Today, y'all, two of my favorite sweet ladies, Rebecca and Janine from Lulu's Chocolate Bar, are stopping by and we're making desserts all day and all night
0:10
They're fun girls. They know how to laugh. They know how to poke fun
0:15
And first, we're putting a decadent spin on a classic with our chocolate and caramel s'mores
0:22
How yummy is that? Mmm. Then, the girls give me the inside scoop on their delicious hazelnut cheesecake
0:30
It's delicious. And y'all, we're gonna wash it all down with a big old cup of coconut hot chocolate
0:38
Don't look so scared, girls. I'm not gonna burn y'all. Maybe. I quickly started trying to come up with some things that I wanted to fix for you girls
1:00
Wonderful. And I was just in here fixing to start the cookies, so y'all are right on time
1:05
Okay, well, we are armed with aprons. Yeah, well, yay. Ready to go
1:09
I don't use an apron myself, but this is great. We brought one for you, and you don't have to wear it if you don't want to
1:17
You know what? It goes with our clothes. Thank you. We have Lulu's aprons that we wear at Lulu's Chocolate Bar
1:25
And so you're an honorary Lulu now because you got your own. I am a Lulu
1:30
You know, I've been told that before. That I was a Lulu
1:36
Well, thank you, girls. You know, leopard print is so in again
1:44
It's always in. I was going to say, I don't know if it ever left. Well, I'm making cookies because I thought we could go outside and roast marshmallows and make some s'mores
1:57
Oh, yum. That sounds great. If you would, pack me up a half a cup of brown sugar in here
2:06
A half a cup of granulated sugar. One stick of butter. Cream that and then drop in one egg for me
2:13
And then we'll add the vanilla. What can I do for you? Over here, if you would measure me out, one and a half cups of all-purpose flour
2:24
Okay. That's great. And back here, what I'm going to be doing, I'm going to be getting up our chocolate chips and our peanuts
2:31
And I'm going to need three quarters of a cup of chocolate chips and about a half a cup of roasted peanuts
2:42
So there we go. All right, now, Janine. Yes. Rebecca. Yes. Rebecca, Janine
2:57
If you would put in a quarter teaspoon of salt and a half a teaspoon of baking soda
3:07
All right, so you're going to have our dry ingredients ready. Y'all, let's talk a little bit more about Lulu's
3:15
It's a dessert restaurant. We have a full bar, so we make all of our desserts in-house
3:20
We have about 18 different kinds of desserts a night. We also have, like, chocolate beer
3:26
Chocolate beer? Chocolate beer, and that's not sweet. Now, you shut up. Do y'all put the chocolate in the beer, or do y'all buy it like that
3:32
No, it already is chocolate beer. And people tend to be really excited when they walk in
3:38
and they think maybe it's a bakery or that's a bar. Uh-huh
3:41
And then they figure it out. I'm going to beat the heck out of that real quick, wife
3:46
All right, Rebecca, if you would come down with our dry ingredients
3:50
And I'm just going to move these down here out of the way so we've got room
3:58
I'm going to go ahead and I'm just going to eyeball a teaspoon of vanilla
4:03
And Rebecca, if you would start getting our dry ingredients into the bowl
4:11
All right, now, ladybugs. What we doing? I'm just going to fold these nuts and chocolate chips in
4:23
Yeah, you want to do that for me? Oh, sure. And I've got us a couple of baking sheets
4:29
Okay, how's that? All right. Mixed up? Yes. Oh, this is what we're going to drop the cookies with
4:34
Yes, we're going to do heaping tablespoons. Okay. And before I do that, I'm just going to spray them
4:42
So. That's a good idea. It'll sort of just come out a little easier for us
4:47
I never thought about that, so I don't have to use my finger. All right, now I'm going to just spray these
4:53
Let's put 12 drops of dough, four this away, three across, giving us 12
4:59
