There's nothing better that we'd rather do than tailgate
0:05
How does Midwestern-style beer brats and barbecue chicken sound, y'all? And of course, no tailgate is complete without fried onion rings with a chili sauce for dipping
0:18
And my Symphony brownies, y'all, are so delicious, you're going to want to start with dessert
0:24
So y'all grab your friends and get your cooler packed, because today we're tailgating at home
0:32
Is there anything, Jamie Dean, that you love better than going to Athens, Georgia for a game with the Bulldogs
0:42
Sometimes at night I dream I'm actually playing. I swear to you, I have dreams where I'm in full outfit
0:51
with eye black and everything. No. And then I wake up old and sore
0:55
Are you just about done this? You know what? Yeah, I'm just about done
1:00
I'm just stripping out the red bell pepper for you. You know, I thought it was so cute
1:06
Brooke just threw Jamie a birthday party. My child's getting old. I got to quit telling his age
1:14
You're as bad as Bobby. This is going to make me look old. But Brooke had gone on the Internet
1:21
and found this artist that took a picture of Jamie, put him in full Georgia Bulldog uniform
1:32
It was standing up. Life size. Life size. Your birthday was great fun
1:39
All right, so this is one of your favorite things. We love bratwurst, and it's super simple and full of flavor
1:47
It's Midwestern-style beer brats. It's so simple, y'all. We got six bratwurst sausages, six cups of lager beer, two large onions that are sliced
1:56
We're going to cook that down with a bratwurst and let it heat and plump up all the way through. At the same time in our cast iron skillet, we're going to cook down in a little bit of oil, red peppers, and onions
2:06
We're going to finish everything in this pan with a little bit of mustard. Ooh, good
2:10
All right, so what is the difference, son, between bratwurst... Brats, just call them brats
2:18
Brats. What's the difference? Thank you, because that's easier for me to say. You've been saying that all your life, haven't you
2:23
Or at least the last 40 years. You're a little brat. I'm just going to whip the butt. What's the difference between brats and like a regular hot dog or a sausage dog that you'd see at the games
2:34
Well, traditionally, it was done with veal. That's the traditional. But now you see them done with pork and with beef and stuff
2:42
Okay. Now, why are you pricking that? Just so it can heat up all the way through and kind of plump up and absorb a lot of the flavor
2:47
Okay, well, I've got our frying pan going. Okay, well, how about a little bit of oil
2:52
Okay. And just take half of those onions. Oh, okay, so take the little bit of onions
2:58
Just take half of these. Right here, okay. And then all the peppers
3:02
So leave me half those onions, because what I'm going to do, this is the most important part about this recipe
3:06
Half those onions, and oops! Sorry, son. That's okay. I'll get it up
3:12
Just knock some of your onion on the floor. You've got to have six beers
3:17
Oh, come on. Well, that's not before. We'll get to the other two in a little while
3:27
The bratwurst has got so much flavor, and pulling them down in beer adds a lot to it
3:34
Really? Oh, yeah. Now, we're going to cook those all the way through
3:40
We want them to be real soft. Oh, okay. So we'll just let those go
3:43
Yep. Do I need the salt and pepper them or anything? Yeah, a little salt and pepper on them will be good
3:47
Okay. I might better put a little bit more oil since we're going to cook them down soft
3:58
Now, Mom, if you will, take the rest of those onions and put them down here in the beer. Okay. I'm going to put some more in here
4:04
Because I like lots of onions. So we're just going to put these
4:14
So is this pretty easy to cook on the grill? I mean, is this a pretty easy recipe to..
