Paula gives us an update about Bobby's surgery and his first request was for Paula's goulash. Bobby has never been able to replicate Paula's goulash, so Paula gives Bobby and us her secrets on a great goulash.
1. Always use a variety of meats, typically three different meats.
2. Use a big Vidalia onion or Texas sweet.
3. Add a bouquet of herbs and bay leaves
4. Use crushed tomatoes in your goulash. The tomatoes are blended and easier to cook down.
5. Use Rao's tomato sauce. It's a bit more expensive, but well worth the cost.
6. Use red pepper flakes for some heat, use only as much as you can stand.
7. Use elbow macaroni. You can cook them in the sauce or boil them separately.
8. Don't be afraid to vary the recipe, Paula never makes it the same, so you can vary it as well.
Enjoy!

my son Bobby gosh last Thursday just a
0:04
few days ago had knee surgery I guess he
0:09
didn't want his mama to get one up on
0:11
him because he tore his meniscus you
0:14
know I tore my meniscus and each knee
0:16
and I had to have surgery and so Bobby
0:19
does Bobby's very very fiscal he does
0:22
jujitsu and he tore his meniscus and I
0:26
mean he did a good job it was a nasty
0:30
care ah and I know that because the
0:34
doctor showed me he put a lung t90
0:38
camera he made two punctures and Bobby's
0:41
me and flipped in a teeny tiny camera in
0:45
there to take pictures of his meniscus
0:47
and I mean it was a torn up mess but by
0:51
the time dr. Hoffman got through it
0:53
looked like a brand-new meniscus um
0:57
so I'm so glad to say he's doing well
1:00
but he was he was under sedation and he
1:06
would look up or I mean he kind of grin
1:09
and he'd try to smile and all of a
1:16
sudden he he he had that little smile on
1:20
his face and he looked over at me he
1:22
said mama I think I think I want some
1:28
goulash so I said okay son as soon as he
1:33
got out of surgery and the doctor came
1:34
to let us know that he was alright I
1:36
took off for the grocery store uh
1:39
because I was going to cook my baby some
1:42
goulash well Bobby said mama you give me
1:47
the recipe and it mind just didn't taste
1:51
like yours so what am I doing wrong and
1:53
I said well son that's that's like
1:55
another you know thing that I really
1:59
don't measure you call me a couple
2:01
months back you said mama I'm trying to
2:03
make the do lunch like you said and it's
2:07
not like you're do you remember what you
2:09
told me yes I do remember well Leslie
2:12
living hey mama okay I'm making your
2:15
goulash and it just doesn't look like
2:17
yours it doesn't smell like yours it's
2:20
just not right it ain't not your goulash
2:21
you said tell me the first thing you've
2:25
done okay well I browned my meat and
2:27
then I drained it wrong
2:30
stop right there let me see now
2:34
to make a good goulash or a good
2:40
meatball or a good spaghetti sauce a
2:45
good pot of chili I always use a mixture
2:49
of meats
2:50
I don't ever just use ground beef I'll
2:53
do a ground beef I'll do a ground
2:56
chicken I'll do a ground turkey I'll do
3:00
a ground
3:02
Italian sausage I'll do a ground pork um
3:06
I will do a like a ground breakfast
3:11
sausage so I mix it up in all kind of
3:15
ways and I'll use these two three meats
3:18
that I'm going to use but more than
3:21
likely it is going to be ground beef
3:24
ground chicken and possibly a ground
3:29
Italian sausage and sometimes I'll buy
3:33
the link Italian sausage and I'll take
3:36
my scissors and I'll snip it into
3:38
bite-sized pieces and I'll do it that
3:42
way instead of using the ground but if
3:45
you look at the ingredients here I mean
3:46
you've got a nice blend of meat I see
3:48
that you got a ground beef you got a
3:50
sausage and maybe a chicken as well
3:52
right right
3:53
I got a butt a chicken and that's a mild
3:56
Italian sausage that's out of the skin I
3:59
like the flavors of three different
4:02
meats and one of these meats is chicken
4:05
one is beef and one is a mild Italian
4:08
yeah but you could use a breakfast
4:11
sausage you know you find those
4:13
one-pound roll or you could get your
4:16
butcher to grind you up just like fresh
4:18
pork sand from their pork John's or
4:20
whatever it always anything you do I
4:23
think whether you do burgers or you do
4:24
meatloaf or whatever it's good to use a
4:26
blue
4:26
in to me that always just adds a little
4:28
something to it so you want to brown
4:31
those off good and when they're almost
4:34
done you'll want to throw in a whole
4:37
suite by day your onion if by day is a
4:40
night in season then you can use a Texas
4:43
sweet and you'll want to start with a
4:46
big onion and you need to mince up about
4:51
three fat cloves of garlic and you'll
4:54
want to toss that onion and that garlic
4:57
in with your ground beef the space that
5:01
