In this week's episode of What's Cooking with Paula Deen, Michael joins Paula to talk about her one pot wonder of a meal using Chuck Roast and some thoughts on what they are having for dinner this week including soup, hoe cakes and corn bread.
To make the one pot recipe -
Rub meat with teaspoon of salt and pepper and garlic powder
Use a multi cooker turned on high and brown on both sizes
Get one package and demi glaze and one envelope of ranch dressing mix and then put a stick of butter on the roast and a dozen pepporcini peppers. When it's done, remove the meat and then cook the liquid until boiling.
Slow cook for six hours and serve over rice.
To make the corn bread -
1 1/2 cup self rising white corn meal
3/4 self rising flour
1 cup of grated cheddar cheese
8 oz can of creamed corn
8 oz of cream cheese at room temperature
1/2 cup of vegetable oil
2 diced jalapenos

hey y'all welcome to what's cooking with
0:03
Paula Dean but today it's welcome to
0:06
what's cooking with Michael and Paula
0:09
hey Michael hey
0:11
dog how are you good good huh I'm good
0:16
good you look good I'm good we're all
0:20
good you know what I want to talk about
0:22
today tell me I want to talk about a one
0:26
pot wonder that I do uh do you remember
0:29
when Diane had her and Marilyn Milson
0:32
came to spend a few days with us you
0:34
know and you took us crabing uhhuh oh my
0:37
gosh you turn those girls into two of
0:41
the happiest girls doing something so
0:43
simple as uh string crab and they had a
0:48
ball and uh when I talked to them they
0:51
they're still talking about you taking
0:53
them crabing and they want to go again
0:55
so badly when Diane and Marilyn come to
0:58
visit Marilyn
1:00
always wants to cook at least one dinner
1:03
meal for us so she chose this
1:08
dish to prepare for dinner for us and it
1:12
was
1:14
delicious I don't you do remember I do
1:16
remember yeah and let me tell y'all how
1:18
easy it is you just go buy you uh a 4 to
1:22
six lb chuck roast and I wouldn't use
1:27
any other kind but chuck chuck roast is
1:30
the cheaper of the roast and it's
1:33
definitely the best and you just um rub
1:36
it with a teaspoon of salt pepper and a
1:39
teaspoon of garlic powder and um I like
1:43
to cook mine in my multi cooker uh
1:47
because my multi cooker is a stove top
1:50
cooker uh Ste it steams it keeps it on
1:53
warm it slow Cooks um I can actually
1:58
even fry in in my multicooker so I love
2:01
using that so after I've rubbed all my
2:04
seasoning on my roast I turn it on high
2:09
and I brown it off right there and then
2:13
it it's so it's crazy simple you uh get
2:17
one package of like uh brown demig glaze
2:22
package you know in the section at the
2:24
grocery store where they have all these
2:27
different seasonings you know for
2:29
meatloaf chili you find it right there
2:32
and then you take one envelope of ranch
2:35
dressing mix and pour that those two
2:40
things all over your
2:42
roast then you lay a stick of butter on
2:46
top of that roast and then you take a
2:49
jar of pepperi
2:51
peppers they're the light green peppers
2:54
that are about that long and there
2:56
there's really no heat to them right
2:59
once in a
3:00
once in a while I'll get hold of one
3:02
that may have a little heat but very
3:04
very little and uh I just put like a
3:08
dozen of peppercinis all over it put the
3:12
lid on it and let it cook for like 6
3:15
hours and it's incredible over rice
3:19
y'all just incredible and even though we
3:23
hadn't put a speck of liquid into our
3:27
pot the roast is covered in a liquid and
3:32
it's so good all you have to do is uh
3:36
turn your cooker back up and bring it to
3:38
a bowl and thicken your gravy with a
3:41
little corn starch and water mixed
3:43
together it's Heavenly isn't it yeah I
3:47
love it the best that package of demi
3:51
glaze just gives it the richest beefy
3:56
taste and ooh you talking about your
3:58
house smelling good good yum and it's so
4:02
easy you can you can I appreciate
4:04
Marilyn sharing that recipe with me
4:07
another time I can't remember what she
4:09
cooked but
4:11
um it it didn't beat this no that's my
4:15
favorite that she cooks
4:18
mm Marilyn also shared with me a recipe
4:21
years ago that I think is the best I
4:24
have ever tasted and that's potato soup
4:28
mhm
4:30
she makes a killer potato soup I could
4:33
live off soup I know you could I know
4:35
you could uh we're having a a white bean
4:39
soup for dinner tonight oh
4:43
good my cousin your
4:46
cousin is home cooking it right now as
4:50
we speak perfect and I thought maybe you
4:54
could make the cornbread okay I'll do it
4:57
no Don wants me to make um he went to
5:01
the store and got some okra he wants me
5:04
to uh slice that okra real real thin and
5:09
put it in my hake batter and make us
5:11
okra H cakes oh that'd be good may maybe
5:14
I do jalapenos you yeah yeah uh we'll
5:19
have to stop by the store we can do that
