0:29
is simple and easy as 1 2 3
0:32
and finally the side dish that no
0:34
southern family would do without
0:35
heavenly hoecakes so don't sweat it gang

have you ever had one of those days
1:18
where you feel like between your
1:20
schedule and your children's schedule
1:22
your husband's schedule everybody's
1:23
schedule you don't have time to get a
1:25
meal on the table well that's the
1:27
predicament I found myself in today and
1:29
I've come over here to my pantry and for
1:32
some reason I've let it get pretty slack
1:34
so before I can cook this meal and it's
1:39
gonna be a quick one I'm gonna have to
1:41
run down to Trader Joe's
1:42
so y'all hop in the car and come with me
1:45
I need help today I need help

2:06
I love these just love them love them
2:20
love them love them
2:29
hey Paul how you doing hey how are you
2:33
good to see you so glad that you saw me
2:36
yes because I've had a tremendously busy
2:38
day got so much to do and if you could
2:42
help me find my groceries quick like so
2:44
I can get out of here I'd be ever so
2:45
grateful I'd be happy to do that for you
2:46
I need some frozen raspberries we can do
2:49
that cans ramp got that in can crab no
2:52
problem at all we're three for three
2:54
good today why should we start hey you
2:56
were right next to the restaurant start
2:57
over here hidden that's great yeah we
3:00
almost we almost got bitten by the
3:01
raspberries there these are our frozen
3:03
raspberries they're actually frozen
3:04
right out there right almost next to the
3:06
fields it actually eight locks in the
3:08
freshness of them and preserves the vast
3:10
majority of the nutrients in the fruit
3:11
it's fantastic so I'm is well off using
3:13
these as that would be a fresh one I
3:15
believe so absolutely especially for all
3:17
the recipes and you don't have to use
3:18
them right now you can use a little bit
3:19
now and use a little bit later it works
3:21
out great it's great how about two of
3:23
those absolutely we can definitely do
3:24
that we'll get two of those what else on
3:27
that list of yours here let's see the
3:29
pantry can't ramp and can crab let's go
3:31
for it we gotta go around the corner
3:33
here so we've got it right over here
3:35
where I hate quick we'll get you in and
3:37
out of here no problem right over here
3:40
we've got the canned crab meats this is
3:42
a great product this is actually 15% leg
3:44
meat this is like the most premium
3:45
portion of the crab so it's fantastic
3:48
so it's not all not all close no exactly
3:51
it's not we got the great leg meat in
3:53
here which is fantastic it's really hard
3:55
to find that in canned crab
3:56
I said well hold in your pantry
3:57
absolutely yeah no problems at all no
3:59
time it's tough to find expiration in
4:01
these guys it's great quick meals how
4:03
many of these really let me have two of
4:04
those already two of the shrimp two of
4:07
the shrimp fantastic we've got the
4:08
shrimp for you
4:09
anything else I can get for you nope
4:11
that's it I'm gonna do something the
4:12
devil won't do Thanks take care Paula
4:19
[Music]
4:42
thank goodness for trader Joe I don't
4:45
know what I'd do without him sometimes
4:47
and I even managed to find some
4:49
beautiful purple irises at the store
4:53
aren't they just delicious looking
4:55
today's meal just happens to be one of
4:57
my son's all-time favorite meal I'm
5:00
gonna cook up a corned beef and cabbage
5:02
I want you to look like sweet Michael
5:05
did for me who said he was good for
5:07
nothing
5:08
he put the bacon on for me he's a hungry
5:13
man I think don't you this dish is gonna
5:16
be so quick and so simple for us we've
5:19
got our bacon cooked thanks to Michael
5:21
and we're gonna quickly just cut up our
5:24
cabbage just like this I'm going to cut
5:27
it again mo cut it in quarters and then
5:31
work from the quarters I'm gonna have
5:36
supper ready here in no time
5:39
it's a very inexpensive meal as well all
5:44
right we got our cabbage chopped up and
5:46
that was easy enough I've got my grease
5:49
from my bacon but I like two different
5:53
flavors in my cabbage so it goes some
5:58
butter I'm just gonna dump that cabbage
6:05
right in there like that this is just
6:09
real real easy this way and it's a lot
6:11
quicker now I'm gonna add just a little
6:14
little bit of water because cabbage
6:18
contains so much water so you don't want
6:21
to drown your cabbage I'm gonna add a
6:23
little bit of salt we're gonna add a
6:27
little bit of pepper and we're gonna
6:31
give that a stir just a quick stir