And hopefully we'll come out when we get through dipping, we'll come out with 24. Okay
5:07
We be right back We going to put these in the oven 350 for about 11 to 13 minutes Okay
5:25
And in the meantime, I've kind of got you out some pans and bowls
5:33
Can you get that, dear? Mm-hmm. So, can y'all show me how you make your famous hazelnut cheesecake
5:41
We have our two cups of the chocolate cookie crumbs. And that was three quarters of a stick of butter
5:54
And here, I'll just take this and get all that out for you
5:59
Look at that. See, another teaspoon was in there. Trying to elude us
6:03
Now tell me girls How'd y'all come up with the name Lulu's
6:08
We wanted to come up with a name That represented our grandmothers
6:12
Well my grandmother's name was Elsie Mine was Josephine And we couldn't come up with a good combination
6:18
Of those two names and Lulu just kind of Dropped from the sky And we both thought it was perfect
6:23
How'd y'all meet? We had a mutual friend And so we'd all go out together the three of us
6:30
And then the mutual friend went out of town for a month. So we went out almost every night
6:34
that month together. And then we stayed really good friends and we weren't quite as good a friend
6:41
So when the mutual friend that introduced y'all came back she was no longer a friend
6:46
No, she was. Rebecca, if you want to wash your hands. Yes, thank you. Janine and I can get
6:52
this in the oven for you. I'm assuming that y'all bake it off a little bit. 325 degrees for about
6:58
12 to 15 minutes. Okay, 12 to 15 minutes, It's 325 degrees
7:04
Coming up next, Janine and Rebecca show me how to make the luscious filling for their hazelnut cheesecake
7:12
Then our hot chocolate is so good, it's smoking. Don't look so scared, girls
7:19
I'm not going to burn y'all. Maybe. I am so ready for y'all to get your cake in the oven
7:35
Let's make this cheesecake. So y'all start making the filling. Okay. I'm going to take my cookies out of the oven
7:42
Okay. And let them be cooling. Look at our beautiful cookies, ladies
7:47
Yum. I'm going to get the crust out of the oven. Don't those look good
7:52
They look fantastic. Look. They're just sliding all around. I'm not going to have to fight them
7:59
All right, so y'all talk to me now while you're putting together the filling
8:03
Okay. So we've got four eight-ounce packages of cream cheese. Yes, you're starting it the way I like it
8:10
So 32 ounces altogether. Okay. And Janine's going to beat that up
8:15
And then once that gets beat up a little bit, we're going to add a cup of sugar
8:21
Uh-huh. We know the pan needs to be buttered for the... Oh, right
8:26
We need to butter our crust pan. Thank you. And now we're not going to add our sugar to you
8:32
You got that beat up, Janine. You always want your cream cheese at room temperature
8:39
Yes. It makes it so much easier. Right. It makes it so much easier. I think we can put the sugar in now
8:47
Okay. It looks good. And you don't want but one cup of sugar? One cup of sugar. Okay
8:51
Just level that off. Good again. I saw your garbage. So that's not real sweet
8:57
Well, the liqueur later is kind of sweet, so that'll sweet it up some more
9:01
Okay. At some point, you might want to stop and scrape down the sides and make sure it's all mixed in good
9:06
Okay, and how many eggs are y'all going to need? We're going to need three eggs
9:14
Get that ready. It's a fancy mixer. It's all electronic. I used to flip it up, you know, just a little time
9:21
What kind are you, are you used to using that? Move beyond that, but it has
9:27
I was gonna say, you look so much younger, Janae. Here, I'll help do that for you
9:37
So one of the two, there we go. These are your own chicken eggs? Yes
9:43
Oh, look how bright these yolks are. They're beautiful. You know, there is just nothing like having your fresh organic eggs every morning waiting on you. Right
9:59
