Blueberry Coffee Cake - What's Cooking Wednesday

What’s better, blurry muffins or coffee cake? Tough choice! This recipe combines both into a delicious blueberry coffee cake that is irresistible. See the recipe below: INGREDIENTS 1 1/2 cups blueberries, fresh or frozen 1 (12 oz) can buttermilk biscuits 1/2 teaspoon cinnamon 1/2 cup light brown sugar melted butter 1 cup quick-cooking rolled oats sugar PREPARATION 1. Grease a 9-inch baking dish to prevent sticking 2. Combine 1/2 teaspoon cinnamon with 1/2 cup light brown sugar 3. Dip biscuits into melted butter then coat in brown sugar/cinnamon mixture and place evenly into baking dish; sprinkle with 1/2 cup quick-cooking rolled oats 4. Combine blueberries and granulated sugar and sprinkle some of the blueberries on top of the oats 5. Sprinkle with 1/2 cup quick-cooking rolled oats again and sprinkle remaining blueberries on top of oats 6. Drizzle melted butter on top 7. Bake for 20 minutes or until cake is golden brown and center is done 8. Cool for 20 minutes and enjoy!