6:34
because we want to coat our cabbage in
6:37
that seasoning which is butter and bacon
6:41
grease and it doesn't take but a minute
6:46
for cabbage I like mine with some crispy
6:48
nough stew it I don't I don't like mine
6:51
cooked down to mush
6:52
and while that's cooking I'm gonna jump
6:55
on over to this next pot and I'm gonna
6:57
start on a dessert sauce for our ice
7:00
cream which is gonna be super simple
7:02
little butter
7:04
I know y'all was surprised try not to be
7:12
one bag of frozen raspberries and I've
7:17
got some jelly some currant jelly and
7:21
I'm gonna add about half of that in
7:24
there and because I like my desserts to
7:31
be sweet I'm gonna add just a little
7:32
sugar I think to it now while that's
7:36
heating up I'm gonna come over here I
7:38
have a little cornstarch and I'm gonna
7:41
just add it to the rest of my jelly and
7:45
this is gonna be our thickening agent
7:48
and when that starts to bowl we're just
7:51
gonna add the rest of this jelly into
7:54
there and it's gonna thicken it right on
7:56
up all right let's step back over here
7:59
and check on our cabbage real quick-like
8:01
and it's it's ready for me to pop the
8:05
meat on it this is the way the corned
8:08
beef comes cans like this and you can
8:11
find it in your grocery store next to
8:12
your tuna fish the yummy spam and potted
8:16
meats the can shrimp the can crab it's
8:22
not a pretentious meat but don't be so
8:25
snobby now that you don't try it because
8:27
it really is good but it's extra yummy
8:29
cooked this way this is so simple you
8:34
just break it into chunks just like that
8:38
where if we had used a fresh corned beef
8:41
we'd be talking about four hours so this
8:46
is just really makes eating corned beef
8:49
and cabbage real real easy all right now
8:53
I'm gonna take this bacon that michael
8:54
cooked for me and I'm just going to kind
8:58
of cut it up and chunk it back in the
9:01
pot
9:03
and I mean I've got supper and it's been
9:06
10 minutes I'm just gonna put the lid
9:08
back on that and let that corned beef
9:11
heat through and through in the meantime
9:12
I raspberries a bowl and over here so
9:15
I'm gonna add the the currant jelly that
9:19
has the corn starch just gonna pour that
9:23
over in there and let that come to a
9:26
bowl again and get thick all right our
9:33
raspberry sauce is getting thick on us
9:35
now and I'm just gonna add a little
9:41
orange juice and while we having supper
9:44
I'm gonna put this aside and stick it in
9:45
the fridge until we're ready deep in the
9:47
meantime though it's only been 10
9:49
minutes and my entree is ready so you
9:53
know we'll hear it sizzling so you know
9:56
what that means it's time for me to
10:01
taste
10:14
it's a belly pleaser stick around cuz
10:18
next I'm mixing up fake shrimp and crab
10:21
salad another five minute miracle
10:32
[Music]
10:37
[Music]
10:46
you know these canned meats that you
10:49
find in your grocery store are just
10:51
great what I'm fixing to do now is make
10:54
that succulent shrimp and crab casserole
10:58
from canned seafood meats can you
11:01
believe it so simple we're gonna start
11:05
with a bell pepper chopped onion celery
11:11
mayonnaise and we've got a little
11:17
Worcestershire sauce a little salt a
11:21
little pepper I'm just gonna mix those
11:29
up and then fold in the crab and the
11:34
shrimp just like that I don't think you
11:40
can miss this dish up do you I mean you
11:42
see how simple it is so that's it
11:48
I'm just dump it right down there in the
11:51
bowl so I'm just gonna kind of pack that
11:58
down in there just like that in that
12:01
pretty thick colors are very spring-like
12:04
aren't they now I've got some melted
12:07
butter here and I've got saltine cracker
12:10
crumbs so I'm gonna butter these so
12:15
we're already makes a great little quick
12:18
healthy meal
12:26
and that's it it's ready to go in the
12:29
oven there's really nothing to cook in
12:32
it we're just gonna let it get bubbly
12:34
and that'll probably take about thirty
12:36
five minutes and look what I've got
12:51
ready for us in this other oven how
12:58
tasty does that look speaking of taste I
13:05
think it's time
13:13
piping hot shrimp and crab salad only
13:18
minutes to prepare
13:31
it's just glorious in speaking of
13:35
glorious coming up next I'm gonna cook
13:38
the world-famous hook cakes just for
13:41
y'all
13:48
[Music]
13:54
you
13:56
[Music]
14:01
you know I could just talk forever about
14:04
these hoecakes I almost don't even know
14:06
where to start there's so many things I
