Paula's got two boys, and she remembers the times when they would come back from school and they would be so hungry, so she's making snacks that you can have out for when the kids come home. The first thing she's going to make is a Mini Veggie Pizza. She'll follow it up with some Apple Raisin Mini Muffins that are just delicious. Then the boys are going to drop by later to help her make their favorite childhood snack, Popcorn Balls. Paula will finish up by making some Pretzel Peanut Bark. These snacks will be so good, you'll want to eat them too!

you know I was just standing out here
0:02
thinking about when my boys were little
0:04
and they would come home from school and
0:06
they would be so hungry they would be
0:09
starved and course I I'm naturally
0:11
wanted to have them a snack ready so
0:14
that's what I'm gonna do today
0:15
the first thing I'm gonna be making is a
0:17
mini veggie pizza and then I'm gonna
0:20
make some Apple raisin mini muffins that
0:23
are just delicious and then later my
0:25
boys are gonna be dropping in to help me
0:27
make their favorite childhood snack
0:30
popcorn balls and then I'm gonna finish
0:33
up I'm making some pretzel peanut bark
0:36
so school's out mom we're hungry we're
0:39
ready for snack so come on
0:42

[Music]
0:52
alright are y'all ready to start your
0:55
Pizzo kids because that's what I'm
0:57
making for us now I'm taking rich crispy
1:00
English muffins and topping them with
1:03
sauteed vegetables and two different
1:05
kinds of cheese now I'm gonna start with
1:08
one yellow squash and that pretty and I
1:15
know it's fresh and they're gonna get
1:17
what they need out of it and for the
1:20
next one I'm gonna be using the zucchini
1:23
squash which they love so I've got
1:28
beautiful colors going on here I've got
1:30
beautiful flavors now let's come over
1:33
here and I'm gonna turn on our skillet
1:36
because I don't have a marinara sauce or
1:41
anything like that so I'm gonna make one
1:44
using fresh tomatoes and this is 3/4 of
1:48
a cup of halved grape tomatoes now I'm
1:52
gonna give them a little squeeze to kind
1:55
of get them broke up and going okay
2:03
alright I'm gonna add a little olive oil
2:06
to him it would have been great had I
2:08
had time to roast these in the oven but
2:11
I didn't so I'm just gonna quickly roast
2:13
them right here in my pan right now
2:15
while those are finishing come on over
2:17
here and let's talk about our crust for
2:20
our pizza I'm gonna be using an English
2:24
muffin
2:25
it's gonna make us a nice thick crust
2:28
and we're gonna put them over here on
2:30
our baking sheet all right now it's time
2:34
for us to put our tomatoes on I'm gonna
2:37
come over here now and I'm gonna divide
2:39
the tomato on my English muffins so it's
2:48
fine that we don't have a sauce our
2:53
tomatoes are gonna give us a little
2:58
tomato we taste alright now that gets
3:03
that alright now it's time for us to
3:06
sautee our vegetables off and I'm gonna
3:10
add a little bit more olive oil to the
3:12
pan and in goes 3 cups of diced eggplant
3:17
and 1/4 of a cup of diced onions and it
3:22
won't take but just a second for those
3:25
just saute off now I'm gonna throw in my
3:27
squash in my zucchini and I don't want
3:34
to cook these much because remember
3:36
we're gonna cook our pizzas in the oven
3:38
so they're gonna have more cooking to
3:41
them all right
3:45
so let's bring our pizzas up here and
3:53
let's just power our veggies own
3:58
I don't want them to be skimpy I want
4:01
these to be nice and generous
4:13
they really smell good okay let's come
4:18
back over here alright let's get our
4:21
veggies up there now I'm gonna sprinkle
4:23
them with just a little balsamic vinegar
4:26
not much but just a little bit to give
4:30
them that flavor okay and then on goes
4:36
some what's our our cheese oh yeah you
4:45
know if you as parents well have
4:49
everything ready for them they can come
4:51
in and they can even make their own
4:53
pizzas put them together and and put
4:56
what they want on it now we're gonna go
4:59
on with a little feta cheese feta adds
5:02
so much to pizza it's gonna give it just
5:06
a little bite on your pizza
5:09
we're gonna sprinkle each of our pizzas
5:12
with a Greek seasoning because the fat
5:15
and the tomatoes you know it just
5:17
reminds me that it's maybe just a little
5:20
bit on the Greek side but I think this
5:23
will be nice I think they'll like it
5:24
alright now I'm gonna take some fresh
5:27
basil and just shred that just a little
5:35
bit and then just put a little bit of
5:39
fresh basil oh it smells so good okay
5:43
there we go now we're just gonna run
5:45
these in the oven we're gonna put them
5:47
in a preheated oven of 400 degrees
5:50
and we're gonna let these bake for maybe
5:52
15 or 20 minutes not very long we just
5:55
want our English muffin very crispy and
5:58
crunchy and our vegetables just melted
6:03
all in that cheese so let's put them in
6:05
the oven
6:07
when we come back I'm gonna be making us
6:10