4:19
Well, you can grill, Bratz. It's real simple, but... Well, those are easy to tote
4:23
Of course, I know your little heathens got your beer with you. Mm-hmm. So... Mm-hmm
4:28
I don't know if we wasted on Bull and Bratwurst at the game, but you can do these ahead of time, cook these down
4:34
and then we're going to finish them in the pan. So if you wanted to do this and then carry them
4:38
and then bring them back up to heat, you can do that. So they travel pretty good. Yeah, that's the way to do it
4:42
fine recipes that you can take almost home and then finish them with the game
4:48
That's a great way to do it. So let's let these cook, and if you want to, let's get started on your chili sauce
4:54
Okie doke. So this is a great dipping sauce. It's in one of my cookbooks, and I've just eyeballed about a cup of mayonnaise, and now
5:09
I gonna add about three tablespoons of chili sauce Just stir that together You know when I eating onion rings
5:21
I love to mix just mayonnaise and ketchup together. Yeah. You know, mix them together and dip my onion rings in that
5:27
You taught me that. Yeah, that's always good. Now I'm going to add a teaspoon of chili powder
5:37
and about an eighth of a teaspoon of cayenne pepper. So you want to kind of be careful there
5:47
because you don't want to burn the younger kids up. How's that coming, Mom
5:55
It's great. You just mix this up the night before so it can absorb those flavors
6:01
Just that simple. I'll tell you what, I got a little bit more cooking to do. When we come back, we'll finish our brats
6:06
we'll get some onion rings, and we'll do some tasting if you want to. That sounds great, son. Y'all come back
6:11
We're tailgating today. Mm-hmm. Coming up, fried onion rings so good you'll think you got them at the game
6:20
And later, the Dean Brothers barbecue chicken and a tailgating sweet treat
6:27
Symphony brownies, y'all. Hey, welcome back, everybody. I'm in here in the kitchen
6:37
with Jamie, and we're preparing for a tailgate party. He's finishing up
6:43
The breadwurst, look how perfect that is. See how they're caramelized? See, I love it like that
6:47
And I'm getting ready to fry up some onion rings. So, Jamie, you know when you're doing
6:53
onion rings, it's just like when you're doing french fries. How many onions you
6:57
need depends on how many people you're trying to feed. So I'm just cutting my onions, and I'm
7:03
cutting these kind of on the thin side. They're almost going to be like
7:06
shoestring onion rings. Now look, Mom, I got about five more minutes
7:11
on these vegetables. And I'm going to take these brats that we've been cooking in this beer
7:15
and I'm going to transfer them over so I can brown the outsides and I'm just going to finish it all together
7:20
You smell the beer coming off the bratwurst? Yes. With those vegetables cooking? It smells heavenly
7:25
Okay, so I think I've got enough onions for us. Now I'm just going to kind of do these apart
7:31
and then I'm going to toss our onion rings with just a little seasoning salt that I bought from the store
7:39
And our onions are a little bit damp just from the natural juices of them
7:44
So hopefully that flour is going to stick to them real, real good
7:49
Look, I'm covering up the brats with these peppers, so that sweet flavor will get on there
7:53
Love it. Love it. You know, simple and delicious. You need a couple cups of flour
7:59
Yeah, I'm going to just take a couple of, maybe a cup and a half of flour
8:06
And I'm just going to toss our onion rings that I've seasoned into our flour
8:12
I like them dry like this instead of a thick batter. This is how I like my fried green tomatoes, too, instead of a real crusty batter
8:18
Yeah, you know, if you like that thick batter, then I'd do it in buttermilk first
8:24
you know, something wet to make the flour stick. I like the light, Dustin
8:29
Okay, here we go. I just love an onion ring period. I'll take it any way I can get it, son
8:38
All right, so here we go. Into the hot grease they go
8:42
and I'm frying these at like between 350, 375 degrees. I'm gonna put your sauce in this pretty dish for our onion rings
8:50
Okay, and our sauce was so easy, y'all. It was just mayonnaise and a chili sauce
8:55
about a teaspoon of chili powder, and about an eighth of a teaspoon of cayenne pepper
9:02
to give it just a little bit of heat. I tell you what, the greatest thing I ever did for myself, Jamie
9:08
was put in a deep fryer in my kitchen. You know, I think every Southern girl, we've earned us a deep fryer
9:17
So how are those looking? Not too much longer. You sliced them kind of thin
9:22
