I wanted to introduce you to some of my dear friends,
0:04
Pat and Gina Neely.
0:06
Y'all, come on in and meet everybody!
0:09
- Hey, Paula! - Thank you!
0:10
- Do I love- - Oh!
0:11
- These folks or what? - It's so good to see you!
0:14
- Oh, my precious- - Thanks for inviting us back!
0:15
- Little Pat.
0:17
- This is Pat,
0:18
and this is Gina.
0:20
(soft acoustic music)
0:21
Y'all, I met 'em, actually, through Jamie and Bobby.
0:23
(glasses clink)
0:24
They came home and they said,
0:25
"Mama, we have met the best barbecue family in the South!"
0:31
- So, what are y'all making for us today, Pat?
0:32
- We're gonna do a dry seasoning
0:34
the Neelys' dry seasoning.
0:35
We're gonna do a wet seasoning,
0:37
which is Neelys' barbecue sauce,
0:39
and we're gonna combine those together, Paula,
0:41
and we're gonna make a fabulous barbecued pork chop.
0:45
-Wonderful! -Paula,
0:46
First thing we're gonna do is our dry rub.
0:48
- Uh-huh.
0:49
- [Pat] Gina's gonna help me.
0:50
- [Gina] So the ingredients for the dry rub
0:53
is one cup of paprika.
0:55
- One cup? - Pour it in.
0:56
One cup.
0:57
- [Paula] Okay.
0:58
- [Gina] Pour it it in here,
0:59
and then we're gonna put in-
1:02
- [Pat] Put in a half tablespoon of sugar.
1:04
- Okay.
1:05
I got your back, sister.
1:06
- Then, a half a teaspoonful of onion powder.
1:09
- [Pat] Okay.
1:10
- Pour that in there,
1:11
and then you blend it all together.
1:13
- Now, this your dry rub, right?
1:15
- Mm-hmm, right.
1:15
- Now what do y'all do with that
1:17
- This is sorta like our house seasoning.
1:18
- Mm-hmm.
1:19
- Like your Paula Seasoning.
1:20
We got a Neely seasoning.
1:21
(Paula chuckles)
1:22
We sprinkle this on all of our meats,
1:24
fish,
1:24
you know, chicken. - Really?
1:26
- Vegetables.
1:27
Anything just to add a little kick to it.
1:29
- Wow!
1:29
Uh-huh.
1:30
- [Pat] It's a great seasoning,
1:31
a great grill seasoning.
1:32
We're gonna do something
1:33
real special with it on the pork
1:35
- Honey, you got me.
1:36
I'm a pork chop lover.
1:37
- (chuckles) You and me both!
1:39
- So get on down there and get started, honey.
1:41
- Yes, (claps) ma'am.
1:43
You know, Paula, I always- - Said the boss!
1:45
- I do like mama tells me.
1:46
I try to stay out of trouble
1:48
and it's worked for 15 years.
1:50
Okay, Paula.
1:51
We have two cups of ketchup.
1:54
That's the base.
1:56
I take my brown sugar,
1:58
and I need six tablespoons of brown sugar.
2:01
- I like that brown sugar.
2:02
- And you know,
2:03
don't make me lose my concentration.
2:06
I'm gonna do five of the white.
2:07
Down south,
2:08
most recipes,
2:09
they're gonna have a lot of this sweet.
2:12
- We like it sweet.
2:13
- Yeah, we like it sweet down here, too.
2:14
- Now-
2:15
- [Gina] Yes.
2:16
- One and a half teaspoon paprika.
2:17
Then we have ground mustard.
2:20
I just love ground,
2:21
I noticed that you were using ground mustard.
2:23
It's just,
2:24
it has such a great flavor.
2:25
A teaspoon and a half. - Uh-huh.
2:27
That's a great start.
2:28
- So I got a teaspoon and a half of black pepper.
2:30
- Mm-hmm.
2:31
I love the black pepper in barbecue sauce.
2:33
- Oh, it really does.
2:34
- It makes for a great barbecue
2:35
- Teaspoon and a half of onion powder,
2:37
and I just kind of mix that in.
2:40
It gives me a good little mixture.
2:42
Okay?
2:43
So now, I'm ready.
2:44
(wood taps)
2:45
I come with two cups of ketchup.
2:48
- [Paula] Okay.
2:48
- [Pat] I need a spatula here.
2:49
- You need some help or you got it?
2:50
- Come on, sweetie.
2:51
Help daddy out.
2:52
You know daddy like mama to be down here
2:53
working with him. - Mm-hmm.
2:54
- So I got my ketchup,
2:56
and honey,
2:57
if you just finish putting that in there.
2:59
So we got the ketchup,
2:59
and with two cups of ketchup,
3:01
that mean it'll be one cup of water.
3:03
Thank you, sweetie.
3:04
And then we got a half a cup of apple cider vinegar,
3:07
and then, we'll go ahead and put our spices in,
3:10
and then, we stir it,
3:12
and we bring that to a boil,
3:13
and once we bring it to a boil,
3:15
we let it simmer for about an hour,
3:16
hour and a half,
3:17
and let that barbecue sauce cook
3:19
But we're gonna tone it down a little bit with this lemon.
