Y'all, this is my good friend, my good buddy Donna Foltz
0:03
Donna and I are gonna go on a picnic today. Starting with mini pork sandwiches made with a juicy roast and an unbelievable spread
0:12
So now you just rub that all over it. I know about rubbing my meat
0:16
Then roast potato salad covered with a creamy blue cheese dressing. Next, it's a spinach and strawberry salad made with the freshest ingredients in Georgia
0:27
I know you're a taster. You can use my mouth to taste with any time
0:31
Finally, Donna shares a treat from her childhood. Candied apples that will make any picnic perfect
0:42
This is my friend Donna Folt. She is one of my good buddies here in Savannah
0:47
She's precious. If it wasn't for Donna, I'd probably never get to go to a party
0:52
because Donna's so good about having us over. Y'all, she's from New Orleans
1:00
So you know she's a good cook. And we're going to have, like, an uptown picnic today
1:08
Tell everybody what we're going to make, Donna. We're going to make some delicious little mini pork tenderloin sandwiches with a delicious sauce
1:16
I love that. They're really easy to eat, and they're so delicious, especially if you eat them while they're still warm
1:21
I'm going to mince this fresh rosemary. I'm going to add some garlic, olive oil, and Worcestershire sauce
1:27
We're going to sort of make it like a marinade for this pork tenderloin. That sounds yummy
1:32
I love pork tenderloin. Yes. Okay, so you're using one teaspoon of chopped rosemary
1:37
How are you doing with that? I'm doing great. I just saw these onions, so I started chopping
1:42
Yeah, those are nice. I don't really know what you need. Now, how much parsley? About the same amount of parsley
1:46
Okie doke. So, two or three teaspoons. Yeah. I'm going to mash this four cloves of garlic
1:51
We always go to Donna's house, y'all, on Christmas Eve. And we do..
1:56
What is that? What is that called? The White Elven Gift Exchange
2:01
We do a great gift exchange. We have the best time. Everyone brings a gift, sort of like a gag gift, but not really
2:08
Oh, we've had some good gifts. We've had some great gifts. And remember, I got mad last Christmas
2:13
Because, y'all, when I was a little girl, I had a Mary Hartline doll
2:18
Well, I loved my doll. The first person to open something... Which was Brooke's mom
2:24
Was Brooke's mother. Brooke is my daughter-in-law. Linda, right? And Linda opens the first gift
2:31
It is a Mary Hartline doll. Right, and you either pick a gift from under the tree
2:35
or you take a gift from someone. Bobby was so intent on Paula getting this doll
2:39
that he went to Linda and took the doll from Linda. And he held the doll so that he could give it to Paula
2:47
I thought, how sweet, y'all. Now, how much mayonnaise? Four tablespoons of mayonnaise and one tablespoon of the brown mustard
2:59
So four to one, you say? Yes. And I can't help but notice that you're using my ceiling salt
3:09
Yes, I love that. How much of this? It's excellent. About a teaspoon
3:13
Okay. And I'm going to add a little bit of Worcestershire sauce and some..
3:19
Olive oil. You know, the pork tenderloin, normally when you take it out of the wrapper, it's in two pieces
3:24
But if it's not, I just cut it down the center. I'm going to take this. So what we do is we put some on the inside because, oh my gosh, it's so delicious
3:33
So we put it on top. So that was one big fat tenderloin
3:37
It was. So I'm just going to take this, tie this up
3:40
You want to help me do this? I will help you. You know. Tie it up
3:44
Okay, tie it up. In three or four places. And that's easy enough, y'all
3:48
You don't have to be fancy with this. Right. Just tie it up just like that
3:53
All right, now I'm going to get the pan. Why don't we transfer this so we don't lose a drop of the rest of that marinade
4:02
Doesn't that smell divine? Yes, it smells so good. I love that. You don't mind if I just take it out of your hand, do you
4:07
No. So now you just rub that all over your roast side. I know about rubbing my meat
4:12
All right, so tell me, do we need salt or anything on this
4:16
That's when I put the silly salt. On the outside because it makes it crusty. Okay, you put the salt and I'll be your rubber
4:22
Okay, great. That'd be great. Okay, and we're going to turn this so that we get it on all four sides, y'all
4:32
It's so good. And then I just cover it with a little foil
4:36
So we're going to roast this for how long, an hour? An hour. At
4:40