All right, you ready? Yes. Thank you. Coming in with our two-thirds cup of sour cream
10:07
How much? Two-thirds of a cup. One. Two. Mm-hmm. Well, Rebecca, now you have put tinfoil around that
10:22
Why have you done that? We gonna bake our cheesecake in a water bath so it stay nice and creamy so we don want the water to get into the crust Because you know those pans aren airtight So just insurance You wrapped it in insurance
10:37
Okay. All right, now that's a hazelnut liqueur. This is hazelnut liqueur. We're going to put a half a cup
10:43
May I smell it before you put it in? Yes. I just love the smell of hazelnut
10:49
You can add that in for her slowly. Mmm. Smells so good
10:56
Well, just tell me, Janine, when you want me to start adding. Okay, I'm ready
11:00
Okay. There we go. It's looking nice and smooth. Yeah. Now, do you girls have any tips that you can give to everybody out there making cheesecake
11:19
because sometimes people can have problems with them, like cracking. That's the water bath
11:27
The top's cracking. The water bath is great for that. Yes. It keeps it from cracking
11:32
And then also you're going to have to let it cool once it comes out of the oven
11:37
Yes. For quite a while. If you put it in hot, it'll crack almost immediately
11:41
Okay. So let it cool down to room temperature after you've taken it out
11:46
This is more, it's not New York style at all. You know how those are kind of dry
11:50
This one's very creamy. I can't hardly wait to taste it. That looks good
12:07
What did I do? Did you get it all? I think you did pretty dadgum good. Okay
12:12
You didn't leave much for us to lick, Rebecca. And then I just sort of, you know, hit it on the top with my special to smooth it out
12:20
Yeah. All right. So you want the water right in the side
12:25
Try not to splash it up inside the tin foil. So y'all have the boiling hot water so it's got that head start
12:35
Right. I think you're good because you're about to get to the top layer of that foil. Okay, that's good
12:41
So, thank you, Janine. Now, what temperature for how long? 325 for an hour
12:47
Coming up next, we're making our decadent coconut hot chocolate. Delicious. It's fantastic, Paula
12:55
And later, these sweet ladies and I are roasting up marshmallows and making s'mores
13:08
So, girls. Yes. Yes. We are about to pull this stuff together
13:15
Nice. Cheesecakes in the refrigerator, chilling. Uh-huh. We've got our chocolate. We've got our marshmallows
13:24
Okay, I'm going to get us some hot chocolate. Ooh, great. Go in here
13:31
If y'all would be, I couldn't make up my mind about this hot chocolate
13:37
Uh-huh. I couldn't decide whether to use white or dark. Oh, I got white
13:41
So let's do both. Ooh, yum. We're just gonna add two quarts of milk and three ounces of both dark and white chocolates
13:50
So we're gonna let that... Oh, gosh. I forgot about my coconut, y'all. Oh
13:59
You know, you toast coconut, and it just brings out all kind of flavor
14:06
So, Janine, why don't you get the cheesecake out of the fridge? Sure
14:13
Oh, it's so pretty. All right, and y'all still have to make the chocolate thingies
14:18
Oh, the hazelnut marbles are made. Oh, they are made. Already made
14:24
You must have brought those in that sack of goodies. We did. Look how cute these are
14:31
Oh, my gracious. If you have to eat one, you have to eat one
14:37
I'm going to wait and taste my cheesecake. All right, here's our cake platter
14:41
Oh, lovely. So y'all do your thing to that, okay? Okay, we're just going to leave this on the bottom for now
14:48
because I think we could possibly make a big mess. Yes, yes
14:52
Do you want to decorate this? So we just have some fun with some chocolate sauce on top
14:57
Yes, have fun with it. Knock yourself out, Rebecca. Yes. Okay, then we're just going to decorate it with our hazelnut
15:05
marbles. We can both do some decorating. Yes. These are just beautiful. Thank you
