A crunchy broccolini with almonds.
0:06
- It is, it's gorgeous. - And quick!
0:08
- Hey, y'all, welcome back.
0:09
I'm in here in the kitchen with Jeanie Collins.
0:12
Today is all about being in the kitchen with friends
0:15
or family, and just being real comfortable,
0:18
so we are fixing to make
0:21
a delicious broccolini with almonds.
0:23
- [Jeanie] I've tried this recipe with my family
0:26
I found this in your magazine
0:29
and I'm so excited to be able to cook this with you today.
0:31
It's gonna go perfect with our chicken.
0:33
- It is gonna be perfect.
0:36
Simple, but delicious.
0:39
Broccolini, you see it looks like it's almost
0:42
undeveloped broccoli, so I'm just gonna
0:45
cut this woodsy part off,
0:47
and then we're gonna drop it in our pot.
0:50
We've got our hot water simmering.
0:53
So your family did like the recipe?
0:56
Well, my children love steamed vegetables
0:58
and this has a great sauce on it,
1:00
so anything with a sauce on it, or they can dip--
1:01
- You are kidding. - They love.
1:02
They do, they love steamed cauliflower,
1:04
they love steamed broccoli,
1:06
and then the broccolini was just something different.
1:08
- Oh, that's wonderful! - So good.
1:10
Okay, I'm making this wonderful sauce.
1:12
So I started with a clove of garlic, mince that up,
1:15
I'm gonna add that to my tablespoon of olive oil,
1:18
a pinch or so of red pepper flake to give it a nice bite.
1:22
- How big a bite do you want, baby?
1:24
- Just a little bite.
1:25
- [Paula] I'll add that for you, Jeanie.
1:27
- I'm also gonna go ahead and work on
1:28
my lemon zest over here.
1:29
We're gonna sprinkle on top,
1:31
gives it a gorgeous, fresh taste.
1:45
- [Paula] So we're gonna steam this for about three minutes
1:49
because we want it to maintain its body, you know,
1:52
we don't want it, like, goopy.
1:55
And now I'm gonna just sprinkle this
1:57
with a little salt, y'all.
1:59
(lid clattering) And come on, baby,
2:02
Jeanie, now you go ahead and add the garlic.
2:05
(garlic sizzling) Listen to that.
2:06
- It smells so good already.
2:08
- [Paula] I love that garlic.
2:09
And you'll want to be real careful, y'all,
2:11
it'll get away from you real quick and gets bitter,
2:15
so we want to make sure that that
2:17
just kind of toasts nicely, but not burn.
2:21
Because I had my pan so hot,
2:23
I'm gonna let it kind of just sit off the heat
2:27
and toast up (spoon tapping)
2:29
in that nice, hot olive oil.
2:32
- So we've got our broccolini in.
2:34
Get it nice and steamed,
2:35
oh, it still has a gorgeous color.
2:37
- [Paula] Still got a beautiful color.
2:38
- [Jeanie] And when you steam it,
2:39
it holds onto all those nutrients,
2:41
whereas, opposed to boiling it in water,
2:42
where it loses so much.
2:47
- [Paula] Okay, these look done.
2:48
Why don't we just put 'em on our plate?
2:50
This is gonna be fabulous with our chicken.
2:53
You wanna put the finishing touches on this for everybody?
2:55
- Let's do it, if you want to go ahead and
2:56
add that gorgeous sauce, super easy sauce.
2:59
- [Paula] I mean, you can't get any easier than this.
3:03
- [Jeanie] That looks perfect.
3:04
- Yeah, gonna get every one of those
3:07
peppers and pieces of garlic.
3:10
- I'm gonna add some of this.
3:11
- Okay. - Gorgeous lemon zest,
3:12
which is so much stronger than even the juice,
3:16
A little bit of the juice,
3:18
squeeze it right over my hands so that that--
3:20
- [Paula] So you can catch the seeds.
3:21
- [Jeanie] Catch all the seeds.
3:23
Perfect. - And now our--
3:24
- Let's add a little bit--
3:25
- Our toasted almond slivers.
3:27
- [Jeanie] About a third of a cup.
3:29
Just sprinkle those on top, oh, it's so pretty.
3:32
- [Paula] Isn't that pretty?
3:33
- [Jeanie] It is, it's gorgeous.
3:36
Now let's put us a little broccolini on top.
3:40
- Those almonds, I smell that lemon.
3:41
Smells so good. (hums in agreement)
3:43
- So there you go, honey.
3:46
- You are so welcome.
3:47
- [Jeanie] This is perfect.
3:49
- Okay, so tell me what you think about the broccolini.
4:04
- Bo liked it, too. (hums in agreement)
4:05
- [Paula] You know, I can be in this kitchen all day long
4:08
and I won't hear from those dogs,
4:10
but it's like they can hear me pick up my fork, y'all.
4:15
- And they come running.
