
i was going to take the day all i got
15:29
was a souvenir apron they had some
15:31
ladies having bacon pies
15:33
but no ribbons for me
15:35
and um
15:37
so i initially was making this with
15:40
water and then one day i was drinking
15:41
some tea while i was making the pie and
15:43
i thought sweet tea
15:45
hi
15:45
sweetie pie
15:47
sweetie pie and we've got her pie crust
15:50
her cream cheese pie crust
15:53
patted down in our pie dish and it just
15:55
looks wonderful so why do you think your
15:58
pie didn't win martha are you even just
16:00
thinking i was a little upstart you know
16:02
there were some ladies in there i've
16:03
been baking pies longer than i've been
16:04
alive and honey take it dead seriously
16:07
oh very seriously
16:09
serious about trying to get that blue
16:10
ribbon let's pop that last little yolk
16:12
in here okay
16:14
and then we're going to add your tea
16:16
right please do and you can use your
16:18
favorite herb tea in the winter time i'm
16:19
going to use sort of a
16:21
or tea in the summer a little lemon that
16:22
would really change up the flavor i mean
16:25
that would customize it to what you like
16:28
in this part it's really important to
16:30
slowly incorporate it uh-huh
16:33
so it doesn't separate it's going to be
16:34
a sweet pie it's going to be it really
16:37
is going to
16:38
be a sweet pie
16:40
and then next that traditional
16:42
ingredient a little bit of cornmeal so
16:44
we've got a teaspoon and a half okie
16:46
dough and that's going to give it a nice
16:48
little tooth to it and also help absorb
16:49
the liquid two tablespoons all purpose
16:52
flour that looks absolutely perfect
17:00
give it a little half a teaspoon of salt
17:02
because we always want to
17:03
balance out that sweet
17:11
we're going to add the zest and the
17:14
juice of one whole lemon okay
17:16
oh smell it
17:19
something about lemon it makes me want
17:21
to go polish furniture
17:26
and we're gonna all right so you want
17:28
the cheese juice in there too
17:32
[Music]
17:34
all right let's drizzle that out in here
17:36
using my hand is a strainer
17:40
all right we've got our prepared pie
17:42
crust right over here and you want to
17:44
take this out of the fridge right before
17:45
you're going to use it so it's nice and
17:47
cold when it goes in the oven because oh
17:49
you don't want any shrinkage and you
17:50
don't want it to
17:51
squeeze down right
17:55
here i'll hold this and
17:58
yum
18:02
i love pie everybody loves pie oh
18:05
nothing like pie you can get anything
18:07
you want from somebody as long as you
18:10
give them a homemade pie if i see a
18:11
skinny girl walking down the street i
18:12
say we want to send her some pie uh-huh
18:16
we're going to pull a thing she needs
18:18
a little pie
18:19
all right i'll open the oven door we can
18:21
pop it in
18:22
right over here i think mama has got me
18:24
beat with the butter
18:27
[Music]
18:29
i like the way this girl thinks y'all
18:32
you want to go 350 45 minutes
18:36
don't go anywhere because we're gonna
18:37
have sweetie
18:40
coming up next you just can't go wrong
18:43
with sweet tea and sweet tea pie y'all
18:46
isn't that a wonderful way to spend an
18:47
afternoon with a girlfriend and a good
18:50
old pie
18:52
i so hope y'all are enjoying the show
18:55

18:59
subscribe and the notification bell
19:01
so you'll never miss a video and we'll
19:04
be right back after the break
19:10
mother we have got to have some good old
19:13
sweet tea to wash our sweetie pie down
19:16
with we surely do tell them how you make
19:18
your sweet tea we got a couple water
19:20
boiling here and if you can add us um
19:23
three quarters of a cup of granulated
19:25
sugar i can so do that
19:28
a lot of restaurants uh
19:30
especially in the south
19:32
will will uh make a simple syrup for the
19:36
tea and bring it to the table in a
19:38
little picture so you can sweeten your
19:40
own tea because let me tell you
19:42
something sugar
19:44
will not sweeten cold tea it just will
19:47
not stir and stir and stir you could
19:49
stir till you're blue in the face and
19:52
you're still going to have unsweet tea
19:54
and you know you can make a big batch of
19:55
simple syrup and let it cool and then
19:56
keep it on the jug in the fridge
19:59
and hand for juleps or whatever yes okay
20:02
you want to pour that up in our cup i
20:03
will
20:04
and then in our jar over here
20:07
we've got
20:08
four large tea bags
20:11
okey-dokey and that's like a
20:12
family-sized tea bag
20:15
and we've let that steep so it's nice
20:18
and strong and i'm gonna
20:21
switch over to the other side okay yeah
20:23
come on i'm just gonna ice our glasses
20:26
around here
20:27
i'm gonna pour our tea right in our
20:30
nice pitcher here
20:34
we've let that cool off some because if
20:35
you put it in the fridge while it's hot
20:37
you'll get cloudy tea nobody wants
20:38
cloudy tea
20:40
so to our
20:41
two we're going to add our simple syrup
20:44
drizzle in a little bit
20:51
[Applause]
20:54
oh my goodness and now
20:56
i have to turn my attention to the pie
20:59
y'all well important things yes come on
21:02
over dear
21:11
yum
21:13

21:15
