Today, my boys and I are reliving our family vacation to St. Lucia through the food
0:06
Yum! Up first, zesty jerk shrimp kebabs. This is fabulous. Then jerk wontons and Caribbean salsa
0:15
So thin and crisp, Jamie. And Bobby stops by to make the perfect side dish
0:21
So rich and so creamy. Coconut orange cashew rice. And then finally, you can bet your bottom dollar that these frozen chocolate bananas are a winner
0:32
Tastes like money to me too, Bobby. Stick around, because we're having a ball reliving our family vacation
0:39
I feel like I'm back in St. Lucia, Mama. I know. We had so much fun in St. Lucia, y'all
0:50
Today we're incorporating a lot of the Caribbean flavors that we tasted when we were down there
0:54
We've got some dry jerk seasoning here, and we've got some wet jerk here
0:58
We're going to do a marinade for some shrimp. That's right, son. Now, we're making jerk shrimp kebabs
1:04
I am peeling our ginger, and I think that you need one and a half teaspoons
1:10
Is that right? Here's what I'm saying, one and a half teaspoons. Now, you can't have a Caribbean flavor without jerk
1:14
So you can find this off of foodnetwork.com. This is a jerk seasoning
1:19
We've turned it into a marinade. So we're going to take a half a cup of this, Mom. Okie doke
1:24
There's a bunch of different things in this little bit of liquid, so y'all go online and check this out
1:29
It's got super-duper flavor. I love it. And to this, I'm going to add half a cup of olive oil
1:36
Okay, I could eat this ginger straight, y'all. Got a half a cup of oil, Mom, going in here, and I'm going to whip this together
1:44
You're going to grate a little bit of the ginger, and we're going to dump our shrimp right in here
1:49
This is going to marinate for about 15 minutes and soak up some of these flavors. I'm going to be careful with my measurements on this because I don't want to..
1:56
This is such a big flavor. I don't want to override the jerk with too much ginger
2:00
Okay. Are you going to eyeball that? Well, that looks... That looks about like one and a half teaspoons
2:08
It smells so good. So there you go. Now, I'm going to put..
2:13
We're using large shrimp today. I'm going to put these shrimp in here. And now, while you're doing that, I'm going to get started on our jerk wontons with salsa
2:21
Let me get these covered. Let's see if I can cut the whole stack at one time. And these are just a store-bought wonton
2:29
Look how beautiful these shrimp are. Oh, my goodness. Don't you just know that is going to be good
2:33
Yes. Okay, going into the fridge for 15 minutes on these. Okay. You don't want to marinate fish and seafood for very long because it'll break it down and make it mealy
2:43
These little wontons feel so good. Okay, now what we're going to put on this is the same exact seasoning that we put on our shrimp
2:50
except this doesn't have any of the liquids in it. This is just a dry mix. This doesn't have any of the oils or any of those things
2:57
And I'm just going to dust these with, of course, some butter. I want these to crisp up really nice and brown
3:03
and I also want this dry rub to stick to them. So we're going to go with our favorite old staple
3:10
Brush them with butter. Melted butter. These are kind of like homemade chips with some extra zine
3:15
Yes. These are going to be delicious. So what was your most memorable
3:20
I know what was my most memorable. What was yours? Doing that
3:23
The zipline. The zipline, yes. Great time of day. People talk to us about that all the time
3:29
I said, these boys are trying to hurt me. Mom got stuck in the middle
3:34
I went, I slid back into the middle, and one of the professionals had to come out and get me
3:41
But you know, it was so much fun. Mom, these are going to go in the oven now at 350 for just about four to six minutes
3:46
Y'all be careful with these because you don't want to burn them. Well, I'm going to start on our salsa
3:53
And I've got a red bell pepper. I've got a yellow bell pepper
3:59
Now, Mom, I'm going to peel our cucumber. I'm going to chop it up pretty fine for our salsa
4:05
We've got everything we need here, Jamie, to make a wonderful salsa
4:09
Pineapple salsa is one of my favorites. Just gonna make those St. Lucious memories come back to us through our taste buds
4:24
Now I'm gonna do this pineapple, okay? We're going straight off the core with this
4:29
All right, now I'm gonna... I'm mincing my red bell pepper pretty fine, y'all
4:36
I'm just gonna take it right off the core. That pineapple's gorgeous, son
4:40
Nice and juicy. I'm using this whole pineapple, Mom, and it's yielding about three cups
4:45
Here's the red bell pepper. All right, now I'm dicing up my yellow bell pepper
4:56
But, you know, I don't like too big a chunk of bell pepper
5:01
So there's the yellow. And now one bunch of cilantro. While you doing that Mom I going to put our liquid in here okay Okey Now what we going to put in here is three tablespoons of apple juice strong smelling i know gosh that is so strong smelling got three
5:21
tablespoons of the apple juice concentrate uh-huh and there's your jalapenos son oh yeah can't
5:28
forget the jalapenos that's two and three i'm gonna put one tablespoon of olive oil that looks
5:36
It looks so good, Jamie. The pineapple looks incredible in there. And I've got a couple of jalapenos here
5:47
I've taken the seeds out because we don't want it so hot that we can't eat it. No
