Hi, y'all. I'm Paula Deen. Now, barbecuing in the South is not just grilling. It's a cooking way of life
0:09
Before we get started, we're going to take a trip to America's beloved donut shop, Krispy Kreme
0:16
You know, Lucy ain't got nothing on me when it comes to working that conveyor belt
0:21
And after a belly full of goodness, it's time for cooking. And I'm going to start with my daddy's tangy grilling sauce for my chicken
0:29
And then believe it or not, it's fried biscuits, just full of flavor
0:34
Last but not least, it's my friend Bill Nicholson's Krispy Kreme Bread Pudding
0:40
Y'all pull up your lounge chair and loosen your belt buckle, because it's barbecue time
0:59
Hi. I actually found out a few days ago from my local weatherman that today was supposed to be a beautiful, cool, sunny day
1:25
so I couldn't resist the idea of doing a barbecue outside. So I've got the grill cranked up
1:32
Michael's back there watching the fire because I've got one quick stop that I've got to make
1:37
To go along with all of our healthy grilled foods today, I'm going to Krispy Kreme to get donuts to make a bread pudding
1:46
so y'all don't want to miss today's show. It's going to be so delicious
1:55
All right. You hiding back there, Linda
2:08
Actually, I'm not. How are you? Good to see you. Yes. I need two dozen donuts, please, glazed
2:15
Really? Huh? You know, is there any other kind? No way. I've been sitting out in your parking lot waiting on hot donuts
2:22
I can come back there with you. Certainly. Come on. All right. Are you going to trust me to load it up
2:27
Certainly I am. No, I want you to... Look at you! Oh, my God
2:42
How many do you have in the box? 20. You're going to help me
2:50
We'll use these for the bread pudding. You can have those in the car. Okay
2:56
I've been on five and so they don't fit in the box
3:00
See how nice and close they fit now? Y'all are not making use of the box
3:04
We aren't, we aren't, but you did a great job. Okay, Paula, thanks again. You have a great day
3:11
You know what, Linda? I had so much fun. I knew I could fit 20 donuts in that box
3:16
You did it, girl. Thanks. Thank you. Bye-bye. I actually got a baker's dozen
3:28
One for the cook. Y'all, come on. It's time to cook. All right, the donuts are safely in the kitchen away from me
3:35
and hopefully away from Michael. Hopefully when it's time for me to make that bread pudding
3:40
they'll still be on the counter. All right, now what I'm starting with first is my daddy's barbecue sauce
3:46
Daddy just cooked the most wonderful chickens on the grill, and I've got my butter melting
3:53
and I'm gonna add one cup of Worcestershire. This is a real tart sauce
4:01
And it's real dark and it's real, real thin. It's not like you think of a barbecue sauce
4:07
as being red and thick. It's not like that at all. And now we're gonna add the juice of two lemons
4:14
We're gonna squeeze those out good, and I can't believe that that lemon
4:18
didn't have the first seed in it. So I'm gonna take that pulp and stick it over in there
4:23
and I'm gonna drop the lemon in it to absorb all that lemon flavor
4:29
Oh, it's gonna be so good. A good trick to get all the juice out of your lemon
4:34
is pop this into the microwave for about 10 seconds, and it will render you so much more juice
4:43
So that's it. That's all it is to our sauce. You could always add a little black pepper to it and some salt
4:53
So good. I'm gonna let that simmer just for a second
5:03
And we're gonna get our chickens ready to go on the grill. Now actually you would want to do this probably the night before or if you were doing it in the evening at least early in the morning so that your chickens could soak up all the flavor and all the seasoning that you going to put on it Now we going to start with the oil
5:20
And we're just going to baste our chicken. And this will keep it moist
5:25
And it'll give our seasoning something to stick to. Now I've washed these chickens real, real good
5:31
And I'm just going to use salt, pepper, and garlic powder. Alright
5:38
So that's all we have to do. And hopefully we're on the way to some chicken that'll really remind me of the days when
5:45
Daddy was out in the backyard grilling his chicken for everybody. All right, I'm going to move this off now and move the birds on
5:58
And I'm going to put them skin side up. And you can see that that fire is nice and hot
6:04
Now you can regulate your fire with your lid. can actually shut that off and it'll keep the flame from going down. So while our
6:14
chicken's cooking let's run on in the house. I got to get rid of this rag. It's
6:21
the one I was using after touching that chicken. So y'all bear with me. I've got
6:29
to just wash my hands a minute. And then I'm gonna come over here and I'm gonna
6:33
to show you the nicest treat. I probably first had this, oh, I was probably 22 or 23 years old
6:41
at Panama City Beach, Florida. We went to this little restaurant that had seafood baskets
6:48
and along with each basket, they served a fried biscuit in it, and they were so delicious
6:57
So that's what we're going to do today. We got our oil heating, and I'm going to be bringing it
7:01
