It's good and good for you
0:04
Hey, this is my section and my recipe. Okay, I didn't mean to talk to the pepper
0:08
Me. Can't you see me talking to you? Three blind mice. Good morning, audience
0:19
Good morning, son. Oh, well, good morning, Mom. Y'all are going to be so tired of that
0:30
Jamie and I are fixing to do our dueling dishes. Dueling panjos
0:36
Dueling dishes. I am doing a zucchini and corn casserole. And I'm doing a grilled zucchini, fire-roasted corn
0:46
fresh heirloom tomatoes, some delicious cheese. We're making a succotash that is good and is good for you
0:56
All right, but so here's the deal, y'all. We have got three members of the audience
1:04
We have asked three people to come here to our house and enjoy the show and promptly walk them off
1:10
into the back of the house. And we blindfolded them. So they're going to choose whose is the best for them
1:17
Are they going for the good or the good for you? Well, no, this is good for you, too
1:22
No, that is not good for you. It is good. Well, it most certainly is. It's got zucchini and peppers and onions
1:27
Yeah, it's full of vegetables. and what do you got, cream cheese over there? I got a little butter, a little cream cheese
1:33
a little cheese, a little canned corn. I'm going to get started, too. I'm going to get my corn on because this is going to take a minute
1:39
Okay. All right, now I'm going to start by dicing up an onion
1:44
I'm using a Vidalia, a sweet Vidalia. All right, my eye is on
1:50
I'm going to cut that up and just rough dice my onion
1:58
and I put three zucchini in boiling water, and I'm probably going to let that just cook
2:06
for about five or six minutes, y'all, and then I'm going to dice it up
2:11
Paula, give us an overview of the recipe and then let Jamie tell us what his is
2:16
Okay. Mine is simply zucchini, red onions, I mean red bell pepper and sweet onions
2:24
and I'm going to saute these in a little butter, and then I'm going to mix all my veggies
2:33
with a couple of tablespoons of cream cheese, a couple of eggs, some paprika
2:40
one of those little small cans of cream-style corn, and then I'm going to top it with cheese, y'all
2:46
and I'm just going to bake it until it's bubbly. So it very simple So when you got your neighborhoods having a little covered dish dinner this is a great side because you know I found out I try to
3:01
when there's funerals here in town, you know, since I'm in the restaurant business
3:08
you know, I try to feed the families, you know, of people who have lost a loved one
3:17
And I have found at funerals, you know, used to could, when we were growing up, girls in Albany especially, I got friends here from Albany, you know, they would bring out the fresh peas and the fresh corn and, I mean, you'd get lots of good vegetable dishes
3:37
Well, I have found now when I go in homes and I bring in, you know, a lady and son's buffet
3:45
That there's like store-bought potato salad from the deli and things like that
3:52
That people don't go all out like we used to when they would die and when we were younger
3:57
So Jamie, you want to lift the mood on your dish now? Thanks, Mom, for that uplifting story
4:03
I was still talking Paul, we're talking about dead people Tell me about some more funerals you've been to
4:09
I'm going to finish telling y'all what I was trying to say. So if you got something like this
4:14
this is a great little fresh vegetable to take them. Everything's fresh except that creamed corn
4:20
You could have talked about a potluck dinner and a church buffet, I mean, funeral food
4:25
Don't embarrass your family when you die. Make sure you make homemade potato salad ahead of time
4:33
So I've got these in planks, y'all, and I'm going to just grill them, and I'm gonna grill my corn
4:38
I used to work at a field just outside of Albany where we cross-pollinated corn
4:43
so I learned to eat corn raw off the stock. That's what we would have for our breaks
4:47
I don't remember you having that job. And I loved it. Well, Mama, you didn't know hardly near about anything
4:52
that I was doing when I was 17 and 18 years old. Oh, I'm sure
4:56
That was by design. So I don't mind it if they're crunchy
5:01
I actually prefer it, because I love a little bit of crunch with my vegetables
5:04
I don't overcook my broccoli. Anything that is fresh is gonna taste fresh
5:09
I'm not gonna cook it down to where it's so soggy. So I'm gonna let my corn go for just a minute
5:13
and look at these beautiful zucchinis. So once I get this with a little bit of char on it
5:19
I'm gonna break all this down into cubes. We're going into the bowl with my tomatoes
5:24
I'm gonna add a little bit of salt and pepper to these, y'all, and I'm gonna dress it very simply with some oil and some vinegar
