Hey y'all, I'm Paula Deen, and guess what
0:04
It's game day, and we're gathering around the TV to cheer on our favorite team
0:09
In fact, Jamie, Bobby, and I are going to be throwing a sports party
0:13
complete with a feast that I hope is going to bring our team to victory
0:18
And we're going to be starting off strong with a batch of the tangiest wings in town
0:24
And then we're going to tackle a rich and creamy shrimp and artichoke dip
0:28
which I have a feeling is going to be a huge hit. And to finish off this lineup
0:34
I'm going to be making my irresistible sweet chicken and bacon wraps
0:39
They're sure to keep the fans and my family screaming for more
0:44
So y'all nab your favorite team jersey and grab your favorite friends
0:49
because today we're having a sports party. I'm so excited, y'all
1:26
because my boys and I are going to be cooking up snacks that we're going to eat while we watch the game
1:31
That's right. It's a sports party. And I better get going because I hear those boys are calling me
1:36
All right, guys, what y'all hollering for me for? We're going to make Uncle Bubba's hot wings
1:40
So I need for you to start prepping that chicken. Okay. And, Jamie, I need you to make a marinade
1:45
I can do that. And I'm going to make a buffalo sauce for them. Good deal
1:49
Now, why did y'all bother me? I was resting. We never get to cook together anymore
1:54
We don't get to spend quality time with you, me, mom. Oh, bull. Cut the burden
1:59
So I'm going to put this marinade together, Bobby, okay? Okay. And this is a real simple one
2:03
This is one we've been doing all our life. And this is a cup and a half of some hot sauce
2:11
And we're going to put about a half a tablespoon of cayenne pepper down in here
2:16
I know you don't like it too hot, so that's a good medium measurement. Okay, mom, we're going to put one and a half tablespoons of some Cajun spices down in here. Yep
2:25
Three quarters of a tablespoon of garlic. Uh-huh. All right, now some people serve their chicken like this
2:33
They'll just cut off the tips. Uh-huh. But I like two pieces
2:37
You know, this is my favorite part of the chicken wing, not the drumette
2:43
That's what makes it a hot wing to us. If you're going to leave it together, it's just fried chicken
2:48
Uh-huh. This is like a white drumstick. Uh-huh. But this piece right here, even though it's white, it has the flavor of like dark meat
2:58
And the dark part of a chicken is without a doubt the most flavorful
3:02
So I really like mine cut. So those are ready for us to marinate
3:07
Now we would want to marinate these for 24 hours in order for that flavor to seep all through them
3:16
Okay, son, why don't you start making the sauce? I'm making a buffalo sauce here
3:22
It's just eight tablespoons of butter and eight tablespoons of hot sauce
3:26
Real simple. You couldn't, I couldn't even mess this up. You don't have to even get your measurements just right on that
3:33
Oh, you basically, do y'all hear Lady Bird? I think she's nervous with today's menu
3:37
I grant you she's nervous. Listen to her squawking. She heard y'all were making hot wings
3:43
And she's so, listen to her. Help! She'll yell help at me
3:48
I'll give her some help. She's so afraid she's going to wind up on the menu today
3:56
But anyway, this is the sauce that we're going to toss our hot wings in
4:02
And you don't have to be very particular with your measurements. Just throw in a stick of butter, and then you can add as much hot sauce as you like
4:10
If you like mostly butter with a little hot sauce, then add a little
4:14
I like mostly butter with a little hot sauce. I do too, son. And Jamie, are you about to make the Thai sauce
4:19
I'm going to make it right now. Okay. I kinda like... Okay, I'm gonna wash my hands
4:23
I kinda like a cool dressing with a hot wing, but one of my wife loves sweet
4:29
She likes sweets with her wings. Well, what's she doing with you? So what we're gonna do here is we're just taking
4:35