you live in really affects the way you
5:03
feel so my first recommendation is start
5:07
by updating your window treatments with

5:37
special offer go to Smith & noble.com
5:39
slash Halla that Smith & noble.com slash
5:44
hollow or call one eight hundred six
5:47
five nine 3300 that's one eight hundred
5:51
six five nine 3300 at this time you
5:59
would probably say to yourself self I
6:02
need to drain that fat off of this meat
6:05
but I'm telling you don't do it because
6:09
that's where all your flavor is I know
6:12
when I ask Bobby to walk through
6:14
everything he had done with his goulash
6:17
the very first step was I cooked and
6:20
drained my meat I said we'll stop right
6:22
there drain it because that's where all
6:24
your flavor is son so at this time I
6:30
like to add a bouquet of like I go out
6:35
to my herb garden I'll get time and
6:39
rosemary and flat leaf parsley you know
6:43
and whatever I had and I'll time up with
6:46
my cooking twine and I'll throw that
6:49
over and then I'm going to add two to
6:52
three bay leaves depending on how big
6:55
they are so I made us a little bouquet
6:58
of the rosemary basil and oregano and
7:04
like stickers I don't have time so what
7:06
are you gonna do just going to toss that
7:07
in like that yes I'm gonna toss this in
7:09
and let that cook yes and then I'm going
7:12
into the meter once that's off of that
7:14
right thing really yeah and then I'll
7:17
take it out all the way that I make well
7:19
you know what there's probably this
7:21
recipes probably not many of my
7:22
cookbooks because I never do the same
7:24
thing twice and like I said because I
7:27
don't have time I'm going to add some
7:31
extra Italian seasoning because remember
7:34
Bobby that I know you remember it come
7:39
on sit down and then I'm going to add a
7:42
large the largest can a 28 ounce can of
7:47
crushed tomatoes now this is very very
7:51
important you can get diced you can get
7:56
whole peeled Tomatoes you can get
7:59
crushed you can get tomato puree but the
8:03
crushed tomato is just perfect for this
8:07
goulash because is there's no big chunks
8:11
of tomato it's um it's blended right
8:17
before it becomes like adjusted tomato
8:19
juice and that's my favorite because I'm
8:22
not crazy about big chunks of tomatoes
8:25
ah in my goulash that I can't ever get
8:29
to cook down so crushed tomatoes and
8:32
then you might put in a 15 ounce can of
8:35
tomato sauce but you know what makes it
8:38
so good I am in love with a product that
8:43
Rao's restaurant puts out you know Rao's
8:46
from New York City well you can now buy
8:50
to your sauces at the grocery store and
8:52
they come in jars and there may be a
8:55
dollar too more than the other brands
8:58
put y'all it is so worth it all right so
9:02
the rest is kind of you know really up
9:04
to you as to what seasonings you like
9:07
we've got our little bouquet of fresh
9:09
herbs in there and I'll add about a
9:13
teaspoon to a tablespoon of red pepper
9:17
flakes and you know those red pepper
9:21
flakes are hot so put that in according
9:25
to your ability to eat hot and naturally
9:31
salt and pepper or you know our house
9:34
our house seasoning mix which salt
9:38
pepper garlic and onion powder and we're
9:41
going to stir these ingredients and let
9:44
them cook for a while now I use an elbow
9:48
macaroni just like I would for macaroni
9:53
and cheese that same size and everything
9:56
of macaroni noodles um it is a couple of
10:01
different ways that you can do this you
10:03
can cook your noodles and with your
10:06
sauce while it's cooking or you can cook
10:09
your noodles in a separate pot of
10:10
boiling water drain them and then add
10:13
them to your sauce and I'll do it you
10:19
know different ways sometimes I'll cook
10:22
it the other day when I cooked it I
10:24
cooked it in the in the sauce while it
10:30
was cooking but I really I really think
10:34
I like it cooked on the side I'll take
10:36
like two cups of elbow macaroni and ball
10:39
them in ball and water until they're
10:41
soft and then train them real good and
10:43
stir them into my red sauce now that is
10:47
a good pot this is my favorite part in
10:51
the whole world for that you think I'll
10:52
just we utiful yes all right Bobby don't
10:55
you worry
10:56
just like that right no no no you got a
11:01
Portage Goose Creek
11:05
alright y'all so I hope I've helped
11:11
y'all clarify everything in the steps
11:14
that I do because I think my goo-losh is
11:18
real real good
11:18
oh and even though I've got the bouquet
11:21
of thyme rosemary and parsley uh I
11:24
always add about a tablespoon of Italian
11:28
seasoning to this custome goulash is
11:32
italiano what that ain't a good
11:36
impression is so y'all enjoy it's really
11:41
good a homemade Hamburger Helper the
