Y'all, today is all about party dishes, but you know what
0:04
I think they almost are kind of redneck-y. I needed the number one redneck in America
0:12
Everybody, it's Jeff Foxworthy! And we're cooking up some classic party dishes that are so good
0:21
you'll find any excuse to have a party. That's daggum good. That's daggum good
0:26
That's stupid. First up, Jeff and I are making mile-high nachos with a southern queso dip
0:33
Put it on top of your head, your tongue will beat your brains out. Try to get to it
0:37
Then I'm making a down-home favorite, y'all. Chili Mac. I'm telling you, this is going to be awesome
0:44
And no ding party is complete without Uncle Bubba's shrimp quesadillas. Do these appear to be to your liking
0:51
I'm excited about this. And we're going to wash it all down with some refreshing Georgia peach sweet tea
0:58
We've got so much to talk about with this precious man. Don't go nowhere. We're visiting
1:02
We're a visitor. See, you know the best parties are redneck parties
1:19
Absolutely. The kind of parties, if somebody doesn't leave crying or with a bloody nose, you did not have a good time
1:25
Thank you for having me here today. Oh, my gosh. I hadn't seen you since you were kind enough to have me on Are You Smarter Than a Fifth Grader
1:33
You did good on Are You Smarter Than a Fifth Grader? Am I smarter than a fifth grader
1:37
Not no, but hell no. I'm not smarter than a first grader, and I found that out
1:43
And I bet you're saying, I didn't know Jeff Boxworthy cooked. I like food a lot
1:48
And Jeff's going to make a southern queso dip to go on top of my mile-high nachos
1:54
My daddy was a great cook. He's a southerner, y'all. He was. My dad was an interesting character
1:59
What you doing? I'm cutting this pepper in half. Well, now you know to be careful
2:03
I am. I'm talking about with the seeds. I know. The seeds are the hot part
2:07
Yes. You use that spoon to get them seeds out. I'm going to. All right
2:11
So I want to hear more about your daddy. Okay, so my daddy, he liked women a lot
2:16
And so when he was about 50, and I think he was between wife three or four or whatever
2:22
he says, I'm going to go take a cooking class. And I said, I've never seen you cook in your entire life
2:28
Man's never made a sandwich. And he said, I know, he said, but there's got to be a lot of women in a cooking class
2:33
I was going to say, he was going to meet a woman. And he was going to meet women, and he didn't meet any women, but he became a gourmet chef
2:40
And one of the best cooks you've ever known in your life. No. So you are toasting or roasting your jalapeno peppers
2:51
Then I'm going to take about... You're going to brown some hamburger meat. I'm going to brown about eight ounces of hamburger meat
2:55
And you got some homemade pimento cheese over there. I know, I do. We're going to melt that homemade pimento
2:59
I know, but I kind of hate to throw it in there because if you had a cracker, we could wear that out
3:08
I've got me some garlic, and I have diced me up a red bell pepper
3:12
and I'm going to saute these a little bit and a little hour
3:16
You're a much faster dicer than I am. No, not really. Not really, honey
3:20
I have to be careful because when I get through at the end of the day, I sure do like to be able to look down and count ten digits
3:27
You know what I mean? So, Jeff, somebody told me that you used to work here in Savannah
3:34
I worked at IBM, but I worked with people that worked here in Savannah
3:38
You were not in comedy. No, I had a regular, I mean, I didn't know what I wanted to do
3:43
I was the guy in the break room doing impersonations of the boss and getting caught
3:47
You know, I was not headed up the ladder. And a bunch of guys I worked with used to go hang out at a comedy club
3:53
They were having a contest for working comedians. They entered me in and I won the contest
3:57
And this was in Atlanta? At the Punchline in Sandy Springs, right outside Atlanta
4:01
Uh-uh. So the first time on stage I won, I think we're done
4:05
All right, now, if you want to drain it, there's a column
4:09
We can. Most rednecks don't drain there. I'm not really worried about it, but if you want to
4:14
I ain't worried about it. Let's don't do it. We ain't going to worry about it. So now we're going to add our pimento cheese, all right? Yes
4:21
Let me tell you what I'm going to do, Jess. All right. We're going to put our nachos together right here in this black cast iron skillet
4:28
How's that? But I'm going to heat these up just for a minute. I mean, and here's the truth
4:33
I've made a great living doing something I would have done for free. I'm two decisions from drywalling, Paula
4:38
I mean, and to be able to make people laugh, what else would you want to do in life
4:45
I'm two decisions away from being a wallpaper hanger. That was one of my last careers towards things
4:53
We could have had a business together. You and me could have had a business. I could have put the walls up and you could have papered them up
4:57
Yes. But, I mean, it's like with you cooking, you would have done it for free, you know
5:02
Oh, absolutely, and I did for years. And so, you know, I often think about that
5:06
How many people make a living doing something that they love to do? There nothing any greater I adding black beans y to my peppers and my onions Now I put two teaspoons of cumin
5:21
And now I'm going to add two chipotle peppers. All right, I'm taking these out because we just want them kind of warm
5:28