a chili sauce, which is kind of a sweet heat mix. I like sweet and hot too
4:41
And we're gonna put one tablespoon of some of this soy down in there. And it's, you don't need too much
4:47
We're just gonna mix these two things together. And the hot sauce off the wing and the sweet sauce
4:53
in this with a little bit of that salty really makes a super flavor when you mix them together
4:58
I love this. So what we'll want to do is take these out
5:04
and just kind of shake them off. This has been marinated about 24 hours The flavor is so in there You know what guys I need to put on an apron because I don want to get that grease all over me
5:22
Oh, thank you. Yeah, I don't want to get that grease all over my shirt
5:34
How long, Mom, on the chicken? Leave it just another second. I mean, I love mine real crispy
5:41
I do, too. Probably about seven or eight minutes, you know, if you like it extra crispy, which I do
5:47
I don't like a soft skin on my hot wings. All right, Jamie, looks great
5:54
All right, son, just toss those in there. I think we've got to say, Mom
5:58
that you want to make sure and use a clean bowl and not use the bowl that the chicken was in
6:03
Absolutely, absolutely. You don't want to put this directly behind a raw bowl
6:06
Now look at those nice, crispy wings. They're perfect. All right, now, son, just drizzle some of your sauce over them
6:14
And we'll want to do this rather quickly. Okay, son, that... All right, lady birds, you're up
6:24
I think she knows it's ready. All right, and I'm going to nestle the blue cheese right down there
6:32
and they're just right. Think we can taste them? Woo! They're nice and cool now, aren't they? Yeah
6:39
You need the sauce to cool them down. I think you need the cool of that
6:45
Is that, what do we got, a ranch there? Mm-mm. Blue cheese. Mm. Mm-mm
6:52
Oh, they're so good. Mm-hmm. They're kind of... Ooh! Looking good, brother. Mm-hmm
7:01
Did you taste that? Yes! The sweet. I love it. Crispy. Mm, super crispy. Crispy
7:08
You gotta have them crispy. And y'all think this is good? Mm-hmm. The next dish is gonna be fabulous, too
7:13
One of them. It's a hot shrimp and artichoke dip. In case y'all have just joined us, Jamie and Bobby and I are in the kitchen, and we're
7:31
making some of our favorite recipes for game night. Jamie? Yes, ma'am
7:37
Did I tell you how much I enjoyed those persimmons from your yard
7:41
Oh, good. Those beautiful persimmons. We have used them all over the house and even in arrangements
7:46
They're beautiful. I like to eat them so much, sir. Bobby, just button mushrooms. Okay
7:52
If you would just wipe those with a damp cloth. We don't want to wash them because they already contain a lot of water
7:58
So if you'd just wipe those. Okey-doke. Jamie, I've got some artichoke hearts here
8:02
If you would be chopping those, I'm going to make the cheesy sauce
8:07
It's a lot of stuff here. Plenty of time to catch the game, right? Oh, gosh, yes
8:11
I've got two tablespoons of butter here in my pot that's melted
8:15
and I'm going to add two tablespoons of flour. And I'm just not going to brown it off
8:21
but I'm going to just make like a roux with the butter and the flour
8:27
All right, now I'm going to add two cups of half and half. If you wanted to cut down on the calories and the fat in this dish
8:36
you could use even a skim milk if you wanted to or milk
8:42
Or if you wanted to make it a little bit richer, you could use heavy cream
8:48
Heavy cream. So either way you want to take it. All right, to this, I'm going to add a teaspoon of garlic powder
8:57
a tablespoon of Worcestershire, a fourth of a cup of sherry, and a fourth of a cup of fresh grated Parmesan cheese
9:10
And I'm just going to let this get thick, which it won't take long
9:16
As soon as it starts boiling, it'll thicken right up. Now to this, I'm going to add a little salt
9:23
a little black pepper, and I'm going to ask you, Jamie, if you're done with that artichoke, son
9:33
if you would just separate my eggs. I have two eggs, so if you just separate the white..
