Hey y'all, break out your blue suede
0:02
shoes and come with me because today
0:04
we're going to be saying thank you very
0:07
much to the king. That's right. Today's
0:10
show is all about Elvis. So, we're going
0:13
to be taking care of business in my
0:15
kitchen with a whole meal of Elvis
0:18
inspired dishes that I think you're
0:20
going to love. First up, I'm going to
0:22
combine two of Elvis's favorite dishes
0:26
with my cheeseburger meatloaf. It's
0:28
going to knock your socks off. And on
0:31
the side, I'm going to be making some
0:33
crunchy new potatoes. And for my encore,
0:36
I'm fixing a peanut butter and banana
0:40
gooey butter cake. And it's truly over
0:43
the top. So, y'all come with me today
0:45
and don't be cruel cuz Elvis hadn't left
0:48
the building just yet.
0:50
[Music]
0:53
Well, how do y'all like my souvenir from
0:55
from Graceland? Ain't it slimming?
0:59
Makes me look like Elvis, doesn't it?
1:02
Speaking of Elvis, today's show is all
1:04
about Elvis. And I tell you what, you're
1:07
not going to find a bigger fan than I
1:10
was of Elvis. And so today, I'm cooking
1:12
things that I think Elvis would have
1:14
really liked. But the real kicker comes
1:18
in from the dessert today. There's a
1:20
group of correction officers down in
1:22
Alabama and they're faithfully watch my
1:25
show every Saturday. Well, they sent me
1:27
an idea and they call it the Elvis
1:30
Presley gooey butter cake. So, we're
1:32
going to be doing that later on in the
1:34
show. But for right now, I think Elvis
1:37
would love a meatloaf cuz he liked his
1:39
hamburger meat. So, we're going to start
1:41
with a meatloaf that we serve at the
1:43
lady and sons.
1:46
is called um cheeseburger meatloaf.
1:50
It's real simple to make
1:54
and it's tasty. So, I'm going to put my
1:58
ground beef in there.
2:01
And I'd started chopping my onions and
2:03
my green pepper.
2:08
And I'll just finish these up. I've got
2:11
several meatloaf recipes that we use at
2:14
the restaurant. And I have to say this
2:16
is probably one of the favorites.
2:22
All right. Now, I'm adding some of our
2:24
house seasoning and some seasoning salt.
2:28
And we're just going to mix this up.
2:30
Y'all will notice that I'm putting some
2:31
ingredients that are that you don't find
2:34
in a standard meatloaf. And that sour
2:36
cream. I'm going to put a half a cup of
2:38
sour cream and some worooster shower
2:42
and a cup of shredded cheddar cheese.
2:46
This looks pretty good. All right. Now,
2:49
I'm going to have to wash my hands. So,
2:52
for the breading part of this meatloaf,
2:55
I'm going to use crackers.
2:58
But I just love the taste of these
3:00
crackers. And I'm going to need a cup of
3:03
cracker crumbs.
3:06
Okay. See how easy that was? I remember
3:10
the one and only time I ever saw Elvis.
3:14
Oh my goodness. Yes. It was in 1973.
3:19
And I didn't have any money for an
3:23
outfit.
3:25
So I went to the fabric store and I
3:28
bought me some fabric because it was
3:30
very important that I looked good
3:32
because he might look out there and see
3:34
me. So, I wanted to look really, really
3:37
good. So, I made me some hot pants,
3:40
real short hot pants, and a shirt that
3:44
cut down. And I went to the shoe store
3:49
and bought me a pair of white plastic
3:51
knee high boots. Now, I was one hot
3:55
mama.
3:58
I don't have to tell y'all. He didn't
4:00
see me.
4:03
I'll never forget that. Uh but well,
4:06
right now, I'm going to get this
4:07
meatloaf in this pan and I want to show
4:10
y'all a trick. It may be one that I've
4:11
shared with you before, but I want to
4:13
share it with you again.
4:16
Ground beef is greasy. And I don't
4:19
particularly like a greasy meatloaf. So,
4:22
I'm going to stick two pieces of bread
4:24
in the bottom of my dish because that
4:28
bread is going to
4:31
act almost like a sponge and it's going
4:34
to soak up all that grease and then you
4:38
try to resist eating that greasy bread.
4:42
All right, so we're going to stick this
4:44
in a 350°ree oven for about 50 minutes.
