hey y'all I'm Paula Deen today's show is
0:03
all about beans beans beans
0:06
you know beans are tasty and a healthy
0:08
food that's often overlooked but not
0:11
today and did you know that you can grow
0:13
your very own beans right in your garden
0:15
today I'm gonna show you how so first up
0:18
is my apple baked bean casserole that's
0:21
just fabulous as a side dish or even as
0:24
the entree and then I'm gonna be making
0:27
us a black bean salsa dip it's just
0:29
perfect and then next up is a buttery
0:33
and delicious green bean casserole and
0:35
then finally for dessert I'm baking
0:38
peanut butter cake that you didn't know
0:41
that peanuts or beans do did you so
0:43
stick around and enjoy this wonderful
0:46
cuisine of Bees
0:49
I can see my grandmother now out in her
0:53
garden she always made sure that she
0:56
didn't plant her beans when the soul was
0:58
below 60 degrees and if you want to fall
1:01
garden she always planted a fall garden
1:04
too you plant those ten to twelve weeks
1:06
before the first frost is expected as
1:09
I'm standing here looking I see some
1:12
bell peppers that need picking I've got
1:15
two nice bell peppers and I've got some
1:18
red leaf lettuce
1:19
I just adore red leaf lettuce it's such
1:22
a tender lettuce I love my garden this
1:30
red leaf lettuce is just beautiful but
1:35
we've had some rain and it dirt has
1:40
splattered up on it so I'm glad to make
1:41
sure I wash it real good but I'm just
1:44
gonna sit it over there in the sink and
1:45
give it a little squirt of water right
1:48
now to keep going because today is Byng
1:53
day in fact I heard somebody a while ago
1:56
kidding around they were saying Paula
1:58
Deen the bean Queen and I'm gonna start
2:02
with an old traditional dish baked beans
2:04
so we're gonna start with two cans of
2:07
Boston baked beans they're called Boston
2:13
baked beans because the recipe came out
2:17
of Boston all right we've got our beans
2:21
in here now we're gonna add some diced
2:23
onion some brown sugar some mustard now
2:34
the surprise ingredient in this recipe
2:37
is a granny smith apple and the reason
2:41
I'm using a Granny Smith is they'll hold
2:43
their shape has a wonderful texture to
2:46
it
2:47
now here on this next step you can add
2:51
bacon fat or you can just put your bacon
2:55
on top of your beans and I think that's
2:57
what I'm gonna do because I love bacon I
3:01
right I've got my casserole dish here
3:03
and I just want to spray our pan okay so
3:08
all we gonna do is dump our beans into
3:11
our casserole dish and we're gonna top
3:14
it with our bacon just like this then
3:22
that look delicious now if you wanted to
3:26
you could take the scissors and snip
3:28
your bacon into bite-sized pieces so
3:31
that everybody would get their own
3:34
little piece of bacon but I want to show
3:36
you another way that I like to bake
3:38
these and I've got a little individual
3:43
bean pot so I think I'm gonna just take
3:47
some of these out and fill this up and I
4:00
think I'm gonna just steal a little
4:03
piece of bacon because I want to show
4:06
you how these come out in the little
4:10
bean pot that's 350 for about 4045
4:15
minutes okay in the oven I just love
4:24
baked beans baked beans just go with so
4:29
many things well let's move down here to
4:31
another one of my favorite foods salsa
4:34
I'm gonna start with an avocado and I'm
4:39
just gonna run my knife around and give
4:43
it a twist and go in and just just
4:48
loosen that avocado from the skin I
4:52
adore avocados and I'm just gonna dice
4:57
him up just like this
5:04
pop that seed out of there does look
5:10
like a big bean doesn't it you know I
5:12
always said that I didn't like avocados
5:15
and then I found out that they were
5:18
fattening and I said well I know if it's
5:20
fattening I should like it so I went
5:23
back and I gave it another try
5:25
and sure enough I loved them but they
5:29
say they have the good kind of fat in
5:31
them not bad fat all right now I'm gonna
5:38
pour in 2 tablespoons of lime juice I'm
5:43
gonna add my black beans and I've got 2
5:46
cans of black beans a little red wine
5:50
vinegar 2 tomatoes that I've diced up
5:57
diced onion and this is just a frozen
6:04
shoepeg corn okay all this needs now is
6:13
a little cilantro some people don't like
6:16
cilantro it was another thing that had
6:20
to grow on me I really like it now not a
6:23
whole lot of it though because to me a
6:27
little of this goes a long way and now
6:31
it's ready just that quickly this is
6:35
gonna do nicely
6:42
I think I am gonna add a little salt and
6:49
a little pepper just right see I think
7:01