5:52
Okay, mama, put in the cilantro. That's really an impact. Well, the cilantro gives it such flavor. Mm-hmm
6:01
All right, son, you want me to get our chips out of the oven? You want to check them
6:05
I know they're ready. little salt on this one. Okay, yes. Oh
6:12
these look yummy. Oh, yeah. Look at those side. Beautiful. I think that's going to be good
6:24
Let's test it. You want to? This is a really nice alternative to a chip
6:28
Look how light that is. Uh-huh. That is so thin and crisp, Jamie
6:32
Did I get a big enough bite? I don't know. I think I'm going to Mmm
6:41
Yum. The seasoning on these chips, that's what makes it good. You got the spicy, the pineapple
6:48
We both love it. And when we come back, we're going to have more. Y'all stick around
6:52
Up next, Bobby and I explore the flavors of the Caribbean with coconut orange cashew rice
6:59
Wow, it looks great. I know. Yeah. Then we're firing up the grill for those tasty shrimp kebabs
7:05
This is fabulous. And for dessert, y'all, Jamie's chocolate dip frozen bananas
7:15
Hey, y'all, look. He looks different, doesn't he? And I was watching you and Jamie
7:21
I was listening to y'all kind of reliving the St. Lucia trip that we had. Yes, didn't we have a ball
7:25
So, so much fun. I've got some great memories from that trip. I know. It was so much fun
7:29
And we also had some great food, didn't we, Bobby? Yeah, we did. And in honor of that, we're going to make coconut orange cashew rice
7:37
All right, so I've got our pot right here. All right. A couple of tablespoons of olive oil
7:41
I think one and a half is what we're looking for. Okey-doke. It's just enough to get it going
7:45
And I'm going to squeeze the juice of this whole orange in there with that rice
7:49
Okay. One whole orange we're mixing in with our olive oil. This is big
7:55
They are big oranges. I've got another orange here that I'm going to section out
7:59
so when the rice is done, we're going to toss them in, right
8:03
Right at the last minute. So we can have the whole sections of the orange
8:08
All right, so, Sonny boy, put us about a cup and a half of rice in there
8:13
In just a second, we're going to get to the coconut milk. And I'm going to spill a little rice in your kitchen while I'm at
8:18
That's all right. We're just going to kind of brown this rice off. Not really brown it, but we're going to give it a nice little start
8:25
And son, if you would put a teaspoon of salt. We'll pinch
8:31
No, about a teaspoon. Well, I'm going to pinch. Okay, we'll pinch again
8:36
I'm pinching. Here we go. All right, I got a third cup of water, and I'm going to add a 14-ounce container of coconut milk
8:42
Okay. Do you remember the fishing trip? We've all got our favorite memories from this trip to St. Lucia
8:47
The fishing trip was really, really awesome. And we saw all these whales
8:52
14-ounce container of coconut milk. We saw whales, and then what did you see
8:56
You saw the back of your eyelids after a very short time. Listen, y'all, when I get on our little boat, I go to sleep
9:02
We're going fishing. We go out, and Mama goes to sleep. So Jamie and I are just goofing off on the boat
9:08
and there's one fish on that boat, y'all. It had been caught that morning, and that fish was frozen
9:13
Jamie and I decided to put that fish on the hook and let that fish out and wake you up, startle you awake
9:19
saying, Mama, there's a fish on, there's a fish on. And Mama started reeling that fish in
9:24
Y'all, I was beside myself with excitement. You're not half as beside yourself as I was
9:30
It was hilarious. Beside myself. All right, this coconut rice is beginning to thicken up a little bit
9:34
But yeah, Bobby, we're going to let the rice simmer for about 20 minutes. And let's move back down here to finish up our shrimp kabobs
9:41
You and Jamie started on this already. Y'all have already got the shrimp marinating, and they're ready to go
9:46
Yes. And this recipe is really, really simple. All we're going to do is I'm going to clean out this one big red bell pepper
9:52
forget the seeds and sort of the skeleton out of it. And I'm going to cut it into like one-inch square chunks
9:59
big enough to put on a skewer. I have just cut our onion into chunks
10:05
I'm going to put them about pieces that big. I love a kebab. I love kebabs too
10:10
We're going to just dress these with a little olive oil and salt, right
10:16
Yes, that's right. Probably a couple of tablespoons into this bowl. Just enough to toss and coat these vegetables in
10:21
What do I have here? Parsley to cut up. That gonna be our garnish for a little bit later on All right so I gonna just mince up our parsley real good All right son And we just going to coat these vegetables Yeah you can throw our tomatoes in there
10:35
Nice cherry tomatoes. They'll probably be about 15 or so. You're just going to kind of coat them in this oil and salt and pepper and you in some onions and salt and pepper
10:46
I'm good coated in olive oil. Throw the peppers in there. and I'm just going to use my hands
10:53
and turn this stuff over and try to get a little bit of olive oil and salt and pepper on to all these vegetables
10:59
All right, there you go. And so we're just going to skewer these
11:03
onto our wooden skewers. That's right, just like you would do any kind of kebab. I love like the parsley makes them look
11:13
you know, herby and fresh. All right, I'm going to go ahead and..
