Since we're going light, we can use butter
0:13
Hey, y'all! So here we are. This is the lighter side. I'm showing my mom how to make a really good veggie burger
0:25
We talk a lot about food vices, and I've certainly got some. I like a good burger and fries
0:30
Yes. I like an ice cold beer. I like mayonnaise. You love Mommy's Butter Burger, don't you
0:36
Oh, my God. My mama makes a burger and stuffs cubes of butter inside the meat
0:43
I do. That's for special occasions. It's the most fantastical thing that you've ever tasted in life
0:50
It is good. You should only eat it once. But since you can't have that every day, I've gotten down a really good veggie burger
0:57
And I also like a good french fry. I'll go out to dinner, and I'll be the guy that says
1:02
I'll have the salad, please, and bring me a side of french fries
1:06
A side of french fries. Always, always. He always does. Always do it
1:11
I'm stemming your kale. I guess that's what you want me to do. Here's going to be the nucleus of the veggie burger
1:17
I'm going to use a red pepper, a purple onion, a lot of flavor in both of these
1:21
a couple of cloves of garlic, some smoked paprika, and a big helping of kale
1:26
And we'll get to some pinto beans in just a minute for a lot of fiber and some added flavor and texture
1:32
Back to the French fries, because I like a good steak fry
1:36
Yeah. Y'all. Oh, God. Have y'all ever made parsnip fries? Anybody here
1:40
Oh, Bobby, you made them for me one night, and they're out of this world. They're great
1:44
It's a good substitute for French fries, like on just your average weeknight
1:48
And they're super easy to do. You peel and cut the parsnips into just French fry shapes
1:53
Toss them in olive oil and a little bit of salt and pepper and bake them. Bobby has a new show
1:58
A new show called The Dean of Lean. All right, son, is that fine enough to suit you
2:03
Yeah, that's great. A little bit of olive oil in our pan
2:10
I'm going to travel around and meet people. Yes. All right, garlic's going in last
2:15
Bobby is going to go around to different places. He is getting mail from people across America that love their mother's cooking
2:25
They love it so much. And see if they can take Mama's recipe that they love so very much
2:31
and just take some of the calories out of it. So that's what Bobby's doing
2:35
It's pretty great. All right, now we've got to chop up our kale real fine
2:41
When do you add the smoked paprika? Once you get that chopped in here, we'll add that kind of last
2:46
There's a saying in the culinary world, and that is to eat the rainbow
2:50
When you eat a lot of color, you know they're getting a lot of good vitamins and nutrients and minerals
2:55
You don't have to get it too fine, because we're going to end up in the food processor. It going to be in the food processor so heck fire That fine enough And you can go ahead and add the paprika Okay add the paprika How much
3:09
About a teaspoon. One tablespoon? I mean, teaspoon? Mm-hmm. Okay. Smoked paprika will give it a lot of good flavor
3:16
Yeah. All right, this is on high. I'm just going to get this kale to wilt down a little bit
3:20
And then we are going to move to the food processor and add in a couple of cups of kidney beans
3:26
These have been drained and ruined. At least just out of the can, y'all. The legume family is really good for you
3:31
That's your protein. That's your protein. Exactly, that's right. Look at Paula
3:39
Bobby. Didn't realize there was another protein besides butter. No, I actually know about stuff like that
3:47
Do I always do it? No. That's like any good doctor can tell you what you should do
3:53
My pediatrician that took care of me when I was a kid, we would be... He saved your life
3:57
Bobby was an RH baby. They took his blood out four times and changed it out completely
4:03
First baby in Albany, Georgia to survive four complete blood transfusions. So that's why I take care of myself now
4:12
So... So, but anyhow, I'm a child of the 70s. We would go to Dr. Sweat's office, and we would literally be in the office while he would examine me
4:19
He and my mother would both be smoking cigarettes. In the doctor's office
4:24
Dr. Maxwell Sweat. He was an awesome guy. I was ever so grateful for him
4:28
And me too. We're going to patty these up and put them in the fridge
4:42
for about 30 or 45 minutes so they can sort of come together. Yeah, they have to almost meld together
4:48
so that they will stay together. I'm just going to pulse that. See
4:59
That's looking good already. Yeah. Yeah, see it kind of shrinks, Bobby, when you do it down
5:06
All right, I'm going to have to change this to that bowl and stir. Yep
5:11
Stir that last step. Whoa. Oh, look, you got whole beans now. Uh-oh
5:18
That's all right. I'll mash them. Well, see, this spatula acted just like a potato measure
5:26
What's it called? Spatular. That's what it all is. That's spelled S-P-A-C-H-L-E-R for y'all
5:33
We're going to put this in the cooler. Because you see, it's too hot
5:37
It wouldn't stick together. Right, exactly. Okay, right here, Bob. Since we're going light with the veggie burgers... Mm-hmm
5:46
We can use butter? It appears that we're going full. No, we cannot use butter
5:55
But it appears that we're going to go full throttle with the bread and the mayonnaise
5:59