4:52
All right. If I was a betting woman, I
4:55
would bet that Elvis and I shared a love
4:58
for potatoes. So, I'm going to make some
5:01
crunchy new potatoes. And I found these
5:04
wonderful little small reds. And I'm
5:07
just going to throw them in a pot of
5:08
cold water. And because of their size,
5:11
they're not going to take very long. And
5:13
you always want to start your potatoes
5:15
in cold water because they'll cook more
5:18
evenly. And while they're cooking, I'm
5:21
going to be mixing up corn flakes.
5:25
Now, this is no sugar corn flakes. These
5:28
are regular. And I formulated this
5:30
recipe when I was writing my second
5:32
cookbook. And I really, really like
5:35
these. Now, I'm going to mix in with
5:37
these. Okay. So, when we come back, the
5:39
potatoes should be done. And I'm going
5:41
to show you how to turn these soft
5:44
little sweet new potatoes into crunchy
5:46
potatoes. And I'm also gonna share with
5:49
y'all some home movies from Graceland
5:51
that I want to show y'all. So y'all
5:53
don't go anywhere. I'll be right here
5:55
waiting on you.
5:56
[Music]
6:02
[Music]
6:13
Before we get started with the potatoes,
6:15
I want to show y'all something. You
6:16
know, I told you that I finally got to
6:18
see Elvis in 1973.
6:20
And these are the programs from that
6:22
show. It's really strange that his lips
6:26
are missing.
6:28
That very well could have been from me
6:30
kissing him.
6:33
He was just the best. All right, our
6:35
potatoes are done. And now we're going
6:37
to peel them. And you'll find that these
6:39
peel real, real easy with a pairing
6:42
knife. Just like that. All right. Now,
6:45
we're going to toss these around
6:48
in the butter. Oh, I could just eat them
6:50
just like this, but we're not. We're
6:53
going to roll them around in these
6:54
crumbs. I'm going to cook these potatoes
6:57
in little individual bean pots. So,
7:01
everybody will have their own little pot
7:03
of potatoes. All right. Now, our
7:05
meatloaf is probably almost done. And I
7:07
have, in honor of Elvis, he was very
7:10
funny about his hamburger. He wanted it
7:12
cooked well done. So, because that's the
7:16
way Elvis liked them, that's the way
7:18
Paula's cooking them. All right, we're
7:20
gonna put these in the oven and I'm
7:21
going to um take our meatloaf out. We're
7:24
going to turn our oven up to 400°
7:26
because our potatoes need to cook a
7:28
little hotter than the meatloaf. So,
7:30
let's see what we've got.
7:36
Yeah, it's nice and done. See, it shrunk
7:40
a little bit. Now, I'm going to cut this
7:42
up to 400.
7:44
I'm going to stick our cute little pot
7:47
of potatoes in the oven,
7:50
and we're just going to roast those off.
7:52
We've got the meatloaf out. We've got
7:54
the potatoes in. Now, I want to show
7:56
y'all this quick and easy sauce. Now,
7:59
we're going to just take a can of cream
8:01
of mushroom soup. Any brand, your
8:03
favorite brand.
8:07
This is so quick and easy, you're not
8:09
going to believe it.
8:11
We're going to put our
8:14
cream of mushroom soup in our pot. We
8:17
serve this at the restaurant about once
8:19
a week,
8:21
and the men just love it. All right,
8:24
we're going to add a cup of milk. I'm
8:27
going to add it slowly at first to just
8:29
mix that soup and that milk together so
8:32
it won't go clumpy on me. And now we're
8:35
going to add a cup and a half of cheddar
8:37
cheese to it.
8:39
And then we're just going to bring that
8:41
to a boil and we'll have that to pour on
8:44
top of our meatloaf. And it's delicious
8:47
with biscuits. But you know what? I've
8:50
got some onions here.
8:53
So,
8:56
I think I'll do just a few onion tops
8:59
and throw over in there. And that'll
9:01
that'll make it a little bit more
9:03
interesting.
9:07
Give it a little color. And the flavor
9:09
won't hurt it either. So there we go. So
9:13
while our sauce is getting hot, our
9:17
meatloaf is resting for a little while
9:19
because it'll slice easier, you know, if
9:21
we let it rest. But this I just want to
9:24
show y'all this. This was um like a
9:27
little piece of heaven.
