- Hey everybody, I'm Paula Deen,
0:03
and I hope you have room in your recipe box
0:05
'cause today we're making cookies.
0:07
I'll lay it on thick with my loaded oatmeal cookies
0:10
with brown butter icing.
0:12
So get out your tans and call your friends,
0:14
cookies need a crowd.
0:19
Well, is everybody ready to make my loaded oatmeal cookies?
0:22
This is so, so simple.
0:25
Don't let all these ingredients up here scare you
0:28
because it's very, very simple and easy.
0:31
We're gonna take flour, we're gonna see how good I am.
0:35
Cloves, cinnamon, all spice, ginger,
0:41
the fourth tap, a half teaspoon of nutmeg,
0:43
baking soda, baking powder, and a little salt.
0:49
That was very simple.
0:51
Even though it looked like a lot of ingredients.
0:55
So we're just gonna sift those together
0:58
with our all purpose flour.
1:00
So that's all we're gonna do there.
1:03
We're gonna move on over here
1:05
and we're gonna start creaming our shortening
1:10
Love me a little Crisco in with my butter.
1:16
we just gonna cream those together.
1:21
The next thing we're gonna do is add our brown sugar.
1:25
So, we're gonna creme our brown sugar
1:28
into our butter and Crisco.
1:30
(electric mixer vibrating)
1:36
Now we're gonna add one egg.
1:43
(electric mixer vibrating)
1:49
Alright now we're gonna just beat in our flour
1:59
and then we'll add in the last of our flour.
2:01
(electric mixer vibrating)
2:07
All right, the buttermilk's worked in there
2:11
and here goes to the last.
2:17
(electric mixer vibrating)
2:24
We're gonna add about a teaspoon of vanilla now.
2:31
(electric mixer vibrating)
2:36
All right, the rest of the ingredients,
2:38
we're just gonna fold in by hand
2:40
and that will be our oatmeal, our nuts,
2:45
now I'm using a walnut
2:50
and raisins, nice fat plump raisins.
2:55
So we're just gonna fold this all up.
2:58
We've got our batter ready.
3:00
I'm gonna get our cookie sheets.
3:03
And this time I'm gonna use the parchment paper.
3:06
And we're just gonna see how that works
3:07
in comparison to the other that we used.
3:14
I'm gonna give it a light spray.
3:17
I'm always grabbing pam, aren't I?
3:21
And then I'm gonna drop it
3:22
by the teaspoon full on to the paper.
3:26
Now, one thing about cookies, the most important thing is,
3:30
that you make them all the same size.
3:36
All right, these are ready to go into the oven.
3:37
And then we're gonna be checking on them
3:39
in about eight or nine minutes.
3:48
Now, while those are getting ready,
3:50
we're gonna make our brown butter icing.
3:55
We're gonna take a stick of butter.
4:00
Y'all act surprised, and we're gonna melt that.
4:04
And we're actually gonna cook it
4:06
till it's kind of a light brown.
4:08
Now you'll wanna be very, very careful here
4:10
because you know that butter will burn.
4:14
All right, our butter is starting to brown a little bit,
4:17
you can see it foaming up and you can see it starting
4:19
to change colors on us.
4:21
All right, now we're just gonna add the powdered sugar
4:27
and mix that up together.
4:31
Put in our vanilla flavoring.
4:34
All right, now we're gonna start adding our water.
4:37
You'll hear me say all the time, you can always add to,
4:40
but you can't take out.
4:43
So we'll wanna do a little at the time, kinda beat that up
4:48
and you can see it's just a nice light tan color.
4:51
Let's check on the cookies and see what they look like.
4:53
They should be about ready.
4:57
Oh, they look so good.
5:06
All right, we're ready to drizzle.
5:11
And if our consistency's not right, we'll go back.
5:14
So you thought an oatmeal cookie couldn't get any better?
5:18
Why don't we get them up off of that?
5:23
You can see how nice that worked for us.
5:27
Don't those look delicious.
5:29
I'm gonna go for this one
5:30
that has the most brown butter icing on it.
5:37
Whole new twist to the oatmeal cookie.