350. 30 minutes with the foil, 30 minutes without. Right. All right, so if you want to get that in the oven, Donna
4:47
Sure. I'm going to come down here, and I'm going to get started on our side dish
4:52
Okay, great. Okay, great. All right. Now, to go with Donna's sandwiches
4:58
I'm going to make us a potato salad with blue cheese dressing, y'all
5:03
I'm just going to use a mixture of red and white table potatoes
5:07
and I doing with the skin on because I think the skin is pretty It got the nutrients so no peeling involved All right and you going to cut up the onion Please be careful Donna Yes I be very careful I love it when you eat at my house because you like
5:21
oh my gosh, this is the best thing I've ever had. Donna, listen, people say, oh, I never cook for you. Why
5:28
Oh, I love cooking for you. I'm just a home cook, you know. I love cooking
5:32
Just like everybody else, and I appreciate home cooking. I know you do
5:36
So I need you to start melting a fourth of a cup of butter in our skillet
5:40
Then rough chop one large onion and throw it in our pan
5:45
And while I finish cutting up our potatoes, I'm going to need two teaspoons of minced garlic
5:50
All right, so I've got our potatoes done. Now I've got a full-lined baking sheet that I'm going to put these on
5:58
and I'm just going to pile them on. Instead of boiling these, I'm going to roast them in the oven
6:05
I'm just going to salt my potatoes, pepper them. These table potatoes are wonderful
6:12
Oh, nice. And then I'm going to just toss them with some olive oil
6:17
Can you add that garlic for me, please? Guess what kind of dressing we're going to put on these
6:23
What? We're going to put a blue cheese dressing. Yum. Doesn't that sound good
6:30
Yes, it does. All right, my hands are so greasy, Donna. Would you put those in the oven for me
6:34
All right, now we're going to roast these off, y'all, about 450 degrees for about 35 minutes
6:41
So we'll see you back. Coming up, we're making a creamy blue cheese dressing
6:46
for our potatoes. I am loving this. I love it. Then we're tossing up a fresh salad
6:52
that's going to leave us speechless. Mmm, mmm. Yum. And later, you'll never guess the secret
7:00
to Donna's candied apples. In case you just tuned in, I'm in here with my good buddy
7:08
You know, you've got a... We've all got a friend that you just sit around and you can tell anything to
7:15
Well, this is that kind of friend. She's just precious. And we're making us a picnic lunch today
7:21
Donna is cooking off a wonderful pork tenderloin. She's gotten that in the oven right now
7:26
I've got potatoes roasting for potato salad. and we're going to make a blue cheese dressing to go on our potato salad
7:34
This is a little different twist from just a southern potato salad
7:38
So if you'd give me a hand, Donna Baby, I need three-fourths a cup of mayonnaise
7:42
So you can just measure that. I'm going to add a couple of tablespoons of sour cream
7:49
You don't want to put too much because the sour cream could override the mayonnaise
7:53
and you want that creamy egg yolkiness of the mayonnaise. Do you really measure
7:59
I hardly ever measure anything. Well, no, I don't measure. But we've got to measure by our friends
8:03
I know. We have to make sure. Let's do it right here. All right
8:07
And sometimes I mismeasure. I always put extra mayo. And like a whole stick of butter will fall in a dish
8:14
All right. A teaspoon and a half of horseradish. Oh, this is so good
8:19
I'm going to put in some black pepper. All right. Now, I'm going to put in a five-ounce package of crumbled blue cheese
8:27
There you go. Okie doke. So that's it. So just stir that up
8:33
Have you had fun being in the kitchen with me today? I am loving this. I love it
8:39
All right, let's taste it. It's pretty good, isn't it? It's excellent
8:46
It's delicious. All right, so we got that ready. So, you know those onions that you were caramelizing
8:50
Yes. We're going to need to add, and look at them, they're just cooking away
8:54
About a tablespoon of balsamic vinegar. I'll just mix that in and let it continue to cook
9:01
while we get started on our fresh spinach and strawberry salad. I want you to start peeling that cucumber
9:08
Okay. I'm going to measure out about a third of a cup of slivered almonds
9:16
that we're going to roast in a pan. And how much cucumber would you like
9:20
I would like for you to seed and peel. Okay. That whole cucumber, please
9:27
So you've got your spinach leaves over there. I've got about a quart of strawberries