Bobby how many calories do you reckon are in these burgers per serving I would think no more than a couple hundred calories Not even 114 calories 114 calories And 114 calories per serving for patty I could have two
6:13
You could have two. I could have three. You could have four if you didn't have the bread
6:17
Yeah, I could have four. But, you know, 100 or 200 calories worth of vegetables or fruits
6:23
looks a whole lot different than a couple hundred calories of... Now, see, there's as many calories right there
6:33
as there is in per serving of my veggie burgers. But that's all right
6:38
We needed it. That's all right. You know what? This reminds me of Bobby. My youth
6:42
Yes, your youth and my youth. You know, I had a friend, Jody and Joe Moyer
6:48
Oh, I remember them. That had moved down from Indiana. And Jody taught me how to make a bean
6:55
Oh, my God. I remember them. burger. That reminds me of this. Very similar
7:00
And they were out of this world, weren't they? Great. Can't believe it. A Yankee
7:04
taught you how to cook something. Yes. Jody Moyer, if you're out there, I still
7:10
love you, girl, and think about you. Aw. Aw. Alright, Bobby, I don't know if we
7:18
can fit that last burger in or not, son. You know, I... I'll tell you what, I'll just turn on this side
7:23
Why don't we do this one the way we're supposed to? exactly. But I gotta admit, your sugar smell good
7:33
What are you doing? I'm putting them. We were gonna do, we got six of them
7:38
I have a teaspoon. We were gonna do one the way that we're supposed to do it. My mama is a bad influence
7:46
Whatever. There. It's gone. It's gone. Is it good? delicious. I bet
7:59
And you know, everything here is already cooked. All we really have to do is get them nice and hot. Yeah, we just want to brown them
8:04
I don't want to... Whoa! Oh, they look like delicious crab cakes. Well, there is an egg in there
8:08
We want to make sure we, you know, the egg. That does. It looks like crab cake. Alright, now when you flip it
8:14
take that left hand and hip it. There you go. So it won't break. There you go
8:23
Look at these. And look at the nice array of more onions and some tomato
8:28
Avocado. I love avocado. Avocado is one of those. I love it. Go on to the oven
8:34
We should put this to the test by inviting Sam in, because he showed up a few minutes ago
8:39
Sam Carter, you want to come in and eat a veggie burger? Come on! Does this shirt make me look fat
8:50
It makes you look fat in this area. Oh, okay, good. What about this? It makes my butt
8:54
You're it, you're it, you're it. Do that again. It's like butter
9:06
What do we got Bob What do we have I wish I had one of those This is a veggie burger and it consists entirely of all good things It a red pepper it a bunch of kale it a purple onion a little bit of garlic
9:19
salt and pepper to taste, pinto beans in there for fiber. Oh, that's awesome
9:22
Really, really good. Sam comes to my house and heats just like a pig
9:26
just like the rest of us. When you look like this... Yes, you do. Yes, you do
9:30
I've had Paula's... I fed you too many times. ...bacon butter burger
9:34
and it has 567 calories in it. Mm. All right, now, how many calories..
9:39
That's not bad. Well, I asked you, but how many calories did this have? 140 calories per serving
9:43
I can have four of these. You can have four of these as long as you leave out the bread and the mayonnaise
9:47
Okay, bread and mayonnaise, but we want to put the bread and bread in it. We got to have mayonnaise. We're going to have bread and mayonnaise
9:51
Okay. All right, Bobby, where's the mayonnaise, son? You got to have mayonnaise on both sides of the bread
9:56
Not on both sides. Oh, yes, it will not stick together if you don't have mayonnaise on both sides
10:02
And don't put no ketchup and mustard on it. Sam, you going along? Oh, come on, Sam. What about this
10:06
There's a little bit of mayonnaise. Look at that. No. No. No, it's not good
10:11
More mayonnaise than that? I'll choke to death on that dry burger. Oh, my God
10:20
On both sides? Yes. It won't stick. Look. See? All right. Mayonnaise
10:26
Mayonnaise. Okay, just mayonnaise the normal portion. How about that? Perfect. Good
10:32
Normal portion. Okay, I'll take the one with the mayonnaise on it
10:35
I'll take the one with the mayonnaise. The taste is in the back
10:42
Oh, my. It ain't bad. And now you do a veggie burger. It is good
10:48
It's the mayonnaise. Mm. Yeah. The mayonnaise is too good to go. So these veggie burgers are awesome
10:56
This would be a great Monday night meal. Veggie burgers make a great Monday night meal
11:02
Yes. And something that would go really good with these that's also on the network would be blue cheese chips and grilled veggie skewers
11:08
Oh, wow. And I want to try your parsnip french fries. I've got a friend out there, Artis
11:17
She gave me this fan this morning. She was teaching me fan language
11:22
Because, see, in the old South, it's so hot down here that all ladies had a fan
11:27
Right, Artis? Right. Come show me. All right. Yes. Yes. No. No
11:36
We're being watched. Yes. And I love you on either side. Wow. And twirl in your left hand
11:44
get lost, I'm not interested. Get lost. Just about every time I go downtown
11:51
this lady is there giving walking tours. And it just puts a smile
11:56
on my face seeing her share our history with our visitors. Thank you, darling. You're a treasure
12:02
You're a Savannah treasure. Thank you