14:08
have to say about them we make them
14:09
every day at the restaurant and they're
14:12
so easy to make it's flour self-rising
14:18
cornmeal mix make sure you use a mix
14:21
because it's a blend of flour and meal
14:26
we've got a little sugar a couple of
14:31
good fresh eggs a little water a little
14:41
owl and a little buttermilk
14:54
so let me tell you the story about how
14:56
hoecakes got their name hundreds of
14:58
years ago the feel hands would come in
15:00
from the farm and they would have a fire
15:03
outside and they would cook their
15:05
hoecakes on the clean blade of a hoe
15:09
unbelievable I think that's so ingenious
15:12
now when you're mixing these up some
15:15
people like real fat hoecakes some
15:17
people like a thinner hoe cake I happen
15:19
to like I'm kind of middle weighs so
15:22
you'll have to just play around with
15:24
your batter and decide which thickness
15:26
you like but let's try this one right
15:28
now I've got my pan getting hot and
15:32
believe it or not I cook these in
15:37
clarified margarine y'all write that now
15:41
now that's margarine not butter
15:45
you won't hear me say that very often
15:48
but I like to use margarine because it
15:51
doesn't burn is badly as butter and I'm
15:55
gonna just ladle enough of that
15:58
clarified margarine so we're gonna make
16:01
sure our pan is good and hot and just
16:04
right all right it looks like our pans
16:07
about to get ready let's see
16:13
you'll want to make sure that your pan
16:15
is good and hot and see you've got to
16:21
have enough seasoning in your pan for
16:24
those hoecakes to fry in or otherwise
16:28
you would have a you'd have more of a
16:31
pancake so I'm gonna add just a little
16:34
bit more margarine alright so we'll do
16:37
another scoop
16:51
alright let's see what this first one
16:53
looks like these bring back a lot of
16:58
memories to people I had a young lady in
17:02
the restaurant one day and there were
17:04
tears glistening in her eyes and she
17:07
said Paula I just want to thank you so
17:10
much for this meal today she said I
17:13
could close my eyes at one point and see
17:17
my grandmother in her kitchen and all of
17:19
the family sitting at the table eating
17:21
these hope cakes then I thought I would
17:24
never taste again so I was so glad that
17:27
I was able to bring them back to her
17:28
just for a little while with a very
17:30
simple meal Jamie and Bobby's favorite
17:34
way to eat these hoecakes
17:35
is right out of the pan just covered in
17:38
homemade per-minute cheese so you see
17:42
there is no limit to a hoe cake all
17:45
right I think these about ready to come
17:46
up
17:57
I think these little guys are ready to
17:59
be tasted while they're piping hot
18:10
and I'll tell you like my daddy used to
18:12
tell me do as I say do not as I do
18:16
you might want to skip this step I like
18:23
to eat one with syrup I never ever get
18:30
tired of them
18:42
if I'm able when we come back I'm gonna
18:46
put some raspberry sauce on some ice
18:48
cream
18:56
[Music]
19:02
[Music]
19:09
just a couple of quick suggestions for
19:12
you when you're shopping for your bacon
19:14
you might want to try different kinds
19:16
you you can always choose from Canadian
19:18
bacon which is delicious
19:20
and then you've got thick sliced and
19:23
cured bacon but I do love the black
19:26
pepper bacon it's so good but I think my
19:29
favorite making of all is this slab
19:32
bacon that has a Rhine on it but you'll
19:34
have to get your butcher to cut that for
19:37
you you will never with a knife get it
19:39
cut like it should be and let me show
19:42
you all an easy way to make lardons
19:43
which is nothing but diced bacon that's
19:48
been blanched and fried it's great on
19:51
top of eggs or salads use your kitchen
19:54
scissors makes it so so easy you're
19:58
through in a jiff and for those really
20:00
really busy nights when you want to make
20:03
that shrimp and crab casserole put it in
20:06
a disposable dish feed everybody off of
20:08
a paper plate and you're outta there
20:11
I hope the next time you all have one of
20:13
those crazy crazy days that maybe you'll
20:16
remember one of the recipes that I made
20:18
today the shrimp and crab bake or the
20:20
corned beef and cabbage of the hoecakes
20:22
or this scrumptious raspberry sauce for
20:26
your ice cream I hope that you'll think
20:27
about them and if you try them I think
20:29
you'll agree with me that this dinner is
20:31
a winner so until next time best dishes
20:35
from my kitchen to yours