11:18
Yeah, go ahead and get those on the grill, son. Oh my gosh, look at our rice, Bobby
11:25
Oh wow, it looks great. I know. Yeah. I'm going to toss the cashews in now
11:30
All right. And I'm going to cover that back. And I'm just going to slip my knife in next to that membrane
11:41
And look at that. Look at that beautiful orange section. that is free of any membrane or seed
11:52
And I'm gonna section this whole orange, Bobby. And then I'm gonna toss this into our rice
11:59
right at the last second. Yeah, that looks great. You know, the thing I like about a kebab
12:05
is they're only limited by your imagination. You can do anything you want. Right, you can put anything you want to on
12:09
You know, you can have a lot of fun with a kebab. Yes. These look great
12:13
And they should only take a few minutes. Mm, mm, mm, mm
12:17
I feel like I'm back in St. Lucia, Mama. I know. I'm fixing to toss in the orange
12:23
So the rice looks and smells delicious. Bobby, our rice looks wonderful. It do
12:27
Kebabs are going, and when we come back, we're going to do chocolate frozen dipped bananas
12:33
one of my brother's favorites. Coming up next, the boys in our are making the perfect tropical treat
12:40
Frozen chocolate coconut bananas. And later, we're going to show you some of our favorite memories
12:45
from that family vacation. So, Jamie, guess what? You've always said that you were going to open a frozen banana thing
12:56
Please show me how you're going to do it. We're making Jamie's favorite chocolate-dipped frozen bananas with coconut, y'all
13:04
Every time Jamie gets a belly full of his brother and me
13:08
he threatens us with the fact that he's going to go to a beach out of this country
13:14
and he is going to open up a frozen banana stand. This would be my dream is to have a frozen banana shop
13:22
down in the Caribbean somewhere and only be open long enough just to have lunch
13:26
I'm not going to be open but an hour or so a day. But this is a great... Oh, you're going to be rich
13:30
Yeah. That's my dream. He's going to show us how people are going to take this idea
13:36
and then what are you going to do then? I don't know. When there's 10,000 frozen banana stands on the beach
13:43
and there you come. I guess I'm stuck with y'all. But a man can dream
13:49
And this is super simple and super quick, too. We're doing this before we eat, so let's get started
13:53
All right. Okay. Bobby, you got three bananas. I want you to cut it into about six or seven sections a piece. Okay
13:58
Round-wise. Y'all cut that into, I want six. Oh, look, he's already the boss
14:02
He's running the joint. He's getting ready. Look. One, two, three, four
14:09
You have employees? Dude, I got work to do down here. Look, two cups of chocolate chips are going in here
14:16
Oh, Lord. And I'm going to put into this double boiler and get this melted down
14:21
So, Jamie, this is going to make you the fortune? Every egg I have is in the frozen banana business
14:27
I'm going to put a tablespoon of oil into this chocolate as well. Would you like for me to skewer your bananas, son
14:33
You can skewer those, Mama, as Bobby gets them done. Would you like for me to skewer them like this
14:38
I'm done. I'm clocking out. You know what? Listen, we're not laughing at you, son
14:46
We're laughing with you. Well, I might be 80 years old, but that's the plan
14:55
Now take your bananas, Mama. Okay. Let's put them down in here. And dip them in your chocolate
14:59
That'll be $7,800, please. Glad I didn't have one. Now, Bobby, take your coconut and put it in the bottom of this pan
15:11
Mama, roll those up, and let's stack them up. Son, that looks good. Yeah, it's good
15:16
And we're just going to store these in the freezer now for a few hours
15:22
You know what? How about you two go start plating up some food, and I'll finish this. All right. Let's see, y'all
15:27
All right, Bobby. I started dipping the rice. Oh, my God. I know
15:33