All right. This smells great. And they were... They smell great. Now, I just put some white cheese in here, about two ounces of white cheese with the pimento cheese, like American
5:41
What kind of cheese is that? Just white American cheese. I'm going to add some of your little whoop-de-doo, your mix-it-up stuff there
5:47
That's my house seasoning. I know, but I like it. Okay, good. Well, you mix it
5:51
I'm putting a little salt in mine. Smell that right there. I can't singe my eyelids
6:00
But that's good, isn't it? Yes. Ooh, melted pimento cheese. Shut up, boy
6:05
Shut up. Put it on top of your head. Your tongue will beat your brains out. Try to get to it
6:10
This is going to be a good combination. All right, so you got yearning. I got my ring
6:15
Okay. So let's make some nachos, honey. This is awesome
6:34
Isn't that pretty? Look at your presentation. Ain't it gorgeous? It's beautiful
6:39
And then you put the chips on the bottom. Yeah. We don't need no fork
6:47
Oh, well. All right. Come on, baby. All right. Lord have mercy
6:53
Put some good syrup on there. What you think? That's daggum good
6:58
That's daggum good. That's stupid. I don't care who you are. I don't care who you are
7:03
That's good right there now. Mmm. We got so much to talk about with this precious man
7:07
Don't go nowhere. We're a visiting. We're a visiting. Coming up, I take mac and cheese to a whole new level
7:16
Then I make Jeff one of my favorite party dishes. Uncle Bubba's shrimp quesadillas
7:22
Look-a-here. Look-a-here. Look-a-here. And we can't forget a southern party staple like sweet each tea
7:29
Is there any other kind of tea to live? I love sweet tea. I always say, Jeff, that it's really not about the food
7:44
The food is a vehicle that gets you here with me. My daddy always said the kitchen was like the heart of the house
7:52
And it's so funny, because you've got this beautiful place, but don't you live in the kitchen
7:59
You've got all this other space and you never go in. This and the bed. No in between
8:03
No, but that's why I tell people, if you're building a house, build a great kitchen, because that's where you're going to live
8:09
All right, well, I'm fixing to put some elbow macaroni in this pot of boiling water
8:15
because I'm going to make you a delicious chili mac. And what I need for you to do is to chop that onion for me, open them three cans
8:24
That's the job I'm qualified for, chopping an onion and opening cans
8:28
All right, I can do that. Put it right in here, and I'm just going to salt this water good
8:40
So I'm going to cook this, Jeff, for about 9 to 11 minutes. All right, there we go
8:49
We have got, that's probably about a pound and a half of meat, don't you expect
8:55
Yeah, maybe closer to two, but it's close. Yeah, something like that
8:59
So we're going to brown that, and then we'll add our onions. Okay. And then I've got a 15-ounce jar of, like, Mexican-style beans
9:08
The ranch kind of beans? Yeah. Oh, yeah, those are good. I love those
9:12
And then we've got two packs of chili. This is going to be good
9:15
Listen, do you have... And we're going to mix this with the macaroni? And we're going to put cheese on top
9:19
Let me ask you this. Have you got a daughter getting married or something where I could do the wedding
9:24
A lot of people I would worry about, I think you could hang with my family
9:28
and be all right with it. If they're half crazy, I know I could
9:34
Well, but you know what, Paula? Everybody's family's crazy. That's why I have a job
9:39
is I just trusted real early in life, hey, if my wife says it, if my kids do it
9:44
if my family does it, surely we're not the only ones. So, Jeff, tell us how you met your sweet wife
9:57
She was in the comedy club the first time I ever went on stage
10:00
And she liked Jeannie Wade. She came up and she talked to me
10:05
And I thought, oh, wow, she's cute. And I went to talk to her and I got so nervous I spilled a drink all over her
10:10
And I said, well, I guess you'll never go out with me. And she said, well, you didn't even ask
10:14
That was a Tuesday. We went out on Saturday and that was 30 years
10:19
I knew an hour into the date I'm like, oh, dadgummit, I'm going to marry this girl
10:23
I knew an hour into the date How long did you tell So I met my wife and my career the very same night Yeah If you just drain that macaroni
10:35
All right, you got it. And I'm going to start grating our cheese
10:42
What do we want to do with the nail? All right, we're going to mix all that stuff in there
10:45
Are we going to put it in here? Yeah, put it in there. You don't want to put it in there? And then we're going to put it in that pan
10:49
Okay. All right, now how many brothers and sisters? I have one of each
10:55
A sister that's a year and a half younger than my brother is about five years younger than me
11:01
He and I live next door to each other. Do y'all? Yeah, he has three daughters and I have two
11:07
You live out in the country. Are they good friends? Are all the children good friends
11:11
They're like sisters. Are they all go to the same school? They're all within like three or four years of each other
11:16
It's the estrogen ocean down there where we live too. It's just me and him and an ocean of women
11:22
Oh my gosh. and those hormones just to go in like that
11:26
They're so much more emotional than boys. You know, you come home, you're like, I'm like, why are you upset
11:33
And I'm like, well, he came in and he said we were going to play together and then they walked in the room and they called me a stupid ass
11:41
And I'm like, honey, calm down. I'm telling you. And my wife is from New Orleans, so, you know, they've got..