5:22
all right well let's take a quick break
5:23
and get our heads together on what we're
5:26
going to
5:27
do okay okay you're still looking at me
5:32
funny we'll be back in a
5:36
second the space that you live in really
5:39

6:20
paaa or call 1800
6:24
659
6:26
3300 that's 1 800 6593
6:33
3300 hey y'all welcome back to what's
6:36
cooking with Paula Dean and her husband
6:38
Michael groover today so I was just uh
6:42
telling y'all that uh my cousin Don is
6:45
home cooking us like white bean soup
6:48
with a bunch of ham oh good bunch of
6:51
smoked ham in it and it's going to be so
6:53
good and we can't have that without
6:54
having some
6:55
cornbread uh so Don wants me to make the
6:59
Lao cake with the real thin sliced okra
7:04
in it right now I can make that kind at
7:08
which is 1 and 1/2 cups of plain white
7:11
cornmeal you add a teaspoon of salt and
7:15
uh two cups of water and you'll want
7:18
your batter and course you'll need a ho
7:21
cake pan uh a ho pan is about that big
7:26
and the sides just go up just a little
7:29
bit and it's cast iron in order to make
7:33
a laso cake you must have that pan it
7:37
almost looks like a griddle with just a
7:39
little lip around with just a little lip
7:42
you'll need a good bit of
7:44
oil because I all my Skillet real good
7:48
and uh like I said you'll want your
7:50
batter so thin that when you pour it
7:55
when you pour your batter onto your hot
7:57
skillet
8:00
and it be it'll become like lace around
8:02
the edges it doesn't it doesn't look
8:04
like it's thick enough it looks like
8:06
water almost uhhuh it's not much thicker
8:10
than than
8:11
water and it takes forever for lace H
8:14
cakes to cook y'all which seems crazy it
8:18
doesn't seem logical but a self-rising H
8:22
cake like we serve at the restaurants
8:24
cook very very quickly they look like
8:27
little pancakes almost uhhuh just a real
8:29
like almost a crepe right uh but so good
8:35
and uh you have to cook them over like
8:38
medium high heat and you have to keep an
8:41
eye on them I've got my grandmother's
8:42
good spatula that I can get around there
8:45
and uh if I have to I add a little bit
8:48
more oil to it and then I flip it and uh
8:53
cook it real good on the other side so
8:56
that's what but I add sliced real real
9:00
paper thin sliced okra slices into the H
9:05
cake and that's what Don wants for
9:07
dinner so I'm get you to do jalapenos
9:10
also okay I will do some jalapenos and I
9:13
got another cornbread y'all that's real
9:16
real good the corny cornbread I know
9:18
y'all have all eaten that so I can make
9:21
this too and all it is y'all is a cup
9:24
and a half of self rising cornmeal and I
9:27
like white I use this stick with a white
9:30
cornmeal and 34 a cup of self-rising
9:34
flour and a cup of grated cheddar cheese
9:38
a little 8 oz can of cream
9:41
corn 8 oz of cream
9:46
cheese
9:47
yum a half a cup of vegetable
9:51
o two diced jalapenos I put jalapenos in
9:55
this one good and two eggs so you you
9:59
you will um want to make sure that your
10:02
your uh cream cheese is at room
10:04
temperature but in a large bowl combine
10:06
all the ingredients and stir well heat a
10:10
well OED large Skillet cast iron skillet
10:15
in a 375 degree oven for about 10
10:19
minutes now you just pour your batter
10:22
into the hot Skillet and return to the
10:24
oven and bake until golden brown
10:27
approximately 30 minutes
10:29
minut so if you're making individual
10:32
size corn bread in smaller pans they
10:36
will require a shorter cooking time but
10:39
that's a wonderful wonderful a lot of
10:42
people call that is this what you cooked
10:44
at uh the lady ins Sons when they first
10:46
opened Michael it was yeah it was very
10:50
close to this oh those were so good oh
10:54
we had the best corn muffins in the
10:56
whole world I think so at the lady and
10:58
Suns when we started opening every night
11:00
for dinner I just didn't have room to
11:03
have uh somebody taking up half the
11:06
stove frying uh H cakes so I said okay
11:10
I'll serve a wonderful corn muffin so I
11:14
I think I think that is the if that's
11:18
not it it's very close to
11:20
that they were delicious they were they
11:25
were um and much easier to make to serve
11:28
a big
11:30
right but uh you can't eat you can't eat
11:34
those white beans without cornbread I
11:37
know and some chopped
11:39
onion I'm ready M me too I'm I'm right
11:45
hungry well thank you for being with me
11:48
today well it was good to be with you
11:49
it's fun okay so before we go tell me
11:52
your favorite
11:54
cornbread my favorite cornbread would be
11:56
uh the corn muffins you make with
11:59
jalapenos and real corn in you know well
12:03
how about tonight for dinner I'll make
12:06
Don and me a lace ho cake and I'll make
12:08
you the I do like the lace H cake
12:10
especially when I'm
12:12
dieting I forgot you're starting on your
12:15
diet today
12:17