some scrumptious Apple raisin mini
6:12
muffins and then later my boys are gonna
6:14
be dropping in to help me make their
6:16
favorite childhood snack popcorn balls
6:19
so I'll see y'all back here in a minute
6:21
it's all about the kids today
6:32
[Music]
6:35
hey y'all welcome back today's show is
6:38
all about afternoon snacks and kids I've
6:42
got our first snack ready to come out of
6:45
the oven those little mini pizzas with
6:48
the feta cheese oh they're gonna be so
6:51
good look at them
6:56
doesn't that look good you know in the
7:02
fun thing about pizzas is you can make
7:05
them and put whatever you want on them
7:07
and today we have tomatoes and zucchinis
7:12
and yellow squash is and find out your
7:18
onions and eggplant look how good that
7:22
looks mmm yummy and the English muffin
7:33
that we used made such a nice crust it's
7:36
almost kind of like a little deep-dish
7:37
pizza I think the kids will love them
7:40
well move on down the counter because I
7:43
want to show you the easiest recipe for
7:47
a little Apple raisin mini muffins that
7:49
you ever put in your mouth it's so easy
7:51
I'm gonna start with two apples that I
7:54
peeled and grated and I'm gonna throw
8:00
them into the skillet where I've got two
8:02
sticks of butter melting these apples
8:06
are gonna make these little mini muffins
8:11
so moist and delicious all right now I'm
8:14
gonna add 2 cups of raisins and that's a
8:21
lot of raisins if you're not a real big
8:24
raisin fan you can certainly cut back on
8:27
that amount I'm gonna add 1 cup of water
8:31
I'm gonna add 2 teaspoons of cinnamon 2
8:38
teaspoons of nutmeg
8:41
and a half a teaspoon of cloves so we've
8:46
got all those good spices that tastes so
8:50
good with apple all right now to this
8:53
we're gonna add two cups of sugar so you
9:03
can see that these are almost gonna be
9:06
cake like in the fact that they're sweet
9:10
it's almost reminds me of carrot cake
9:13
muffins
9:15
all right we're gonna let this cook for
9:18
about 15 minutes and then we're gonna
9:21
let it completely cool and I have some
9:25
this already cooked back here and that
9:28
has cooled so I'm gonna bring this up
9:31
here and you can see what it looks like
9:34
the apples are just you know really
9:38
cooked now and the raisins are plump and
9:41
the butter in the sugar has made it kind
9:45
of thick all right now in this bowl I
9:48
have three and a half cups of
9:49
all-purpose flour and I'm gonna add two
9:53
teaspoons of baking soda I'm just gonna
10:01
kind of flip that together now these are
10:04
real easy to put together all we're
10:07
gonna do is take our apple mixture and
10:10
mix it in with our flour and a cup of
10:14
walnuts
10:15
now the walnuts are real good but if you
10:19
don't have anything that pecans you can
10:20
certainly use those so that's all it is
10:27
really doesn't take but just a minute
10:30
the thing that I like about these little
10:33
apple muffins is not only par they good
10:36
fun an afternoon snack along with a
10:38
glass of milk
10:39
they're great to go along with breakfast
10:41
a hot bowl of oatmeal all right
10:46
I have my mini muffin tins that I've
10:49
sprayed with a nonstick spray now I'm
10:51
gonna use like this looks to be about a
10:54
1 ounce ice-cream scoop all right so
10:58
we're going to fill each one of these
11:03
little muffin holes without batter and
11:07
we're going to fill them all the way to
11:08
the top just like this this is a perfect
11:12
scooper
11:16
you
11:20
you
11:21
you
11:25
you
11:29
okay now we're going to put these in a
11:35
350 degree preheated oven and we're
11:38
gonna bake these for about 15 minutes
11:41
when we come back y'all my boys are
11:43
gonna be stopping in to help me make
11:46
their favorite childhood snack popcorn
11:48
balls and later I'm gonna be making a
11:52
sweet and savory pretzel peanut barn so
11:55
I'll meet y'all right back here in the
11:56
kitchen
12:00
three-fifty welcome back y'all today is
12:06
all about afternoon snacks and you know
12:10
really kind of like to control what my
12:12
children eat of course you're gonna
12:14
laugh when I show you the next thing
12:16
that they really love after school but
12:18
our muffins are ready look how good
12:22
these look and you see I filled him to
12:25
the tip-top when I was putting the
12:29
battery in and they have worked out just
12:31
perfectly now if you wanted to you could
12:35
make these in a regular muffin pan you
12:38
just have to cook them a little bit
12:40
longer alright nothing they'll all pop
12:43
out there we go and these make a lot
12:49
these make a lot of little mini muffins
12:53
and these freeze well too you can you
12:58
can make them ahead of time stick them
13:00
in the freezer and when you go out
13:02
camping or on a picnic or fishing all
13:05
you have to do is pop these out and
13:08
they're ready to go aren't those pretty
13:12
alright now personally I like mine with
13:16
a little cream cheese or a little butter
13:25
now look good hmm the perfect snack with