Your brother's so funny. It's, you know, Jamie's like you. He really is quick to laugh at himself which is an awesome way to be I never got I didn get that I get real serious when people start laughing at me Come on stick these into the freezer y
15:50
Okay. That rice looks and smells so good. Looks delicious. Wow, we need bigger plates
15:59
I know, that is a plate full of, look at that little fish plate
16:03
Isn't that precious? That's awesome. This rice is my favorite rice. Is it
16:07
Mm-mm. All right, pass me a fork. Thank you. Maybe we might need to do the rice business instead
16:22
Say it, talk it, talk it. This is fabulous. Tastes like the beach
16:27
I love the nuttiness of the coconut. Tastes like St. Lucia. I mean, to me, that reminds me of some of the things that we had in St. Lucia
16:35
Oh, definitely. Mm-hmm. Yum, yum. When we come back, we're going to taste my brother's frozen chocolate coconut bananas
16:43
Coming up next, our frozen bananas are ready to sample. These first couple are on the house
16:48
Oh, good. And don't go away, because we're going to share some of the most outrageous moments from our trip
16:55
It's something you've got to see to believe. This is my first day of business
17:04
I don't think these ragamuffins can afford what I'm selling. These first couple are on the house
17:13
Oh, good, thank you. That's not a very good way to start your business, I wouldn't say
17:18
Oh. It's good. They are frozen, y'all. Mm. Mm. Mm. Mm. Jamie, the good news is, smell money
17:29
Tastes like retirement. It's so good. Good, good, good. But guys, before we go, I want to ask y'all, do y'all remember me doing the cocoa dance in that big kettle
17:42
Oh my gosh, I got a picture of that. I mashed the cocoa beans with my feet
17:46
Mama got in a big barrel with her bare feet and mashed up cocoa beans
17:50
It was so slippery. I think this is the first chocolate I've had since I saw that, actually
17:55
It was quite a sight. Yeah, and I think of it, I vowed never to have chocolate again after that. How have you done this to me
18:00
That was a lot of fun. In fact, our whole trip was so much fun, y'all. And I think it's only befitting to share some of our favorite moments from our family vacation
18:10
Woo! Got it? All right, here we go. Yeah? Here we go
18:15
Over here on a side. Whoa, whoa, whoa. I'll never eat another piece of chocolate without thinking about Mama's feeding
18:23
What are we doing? We're ziplining through the rainforest! Oh, no! Am I scared
18:30
Yes. She's scared, guys. How many times you done this, son? Actually, it's my first day at work
18:34
Oh, my God! It's his first day on the job. I'm ready
18:42
You ready? I hate y'all. Hit it
18:53
Keep your hand away. Yo, mama! Yo, mama! That's great. I can't believe she did it
19:03
And of course, there was some great food. Do I smell something cooking
19:08
There ain't never been a chicken that got away from old Paula. You sure you ain't from Georgia, girl
19:18
No, I'm from St. Lucia. St. Lucia is truly a food lover's paradise
19:25
You're good, girl. You're good. Thank you. And we sampled it all
19:30
Well, we want this one. One? I can eat that one by myself
19:39
Okay, can we get two like this? And then there was that infamous fishing trip
19:48
Get him, Mama. Oh, he's biting. He's biting. Oh, my gosh. Mom actually thought she was catching a fish
19:58
Look at that. Ooh! Ooh! He's frozen! He's frozen
20:08
Help! Y'all, we saw some amazing things in St. Lucia. Do your pirate talk
20:16
Arr, Mikey! We had some great fun. Woo! Perfect
20:25
But the best part, y'all, was being with my family. Cheers. Cheers
20:33
Y'all, I've had so much fun with these little monkeys today. And I hope y'all have too
20:40
God knows I love them better than I love ice cream. Listen, we always send y'all loving best dishes from our kitchens to y'all
20:52
Have a good time and go take that vacation. Enjoy. See y'all at the beach
20:57
It's going to be funny
