On today's podcast, Paula talks about making Jamie Deen's favorite meal - fried pork chops
https://www.pauladeen.com/recipe/fried-pork-chops/
Now, to make these really good, here are Paula's tips on making a simply delicious pork chops.
1. Buy bone in pork chops for added flavor.
2. Salt and pepper the pork chops and add a little garlic powder
3. Beat Pork chops with meat mallet to break down the meat a bit.
4. Sprinkle with buttermilk on both sides.
5. Dredge the chops in self rising flour
6. Cook in cast iron skillet because it retains heat very well
7. Use peanut oil. Peanut oil handles heat very well.
8 Cook over medium high heat
9. Cook 3-4 minutes per side depending on thickness of the chop
10. Line a baking sheet with a paper bag to drain your pork chops
11. If you making multiple chops, put them in the oven.

hey y'all today I'm gonna talk about
0:03
fried pork chops on the podcast you know
0:06
when I invite Jamie Dean over to eat
0:10
I'll say what he won't son and he said
0:12
mommy you know I won't fried pork chops
0:14
I just love them so I want to just tell
0:19
y'all what I've learned over the years
0:21
about a wonderful tender mouth-watering
0:26
fried pork chop now the first thing I
0:30
want to do is salt and pepper my pork
0:33
chops now you can get different cuts of
0:37
a pork chop you can get one that looks
0:39
like a porterhouse it's got the filet on
0:41
one side and then the the strip on the
0:45
other or you can get one with just like
0:48
a blade with no filet and you can even
0:50
get boneless pork chops but you know I'm
0:53
a Bond girl
0:55
knowing the bone of a pork chop is my
0:59
favorite thing to do so I always buy the
1:02
bone-in and after I salt and pepper
1:05
these and I use a little garlic powder
1:08
on them as well I'll take my meat mallet
1:12
and I will beat my pork chops because
1:15
it's a muscle so I want to break down
1:18
that muscle just in case it might be a
1:22
little on the tough side so I'll beat
1:25
them down on both sides just just enough
1:29
to break the muscle and then I'll just
1:34
sprinkle it with buttermilk on both
1:37
sides I don't drink them just sprinkle
1:40
it and let that sit in for a minute and
1:43
then I put it into self-rising flour and
1:47
I dredge it good and I love cooking my
1:52
pork chops and up in a cast-iron skillet
1:56
because it'll get so hot and it'll
1:58
retain that heat and I always use peanut
2:02
oil because of the flavor of it and
2:06
because it has a higher resistance to
2:09
burning so I'll put Justin
2:13
enough peanut all in in my pan so is not
2:18
to cover the pork chops you can deep-fry
2:21
them and they're good but I usually will
2:24
just put it enough peanut oil then it
2:28
covers the pork chop like halfway and
2:31
I'll cook it over like a medium-high
2:34
heat and I'll cook it for maybe three or
2:39
four minutes per side really depending
2:42
on how thick your pork chops are and
2:46
then I'll just line a baking sheet with
2:51
a with a paper bag from the grocery
2:53
store I'll I'll press that down and use
2:58
that as a drain for my pork chops and
3:01
then I'll put a couple of pieces of
3:04
paper towel on top of that and I'll put
3:07
them on my cookie sheet in a warm oven
3:09
because when you fry pork chops at the
3:12
Dean house you're frying more than one
3:17
batch it may be three or four batches
3:20
that I'm frying so just throw them in
3:22
the oven and keep them warm in fact um
3:26
while we talking about pork chops
3:28
there's something I want y'all to see
3:33
I finally got it together I think
3:35
Jamie's only complaint is Mama's not
3:37
fast enough but here y'all look here
3:42
look over there in those pots who do you
3:48

4:47

5:16

5:22

5:26

5:33
y'all when I get to spend quality time
5:37

5:41

6:39

6:43
I don't want a 5-4 pouts in my house
6:45
because no this is the flavor that I
6:48
only get from my mama mm-hmm in a
6:51
hundred years when you go to heaven I'm
6:52
gonna cry thinking about the flavor of
6:54
that porch option Oh son and there's
6:59
nothing that a mother loves more than
7:02
feeding her children something that it's
7:05
like nobody else can give them except
7:07

7:11

3300 alright so I hope you all enjoyed
8:38
that that little scene there so we've
8:42
got all of our pork chops made now you
8:44
know we either gonna have rice or mashed
8:47
potatoes with our pork chops that's just
8:49
a must so we're gonna need to make some
8:52
gravy so leave about two to three four
8:57
tablespoons of your peanut oil in your
9:00
pan if you've got more than that then
9:03
just pour it off and then add two or
9:06
three tablespoons heaping tablespoons of
9:09
flour in salt and pepper and brown that
9:12
you want to scrape your pan real good to
9:14
get all those little brown delicious
9:17
bites in there that have got so much
9:20
flavor in them and you'll want to stir
9:22
that until it's nice and brown and then
9:27
you can add a can of beef broth or a can
9:31
of chicken broth and about a half a cup
9:35
of milk and you just add water as needed
9:39
so you just stir that until it starts to
9:42
bubble again
9:43
get real thick and then stick your
9:46
finger in it for the taste test and add
9:49
more salt and pepper if needed I hope
9:53
that this recipe gives y'all great
9:56
success until next week y'all loving
9:59

10:03
some gravy real quick line right and I'm
10:07

10:13