9:39
He is so funny. I'm the quick one. Actually, I didn't mean to separate them in your hands
9:52
I got you, Mom. There you go. And how is Brilliant Junior doing down there
10:02
Well, chopping mushrooms isn't the hardest thing I've done all day long, so I'm okay. Okay, well, chop, chop, chop
10:06
Do it fast. I got it. All right, now I'm going to take our egg yolks
10:11
and I'm just going to cover these and put it in the fridge. And who knows, tomorrow I may want to make a pie with a meringue
10:18
so I can use them then, or I can throw them in the scrambled eggs in the morning for breakfast
10:23
So I not going to throw them away So I just gonna take the two yolks and I gonna temper them with our hot sauce All right when I say tempering that means just slowly heating the egg because
10:38
I don't want to dump it into our pot because that could just turn to like a scrambled egg
10:44
All right, so I've got those yolks nice and tempered. And now I'm just gonna add them to
10:51
our dish. And I'm going to put it back on the stove for a second. Just continue to cook
11:03
it just for a minute. And you can see it's nice and thick. All right, Bobby, how are you
11:09
coming with the mushrooms, son? Good. I probably got you a cup and a half or two cups over
11:13
here. Okay, when you're ready, just toss them in with the shrimp. Okay. All right, Jamie
11:19
if you'd spray our casserole dish. I think Lady Bird's hungry. She's still upset with the hot wind thing
11:25
I'm sad. I still believe she thinks she's going to be next. She's not hungry
11:30
She's got plenty to eat out there. She's just afraid she's going to get eaten. Is that enough mushrooms for you
11:35
Yeah, that's great. All right, so I've got my shrimp and my mushrooms
11:39
Now I'm going to add my chopped artichokes. Just dump it all together
11:45
and I'm going to pour the sauce over it. Just that simple
11:52
You know, there's an artichoke dish that's been around forever and ever and ever
11:58
that you make with mayonnaise that's just delicious. But this is kind of a twist on that recipe
12:07
The sherry cream sauce is so good. All right, now all we're going to do, guys, is toss that together
12:16
and we're gonna put this in a preheated 350 degree oven so it won't take the shrimp but just a minute to cook
12:25
All right, now we're just gonna put this in the casserole dish. I love this casserole dish for this type of things
12:38
Now at this point, you could put the cheese on it, but I really like to put it on like the last few minutes
12:45
so it's real soft and melted-y. So right now, I'm just going to sprinkle it with a little paprika
12:52
So it's real soft and what? Well, I can't remember what I said
12:56
I think you said melted-y. Soft, uh-huh. You know that word, don't you
13:01
Melt-y-y. All right, Bobby, son, if you'll get this in the oven. Okay
13:05
$3.50. Okay. When we're coming back, more sports, and we're going to be making a sweet chicken bacon wrap
13:15
Can you dig it? Is it going to be soft and melted, E2? No, it's going to be crunchy
13:30
Welcome back, y'all. The kids and I are in here in the kitchen, and we're having the most fun today
13:35
We're having a sports party. And, son, how does that look? It's looking really close
13:41
Oh, yum. Probably time to cheese it. Well, you just pour the cheese on that
13:45
And I'm finishing up with the chicken because the next dish I'm making for y'all is a sweet, smoky bacon chicken
13:55
And it's going to be wonderful. Now, Bobby, are you cutting up the bacon, son
14:00
Okay. And, Jamie, if you'll mix the dredging concoction because we're going to dredge this in a light brown sugar with some chili powder
14:10
Two-thirds cup of brown sugar and two tablespoons of chili powder. Yeah, and it's an interesting combination, isn't it
14:18
It is. I don't think I've had this. The sweet and the savory. Well, now I'm going to spray our pan
14:24
Pass that pan over here. I'll start stacking them. Yeah, I'm going to need everybody's help because we want to quickly get this done so we can get it in the oven
14:33
All right. So here's the pan. Here's the toothpicks. Okay, son, that's enough
14:39
And if you'll come down here and give us a hand. Okay
14:44
So we can quickly do this. All we want to do is wrap the bacon around the chicken and secure it
14:52
Ooh, these are going to be good, aren't they? Oh, they're going to be fabulous. How many times, and you can be honest, it won't hurt my feelings
15:03
how many times do y'all throw a party and don't invite my mom? Every night
15:07
I'm just kidding. Never. I know that y'all do because I hear about them
15:13
