I do. I'm glad you invited me on this show because the day that I met Brooke

leading up to when we got married, some of the happiest time of my life. And so for our engagement, I did something special

I love to do parfaits for my wife. You know, and you didn't include me in that

Well, you were the first person I called. I was. Yep, first person that I called

I sure would love to have been there, though. This is an idea that we took from New York

This is a cannoli parfait, so we're using a cannoli from New York. I have a simple palate

So for the big night that I asked my wife to marry me, she loves egg salad

so I made a homemade egg salad with homemade toast points. And then for dessert, I got a beautiful wine glass on a long stem, and I layered, I did fresh whipped cream, which is in this recipe, and berries

And at the very top, I had a strawberry, and I put a slice in it, and I put a ring and the strawberry on the top

So when I brought her her dessert, we never got to the parfaits

It was ruined. We both immediately started crying, and my parfait, my whipped cream, broke back down to wet cream

So what can I be doing, Jamie, to help you? You know what we're going to do? Is we need to put some amaretta on these strawberries

I'd watched my wife walk down the street from the restaurant for months

She was known to all of us at the restaurant as the 5 o'clock girl

And it wasn't stalking because I never left the building. I stayed inside and I watched her for a month, y'all

She finally came in the restaurant. Once she was inside, I felt comfortable and introduced myself

And I was thinking, no, your name is the 5 o'clock girl. So this was in November, so finally in January, I got up the nerve to finally ask her out

And we had a beautiful dinner. Now, I'll tell y'all as I talk, what I'm going to do is layer these

I'm going to start. This is an Italian amaretto cookie that I'm going to layer. I'm going to nip the corner

This is a great trick for the house. Y'all cut a corner out of a bag and use it as a piping bag

So I took her to the Sapphire Grill, and we had a fantastic dinner

So I said I wanted to do something kind of special. So I took her fork and the napkin that she used at dinner and I stuck them inside my jacket

In fact, she's in the process of writing her first cookbook right now. Yes

And it will be out in about a year. Uh-huh. And you're at home actually testing all the recipes, aren't you

Yeah, I'm testing all these recipes. My husband loves it. He's my guinea pig. So he gets to taste everything

We've both gained a couple pounds since this whole thing started. Well, it all went in the right spots, Katie

Katie is going to prepare us your favorite. Yes. Tell us about it, Katie

This is rosemary biscotti. I call it wedding biscotti because when we got married

I was trying to come up with something to give as a favor. And since I like to cook so much, I wanted to do something with food

And then I found out that at the turn of the century, they used to put rosemary in all of the wedding ceremonies because it symbolizes remembrance And they would put it in the napkins or she put it in her bouquet And I thought wait a second couldn I do something with food and rosemary and then give it as my favor

So we made rosemary biscotti and we put it in tins and we gave everybody a recipe card

And that way they could take it home and enjoy it. Biscotti keeps for about two weeks

So, you know, they could enjoy it and think about the wedding for a few weeks and then have the recipe

And several of my girlfriends tell me they still make the biscotti all the time

And everybody has a 10. Katie has seen that every one of y'all have a 10 of these rosemary biscottis

So right here we have butter and sugar that's already started creaming together

You let your butter be at room temperature. It's a stick of butter and three quarters of a cup of sugar

And that's all nice and creamed. Why don't you beat it a little bit longer? Okie doke. And I'll switch places with you

I'll do whatever you tell me. And over here is the flour. And I've got baking soda

So that's all-purpose flour. All-purpose flour. It's three and a half cups

Added a little baking soda, little salt. And then of course the key ingredient, which is this two and a half tablespoons of rosemary

And it smells so good. It's fresh rosemary, but you can use dried. I just like the taste of fresh herbs

I think they make everything a little bit better. I even like to cut fresh herbs and put them in my flour arrangements at home

And it just adds so much scent, especially in your kitchen. So I've got this mixed up and you've got that nice and beat

Let's add some eggs. You put them in one at a time. Okie doke, I can do that

I think you've got some practice. I've done it once or twice, but watch me drop all of them in at one time, though

You know, I've never made biscotti. You haven't? I have never made it. Oh, my gosh, it's so easy

That's one of the things I like about it, because you can't really overcook it, you know. Yeah

You can leave it in there too long, and it doesn't really matter. But it's supposed to be hard and crunchy

Hard and crunchy. Biscotti means twice baked in Italian. But with my recipe, I actually bake it three times

So what would we call it then? Trascotti, I guess. Trascotti. I guess

And we called ahead, you know, to try and get a table. And Paula's assistant called back and said, Paula wants you all to come to her house

And I thought, we're going to Paula's house. We were both so nervous

She was filming her home cooking show. And we went in there and we were both kind of like not knowing what to expect

And she just welcomed us with open arms, and I felt like that I knew you forever

I mean, it was like we had known each other forever. It was like, you know, we picked right up. We had known each other always

And when he met them, and we had such a wonderful time with them, and they left

You know Bill was a little confused about Southern food when we got together He didn really know all of the things that we like to eat And you know chicken and dumplings is one of my favorite foods I grew up on that So do you know what he thought chicken and dumplings were

What? He thought they were Chinese food. He thought that they were like the dumplings you order when you go to a Chinese restaurant

So, when I said, honey, we're having chicken and dumplings, and I present to him our southern chicken and dumplings

he was very confused, but he liked them. I know he loved them, didn't he? He loved them

I know he did. All right, let's put these on the baking sheet. Okay. This is beautiful, y'all

And these are going to go into a preheated 350-degree oven. Uh-huh

And they cook for about 20 to 25 minutes. Gosh, not long

Not long, but then you're going to get them out and cook them again. Oh, okay. Well, listen, we've got some biscotti that's ready, right

Okay, now, Paula, we're going to slice these on the diagonal. Okay. So you show them how you like

to cut it. Just like that. Okay. About a half inch thick. Yes. And then let's put them right

put this right here, and then just line them up on there. And how about this end piece

on here. Now what I'm going to do is put these back in the oven, and they're going to cook

for about seven or eight minutes until they start to brown. I'm going to take them out, flip them over, and do the same thing again

So that's where you do it three times rather than two. Now, you know what you could do if you want to do a time saver

Set them on their sides like this. That's brilliant. And then you only have to bake them once

So I had a chocolate cake. It was iced with chocolate icing and everything. So it was delicious

And we had a Tuscan-themed wedding, so she had all of this beautiful marzipan fruit on it and flowers