Yeah, I did. I almost try, I try to make them almost like a, a shoestring onion ring, you know
9:28
Some people like them thick, some like them thin, some like them crusty, some like them
9:32
not so crusty. Mm-hmm. These are ready. Yeah, these are just about ready
9:36
Don't take but a second. Let's do some tasting you want to. Okay, you finish up your stuff
9:41
All right, I'm gonna make a little room. Okay. Now I'm bringing up the onion rings
9:48
Looks pretty good. Pretty, pretty good. See, let's pick a winner. Pick a wiener
10:03
Gosh, that looks delicious, son. Looks so good. Well, personally, if I was making them
10:17
I would put a little butter on the bread and kind of toast them off
10:24
Well I know And I share that secret with people Mom You can make a hot dog really super good and extra special
10:34
at the house if you take your bun and butter it and grill it off like you do like a grilled cheese
10:40
Well my mama never fixed us a hot dog son. Get it toasty. That she didn't butter and toast that
10:49
That bun. Want a little sauce? No, I'm just going to dip in there so I can do it like that
10:58
Oh, wait, I almost forgot. What? I told you I'd share with you the other two beers
11:06
Oh. I was wondering, you said we needed six beers. And I didn't see but four
11:14
Now we're tailgating. Cheers. You know, it's great when your children finally get old enough they're legal
11:22
You can enjoy a beer with them. And you can buy their beer for them, or they can better yet buy your beer for you
11:28
That sauce for those any rings are great. Mm-hmm. You ready? Mm-hmm
11:33
It's kind of hot now. Be careful. Okay. Mm. Mm. That's good, huh
11:43
The mustard is fabulous with it. Mm-hmm. That is so delicious. And y'all stick around
11:50
Mama, you think you do chicken? We got the Dean Brothers Cookbook Specialty
11:54
barbecue chicken coming right up. Y'all come back. And later, sure to make your mouth water
12:01
Symphony Brownies. We can't have a tailgating party without some kind of chicken
12:12
No, we can't. You know, there's a lot of different barbecue sauces. Here in the south, a popular sauce is a red sauce
12:18
which is what we're going to do, start with ketchup. So we need about a cup of ketchup. All right, so we're alike on that
12:25
Okay, and we're alike on this, too. Brown sugar. Yeah. I love the sweet
12:31
Yep. So I'm going to make sure that we... So how much you're going to stick in there? A fourth of a cup
12:35
A fourth of a cup. And you want to pack it. And what really gives this good flavor, I love the brown sugar and some fresh orange juice
12:47
We're going to do about two tablespoons of fresh-squeezed orange juice. That's about two right there, don't you think
12:54
Yeah, that's juicy orange. It's juicy orange. And this is what gives it a flavor like you cooked it outside
13:00
This is an artificial smoke flavor. So even though we're doing it in the oven, it'll smell like hickory chips
13:06
quarter of a teaspoon, so you don't need a lot of that. That's powerful stuff
13:10
You can mess things up with it. Okay. Now, the next thing that we're going to do is a half a teaspoon of dry mustard
13:16
Okay. Great. And this cayenne's a little warm, so we're just going to use a quarter of a teaspoon of cayenne
13:26
And we're going to use a teaspoon of Worcestershire. Okay. And that's it
13:31
This is pretty simple. Okay, that looks delicious. Yep, and I'm gonna whip this up, give it a nice turn
13:37
You're gonna wanna hold back a third of the sauce now, and we'll ladle this over right before it's done
13:45
It's good, and it's simple, too. What I like about it, and what kind of sets this apart
13:50
is that it's a no-cook, you know, because the barbecue sauce we use at the restaurant
13:54
you have to cook, and this is not. This is something that you're able to do immediately right away
14:00
So we're gonna toss our chicken in this sauce. Toss it. Do I have you a set of tongs
14:06
I could use some tongs. There you go. All right, so you're just going to run your chicken around in that barbecue sauce
14:14
Yep, we're going to get it all good and coated up. So you're going to put that in the oven
14:18
375 for 45 minutes. 375 for 45 minutes. Great. Like you said right here, this is the time you can put it in a Ziploc bag
14:24
pack it in a cooler on ice, and then whenever your grill's ready, wherever you're going, just do it on the grill
14:29
Just make sure you close the top and kind of cook it slow. Yeah. Are you going to cover this or are you going to cook it uncovered
14:35
I'm going to cook it just like this. And right towards the end with about 20 minutes left, I'm going to put the rest of this sauce on it