13:37
a glass of milk
13:38
they're so good that's a real keeper
13:42
well come on down here because I can't
13:45
hardly wait to make my popcorn balls now
13:48
you can see I've got a candy thermometer
13:50
here in my pot well I'm gonna need it
13:53
because we're gonna make a syrup and
13:56
we're gonna cook that syrup to 255
13:59
degrees now to make our syrup I'm gonna
14:02
use 1 in 1/3 cup of water 1 teaspoon of
14:08
vinegar a white vinegar a pinch of salt
14:12
a half a cup of white corn syrup that
14:21
looks perfect and I didn't do this but
14:25
if you'll spray your measuring cup with
14:28
a nonstick spray that syrup will come
14:31
out a lot easier all right now to this
14:34
we're gonna add 2 cups of sugar well
14:45
there we go
14:49
all right we're just gonna stir it
14:51
together and then we're just gonna let
14:54
it cook away like I said to 255 degrees
15:00
hey what are y'all doing I'm making the
15:08
snack that your grandma Paul used to
15:09
make for you I just kind of syrup cooked
15:13
up to 255 degrees now I'm gonna stir in
15:18
balls look at that
15:22
oh that smells great - doesn't it smell
15:26
wonderful Illinois we're aware of y'all
15:29
be in what yeah y'all swept in and I
15:32
didn't even whoa now all right yeah cuz
15:46
we would but thanks for the offer
15:53
you're welcome look how sticky that is
15:55
it sticky what is that it's pop I know
15:59
what that is but I mean what is that I
16:01
don't oh it's just a syrup that's gonna
16:03
stick our balls together tell me you're
16:06
Bobby let's put us on some gloves doctor
16:18
I'm gonna put some own although I'm not
16:21
gonna touch that I don't you don't want
16:25
to touch it
16:26
no no well I'm gonna touch it do you
16:29
have to work with it pretty quick is so
16:30
sticky does it yes I mean it'll get look
16:32
that's not just CeCe's you're crazy I
16:40
know it is home warm that's not the bet
16:42
all right and it was sticking Johnny
16:48
here like what as well no way my ball
16:51
would now spray my mom mm-hmm Oh Oh
16:58
how many is this gonna make that's not
17:01
as many as we wanted Charlie
17:03
you know and you can make these
17:04
different sizes like I would kind of
17:08
like this size that would be just like
17:10
just enough um Jamie must have made that
17:12
one yeah no it looks good y'all was so
17:17
much fun to be with I just love being
17:19
with y'all I wish I could zap you back
17:21
into little boys sometimes but I can't
17:24
when we come back though y'all we're
17:27
gonna be moving on to another great
17:30
after-school snack and it's gonna be
17:32
pretzel peanut Park
17:38
[Music]
17:40
hey welcome back y'all it's all about
17:44
after-school snacks today and this next
17:48
recipe is a white chocolate pretzel
17:51
peanut part it's the perfect combination
17:54
of sweet and savory with salty pretzels
17:57
and peanuts and sinfully sweet white
18:01
chocolate now I have melted 18 ounces of
18:05
white chocolate in my bowl over hot
18:08
water I've got three cups of pretzels
18:14
the pretzel sticks and I've kind of
18:16
broken them up and I'm just gonna dump
18:18
those in and I have two cups of salted
18:22
peanuts y'all have heard me say so often
18:26
how I love the sweet and the salty
18:28
together and this just makes a perfect
18:32
snack now all we have to do is stir
18:35
these together alright so there we go
18:41
just that easily it's mixed together let
18:46
me turn off my hot move it out of the
18:50
way all right now I've got a parchment
18:53
paper lined cookie sheet and I'm just
18:56
gonna pour this out onto the sheet ooh
19:00
look at that white chocolate ooh
19:05
done that looks good now I'm just gonna
19:08
spread this out and we're gonna let it
19:12
cool on the counter for you know three
19:15
or four hours just until it's hard and
19:17
then we're gonna break this up in pieces
19:20
and then it's ready to eat
19:23
great afternoon snack getting it so
19:27
there it is just that easy kids 18
19:31
ounces of white chocolate 3 cups of
19:33
broken pretzels and 2 cups of salted
19:36
peanuts and we're going to let it sit
19:38
here until it's hardened and I've got
19:41
one right here
19:42
so why don't we go over to the table and
19:44
look at all the yummy after-school
19:46
snacks we have
19:48
come on
19:51
so we've got all our snacks together for
19:55
the children our bark is ready all we
20:00
have to do is break it into nice big
20:04
pieces just like that mmm boy howdy is
20:09
that good the salty pretzels and the
20:12
white chocolate are so good together YUM
20:16
you know I think the kids are just gonna
20:19
love all these afternoon snacks the
20:21
little veggie pizza minis it's a good
20:24
nutritious snack the Apple raisin mini
20:27
muffins are just perfect
20:29
the coarse fat lose this on try popcorn
20:31
balls it's fun to get in the kitchen
20:33
with your children and make these I hope
20:36
y'all have had a good time this
20:37
afternoon with me making these snacks
20:40
for our children and I hope kids a child
20:43
