Hey, y'all. I'm in the kitchen today with one of my favorite men
0:04
Oh, stop it. Hey, y'all. Jamie's here today, and we're making a few of our favorite Sunday dishes, y'all
0:11
Sounds good to me. First up, y'all, is my red wine braised beef short ribs
0:16
And then we toss together a salad with Jamie's favorite maple red wine vinaigrette
0:21
That is incredible, son. And our Sunday dinners always end with a decadent dessert
0:27
So we're going to be baking up my hummingbird cake. Today is all about Sunday meals
0:43
Today, son, we're going to cook like a Sunday dinner. I love short ribs
0:48
That's what I'm cooking you today, son. I've got me some short ribs right here
0:53
I've got my cast iron skillet sizzling like my son. No, stop it
0:58
Mom, I know sometimes that you'll break out the crock pot for your short ribs, and you're doing them in a Dutch oven today
1:03
You know, sometimes I do, son. If I'm going to be, you know, running errands and things like that
1:08
but I want a decent meal, I'll pull out that crock pot. Mom, while you're doing that, I'm doing a butternut squash
1:15
We're going to roast some butternut squash today. This has been one of the most favorite foods at our house
1:20
Really? Jackie had a ton of it, and Matthew loves roasted butternut squash. I didn't realize that, son
1:26
We're going to roast this off, and I'm going to put it in a salad. So I'm just going to peel it and get it cubed while you're doing that, okay
1:32
All right. That pot's nice and hot. So in our short ribs go
1:40
You've got to have a hot pot because you want it to be brown. You want to sear it
1:44
You want to sear those flavors in those short ribs. I remember my mama cooking short ribs a lot, Jamie
1:53
She would cook them in her Dutch oven and put them in the oven and let them cook until tender
1:59
Jamie, I need for you to just coarsely chop the onions, son
2:03
Look at that. I scrubbed the carrots good before you got here so those don't need to be peeled
2:09
Let's see. I'm going to put a little tomato paste. Sometimes Mama would do a tomato paste on her short ribs
2:19
And sometimes she would just let them be a natural brown. So what have you been doing today, son
2:24
I tell you, Mom, I'm so sore. We had a softball game last night. Oh, how did it go
2:28
I meant to ask you. You have got to come. We have the best time
2:33
I want you to picture this now. I'm the pitcher, okay? So I pitch, and the guy who's a little bit younger than me, but not much, hits a slow roller
2:42
So I see it unfolding in front of me. So I go to my left. I'm going to get the ball, play it perfectly, lob the first, and beat him by a half a step
2:52
it was going to be perfect. What happened? Reality happened. Reality? I bend and
3:00
begin to stumble. Oh, Jamie. I look up and I see the first baseman backing up
3:06
as fast as he can. No. Because there's 205 pounds of stumbling wildebeest headed towards him
3:13
I slam my head into the ground. No. I wound up about six feet
3:19
from first base, sitting in the dirt by myself. Nowhere near the place
3:23
It's hard for me to believe, but he's 45 years old. And Mama's 65
3:29
Wow. You started it. But on the inside, I only feel like I'm 20
3:36
You can't be doing the things that you did it. Why not? Because. I can try
3:43
Because you got a lot of folks counting on you. You got to behave
3:48
That's no worse than the wrestling matches Jack and I have. I promise you that
3:58
Alrighty. These look nice and kind of seared up. I want you to throw in the onions and the carrots
4:06
And then we're going to cook those for a few minutes. All right
4:11
Look at all that goodness down in there, Jamie. That's all the flavor right there
4:15
So good. Yes. Doesn't that smell awesome? Awesome. them. Love them. All right, now I'm going to throw in our portabellas. I love portabellas
4:25
This is going to be fantastic. Yes, it's going to be so good. I'm going to put my squash
4:30
on this pan, Mom, with a little bit of salt and pepper and some oil. Okay. And if you'd
4:35