to about 350 degrees. And to do this, we're gonna use a canned biscuit
7:08
We're gonna do a little twist, though, with our biscuits. When we pull them out, I'm gonna show you a little trick
7:14
It's gonna make them, that always scares me. It's gonna make them ever so good
7:22
All right, we're just gonna pull our biscuits apart. All right. Okay, our oil should be hot enough, so we're going to stick them in there and see
7:34
Oh, yeah. My mama used to make Bubba and Me donuts with canned biscuits
7:43
Oh, and they would just be so good to eat them hot. All right, now you can see that this is not going to take long
7:50
I'm just going to kind of move those around. And I'm cooking these up today for everybody to snack on while we're waiting for the chicken to get done
8:00
All right, those look good, so I'm going to go ahead and cut off our fire
8:04
I'm actually going to change now so I can get two at a time and get them out of that grease
8:10
I'm fixing to fill him up with a honey butter mixture. And I'm using, you can see a container like you would for a picnic that holds your mustard and ketchup mayonnaise
8:21
and I'm just gonna insert him into that biscuit and fill him up
8:30
Is that a snack or what? Mm-mm-mm
8:44
Y'all don't go too far because next I'm gonna be showing you how to make
8:48
a Krispy Kreme bread pudding. So y'all don't go too far. Mmm, mmm, mmm, mmm, mmm, mmm, mmm
9:16
Well, how'd y'all like those biscuits? They're something else, aren't they? Oh, now it's time to check our chicken
9:24
Oh, and it looks so good. Now I'm just going to flip it over to the other side
9:30
and ooh, you can see how nicely that's browned. Just a few more minutes with that
9:37
and then we'll start swabbing it with my daddy's wonderful barbecue sauce
9:42
Okay, that looks like it can tend to itself, So now it's back into the kitchen to make that yummy bread pudding
9:49
I'm so ready to get in here and finish this bread pudding for you. You're just not going to believe it
9:55
Now I've started chopping my donuts up, and that looks like a pile, doesn't it
10:00
It's actually going to wind up about two dozen. So I'm going to finish these up
10:06
I've got about six more left. And this is so good and easy to do
10:12
This is so funny. you know I really believe in like good karma and one day I was thinking gosh I
10:18
would love to be able to do something with Krispy Kreme doughnuts on the show
10:23
but I said you can improve a Krispy Kreme doughnut all it needs is a quarter milk and in your lips and you home with it Well about two days later after these thoughts went through my head I got a letter from a TV
10:40
friend of mine that watches my show. His name is Bill Nicholson, and he said, I just wanted to share
10:46
with you a recipe that I make for my friends. And he said, it's my Krispy Kreme bread pudding
10:52
I could not believe it. So I called him and found out exactly how to make it
10:59
and talked to him about it, so I'm gonna share this with y'all today
11:03
We've got all of our donuts in our pan. Now we're gonna add two beaten eggs
11:11
and sweetened condensed milk. Like they might not have enough sugar in them
11:16
But now you do notice that this is the only sweetener Bill's added, there's no sugar in this recipe
11:22
That's pretty good, isn't it? A bread pudding with no sugar added
11:30
All right, so we're just going to get that real good. And then we're going to get an ordinary can of fruit cocktail along with the liquid
11:38
We're just going to pour that over it. And we're going to add a pinch of salt and a teaspoon or two of cinnamon and then raisins
11:48
And you know, raisins are always optional when you're making bread pudding
11:53
Personally, I love them though. So I'm just going to take that and mix that all together
12:00
Now Bill told me that he takes his bread pudding and actually takes his hands and squishes it
12:07
But I really like the idea of the chunks of donuts. Alright, now we're going to transfer this to our baking dish
12:18
Is this not sinful? Look at that sticky condensed milk and the juice from our fruit cocktail
12:27
All right, I think that's about all I can stuff in there. So I'm going to throw this into the oven
12:32
and we're going to let it cook until the center is no longer jiggly
12:37
probably about 45 minutes. Look how pretty that looks. You can see the grapes from the fruit cocktail and your peaches and the raisins
12:46
and I see a little cherry peeking out. Mmm
12:58
Now I have one ready, and I couldn't make you wait. All right, we're gonna let that sit there for a few minutes because believe it or not
13:13
we're not through with this bad boy yet. We're gonna top it now with a rum sauce
13:17
and I've got a stick of butter melted here, and I'm gonna add a box of powdered sugar
13:24
And this doesn't have to cook. We're just gonna work it in
13:28
and then we're gonna thin this with a little rum. Just enough to make a glaze that can be drizzled on top
13:43
All right, now we wanna pour this onto our bread pudding while our pudding is still warm
13:49
and it will finish melting that powdered sugar. So I'm just gonna drizzle it on top
13:57
My goodness, it kinda looks like a strudel or something, doesn't it