You wouldn't want to come to my parties. No, probably not. But I had some boys over for a football game last night
15:19
and we did a little cooking, but it was nothing like this
15:23
What did y'all cook? Just burgers and fries. Oh, yum. You can't beat that
15:27
And you told me the other day that you've been catching a lot of crabs off your dock
15:32
That's right. You know, I love the idea of being able to harvest a meal right out of my backyard
15:38
Isn't it fabulous? Yeah I really enjoying it Lots of crabs lots of shrimp and we fishing out there and catching fish What kind of fish are you catching Just a little I guess like whiting and you know what I mean kind of just trout
15:50
They don't even know. I've only caught one nice trout, but since he was by himself, I let him go
15:55
One night, Michael decided that he was just going to walk out there and just wet a line
16:02
you know, real quick like. On his second cast, he pulled out a flounder as big or probably bigger than that sheet pan
16:14
Wow. And he took that fish down to the lady and sons and had the chef prepare it for him
16:21
So he sold it. No. No, Michael ate it. Now you guys, you make sure that you wash your hands real good after handling that raw chicken
16:37
This is going to be so good. Aren't they going to be delicious? The flavors, like I said, the sweet and that really spicy savory is going to be wonderful together
16:50
And we're going to put these in the oven and we're going to bake them until the bacon is nice and crispy
16:55
And of course the chicken is done. And then we're gonna be ready to sports party
17:04
Ready to party? Is that the funniest thing you ever do is throw water in my face
17:10
That's the oldest non-funny joke you've got. Bobby, you forgot your cheese, son
17:14
Oh, Lord. Oh, gosh. You're right. Pete, it's perfect. Look at that
17:22
Hot bubbly. See, I hadn't forgotten anything. So, now, we can either dip this in, like, toast points or crackers or, like, a tortilla chip
17:34
Ooh, tortillas. That was good choice because that's what I have out here for y'all
17:39
All right, you ready to put this in the oven? I think so. And here, here's your clean towel, Bobby
17:47
Like I said, I'm going to put these in the oven on 350, and we're gonna bake them until the bacon is crispy
17:55
and the chicken's done, which is about 30 minutes. And when we come back, I've got a real good tip for y'all
18:05
It's kind of a nutty tip, but it's a real good one, so we'll see y'all back in the kitchen in a second
18:17
You know, no sports party is complete without some nuts. I mean, I've got plenty of nuts around here, but I want some good, sweet, spicy, edible nuts
18:28
I want to give y'all a quick little recipe that's perfect for pecans
18:32
I'm going to throw in two tablespoons of melted butter, two teaspoons of sugar
18:40
two tablespoons of white corn syrup, a half a teaspoon of ground cinnamon
18:47
and a pinch of salt. Just gonna mix that together, throw in a bag of whole half pecans
19:02
Give those a quick toss, and then we're gonna spread them out on our cookie sheet
19:07
We're gonna put them in a 250 degree oven, and we're gonna slow bake them for about an hour
19:13
And every 15 minutes, I'm gonna go in there and stir them
19:17
we're gonna have a nice, sweet, spicy pecan. Just that simple. It'll be like going to the candy store, but not
19:27
And I'll stick these in the oven in a few minutes. But in the meantime, I've got a pan that's ready
19:33
Can you hear the crunch? Mmm, everybody's gonna love snacking on these nuts
19:45
But I've got to pull all my food together because it's time for the guys and I to sit down and get the TV going
19:52
eat all this wonderful food, and watch sports. Is that the game? Is that the one y'all want to see right there
20:00
Mmm. Mmm, mmm, mmm. So good. And I just love game day with y'all
20:10
So while the boys are watching the game, let me go over this food with you real quick
20:14
like we've got Uncle Bubba's hot wings that are so good. And we've got a cheesy shrimp and artichoke dip
20:21
that's hot and bubbly and you can serve that with Toast Points or tortilla chips or the crackers
20:27
And the nuts are just delicious. I hope you'll try that tip. I think my favorite thing today is the sweet bacon nuggets
20:34
They are so good and I really think I'm gonna have to fight Bobby Dean for them
20:39
They're getting mad with me so I've got to sit back and be quiet and watch the game
20:43
Hope y'all have a great day watching your favorite sports. And until next time, y'all, we wish you love and best dishes from our kitchen to yours
20:54
You know them. Go Dawgs. Go Dawgs. Go Gators