pass me that rosemary, I'm going to let this cook down for a little bit. Let's see, a few
4:41
sprigs of rosemary. Yeah. I'm just going to put a little bit of oil on these, Mom. Yum
4:47
I need some salt and pepper. I'll take some of this salt and pepper, son
4:54
Mom, I got this already. I'm going to put it in the oven, okay? This is at 400, y'all, for about 30 minutes
4:59
Okay. I'm going to sprinkle a few tablespoons of flour in here just to make it thick
5:09
and we just going to toss those veggies This is a Sunday comfort meal right here After you get that flour mixed up good in there I gonna add our two cups of chicken broth
5:23
Okay. Now, we'll need two cups of red wine, but that's gonna make it red
5:31
And then we're gonna put that tomato sauce in there. Mm-hmm. And then our three stalks of rosemary, son
5:39
You know, I can't do a dish without a little butter. We're just going to silken that up with just a little taste of butter
5:46
The butter, y'all, at the end of a sauce like this, it gives it a really beautiful color
5:51
and it also makes it real smooth. Yes. Really finishes off a sauce really good
5:56
So I'm going to start adding our short ribs back in there
6:01
Oh, I'm going to eat those. No, and I'm going to help you
6:05
This is one solid pot of groceries right there. Yes. I like them where all my lips need to do is just give them a little bit of encouragement
6:16
Let's take two towels. They make this to, I mean, I picked up a pot before
6:23
You ready? I know you have. So we're going to let this cook for a minimum of two and a half hours
6:33
Fire. All right. What did Mama say? Coming up next, Jamie whips up a red wine vinaigrette
6:41
I think you're going to like it, Mom. Then there's only one way to describe these ribs
6:46
Mmm! And later, we get started on a southern classic dessert, our hummingbird cake
7:01
So, news update, y'all. When I left you, I was fussing at Jamie
7:06
I said, son, don't do it that way. Get you two towels. Well, look who got burned
7:12
Y'all listen to your mamas. So, uh-uh. I'll get it for you. Stand back, son
7:16
No, I don't want you hurt. If anybody gets hurt, I'd rather it be me
7:21
That is a mother's love. I just should have picked up two towels. I'm sorry I didn't think of that
7:29
If I'd have thought of that, I'd have passed it on to you. All right
7:36
Looks good enough to eat, don't it? All right. You want to pull it out or let it cool off
7:43
No, let me just leave it sitting right there. And why don't we come on down here and get your salad done
7:49
Okay. If you would, Mom, I want you to do the lettuce. I'm going to mix up a jar dressing, y'all
7:54
You know, I love the jar dressings. Mom, I kind of got this from you because it's such an easy way to mix
7:59
So I'm going to start with a shallot. What would you do without a mason jar, Jamie
8:04
I know that Great Great has kept hers in mason jars my whole life. Yes
8:09
Now, when he talks about Great Great, y'all, that's Aunt Peggy. So, Mom, I'm going to add this shallot here to this jar
8:16
Mom, I'm going to start with Dijon mustard. About a teaspoon in there. I'm going to put one tablespoon of maple syrup
8:23
Two tablespoons, Mom, of red wine. Okay. Vinegar and three tablespoons of oil
8:29
Okay. Do you want me to put some of these in here
8:33
And I see grapes. Yeah, if you want to cut those grapes. So tell me. We're going to add the grapes, y'all, because the lettuce that we're using is just a little bit bitter
8:39
So that adds a little bit of sweetness to it. So you want these grapes just cut in two
8:44
Yes, ma'am. I've got a spring mix. And I've also got some feta cheese. And like Mama said, we're going to put roasted salted pistachios
8:51
And I love feta. That's one of Brooke's favorites. So this is a really good salad
8:58
and this dressing, I think you're going to like it. Love the spring mix
9:04
And look at the radicchio in there. Isn't that pretty? Mm-hmm. All right
9:10
So that looks pretty good, doesn't it, son? Mm-hmm. How's your dressing? I'm going to add a little bit of salt
9:16
Okay. Lastly, we've got our butternut squash, Mom, that we're going to put in there