14:02
You know I can't hardly wait to taste it. Look. The smell between the glaze of the donut
14:12
and the cinnamon is just, it'll knock you into next week. Okay, here we go
14:23
Mmm. Bill, you bad boy? I think you need a spanking, because you've been a bad, bad boy
14:36
I gotta take a quick break to catch my breath after this one
14:40
But when we come back, I'm going to show you how to grill a nice asparagus
14:59
Would y'all believe I've even whipped up some ice cream? And I'm going to sit it right there
15:04
I've got it nice and packed in ice and salt. And now it's time to finish up Daddy's chicken
15:10
Now the secret to my daddy's chicken was he didn't sauce it until the last 10 or 15 minutes
15:16
because there's so much butter in his sauce that it'll cause your fire to flame all up
15:22
and possibly burn your chicken. So we're just going to swab him real, real good
15:28
And he smells out of this world. My daddy made a lot of people happy with his barbecue chicken
15:35
All right, now we're going to wrap this meal up in just a couple of minutes
15:38
I gonna put the lid back on and I wanna show you one of my favorite ways to eat asparagus Now I have put the asparagus spears on two skewers making almost the shape of a raft Now we gonna put a little olive oil a little fresh
15:54
garlic, and you can actually mix this up earlier in the day, and a little lemon zest. About
16:01
a teaspoon of lemon zest. And I'm gonna put a little salt and a little fresh pepper. And
16:09
this is so good. Now I'm going to take my rafts and you can see how I've done them. I've put an
16:15
asparagus spear every other way. Now we're going to take our asparagus and just brush it with our
16:22
olive oil and garlic and this is going to be a nice light side to that bread pudding we made
16:30
Okay, I've got those all done and I'm going to come over here and swab the chicken
16:37
one more time. These look and smell too delicious. Now I'm going to lay our asparagus
16:46
on our grill and this is not going to take very long at all. All right, now I want to offer all
16:53
my guests a lighter option to that rich bread pudding. So all I'm going to do is take a couple
17:00
of peaches and throw them on the grill. Just going to pop out the seeds. I'm going to dip
17:07
them in butter and in sugar and straight on to the grill
17:13
Alright, now I'm gonna close that grill for a minute and get rid of that flame
17:18
And it won't take but a couple of minutes and they'll be ready
17:21
Everything should be ready now. Let's take a look. And the chicken's definitely done
17:29
Looks so delicious. You can see that leg is trying to come apart on us and the asparagus looks scrumptious
17:38
This looks so, so good. Let's check our, oh, and our peaches look yummy
17:46
Look how delicious they look with their grill marks. This meal looks so good
17:52
You've got your green, you've got your orange, and you've got your brown from the chicken
17:57
I've got to get in here and get me a leg. Oh, it's hot and juicy
18:03
a great meal for a nice, beautiful, sunny day. Oh my goodness
18:13
It's almost as good as I remember my daddy's being. And the asparagus is just perfect
18:22
with the garlic and the olive oil. And even though I planned this for dessert
18:27
I just had to go ahead and put one on my plate. Mmm
18:32
The sweet and the savory is just awesome together. I can't tell you what that little bit of butter and sugar did to that peach
18:41
It's all just yummy. I've got to go for a second, but when I come back
18:45
I'm going to share some grilling tips with you. So y'all stay with me
19:02
I just love grilling shows. The opportunity to be outside and have all the flavors that come off that fabulous charcoal is just too much
19:12
I want to share with you, though, before we leave, some things to avoid on your grill
19:17
You'll want to stay away from vegetables like carrots and parsnips and potatoes
19:22
because they'll burn on the outside and still be raw on the inside
19:26
Some great vegetables, though, to grill is zucchini, yellow squash, eggplant, peppers, onions, even Napa cabbage
19:36
And the fruits to grill would be pears, apples, peaches, and pineapple
19:43
All these are just luscious, dipped in your butter and dipped in sugar and grilled
19:48
And you can, after you've taken your entree off the grill, you can pop those on at the last minute
19:53
And for your grilled asparagus during the winter when you can't cook outside
19:58
a nice ridged grilling pan will work perfect in the oven. And a nice alternative to a heavy dessert is a piece of grilled fruit
20:08
with a nice scoop of ice cream or yogurt on it. I had a great time with y'all today being outside under these beautiful blue skies
20:18
and grilling this wonderful chicken that my daddy used to make when I was a little girl
20:23
and the deep-fried biscuits that I hadn't had in years and the grilled asparagus and the grilled fruit
20:31
And more than anything, Bill's sinful, sinful crispy cream donut bread pudding
20:40
You've got to try it. It's over the top. I hope that you make it and like it as much as I did
20:46
And until next time, America, I send you love and best dishes from my grill to yours