11:46
Is she? You add that extra little level of... Of craziness. Yeah, it's in a good way
11:53
Ready, we're going to put this in there. All right, let's put it in the oven. This thing is full now, Paula
11:58
It's going to be all right. It's going to bake down a little bit. It's going to be all right. About 20 minutes, y'all
12:02
350 degrees. The last couple of minutes, we're going to put this beautiful Georgie gold
12:09
Oh, that's pretty. Coming up. This is going to be good. A Dean family favorite, Uncle Bubba's shrimp quesadillas
12:17
I'm excited about this. Are you? And nothing goes better with a party meal than ice cold sweet tea
12:24
Cheers. That's good. Y'all, I'm in here with the incredible Jeff Foxworthy
12:40
I feel sorry for anybody that hadn't got to meet him up close and personal
12:45
You are a funny guy. Oh, I'm a blessed man. I've made a great living doing something I would have done for Brie
12:52
It just rolls off your tongue, honey. I'm lucky, and I love what I do
12:57
And I love what you do. This has been fun. I love what I do, too
13:01
What are we making now? With quesadillas. All right. Oh, is this Bubba's quesadillas
13:06
All right. Uncle Bubba is my brother. But you know what? Before we start making this, Jeff, I think we ought to cheese that chili mac. Okay
13:16
Chili mag. You want to cheese our chili mag. All right. Yes, what you think? I'm not going to burn my hand
13:25
You can't mess it up by putting cheese on it. No. Give me something to do while we talk
13:31
All right, all right. I tell you what. Shrimp. Where are shrimp
13:35
I don't know. Let's see. That would help. Oh, there we go
13:40
And we got some water here in the pot, and I've turned it up high
13:45
All right, what are we doing? A tablespoon of seafood seasoning. Okay
13:50
Ancho chili powder, two teaspoons of that. Okay. And then you can open that can of diced tomatoes
13:56
I think it's got green chilies in it. Let's see. Yes. Okay. And you can just put that in that colander and drain it
14:03
Okay. And I'm going to be turning on our skillet over here and getting started on the rest of our ingredients
14:11
We've got our little flour tortillas. Going to throw those shrimp in there and just let them cook for a few minutes just until they turn pink
14:21
We don't want to overcook them. All right, so you've got a big family, don't you
14:25
I do. Does your wife have a big family? She does. She's from Louisiana, so, you know, everything they do is around food
14:33
They bring stuff to eat. I'm like, this is delicious. I'm like, what is it
14:37
And they're like, you don't want to know? You don't want to know. Put your little more hot sauce on to keep you in there, city boy
14:42
I'm like, give me a hint. Does it swim? Does it fly
14:47
You just keep eating. I love Louisiana folks. I do too. And they love food so much
14:52
Uh-huh, they love food. They love family. You want me to get that
14:59
Y'all, I'm going to try to get it. Whoa. It's heavy. Somebody of mine fill this sapsucker up good
15:05
I know it. Look at that. See, that's perfect. Just that look
15:09
I love that little burn. That is fine, yes. I'm telling you, this is going to be awesome
15:15
All right, see if your shrimp's ready. I bet they're pretty. Perfect. Perfect
15:19
All right, what are we doing with them? All right, we're going to drain them. All right, let's see
15:28
I think I got, ooh, yeah, I got some pepper jack cheese in here, too
15:35
I think that'd be pretty good. Now, is your family funny when y'all all get together
15:39
Well I think they funny Because with us and I was lucky because both sides of my family were like we always laughed at every Christmas party at every family It was always laughter in our family
15:52
I mean, when I get together with my family, I'm like the fourth funniest person, so I
15:56
don't even have to entertain. All right, now we're just going to take those shrimp and just toss them in with our tomatoes
16:08
Okay. Look-a-here. Look-a-here. Look-a-here. This is going to be really good. Look-a-here
16:17
Look-a-here. Have you ever messed anything up by adding cheese and onions