I'm just gonna do it like this that'll
7:02
make me a nice little scooper so we got
7:05
two quick and easy dishes and I have
7:09
found that when young people come to my
7:12
house they'll scoff this up in a minute
7:15
because they feel like they're eating
7:16
kind of healthy but look how pretty and
7:21
quick that wants for us to put together
7:23
and you're gonna love with your
7:26
different color chips and all the
7:28
different flavors we've got going on in
7:30
there all right now I want to check in
7:32
these beans and see how they're doing oh
7:35
they smell so good look at that little
7:43
individual serving there in that cute
7:46
when we come back I'm gonna dig into
7:48
that cuz it's way too hot but right now
7:51
I'm gonna dig into this cool sauce and
7:53
when we come back it's gonna be Paula
7:55
Deen the queen of beans cooking up a
7:57
green bean casserole so I'll see y'all
8:00
in a minute
8:09
[Music]
8:16
all right we're back and I hope y'all
8:20
are hungry because it's time to taste
8:22
this bean and apple casserole this is
8:29
just different twists for baked beans
8:35
mmm that is so good
8:39
the next thing I'm gonna be making is a
8:41
green bean casserole everybody loves
8:45
them you go to a covered dish supper
8:47
you're gonna find the green bean
8:48
casserole I used those beautiful fresh
8:51
green beans out of the garden and I have
8:55
cooked them in a little chicken stock
8:57
until they're tender and these are ready
9:00
so I'm gonna back up over here and I'm
9:03
gonna drain them give them a good shake
9:08
and in this pot I'm gonna put oh gosh
9:14
probably 1/3 of a stick of butter and
9:16
let that melt I can't tell you how much
9:19
better that casserole is if you will
9:22
saute your onions first it makes all the
9:25
difference in the world so we're gonna
9:27
saute these in that third of a stick of
9:30
butter until they're kind of just
9:31
translucent we just want to pull the
9:35
flavor out of that onion all right we're
9:38
gonna saute those onions and the
9:40
mushrooms just for a few minutes they
9:42
don't need to be mushy and I'm gonna
9:45
give our beans a stir and just make sure
9:49
that they're draining all right that
9:55
looks good and I'm just gonna pour that
9:59
liquid out of there and pour these green
10:05
beans back into the pot when a green
10:08
bean is right it just does not get any
10:10
better and one day maybe we'll cook up
10:13
some canned green beans but today I've
10:15
got the pleasure of cooking fresh all
10:17
right now we're gonna throw these over
10:19
in here turn off our eyes and we're
10:22
going to stir
10:23
a cream of mushroom soup now most people
10:30
will top their green bean casseroles
10:33
with either a buttered cracker
10:37
breadcrumbs or onion rings now these
10:42
little onion rings today we're going to
10:45
fold them in done that look yummy all
10:50
right and I'm gonna chase this and then
10:52
see how it is the best bean I've ever
10:59
eaten
10:59
now here I'm gonna put these on my
11:03
greased casserole dish as I told you
11:07
before I love cooking individual
11:10
servings especially if you're just
11:12
having two to four people doesn't it
11:20
look delicious all right so we're gonna
11:30
put this in a preheated 350 degree oven
11:33
and then we're gonna top it with cheese
11:40
and when we come back I'm gonna make a
11:44
peanut butter cake now what does peanut
11:47
butter cake have to do with beans you
11:49
ask you come back and I'll clue you in
11:52
[Music]
11:58
[Music]
12:06
all right
12:08
our casseroles look wonderful now I'm
12:13
just gonna top these with a little
12:14
cheese and we'll give that a couple of
12:18
minutes to melt because this cake I'm
12:22
fixing to show you it's so easy to make
12:24
won't have it in the oven in no time
12:27
flat
12:28
this recipe comes from my aunt Trina and
12:32
we're gonna start by sifting our flour
12:34
and our sugar all right we've got our
12:37
sugar in there we've got our all-purpose
12:39
flour we're gonna put baking powder in
12:41
it and a teaspoon of salt and we're just
12:46
gonna sift this into our mixing bowl by
12:49
using a spatula and that takes care of
12:53
that we're gonna add two cups of graham
12:56
cracker crumbs and some peanut butter
13:02
because we're making a peanut butter
13:04
cake a little vegetable shortening and
13:10
our liquid for our cake is milk and
13:15
we're gonna add about about a teaspoon
13:18
of vanilla and now all we're gonna do is
13:23
move this to our mixer turn it on and
13:29
let it go and then we're gonna add three
13:31
eggs one egg at the time so you can see
13:34
how simple this is to have a homemade
13:37