15:11
Alright, our chocolate is starting to melt over here. Perfect. Alright, y'all stick your finger in there
15:17
I think it needs a little bit more chocolate, but tell me what y'all think
15:22
More chocolate. Yeah, so what do we have? Six ounces. Six ounces total
15:27
Should we chop it? The dark? Yeah, the dark. Let's chop. Okay
15:31
Let's just add three more ounces of each chocolate, y'all. And you know what
15:37
I gonna put a little bit of sugar That true I think I gonna add about a fourth of a cup to start with and we taste and see And you know what else I gonna do
15:51
I'm gonna do something that I don't normally do, but just give
15:54
it a little brownie look. With our toasted coconut? Oh no, I just
15:58
dropped a chocolate cake on the cheesecake. Okay, never happened. Oh, Tito
16:04
Listen, do not worry. I have a fine apron. I think this is enough of the chocolate
16:12
Yes. Look right there, Rebecca, and see if there's a whisk in there
16:17
There is. Yes, I just want to kind of whisk that chocolate
16:22
While I'm finishing that up, let's go ahead and make us a little tasting plate. Okay
16:38
Stand back, girls. We said way back
16:50
I'm going to toast our marshmallows. Don't look so scared, girls. I'm not going to burn y'all
16:58
Maybe. Oh, God, couldn't have happened better. Oh, perfect. All right. That's pretty
17:08
but I'm still not quite satisfied. So, fresh, sweetened. Never had whipped cream and marshmallows. No
17:18
Oh, really? No. It's an either or. All right. Mmm. Little piece of chocolate
17:25
Oh, look, it's running down the side. And then a coconut. Happy sipping, girls
17:33
Thank you. Mmm. What do y'all think? It's worth a bath
17:43
It's delicious. It is. Delicious. It's fantastic, Paula. Yeah, thank you. It's really, really good
17:48
Can we steal this for Lulu's chocolate bar? I would be mad if you didn't
17:51
Oh, nice. Thank you. All right, girls, let's try that cheesecake. Oh, yum
18:01
Uh-oh, some whipped cream fell on mine. Yum. Thank you. Okay. Mm-mm. Mm-mm
18:08
Oh, boy. Bon Appetit. Bon Appetit. It's delicious
18:18
I love hazelnut. Oh, we picked the right one for you. Yes, I adore hazelnut
18:24
Why don't we grab our cookies? Okay. Our hot chocolate. We need our chocolate squares
18:33
What can I carry? If you can carry that. I'll carry the marshmallows
18:38
Yeah, we can't go without our hot chocolates. Get all nippy out. A little chilly
18:43
Coming up, it's a perfect night for roasting marshmallows over a campfire
18:47
Whoa, blow Janine. Thank you. So what do you girls think
19:01
The hot chocolate is fantastic and this fire is perfect. Yes. What a beautiful night
19:08
If you would pass that to Janine, please. I'm making a mess with my hot chocolate
19:13
That's alright. We're out of doors. It's alright. I'm going to pass these to y'all
19:19
Thank you. We can make our s'mores. Wow. That's impressive. Isn't this wonderful
19:28
That's so cute. My grandson Jack and I roast marshmallows all year round in the fireplace
19:35
in the house. And we love it because we can do so many at the time
19:43
All right. So let's toast our marshmallows and make our s'mores. Okay
20:00
Whoa, blow, Janine. Thank you. All right. I'm going to get my plate
20:06
I'm going to fanangle my plate around here. Do you have a hand
20:11
There you go. Oh, my gosh. And it's going to melt. Whoa! Oh, no
20:16
Man down. Man down. All right. I'm fixing to go ahead and get mine
20:22
You know what? I might have just done the perfect marshmallow. Look at that
20:29
Yeah, it's fantastic. Look. Look. Girls, I have had a wonderful afternoon with y'all
20:36
We'll have to get together again real soon. And I can tell you right now, look for me
20:42
I'm coming to Lulu's. Oh, good. My husband's got a sweet tooth the size of that fire pit
20:48
So y'all hold on to your stuff. Mmm. Is it good? Mmm
20:55
How yummy is that? Mmm