9:33
Now, I didn't ask you. I'm assuming you want me to dice it? Yeah, dice it
9:37
Dice it up, you know, fairly small. Okay. And we're not going to dress our salad before we leave on our picnic
9:44
because, you know, it would make our spinach go limp. And we don't want that
9:51
And you can cut these strawberries, Donna, any way you want to. You can slice them, quarter them, half them
9:57
These are beautiful strawberries. All right, so I'm going to just toss our strawberries in there, y'all
10:09
And you can just throw those cucumbers on in here. I know you're a taster
10:15
I'm a taster. Yes, I'm a taster. And not only am I a taster, everybody in my kitchen
10:19
And when they come in the front door, they come for dinner, I'm like, okay, so here. Here, let me get that closer
10:28
You can use my mouth to taste with any time All right now we going to make a wonderful sweet little dressing for our salad
10:37
So we've got just a little screw top jar. We're going to use a third of a cup of sugar
10:45
The juice of a half a lemon. About a teaspoon of poppy seed
10:52
Two tablespoons of white wine vinegar. a tablespoon of oil, and then we're just going to shake, shake, shake
11:06
That's perfect. Yes, and just that quick. So pretty. Now, Donna, when I go to shake these things
11:11
I put a rag on it just in case. Yeah. Because I've had them leaking
11:16
I know. They'll go all over me. Sometimes they don't seal. Yeah. That's right
11:19
Okay, great. So I'm just going to shake this up. Pretty cold. So we just want to dissolve that
11:24
Mm-hmm. Our almonds are toasted now, so we'll just toss those in
11:29
And we'll just taste the salad a little later. Y'all come right back with us because Donna is going to take those tenderloins out
11:38
I'm going to mix up our potato salad, and we're going to have us an uptown picnic today
11:44
Coming up next, we're putting together our mini pork sandwiches and topping our roasted potatoes
11:51
Delicious. Then Donna shows us how to make candied apples that are fun for any age
11:59
Children love these apples. Little Jack. Big children love them too. And later, we're putting the finishing touches on those sweet candied apples
12:12
Donna and I are getting the end of our picnic menu all together
12:18
Donna's fixing to share a recipe with y'all. This is incredibly delicious
12:23
So hit it, Donna. Okay, what we're going to do is we're going to make some candied apples
12:28
It's not like an apple on a stick, like candy apples you get at the fair
12:32
No, it's not. I grew up with these apples. My mom started making these apples when I was very young
12:37
We're going to dissolve one cup of cinnamon candies. Okay. Into half a cup of water
12:41
Now just measure out those little hot cinnamon candies. We're going to let them dissolve
12:47
We're going to let them dissolve. So low to medium heat. We don't want the water to reduce too quickly
12:54
because it will lose its syrup consistency. If you would like, you can help me peel these apples
12:59
Okay. We're going to peel them and core them. Peel the apples. Six apples, just red apples
13:03
Small red apples. So I'm going to take my apple, Cora. I know, they're not the easiest
13:10
And just core it out, just that simple. There we go. Okay, great
13:17
The children love these apples. Little Jack. Big children love them, too
13:24
And it makes your house smell so good. I'll peel them if you like, and then you can core them
13:29
It's teamwork. Okay. And then we're going to cut them in half. Okay
13:33
And then we put the flat side down in the pan. These are so pretty. Look, the red. Yeah
13:38
The red is going all the way through the apple. All right, Donna, do you want me to cut them this way
13:43
That way, yeah. Mm-hmm. So just cut them directly in half. Yes
13:47
We're just going to lay them down in the cinnamon. We put them, you can put them before they melt, they dissolve
13:54
Okay. So I'm going to turn up this heat a little bit
14:10
Now how long are we going to cook these for, Donna? It's about 45 minutes to dissolve the candles
14:14
We're just gonna let those apples soak up that sugar and that beautiful red color
14:20
Look at there, y'all. They're starting to take on the color of those hot candies
14:28
While they're doing that, come on down here. And I'm gonna put together our potato salad
14:34
I'm gonna slice this roast. I adore potatoes. I love roasted vegetables, any kind of root vegetable
14:43