cake from scratch
13:38
I miss my aunt Trina so badly we were
13:42
like sisters growing up because she was
13:44
just three years older than me
13:48
but when I eat this cake yes I
13:51
definitely think of my aunt Trina so
13:54
just a couple more quick turns and we've
13:57
got it
13:59
now I'm gonna very slowly lift my
14:02
beaters so it'll swing all of our batter
14:05
off all right so this is ready to be put
14:10
into our pan all right now we're gonna
14:12
spray our pan all right just gonna pour
14:15
a batter in there and you see it's a
14:17
real thick rich batter did you know that
14:21
peanuts are really a being that grows
14:25
underground and if you have to dig
14:29
peanuts that's quite a job it's nowadays
14:33
they have modern equipment that come in
14:35
and just dig them up out of the earth
14:38
and and it shakes all the dirt off of
14:40
them all right now we're gonna put this
14:43
in the oven and we're gonna bake it at
14:45
375 degrees for about about 40 minutes
14:54
so in the oven it goes
14:58
Rini smells cake we're gonna take our
15:02
casserole out because our cheese is
15:04
melted all right so here goes our cake I
15:12
want to slip a little bite out of these
15:17
green beans and taste them if they're
15:19
not too hot it's hot but it's worth
15:25
every burn it's delicious
15:27
all right while our cake is baking I'm
15:31
gonna make our icing because we want to
15:34
top the top of our cake while it's
15:36
warming while the icing is warm and this
15:38
is my just favorite icing in the whole
15:40
entire world when it comes to chocolate
15:43
and I'm gonna start with a stick of
15:46
butter I'm gonna add probably
15:51
two tablespoons of cocoa not a whole
15:56
bunch and I'm gonna put 1/3 of a cup of
16:01
heavy cream all right and you can see
16:05
that's ball in nicely okay so I'm going
16:08
to take that off my heat and I'm gonna
16:10
add my powdered sugar in and if you want
16:16
to make sure this doesn't lung Ponyo you
16:19
can always sift your powdered sugar but
16:21
I'm gonna stick this back on the eye
16:23
until that sugar is dissolved and then I
16:28
will make my call as to whether I want
16:32
to add more cream because this icing
16:36
once it sits will get harder and I'm
16:40
gonna take this off the heat and you can
16:43
see the consistency all right now I'm
16:47
gonna stir in about 1/2 a cup of salted
16:50
peanuts all right all I need to do now
16:57
is add the vanilla to it and you don't
17:01
want to add vanilla to it while it's
17:05
boiling because you don't want your
17:10
flavor to evaporate so now that we've
17:14
moved it off the heat it's safe all
17:17
right let's see if I take is ready
17:21
smells ready now I'm gonna take a spoon
17:28
and I'm gonna poke holes in it so I'm
17:30
gonna take that and I'm just gonna go
17:32
around my cake because I want that icing
17:37
to run all down in there all right
17:48
so I'm gonna pour this warm icing on
17:52
this warm cake look at the Hat I'm just
18:00
gonna spread it all in there but like I
18:04
said this will harden up so why don't we
18:07
have a piece now so that'll work perfect
18:15
I love it I love it I love it
18:20
with whipping cream and I love it with
18:24
nuts oh my goodness
18:40
it's the best beam I've ever eaten when
18:44
we come back I'm gonna match the perfect
18:47
beam for the perfect meal
18:50
[Music]
18:57
[Music]
19:04
okay I want to share with y'all some
19:07
bean tips they are a wonderful way to
19:09
get fiber and protein they have
19:12
absolutely zero fat right here I have a
19:15
dried garbanzo bean or chickpea and then
19:18
I have them in the canned version and
19:20
these are wonderful to top off a salad
19:23
with and the great northern white bean
19:25
are so good everybody's familiar with
19:28
black beans and they're really a great
19:30
product out of the can because it does
19:33
take a good while to cook a black bean
19:35
and both these beans are great in soups
19:39
and these are pinto beans the pinto
19:41
beans are great for chili now there's a
19:44
couple of different ways if you're
19:45
cooking dried beans that you can prepare
19:47
them you can do an overnight soak you
19:50
can do a quick method which is bringing
19:53
them to a ball
19:53
cutting the off letting them sit for an
19:56
hour I hope these tips help you enjoy
19:58
your beans because they're so good for
20:01
you right back to where we started I've
20:05
got my green bean casserole my Apple
20:09
baked bean casserole a wonderful salsa
20:12
and right here a fabulous peanut butter
20:16
cake so until next time America I want
20:19
to send you love and best dishes from my
20:22
garden to yours
