On today's episode of what's cooking with Paula Deen, Paula talks about mashed potatoes and offers her tips on the best ways to make sure your mashed or creamed potatoes are delicious.
Paula always uses red potatoes, roughly peeled so you know the potatoes are fresh.

Hey y'all. Welcome to What's Cooking
0:02
with Paula Dean today. And you know
0:04
what? I'm going to be talking about
0:07
something that everybody loves.
0:10
Everybody except two of my
0:12
grandchildren. And I still can't believe
0:14
it. Uh people love mashed potatoes or
0:18
cream potatoes depending on where you
0:21
come from. Uh, I've got two grandsons
0:24
that don't care a thing about them, and
0:27
I still am in disbelief since their
0:30
grandmother's favorite food in the whole
0:32
world is a potato. So, let's talk about
0:35
cream potatoes today. How to produce a
0:38
wonderful creamy potato. I always buy
0:41
red potatoes. Uh, I just love the
0:44
creaminess of those. And I will very
0:48
roughly peel them. I'll leave some of
0:51
the skin on because I just want
0:53
everybody to know that yes, these are
0:56
fresh cream potatoes. Uh I will cube
1:00
those up and I'll boil them until
1:01
they're tender. And then I'll drain them
1:04
and I will heat one cup of half and
1:08
half.
1:10
And
1:12
um maybe for uh a family size serving of
1:17
mashed potatoes,
1:20
uh maybe two heaping tablespoons of sour
1:25
cream. And the sour cream is your secret
1:28
ingredient, y'all. It really takes a
1:32
mashed potato over the top. Um or you
1:37
can add cream cheese even, but it just
1:40
makes it a little bit richer. Um and
1:43
naturally, I have seasoned my potatoes
1:47
uh with salt and pepper and a little
1:51
garlic powder. So, I'm going to drain my
1:54
potatoes and I'm going to whip them. I
1:58
just use a little handheld mixer. I whip
2:01
them and then I slowly add that hot half
2:04
and half to them and stir in the sour
2:07
cream. And I don't add my butter until
2:12
the very last thing, allowing that
2:15
butter to melt all over the top of the
2:17
mashed potatoes. It just does something
2:21
to your your cream potato or mashed
2:23
potato when you incorporate the butter.
2:26
So, just like the lady and sons, we
2:29
always put that butter on at the last
2:32
second, put the cover on it, and when
2:35
everybody gets ready to dip them some
2:37
mashed potatoes, they get some butter
2:40
with it. Our potatoes are done, son. So,
2:44
I'm going to What can I do? Drain these.
2:46
Nothing. Just sit here and wait to be
2:47
served. Sit there and look pretty and
2:49
just let me uh enjoy looking at you. It
2:53
smells like I'm a kid again with those
2:54
pork chops cooking up. Oh, I
2:57
know. And I just love fixing them for
3:00
you. And you creaming potatoes in the
3:02
pot that you cooked them in. And I mean,
3:04
it's a it's like Yes. All right. Now,
3:07
here's what I'm going to do. I'm going
3:08
to use a little half and half. And I'm
3:11
going to go ahead and pour that in.
3:13
Quite often I'll heat it. Uh, you know,
3:16
throw that in the microwave. But what
3:18
I'm going to
3:19
do this time is
3:23
Perfect. Uh-huh. Perfect. I'm just going
3:25
to sit it back on the eye real quick
3:27
like and heat that that half and half up
3:31
so it won't get our potatoes cold. Just
3:34
that quickly. Now I got the half and
3:36
half
3:38
uh hot. I'm going to put some sour cream
3:41
in it. And look, I'm using your spoon. I
3:44
went on a show. I can't remember the
3:46
name of the show, but that's you. That
3:48
looks like you, doesn't it? So, some
3:51
sour
3:54
cream, some salt and
3:57
pepper, and y'all will notice that I
4:00
don't
4:01
uh I don't too much trick anything up. I
4:05
think I think uh less is more, you know,
4:09
just a pork chop should be I just don't
4:13
want all those old herbs and things in
4:15
it. I mean, herbs are good. I don't want
4:17
to say it that way, but I think some
4:21
things just need to be what they are.
4:23
You're a traditional southern cook. Yes.
4:29
There we go. Let me taste.
4:35
Aren't they delicious? They're so good.
4:38
And this is the way we do it at the
4:40
restaurant, too.
4:42
We don't put any butter in it while
4:43
we're beating them cuz I don't want it
4:45
to mess with the
4:48
consistency. Look at that. Oh yes. And
4:52
you know what? I love taking these
4:54
leftover. Mhm. And uh got to make sure I
4:58
get you some
4:59
butter. The space that you live in
5:02
really affects the way you feel. So, my
5:05