I'm going to toss in our caramelized onions. Now I'm going to take our blue cheese dressing
14:51
and pour it over those potatoes into my bowl. Look at this, Donna
14:58
Doesn't that look good? That looks delicious. The guys are going to love this
15:03
Those caramelized onions are going to be so good, sister. Oh, Paula, this looks so good
15:10
All right, Donna. Our apples are going You may want to take a look at this
15:15
I'm gonna Flip your apples over again Wait till you see What she puts inside of them y'all
15:23
One of my favorite Favorite, favorite ingredients Thanks Oh Donna That is out of this world
15:35
Good right Now I want you to taste Mm-hmm. Tell me how you like that Mm You like it Mmm You like it Mmm Girl it perfect
15:52
I'm going to load our potato salad up in these jars. Okay. And that'll be really cute to transport
15:59
Oh, wow. That's perfect, Donna. Isn't that great? Yeah. What a great way to store them in the fridge, too. Mmm. Right
16:05
So, y'all, Donna is just using a little bakery roll for our sandwiches
16:10
And we're just going to put our sauce that we made up
16:16
Look at your apples now. This smells like the holidays. It does, doesn't it
16:22
Oh, Donna, you cook this just perfect. And look at here. We're going to put our little sandwiches just like that
16:29
Guess what? What? We got an extra roll, so you know what that means
16:34
No such thing as an extra roll. Look at this tenderloin, y'all
16:39
Look at that beauty. That's beautiful. All right, there we go. Yum
16:53
Yum. So let's get a little sample and make sure. Mm. Good
17:04
Y'all don't go anywhere because Donna's going to finish up showing you how to put these apples together
17:10
They're so good. It's going to be a great dish. Mm. Mm-hmm
17:16
Delicious. Coming up next, we're making a creamy treat to bring our candied apples together
17:23
This is like ice cream. I know what you want to do. You have to put it on the apple
17:29
And later, we're tasting that sweet salad and packing up our perfect little picnic basket
17:37
We're finishing up those beautiful candied apples, y'all. Donna, those are so beautiful
17:47
Thought an apple was low-calorie and healthy, didn't you? Well, wait till..
17:51
They're so pretty. ...till Miss Donna gets through with it. Okay, now we're going to make a topping, Paula
17:57
It's a cream cheese topping. It's a nice small sauce. All right, so you got a little cream cheese
18:04
Looks like maybe two ounces of cream cheese. About two ounces. That's perfect
18:08
And that's a cup of powdered sugar. A little bit of vanilla extract
18:13
Okay. About a fourth of a teaspoon, y'all. And, of course, you could adjust it if you were going to do more
18:19
Do you have any words of wisdom for this? No, honey, I don't, except hurry
18:23
I want to taste them. I probably should have had a mixer. I didn't think of it
18:27
Well, I can get that for you. Do you have a mixer? Yeah. Great. Perfect
18:33
Perfect. You know what I would add to this? What's that? I'd add about a tablespoon of mayonnaise
18:41
Try it? Yeah. This is real mayonnaise. Now, I have never had it with mayonnaise, Paula
18:50
All right, well, let's just try it and see if you like it. I will. And look at that
18:54
That just made it cream right up. Yeah, that's great. Thank you so much
19:01
Oh, yeah, that's perfect. Perfect. Now, what you do is you take a little bit of this
19:07
You want this to be stiff, this consistency of this cream cheese
19:14
This is like ice cream. It's very close. I know what you want to do
19:20
You have to put it on the ice. Now, I'm just going to pack these up in these little containers
19:33
So there we go. Oh, Donna, I just have to taste one, honey
19:40
Mmm. Mmm. Isn't it good? Mmm
19:50
Mmm. There's nothing more delightful than having lunch or dinner with Paula Deen
19:57
Because she enjoys everything that she eats so much. Let's taste our salad
20:05
That looks so good. All right, let me know how you like it. Mm, it's sweet
20:12
Mm. And the vinegar made it a little tart. Mm-hmm. Yum. Let's gather everything up, Donna
20:18
Okay. And we'll put our sandwiches on last
20:27
So they won't get all squeezed up. Mm-hmm. Look at that. Just that simple
20:32
Beautiful picnic. Uh-huh. Hope you love the recipes that we've shared with y'all today
20:39
Bodine says yes. Thank you so much for having me today. Bodine, yes
20:45
Say, I know you got pork around. Oh, my goodness. So, until we see y'all next time
20:52
We send you best dishes from our kitchen to yours. Love y'all
21:01
Thank you
