hey y'all welcome to what's cooking with
0:02
Paula Deen today and we got something
0:05
real good cooking a young man that I
0:08
have known probably since he started his
0:10
chocolatier business I'd like to
0:13
introduce Sean - Adam - Roni and his
0:17
business it's located on Broughton
0:19
street it's called chocolate ears by
0:21
Adam chuckle up by Adams running by Adam
0:24
that's simple enough Adam has really
0:28
made a name for himself now in the
0:30
chocolate world
0:31
so I there's no way that I can rattle
0:37
off all the things that you've won so
0:39
you know it won't embarrass you if I ask
0:42
you to tell everybody
0:44
absolutely not all the honors that
0:45
you've gotten no you know it's been so
0:48
long since we've seen each other and
0:49
someone know and so this year we
0:55
actually were awarded top ten chocolates
0:57
here in North America
0:58
you know that's huge the top ten
1:02
chocolate ears now you went too scared
1:05
didn't you Adam um no I actually did it
1:07
I went to the Culinary Institute of
1:10
America oh no no and they started baking
1:12
and pastry so I never studied chocolate
1:15
used is typically no you know it's one
1:18
of those genres uh well our pastry is so
1:22
broad and so we learn everything in the
1:25
pastry world but I decided to specialize
1:27
in that when I got came in school when
1:29
you got to why what's up
1:32
you decided to go into chocolate when
1:34
you got wide um really when I had the
1:37
class that I learned from my chef that
1:39
wasn't what your school you decided it
1:43
must have been in the latter end of your
1:45
schooling she was decided to go into
1:47
chocolate and you fell in love with it
1:49
it was unlike any type of thing I've
1:51
ever done anything so good thank you
1:55
I mean he's sharp y'all he's incredibly
1:59
beautiful it's all these little bites
2:02
just all these wonderful little bites of
2:05
chocolate and thank you so much oh I'm
2:08
proud of you because I feel like you
2:12
were
2:13
my show was probably one of your first
2:15
chances to be on national TV it was you
2:18
really gave me my first love I loved
2:22
promoting my friends especially my local
2:25
friend oh thank you so much
2:27
no I just I just love helping people
2:30
because I had people help me and there's
2:33
nothing nothing like somebody sticking a
2:36
hand out and saying you know come on and
2:39
you in the community you know you really
2:42
nurture the relationship that I had with
2:45
even the city getting to know everybody
2:48
and so glad he was so supportive oh yeah
2:52
what I was doing and you are a brilliant
2:55
when it comes to do what you do so
2:59
you're still in the same location that
3:01
you started being are I am yeah I'm West
3:04
Brom is a beautiful little still work I
3:06
can't believe the friend that brought
3:09
you here last I know he left behind
3:12
right
3:13
no but you probably made so many friends
3:16
at you I have all the experiences I've
3:20
had here wait a minute where do you find
3:22
your employees you know I it could just
3:27
be a home baker someone that's
3:29
passionate all it matters for me is that
3:30
your passionate passion that you're
3:32
passionate that's right that goes
3:33
farther and they you can teach him you
3:36
can teach him also I have to create a
3:39
lot of the time I feel like I have to
3:41
now I'm working with private companies
3:42
as well to create new items and you know
3:45
I have to create a little group that I
3:47
work with it's such a small kitchen yeah
3:49
you have to be surrounded by people who
3:51
are just as passionate and inspired as
3:54
you are I um and if you don't if you
3:56
aren't surrounded by that you know for
3:58
me it doesn't work and it could go
4:02
downhill really fast so I've learned
4:04
that those are the type of people that
4:06
you want to be surrounded by and that
4:08
work hard that are passionate and you
4:12
know then it just this energy just works
4:14
that's wonderful but you know now that
4:18
it's almost been five years since I
4:21