9:29
This was Magnolia Lodge down in Crystal
9:32
River, Florida. And my grandmother and
9:34
granddaddy owned this. We had wonderful
9:37
times here. This is where all the
9:39
wealthy hunter and fishermen would come
9:42
and grandma would cook their their catch
9:46
or their game, what whatever it was, she
9:49
would cook that for their dinner. And it
9:51
was here that Elvis spent one week
9:54
vacationing
9:56
and he sent a postcard uh saying how
9:59
much he appreciated and enjoyed
10:01
everything. And that was a wonderful
10:03
place, a wonderful part of my childhood.
10:07
All right, now our sauce is bubbly. And
10:09
now I got to find a a plate to put our
10:15
meatloaf on. And this has cooled off
10:17
enough that I think I'm going to be able
10:20
to just lift it pretty easily. All
10:23
right, this is the only spatula I can
10:25
find, so I'm going to see if I can't
10:27
make it work.
10:32
Look at they are perfect. All right.
10:34
Now, you see all of our bread that's
10:36
full of grease just peeled right off of
10:39
our meatloaf.
10:41
So, we're going to slip that over in
10:43
there.
10:45
Okay.
10:46
So, we're just going to
10:49
put that cheesy sauce on top of that
10:51
meatloaf. You know, I just think I could
10:54
have made Elvis so happy.
10:57
M.
10:59
All right. Now, let's see. I don't think
11:00
this needs much. Love spring onions.
11:04
I've got some sliced tomatoes. And I'm
11:06
fixing to take our potatoes out of the
11:09
oven. That looks scrumptious. All right,
11:12
let's see if they're ready.
11:14
All right,
11:18
potatoes are done.
11:21
Look at that. Is that not fit for a
11:23
king? I know it. If only Elvis.
11:28
Let's see what it tastes like.
11:31
Looks delicious.
11:39
When we come back, I've got that special
11:41
Elvis Presley dessert I was telling you
11:43
about. So, y'all don't go anywhere.
11:45
[Music]
12:02
So, this next recipe comes from a group
12:05
of friends from Lexington, Kentucky, and
12:08
they watch the show every Saturday, and
12:10
they write and tell me how much they
12:12
love it. And they came up with the Elvis
12:15
Nanner Peanut Butter Gooey Buttercake.
12:19
and the recipe is over the top. So, I
12:22
can't wait to share it with everybody.
12:24
I'm going to start with a yellow cake
12:26
mix,
12:28
one egg,
12:31
and one stick of melted butter.
12:36
Now, you can do this with a mixer or you
12:39
can do it by hand. This is going to be
12:42
the base to our gooey buttercake, so
12:44
it's going to be really, really stiff.
12:46
So, we've almost got our crust done up.
12:51
All right. Now, we're going to take our
12:52
crust
12:54
and we're going to just pile it all into
12:57
a 13 by 9 by two pan.
13:02
So, we're just going to press that out.
13:05
I started making this years ago. It was
13:08
the first dessert that I made and sent
13:11
out on the bag lady routes with the
13:13
boys. My kitchen and I have done just
13:17
about every variation there is. But guys
13:20
and girls from Kentucky, we've never
13:23
made a peanut butter banana gooey
13:25
buttercake. All right. Now for the with
13:28
the filling, I'm going to put in an 8 oz
13:31
block of softened cream cheese. And I'm
13:34
going to put a half a cup of peanut
13:36
butter.
13:38
And I'm just going to blend those up
13:42
together.
13:45
Oh, those two things are looking
13:47
delicious.
13:48
All right, so we're just going to cream
13:50
that together like that a little bit.
13:52
Then I'm going to add my powdered sugar
13:54
and just beat that in there. And this is
13:56
a oneb box of powdered sugar. And we're
14:00
going to put that whole box in there.
14:03
All right. And I'm almost done, but I
14:04
think I'm going to go ahead and add two
14:07
eggs to it now to just make it a little
14:10
bit more liquidy so it'll mix up
14:13
quicker. And when I'm making a gooey
14:15
buttercake that's got a really gooey
14:18
center, like pineapple gooey
14:20
buttercakes, rather than put in two
14:22
eggs, I'll put in three cuz that extra
14:25
egg helps it thicken up a little bit and
14:27
that way it's not so runny.
14:30
All right. So, I think we can finish
14:32
putting our powdered sugar in.