5:57
800659-3300. All right. back here. If
5:59
you'll come to the stove with me, I want
6:01
to show
6:03
you what the grocery store has available
6:06
now. And I just love it. They're taking
6:09
like ham hawks, y'all, and slicing them.
6:12
And they're just beautiful. And uh
6:16
they're so meaty. And this is what I
6:19
started cooking all of my vegetables in.
6:22
So, we're ready to go ahead and start
6:23
cooking our butter beans. It's hard to
6:26
find a fresh butter bean. You know,
6:27
there used to be a lot more fresh peas
6:28
and beans out than there are now. We had
6:30
the hardest time finding these smell.
6:33
The the smell is so fresh. Fresh. Mhm.
6:37
You remember that smell when we uh shell
6:40
butter beans? Uh-huh. I do. God, I
6:42
remember sitting on the porch. Oh my
6:43
gosh. For hours. Yes. That smells
6:46
wonderful. Randy and Sherry usually have
6:48
some fresh beans. Sometimes they do at
6:50
Davis Produce or Pulks, but uh like I
6:53
said, we're getting later in the season
6:55
now, so everything's about gone. All
6:57
right. It just so happens that I have a
7:00
just a little tad of bacon grease back
7:03
here in my surprise. Just so happens you
7:05
have much I've been cooking cuz you've
7:08
used it all. And I'm going to put just a
7:10
little bacon grease in there, which
7:12
means empty the container out. So, a
7:14
little bit is whatever happens to be
7:15
left. It's probably a tablespoon, but
7:18
it's enough to give it a tablespoon.
7:20
Yeah. But it's probably enough to, you
7:22
know, give it some flavor. So, there the
7:25
butter beans go. How long will those
7:28
cook? Uh, probably about 45 minutes to
7:31
an hour. Hey, so welcome back, y'all.
7:34
You know, summer is approaching us fast
7:37
and furious. So, be sure and take
7:40
advantage of all the
7:43
incredible vegetables and produce that's
7:45
going to be coming in. Well, let me tell
7:47
you what. One of my favorite things to
7:50
have along with mashed potatoes besides
7:53
fried chicken or fried pork chop or
7:56
country fried steak uh is fresh butter
8:00
beans. And you know, we don't have to
8:02
wait until summer to enjoy a pot of
8:06
fresh baby limema beans. Uh the the
8:11
freezing process now that that uh food
8:14
companies have is
8:16
unbelievable. They flash freeze all
8:19
their
8:20
vegetables and so there is nothing lost
8:24
in the nutritional value or the flavor
8:27
value. Uh so I I tell you I could hardly
8:31
recognize the difference between a fresh
8:34
frozen uh little butter bean and
8:38
uh feel fresh butter bean. So take
8:43
advantage of of those wonderful little
8:46
things and they cook a little quicker
8:49
than like a fresh butter bean. But I'm
8:51
going to start with a ham hawk. And I
8:54
have found at uh the grocery store that
8:57
I shop at, they have uh are packaging
9:00
like three pieces of a sliced ham hawk
9:04
and it cooks so much faster and so much
9:08
better than like the whole hawk. So ask
9:11
your butcher um if he can maybe if you
9:15
don't find them already pre-sliced, ask
9:18
your butcher if he can slice a ham hawk
9:21
up for you. And I'll I'll uh cover that
9:25
ham hock with a couple of cups of water
9:28
and salt and pepper and
9:33
um maybe a a pot of garlic chopped up.
9:37
And uh I'll cook that for about an
9:41
hour. And then I add my fresh butter
9:44
beans or my fresh frozen butter beans.
9:48
And at that time, if um you need more
9:51
water, just put enough water to to cover
9:56
your butter beans good. And if you're
9:59
using the frozen, it usually takes 20 or
10:01
25 minutes for those to cook. If you're
10:04
using a fresh, you're probably looking
10:06
at 45 minutes to an hour. And to really
10:10
top off my butter beans, I love adding a
10:14
few pods of fresh okra towards the end,
10:19
your last 15 minutes of cooking time.
10:23
And these are so good laying up beside
10:26
that mound of mashed potatoes or cream
10:29
potatoes on your
10:31
plate. It's out of this world, y'all.
10:35
Happy
10:36
eating. The space that you live in
10:39
really affects the way you feel. So, my

first recommendation is start by