opened my first shop gosh it's been that
4:23
long since I last saw you
4:25
because you had just opened
4:27
and he walked in this morning y'all and
4:29
I looked at him and I said Adam you're a
4:32
man cuz he was a kid he truly was a kid
4:40
but I saw that passion in your eyes I
4:43
saw it so let's take a quick break and
4:45
Adam has brought us something that he's
4:49
gonna share visually with us yeah just a
4:53
little bit of the things he does the
4:56
space that you live in really affects
4:59
the way you feel so my first
5:01
recommendation is start by updating your
5:04
window treatments with Smith and Noble
5:07
Smith & Nobles beautiful handcrafted
5:09

5:11

5:16

5:19
Noble to get my special limited time
5:22
offer 25% off on your window treatments
5:26
plus free design consultation create a
5:29
space that you're gonna love but details
5:33
about my special offer go to Smith &
5:35
noble.com slash Paula that Smith &
5:39
noble.com slash Paula or call one eight
5:42
hundred sixty-five nine 3300 that's one
5:47
eight hundred six five nine 3300 okay
5:52
we're back with a Damini he brought
5:54
something to show a show I have no idea
5:57
what it is I know it involves fire cuz I
5:59
saw the torch so Adam tell me where to
6:02
stand where to be yes what you're doing
6:05
so I brought actually the chocolate that
6:08
won us the award for top ten oh good and
6:10
so this is our creme brulee truffle oh
6:12
my gosh do I love creme brulee so this
6:17
is creme brulee chocolate it is however
6:20
there are sugar crystals on the outside
6:22
you see how it's kind of sparkling know
6:25
what don't oh I don't know where I've
6:27
got my glance well it has a Emer to it
6:31
I've got glitter on my face because I've
6:33
been buying Christmas pillars so yeah it
6:36
kind of looks like my face
6:39
well so we take these sugar crystals and
6:43
it actually encapsulates the whole
6:45
chocolate and what we end up doing is
6:48
when you order it at the store we take
6:51
this blowtorch uh-huh I'm gonna turn it
6:55
on I love these it's very dramatic and
7:02
then that stripper don't get to that's
7:05
on the outside don't get to go oh it
7:09
does turn into creme brulee exactly
7:12
that's why I try one yes okay all right
7:14
you don't have to match that I don't
7:15
want to burn Clifford and so you want to
7:16
do it very close a little closer yeah
7:20
whoa you wonder why so far yeah there we
7:24
go all right can I go a little bit here
7:26
okay we're good okay let's go the
7:28
kitchen goes fast
7:29
all right here okay okay perfect wait I
7:32
missed that age okay you're probably oh
7:37
those are beautiful and young um and
7:43
then it's so Adam I hope that you heard
7:46
what he said
7:48
this won him the award for the top ten
7:52
chocolate ears in the northern north of
7:55
the United States right like not South
8:00
America but all of North Carolina
8:02
number ten it's just as important that
8:08
all of North America I mean this is
8:12
unbelievable
8:13
and then I write something oh my gosh
8:16
look at this y'all I know you love your
8:18
milk chocolate so Ashley I love milk
8:21
chocolate now what is that so this is
8:23
the Georgia Peach white chocolate and
8:27
it's a butter ganache so I take butter
8:29
and I whip it up
8:31
yes and these the mint julep oh this is
8:35
the Georgia Peach
8:36
okay how that has the peach these are
8:38
Adams favorite y'all the milk chocolate
8:41
peanut butter cup we make our peanut
8:42
butter in-house no and look at this
8:45
that's beautiful for Valentine's Day
8:48
that one's our red velvet cake oh my god
8:52
what is that that one's our passion
8:54
fruit and what is that the golden
8:57
Bailey's you know what everything is
9:00
don't you
9:01
I've set the golden Bailey mm-hmm but
9:05
look and do you have this box to display
9:08
everything we do this is our book box so
9:12
we have BOM assortment of words and kind
9:16
of build oh my gosh if y'all come to
9:19
Savannah you've got to promise me that
9:21
y'all will come by Adams shop because
9:25