5:30
I got some fresh basil. What you doing over there, Marm? OK, baby, I got my zucchini cut up
5:37
I'm fixing to crack my eggs. Well, this is going to be some fresh corn
5:42
I'm good to go. All right, there we go. My veggies are all in I going to stir in a couple of tablespoons of cream cheese
5:57
Or more. More is good. A teaspoon of paprika
6:07
A little color. A small can of cream corn. All righty
6:17
I've added my corn and my cream cheese because I want to get that cooled down kind of quick
6:23
All right, a little pepper. A little salt. Okay, I got you
6:33
How y'all like my fork? For scrambling eggs. All right. I'm putting this in a prepared dish, y'all, that's been greased
6:44
Okay, how about you there, Jamie? I need about three more minutes, and I'll be ready
6:50
All right. Since I got another second, I'm going to take my spatula
6:54
and get all that good stuff. Are you going to put that in the oven, Paula
6:58
I'm going to put this in the oven. Mm-hmm. And I'm going to bake it, Gordy, until it's nice and bubbly
7:06
And that'll probably be like 20 minutes, y'all, or probably closer to 25
7:12
So how about I bring out the tasters? All right? All righty
7:19
I want to get my counter cleaned up before our company comes out
7:23
All righty, we got them. That is some outfit for tasting. Look at those shoes
7:28
My goodness. Okay. So, ladies and girls, we brought y'all out. You're all blindfolded
7:36
Now, what we've done, Mama has fixed a delicious dish. I have fixed a delicious dish
7:43
You're going to taste both, and then you guys choose But I can tell you this, both of the dishes are good, and they're good for you
7:52
Well, one of them is a little better than the other, but they're both good, and they're kind of good for you
7:57
They got fresh vegetables and stuff in them. I ran a little over my time limit
8:02
That's why y'all are standing here, because I'm working furiously as you stand there
8:08
Hey, girls! Hi! How y'all doing? Good! Those are good looking
8:21
Thank you. I almost want to wear those on my hair. I know, I want to go
8:29
What do you mean? Can you see over there? No, I can't see nothing
8:33
And you know what? Did it make you mad when they put that blindfold on them pretty eyelashes
8:39
Courtney just put it on you. Okay y Okay doll baby What your name young lady in that pretty egg blue with your shoes Catherine Here Mama you help Catherine Okay Catherine where are you from Savannah From Savannah good
8:54
Now, this first dish is hot, so y'all be careful. Mama, you got a blow on it for them. Okay
8:58
And how about you, dear? You're from Leesburg. Me. Yes, ma'am. Yes, I am
9:04
Can't you see me talking to you? Tell me your name, dear
9:09
Trina. Trina. Well, you know, Trina and I went to school together. I didn't know that
9:13
Here, bubs. Stick out your hands. All right, wait, wait, wait. You sit that down, sissy, and I'm going to feed you
9:19
Oh, yummy. OK. OK, Catherine, open up. Three blind mice. OK, Trina, open up wide
9:35
Good. Well, I'm putting it in. OK. All right, now I'm fixing to come in and bring y'all a taste
9:43
Oh, excuse me. I just stepped on them red shoes. Okay, open up, Catherine
9:49
Okay, dish number two now. No bubbles. You don't have to name the ingredients
10:02
There's your second dish, ladies. Okay, y'all. You can choose what did y'all enjoy the most out of those two delicious dishes
10:11
The good and good for you. All right, Catherine. Okay. Which one
10:17
One or two. Which was your favorite, darling? You know, they both had very unique qualities, but... Yes
10:24
I have to go with number one. Number one. Okay. Trina, what do you think? Oh, my gosh
10:28
I'm going with number one because the same thing. I just, I just, I don't know
10:33
The flavor came out to be a little more in number one. Bubbles
10:37
Number one. I think I'll vote for number two. It was much healthier
10:42
It didn't have all the creamy sauce in it. Okay. All right
10:48
Ladies, you voted for the good. And Bubbles, you voted for the good for you
10:53
I think you can remove your things now. Take off your blindfolds, wait down one time
10:58
You fix and screw up your hair and your eyelashes. Two out of the three of you chose Mom's zucchini casserole, which is fantastic
11:07
Not really good for you. Cream cheese, heavy cream, sugar, butter, all that stuff
11:11
There was no sugar in that, and there was no heavy cream. This is a zucchini succotash with heirloom tomatoes
11:19
roasted corn, grilled zucchini. This is delicious, son. You know what it needs
11:23
A little bit more salt. You know what? Everybody's a winner here today, because it's good and good for you
11:30
See you next time. Thank you. you