14:35
I'm going to go ahead and I'm going to
14:37
cut that on low so that my butter won't
14:40
splash all up in my face.
14:43
I'm going to add some vanilla. A banana
14:46
flavoring would be good, too. But I
14:48
think our banana is going to flavor it
14:51
enough. All right. Now, we're going to
14:52
take one banana.
14:56
And I like to get my bananas going by
14:59
mashing them in their skin some. So you
15:02
see what I've done? I've just mashed it
15:04
a little bit in its skin and given it a
15:06
little head start. And we're just going
15:09
to throw it in there and let the mixer
15:10
do the rest of the work. Makes banana
15:12
mashing real, real easy. I think this is
15:16
ready. Still got a few chunks of bananas
15:18
in it, but I think that's going to make
15:21
it really, really good.
15:24
All right.
15:30
So, we're just going to pour that in.
15:33
Just spread that out. Going to cover
15:35
that crust.
15:37
And we're going to let it bake for gosh
15:40
about 45 or 50 minutes. The one thing
15:42
about gooey buttercakes is you you need
15:45
to get that time down just perfectly
15:48
because the name of this is gooey. You
15:51
want to be able to when you shake your
15:52
pan that it still moves just a little
15:55
bit with you. So, be careful that you
15:58
don't overcook it. So, we're going to
16:00
put this in the oven
16:03
and we're going to bake this on 325.
16:10
And I've got a pan over here that should
16:12
be ready. It looks out of this world.
16:19
Oh my goodness.
16:21
Look how good.
16:25
And I think I'm going to start by
16:26
slicing this right down the center. And
16:30
then all I have to do is come to either
16:34
side and go right down the center.
16:37
Again, I was reading somewhere the other
16:39
day a few things that Graceand was
16:42
required to have on hand in the kitchen
16:45
was a case of orange drink,
16:50
freshmade homemade banana pudding,
16:54
hot rolls, biscuits, and the ingredients
16:58
to put together a meatloaf.
17:01
Just what we made a few minutes ago. So,
17:05
I think we're on target maybe with some
17:08
of his likes.
17:10
And I got some fresh whipped cream. And
17:13
I got a little mint just to make it
17:14
pretty. We've kind of combined two of
17:17
his favorite ingredients
17:19
into this dessert. Or I say we have,
17:23
the guys and girls from Kentucky have.
17:27
In fact, Michael's favorite gooey butter
17:30
cake is the banana gooey butter cake.
17:33
And he hadn't tasted this double whammy.
17:37
So, I bet he's going to love it, too.
17:40
Look at that.
17:43
I'm swallowing hard. So, what you say?
17:45
Let's taste it. Because next, I've got a
17:48
real surprise for you. I've got a
17:50
variation of another one of Elvis's
17:53
favorite foods. You're going to love it.
17:56
A sweet bacon mini BLT sandwich. So,
18:00
don't go anywhere.
18:05
[Music]
18:11
[Music]
18:20
If there was anybody that ever made the
18:23
most of southern cooking, it was
18:25
probably Elvis Presley. He loved his
18:28
butter. He loved his bacon. So, in
18:31
memory of Elvis, today I'm going to show
18:34
y'all how to put together a bacon,
18:36
lettuce, and tomato biscuit. Now, what's
18:39
going to make this special is I have
18:42
baked our bacon in the oven with brown
18:44
sugar. We're just going to bust open our
18:46
biscuit, put a little mayonnaise on it,
18:50
and some lettuce, tomato,
18:54
and some of that sticky brown sugar
18:57
bacon.
19:06
What a great way to enjoy a little mini
19:10
BLT.
19:12
You won't believe that sweet bacon in
19:14
there. He would have loved it. You know,
19:16
it's not every day that an Elvis Presley
19:18
is born. And whether you're a fan or
19:20
not, I think that you'll agree that his
19:24
choice of food was pretty good. He
19:26
really liked his southern food. And I
19:29
think that y'all will love this
19:30
cheeseburger meatloaf with the cheese
19:32
sauce and the ranch flavored crunchy
19:35
potatoes. And thanks Kentucky for an
19:38
over-the-top peanut butter banana gooey
19:41
buttercake. Hope y'all try them. Enjoy
19:44
them all. Until next time, America. I
19:47
send y'all love and best dishes from my
19:50
kitchen to yours.