it's unbelievable how beautiful his
9:29
cabinets are with these wonderful little
9:31
bites
9:32
speaking of bites you ready yes I can
9:35
have a buyer I'll try that okay I'm just
9:39
made those just are so so good mmm
9:44
mm-hmm
9:45
a little bit of salt really taste like
9:48
that peanut butter cup I buy from the
9:50
grocery don't work it's not your mom was
9:55
mmm
9:57
so there's gonna be sweep mm-hmm but
10:00
it's caramelized white chocolate so it's
10:02
gonna taste just like a creme brulee I'm
10:08
sorry that is out of this world thank
10:14
you I can see why you walked away with
10:18
that award thank you
10:20
mmm no it's going in the center like a
10:25
creme brulee
10:26
no it's not that crust
10:32
I think that's the best thing I've ever
10:35
taken did you make oh now that's too
10:37
nice of a couple that from you that's
10:41
very sweet thank you
10:42
you don't expect fit to have those
10:44
textures in your mouth do you yeah and
10:47
you know they say chocolate you can't
10:49
overheat it you can't you know you could
10:51
burn it and I say let's take a torch to
10:53
it yeah I know let's try something you
10:56
know white chocolate it is so it's white
10:59
chocolate and then we caramelize it in
11:00
the oven really really slowly and a at a
11:03
low temperature so that those sugars in
11:05
the white chocolate caramelize itself
11:07
how did you teach yourself all this
11:09
stuff Adam no I mean I I have created my
11:13
own recipes and you know styles and I'm
11:16
the look but you know it's you know
11:18
experiences in life and schooling and it
11:20
takes a whole sort of big picture to
11:23
come together
11:23
mmm you know how would you see in front
11:26
of you it takes a good team and I'm so
11:28
proud of you the fact that you took the
11:31
bull by the horns at 19 years old I mean
11:35
any of us mothers out there would love
11:36
to take credit for having you as a son
11:39
oh because that 19 knowing what you
11:47
wanted to do and really go in after it I
11:49
know you've made your mother very very
11:51
proud and just think of all the
11:53
wonderful chocolate she gets on Mother's
11:55
Day absolutely Oh peanut butter cup is
12:00
incredible now with that little bit of
12:02
salt on it so anyway if you're ever in
12:05
Savannah you've got its Broughton Street
12:06
or Main Street one of our main streets
12:09
in downtown Savannah
12:11
it's chocolatiers by Adam chuckle up by
12:23
Adam - Ronnie - Ronnie that's it he
12:26
knows he knows what he knows - Ronnie
12:28
and you know you have I've noticed you
12:31
didn't we opened up a second location a
12:33
year ago where I should have come by
12:34
next time you're down here on Boland
12:37
Liberty you know you don't mean it and
12:39
we actually made it look like a library
12:41
so hang on so that's why I brought you
12:42
our book bar
12:44
so can you checking on a partner I have
12:47
uh Alexandra is my business partner and
12:51
you see her over there looking like the
12:53
modern-day koala deville she trying to
12:57
figure out who she looked like she's the
13:00
hind the scenes but I loved her jacket
13:02
or whatever it is she's wearing yeah
13:04
yeah she's definitely uh you know she's
13:07
the other half that I can't be or you
13:09
know that I when I have someone join our
13:12
team it's because I hire people that are
13:14
good at what they do and I stick with
13:16
being good at what I do and we all work
13:19
together and and it's hard for you as a
13:21
business owner to fill all those shoes
13:24
you have to rely on others and that's
13:27
scary but an entreprenuer absolutely
13:30
well Adam thank you I told you years ago
13:33
I was so proud of you and I'm still
13:35
proud of you today and I thank you so
13:38
much and I want you to come on
13:40
positively Paula and see if there's
13:44
something that you can teach us to make
13:46
it home
13:46
absolutely I'll start working on
13:48
something else okay thank you thank you
13:50
I hope y'all enjoyed getting to know

send your love and best dishes from