9:22
I'm going to get two towels. Bye, George. I think he's got it
9:28
I don't need but one, but I'm just going to carry two
9:32
He don't want to hear no trash talking from his mama, y'all. We're past that
9:37
Mom, we're going to let these sit and cool just a little bit. I'm going to chop these nuts
9:41
Okay. I'm just going to rough chop these, maybe try to get them all in half
9:47
I'm like you. I love a crunchy nut and a salad. I do. Ooh, son, speaking of nuts, I think I'm going to do a few more while you're playing with your squash
9:59
I really love pistachios. And you know what? It's one of the few nuts that I like in the shell because you suck off that salt from those shells
10:10
Tastes like candy. Oh, Jamie. Isn't that so good? You didn't put anything on there but a little olive oil and salt and pepper
10:22
Yum. Simple is always the winner We going to get the feta in here Wow Let get our dressing in I got a little black pepper Wow son Well I gonna start plating this up a little something
10:38
Looks yummy. Look at that. Whoa. Mmm, mmm, mmm. We wind up eating like kings and queens
10:50
Mmm, a little of that salad, son. Fun? You know what? I have tried to reconstruct my plate, y'all
10:58
My plate now has more greens on it. Moderation. That old nasty M word
11:07
Don't you just hate that word? Mom, you said a bad word
11:13
We don't say hate. No. Every time I say, oh, gosh, I just hated to see that happen
11:19
Jack will go, Guinea. Bad word. That's so good
11:29
Oh, Jamie. That is incredible, son. And you know what made it
11:34
Me? Well, besides you making it. The Dijon mustard. That's the way short ribs should be right
11:44
Short ribs have got the marbling in it. And the fat that hasn't cooked down, just melt in your mouth
11:51
That's good fat, too. Dad, come show me a good fat. So, Mom, something is good
11:58
I know we got dessert coming. What you thinking? I thought I'd make us a hummingbird cake
12:02
Perfect. And then we're going to ice it. Because today is all about Sunday meals
12:10
This is a good one. Coming up next, Jamie and I are doing a little improv on this cake
12:16
This is my kind of bacon. And later, y'all, who knew frosting could be so much fun
12:31
We're a happy family and a knick-knack, paddy-whack, give the dog a bone
12:40
This old man came rolling home. So need dinner, y'all. It's been the same way my whole life
12:47
I love you, son. I love you more. Now, that's enough messing around, son
12:51
Let's get started on our hummingbird cake. Jamie's mashing me up four bananas
12:56
Son, I need for you to measure out three cups of all-purpose flour
13:03
Okie dokie. A teaspoon of soda. A teaspoon of cinnamon
13:13
I'm going to start beating up my ingredients, which is two sticks of butter
13:19
So, Jamie, you're also going to need to add a teaspoon of salt. And I'm going to measure out two cups of sugar
13:27
And you need to just drain that can of pineapple and add that to the bananas
13:33
All right, so I'm just going to cream this together. The bananas and the pineapple, y'all, make this so moist
13:42
You know, if you actually make it a couple of days in advance, it's just going to get nothing but better
13:48
I'm supposed to drain that, I bet. Yeah, I said drain it. Jamie has never listened to me his whole life
13:54
Not draining the pineapple is not as bad as grabbing an extra towel
13:58
I'll tell you that. I'm hurting. So what we'll do now is we will cut back on our buttermilk because we have so much liquid from the pineapple
14:10
So cut that back to like a third of a cup. And that'll make up the liquid
14:16
All right, sonny boy, if you'd crack me an egg at the time and put it in that bowl
14:23
And the reason we're going to do that is we're going to check and make sure that egg is okay
14:29
And we're just going to add those one at the time. Get all that goodness down
14:40
Yeah, it's all right. Go ahead. Go ahead, Gourdhead. All right, now how many is that
14:46
It's five. You have put five eggs in my cake. All we need is four
14:51