16:21
No. Nuh-uh. Well, and the great thing about this for a party is it's so easy to do
16:27
I mean, from start to finish, it's five minutes to do. I always get nervous when I get my family together
16:34
And when you tell this stuff on stage, people think that you're making it up
16:39
But I did a whole thing about the clampets go to Maui. Because when I finally started making some money, I took all my relatives
16:46
And it literally, I mean, they were showing up with Piggly Wiggly bag in the airport
16:52
My sister. That was my luggage for the first 10 years. Oh, my sister
16:57
The whales were in Maui. You know, they're only there like six months a year
17:01
And so my wife's like, who wants to go? and my sister said, I think I'm going to just stay here and watch The Price is Right
17:08
And I said, so now I'm getting worked up. And I said, you are never going to get a chance to see a whale again
17:17
And she said, I never get a chance to see The Price is Right. It's only when I'm at work
17:23
So this is my family. That makes perfect good sense to me. This is my family
17:28
So do these appear to be to your liking? I'm excited about this
17:32
Are you? I'm excited about all this stuff. All right, so I've cut our fire off, Jeff
17:38
And yes, don't those look great with our Chili Macs cooling down
17:42
I'm excited. I don't want to leave. Yeah, will you come back to see me? I will come back
17:45
I can't be here before tomorrow. I love you. Good to see you. Coming up
17:53
All right, let's take it home. Jeff and I make a classic southern drink to go with our party favorites
17:59
Best dishes. She ain't lying. Y'all, I cannot believe we're in the last stretch of today's show
18:13
I've had so much fun. I kind of hate for it to be over. This has been fun. I hate for it to be over, too
18:18
I feel like I have known you for a long time. Well, you know, I feel the same way
18:23
All right, let's take it home. What are we doing now? Okay, let's take it home. We're going to make us some peach tea
18:28
I've had like, let's see how many. Two, four, six. like seven tea bags
18:34
Okay. And, you know, maybe we started off, Jeff, with like two cups of water
18:42
All right. What are we going to do? Add sugar? Yes, because sugar, if you add sugar to cold water
18:48
it ain't going to dissolve. No, it's not a good thing. All right, my quesadillas are still on
18:52
so I'm going to turn those off. All right, wait, wait, wait. Now, you were supposed to
18:57
No. That was a quarter. That's a quarter. And this was a half. For us to get three quarters
19:01
I bet it's three. Well, look what I did. I did it three times. I didn't go to school just to eat my lunch
19:07
All right. We got that one. Okay. And then we would do the same thing on this. Yes
19:13
Okay. Well, however you want to do it, baby. It's going to be some sweet tea. It's going to be some sweet tea
19:20
Is there any other kind of tea to have? No, I love sweet tea. All right
19:23
We got some peach nectar. Okay. We're going to add that to that
19:28
You want to add the peach to the cold? Yeah, don't you think? Well, why not
19:31
Cheers
19:46
That's good. That's good. All right, what else we have? All right
19:50
We got our Chili Mac. Look at that. This is a good party you've prepared for us
19:57
Ain't this a good party? Oh, that's wonderful
20:10
Is it good? Mmm. Look-a-here, look-a-here. Look at that, would you? I'm not coming to your house anymore
20:17
I leave here fat. Mmm. Mmm. Tell Bubba that I love his quesadilla, too
20:23
I will tell him. This has been so much fun. And do you mind if me and my brother put some of this in the cooler and take it back with us
20:31
I'd love for you to put it in the cooler and take it. It's not really a redneck party unless you're sticking something in the cooler and throwing it in the truck
20:38
That's exactly right, Chip. I've had so much fun. Thank you for having me
20:43
You're as not right as the rest of my family. That's right. And that's the ultimate compliment
20:48
And I do. I take that as a compliment. We send you love and best dishes
20:52
Yeah, best dishes. Chain line. Bye, y'all