3:22
I'd just normally say,
3:22
take a half a lemon.
3:23
- [Gina] It wakes up the flavor.
3:24
- Love lemon juice.
3:25
Okay.
3:26
We've got a full teaspoon of- - Corn syrup.
3:28
- Corn syrup,
3:29
and Worcestershire sauce.
3:31
So while that's cooking,
3:33
we got our dry rub.
3:34
- [Gina] Yeah.
3:35
- Paula, honey,
3:36
it is ready to do some indoor barbecuing.
3:38
I'll season these pork chops with this seasoning, and-
3:41
(Gina laughs)
3:42
typically what we like to do
3:43
is season the chops,
3:45
and then marinate them,
3:47
and let 'em sit for eight hours.
3:48
When you do that, it just,
3:50
Paula, it makes all the difference-
3:51
- [Paula] All the difference in the world.
3:52
- In the world the next day.
3:53
- See, I'm the worker.
3:54
That's the talker.
3:55
(Pat chuckles)
3:56
How many times he gonna season 'em verbally?
3:58
Can we get some work done over here?
4:00
- [Paula] You know,
4:01
it's the same way in my house, Gina!
4:02
- Girl, I know it.
4:03
These men, honey! - We get in the kitchen
4:04
and Michael bosses me around!
4:06
- Mm, and the first person at the table, right?
4:08
- Yeah. - Mm-hmm.
4:08
- Yeah.
4:09
I said, "I don't tell you how to park them ships."
4:11
(Pat and Gina laugh)
4:12
"Don't come in here telling me how to cook my pork chops."
4:14
- All right, girl!
4:16
Get him straight, Paula.
4:17
Place 'em in this bag.
4:18
- Well, maybe I need to find something to keep me busy.
4:20
Okay.
4:21
- You can go over there and get that sauce.
4:22
- We got it,
4:23
but we got some already cooked,
4:25
because that's gonna take a little hour or so.
4:28
- [Gina] So then we just lay it
4:29
- So I just wanna- - Let me taste your sauce.
4:31
- You like that, Paula?
4:32
Isn't it good?
4:33
Now, we're putting the barbecue sauce in here.
4:36
We're gonna marinate it. - Woo!
4:37
- So we're gonna marinate on these chops,
4:39
stick 'em in the cooler. (inhales sharply)
4:41
- That is delicious, Gina!
4:43
- Told ya!
4:44
- Isn't it?
4:44
I just love- - Listen to me, dear!
4:46
So these go in the cooler for eight hours.
4:49
- [Paula] Okay.
4:50
- If you can.
4:51
Let me, I'll put those in the cooler.
4:52
- Oh, thank you, sister! - Yeah!
4:53
- We appreciate it, girl! - I'm full, now.
4:54
So while y'all are washing your hands,
4:57
I'll get out the other pork chop
5:00
(Gina laughs)
5:01
that y'all have had marinating.
5:03
- We wanna spray this grill just
5:05
- [Paula] Okay.
5:06
- Just so it doesn't stick.
5:07
All right?
5:08
Then,
5:10
now if we were cooking outside,
5:13
I would probably go more to a indirect heat.
5:16
- [Paula] Yeah.
5:17
- But based on we're indoors (meat sizzles)
5:19
and your grill,
5:20
that's an even temperature. - Even heat-
5:22
- And so we don't really- - All the way through.
5:24
- Have to worry about 'em. (meat sizzles)
5:25
- [Gina] Look at that.
5:26
Wow!
5:27
- [Paula] Those look good, Pat.
5:28
- [Gina] They look delicious!
5:29
(mellow acoustic music)
5:30
So, is it time for us to taste,
5:32
- I believe so, Paula.
5:34
And you know what?
5:34
They've turned out marvelous.
5:36
- Ah!
5:37
- They look wonderful.
5:38
- [Pat] They look great.
5:39
- I can see that y'all's dry rub
5:41
you know, really got into it good,
5:43
giving 'em- - It did!
5:44
- A big red color. - (inhales sharply) Ooh!
5:45
They look wonderful. - And they did,
5:46
and did you see how they cooked?
5:47
And so we're gonna taste these,
5:50
- My goodness,
5:50
look at those, y'all!
5:51
Wow!
5:52
How good do those look?
5:54
- Just right. - Perfect, right.
5:55
Just right.
5:56
- [Paula] Miss Gina.
5:57
- [Pat] There you go, honey.
5:58
- [Gina] Thank you, darling.
5:59
- And Paula,
6:00
here is yours.
6:01
- [Paula] One for Paula!
6:02
- [Gina] Mm!
6:03
- [Pat] Ooh!
6:04
I just love these chops.
6:06
Just- - Oh!
6:06
- Oh! - Pat!
6:07
- Great! - Aren't they great?
6:08
- Yes.
6:09
- Oh, my goodness, that sweet sauce!
6:10
- You know, this is what keeps you-
6:11
- Honey, get you a man that can grill.
6:13
- Mm! - Mmm.
6:14
- There you go.
6:15
- Mmm, mmm, mmm.
6:16
- Okay, now, ladies,
6:18
- We love you, too.
6:19
- All righty.
6:20
See you soon! - Bye, darling.