Oh, the better. You have put all the juice from the pineapple. If this doesn't turn out, it is not my fault
14:56
It's going to be awesome. Now, would you take that spatula and run it around that bowl, please
15:01
What we're going to do now is we're going to add our dry ingredients with our wet ingredients
15:07
We're going to start with flour and end with flour. Okie dokie
15:11
It makes a smoother cake batter. Okay. All right, so let's put a little buttermilk
15:21
This is not a recipe you made a lot when we were kids. I used to make them once in a while, especially at Christmas time
15:31
We really don't have much liquid to add to it. Well, we got this
15:37
That's liquid. Yeah. All right So that finishes off our wet and our dry So you want to measure me out about a tablespoon
15:52
You can just eyeball it at this point, son, because that's kind of the way you've done my whole recipe
15:57
This is my kind of bacon. I'm on it. That's what I'm talking about
16:03
All right, pour in your pineapple and your banana. All right. All righty, so I'm going to just slip that mixer out and let you finish just folding that in
16:26
Now, I tell you, Jamie, I can't stand to see a cake with a big old thick layer and a big old thin layer
16:35
Measure the batter out. Now I'm just going to bang those pans around and get those air bubbles out
16:53
All right, so, Sonny Boy, let's get this in the oven. Y'all, we're going to bake this on 350 for 25 to 35 minutes
17:02
Coming up next, we put the finishing touches on our cake. It's a miracle cake
17:11
And y'all, we'll see if our tinkering worked. I'm good. We're not going to call this a hummingbird cake
17:26
We're going to call it the miracle cake. Hold on. Hold on
17:33
I'm going to just do a little something, something. We are putting a little parchment paper, y'all, around our cake dish
17:42
To keep the dish clean. To keep the dish clean. So to make our frosting, I've got two sticks of softened butter
17:52
two eight-ounce packages of cream cheese. You want a cream, son? Sure
17:56
And while you're doing that, I'm going to add a tablespoon of lemon juice
18:02
because hummingbirds like lemons. I know they do. And cream cheese. You should see them around the cream tree bushes in my house
18:09
Listen, they are, I can't get them off my cream cheese bushes
18:14
All right, a tablespoon of vanilla. Nothing a hummingbird likes better than vanilla
18:23
All right, we'll change spots. I'm going to add, can't have too much powdered sugar
18:29
Oh, good. My thumb is just killing me I am so sorry
18:34
I wish I had thought I told you to grab some towels Oh, I did, didn't I
18:46
Yes Oh, perfect, son Alright, now If you would swap places with me
18:53
Okie doke I want you to just Chop me a little bit of those pecans Alright
19:00
How much you need, Mom? About a cup? The more nuts, the better. Now, while you're doing that, I'm going to start icing the cake
19:08
Doesn't that look good? Mm-hmm. A couple of more. We cannot both ice this cake
19:18
No! I guess we'll both ice it. I'm not going to have enough icing
19:26
It don't matter, Kate. Look at this. Oh, my God. What a mess
19:33
What an excellent job. Oh, my God. What? What? Wait. Coconut
19:44
All right, wait. Don't even look. Are we going to put this on the sides? Are we going to put it on the sides
19:48
Yes, don't even. Okay. I'm going to help you. No, Jamie, I don't like the way you have
19:53
Mom, I'm going to help you. You like it. No, I don't
19:57
Look how perfect that is. See your hands
20:07
Yes, but now just on the top. Look at that. It's going to do this first
20:18
Okay. Don't matter. You ready to cut it, Mom? Yes, I'm ready. I'm so ready to cut it
20:22
I'm so ready for you to go home. Sounds good to me
20:29
Look at that. Never died of it. So tell me if it was worth it
20:37
No, let me tell you. If it was worth it. That's good
20:43
You know, white and boring. It was worth it. Can't thank y'all enough for coming to see us in my mama's house today
20:51
We had a great day. And we send y'all loving best dishes
20:56
I'm going home. Good. Bye, y'all