14:41
And then that are it. That really looks good. This is going to be sticky and sweet
14:50
Looks great. Yeah. What are you doing? All right. Well, you know, you can't leave for the tailgate party
14:58
You can't leave for the ball game, or you can't have a tailgate party
15:01
without having a bite of something sweet. And this recipe that I'm gonna share with everybody today
15:09
is called Symphony Brownies. It's like a divine brownie. And we're gonna start with just a prepackaged brownie mix
15:17
Now, I happen to like the chewy brownies. You can find those in your dessert section
15:25
at the grocery store. And I'm just going to add a couple of eggs
15:31
Just going to crack those. Put those in there. I going to add about a quarter of a cup of water and a third of a cup of oil That it Yeah I got a mixer out here
15:50
How about these giant candy bars? Well, see, that's what's going to make these so special
15:58
Okay, so just that quickly they're mixed up. So what we want to do now is just take about half of our batter, y'all
16:09
and just spread it out into a 13 by 9 by 2
16:17
And I have lined this with tin foil just to make it an easy cleanup
16:23
Now, what makes this brownie so sinfully delicious is we're using three candy bars
16:31
Just like this? Well, actually, I like mine turned up. So I can see the writing on it
16:38
So you can use any kind of candy bars you want. You'll just want to make sure you use the big ones, three of them
16:47
You're getting the picture, aren't you? All right. Then we're going to take the other half of our batter
16:53
and just pour over those candy bars. And when you bite into those brownies
17:02
oop, jump the devil. I wonder I'm fat. So there we go
17:13
So this is what you're going to team with the barbecue chicken? Yes
17:17
The chocolate bar brownie? Yes. So y'all, when we come back, we're going to have Paula Deen's dream tailgate meal
17:26
barbecue chicken and brownies. Yes! Go Dawgs! Okay, how's it looking, son
17:38
Isn't that good? Oh, yeah. It's hot. Oh, that really looks good
17:44
Our brownies have cooled, and look, because I used that tinfoil, look at that
17:50
It's just flipped out so nice and easy. Mmm. And I'm just going to, I think, cut this in thirds
18:03
You know, if we're going to do binnets, let's do binnets. Thirds? Yes
18:07
Yes, well, three, three, you know. What's wrong with half? All right
18:14
These are so good. Mm-hmm. And so rich. They're just out of this world
18:22
All right. Now, look, look, Jamie. Good grief. Mama knows how to do it, doesn't she, son
18:33
You sure do. All right, well, look. Why don't we just do two kind of like that
18:37
What are you doing now? Well, nothing. I mean, just taking a little fresh cream and a little fresh chopped pecans and a little fresh chopped candy bar
18:56
Now, if you're on a diet, you don't have to do this
19:01
You can just eat your brownie plain. All right. So just stir that in
19:10
Look, it looks like a piece of divinity up there, doesn't it? It does. Too much
19:14
What's this? Powdered sugar, of course. Yes, powdered sugar, a little powdered sugar. All right, put your vegetables on
19:19
You know, you always have to eat something green. Yeah, we'll put a vegetable on there. I made, I formulated a dessert when I was doing, oh, oh
19:29
Oh, this looks so good. It does look good, doesn't it? Let mama take it
19:34
I almost forgot about our chicken, though. Yeah, let Mama take care of this. And then you take care of your dish
19:39
How's that? Well, I want to have a bite of chicken before I have dessert anyway
19:43
The brown sugar, and it cooks, and it's so sticky. Mmm. Mmm
19:51
Look at there, y'all. I so wish y'all were here. I would put that in your mouth, and you would be in heaven
20:00
But since you can't be in heaven, I'll go for you. A candy bar exploding out of a brownie
20:09
Wow. Sinful. Yeah. Mmm. Mmm. At the end of a meal when I have dessert, I always go back to something savory
20:21
But I always save me a little piece of meat so that I can eat
20:25
Because I don't like to leave the taste of sweet taste in my mouth when I leave the table
20:30
Isn't that weird? That's why we're so healthy. Mm-hmm. Mm. Oh, Jamie, that's very, very good
20:36
Very good. That's almost as good if you had cooked it on the grill
20:40
Mm-hmm. Gee, honey. And now you know what time it is? What time is it
20:45
It's ballgame time. We've had a great time tailgating with y'all today, but we've got to go catch the game
20:49
Thanks for tuning in. And until next time, best dishes. Home run
20:53
Home run, y'all. From our kitchen to yours. Thanks. From our kitchen to yours. Thanks
