Do y'all know what y'all tell me all the time when I'm out on the road
0:04
We love it when Michael Groover is on your show. Well, guess what, y'all
0:09
Michael's in the kitchen and we're fixing a smoky apple cinnamon meatloaf
0:14
That's good. Served up with a sweet Vidalia onion pie. Oh, look how pretty it is
0:20
Look at that. And yummy carrot bundles. What a beautiful plate this is
0:26
We all know how Michael loves his coffee. That coffee is magical, isn't it? Yeah
0:32
So I'll treat him to some chocolate cupcakes with a coffee cream filling
0:38
This is so good. You're going to love it. Y'all, we got a great menu today
0:46
You know what man doesn't love meatloaf? I have not met a man that doesn't love meatloaf
0:53
Especially your meatloaf. Especially my meatloaf. You're so sweet. This is called a smoky apple cinnamon meatloaf
1:01
I've got bacon in here in the pan cooking, y'all. And I'm going to pull these three out because I need three strips of bacon
1:08
It's just kind of par-cooked. And then we're making one of Michael's favorites, a Vidalia onion pie
1:16
And listen to him. When Michael makes that noise, I know I've got a home run. Mmm
1:24
So, Michael, I need about three-fourths of a cup of the diced onions for our meatloaf
1:30
Okay. And if you'll just put it in that bowl for me. And then I'm going to need for you to thinly slice those two whole onions
1:38
I'll do it. And then we're going to put them in the pan and kind of caramelize them because that's going to go in our pie
1:44
And for our meatloaf, y'all, I've got one and a half pounds of lean ground beef
1:49
I've got a half a pound of ground pork. pork. That pork is really
1:53
going to release its fat and season this up. Alright, so in goes my meat
2:02
And you know I'm going to do this with my hands, y'all, because that's the way I can get it good
2:08
Just go in there and mix that onion up in that meat
2:14
Next, I'll add one egg. Now I'm going to add a cup of breadcrumbs
2:21
I'm gonna add some pepper and I'm gonna add a teaspoon of salt and if you would
2:29
measure me out three-fourths of a cup of the applesauce we're gonna toss that in
2:35
all right and what makes this y'all that's perfect Michael you've never
2:45
lack for self-confidence, have you? What makes this the smoky apple cinnamon meatloaf
2:53
is a smoky apple cinnamon sauce. And I'm going to use about three tablespoons
2:59
of this in the meatloaf. Smell this, Michael. That's good
3:11
Look, he had like a surprise look on his face. Oh, it's delicious
3:16
Thank you. And, Michael, could you put about three tablespoons of butter in that pan
3:21
Two, three. Oh, look, he measures like me. I love it. All right, now I'm going to put the crispy bacon right there, and I'm going to move this
3:32
All right. I'm just going to mix all that up. Now I'm going to put that in my little loaf pan and just pack it down in there
3:42
All right. So I've got my meatloaf in my pan. Now I'm just going to brush this with the cinnamon applesauce
3:55
And I love it. Kind of thick on there. And it's going to kind of like caramelize on top
4:03
It's going to be so good. All right, now I'm just going to lay our par-cooked bacon on top of that
4:11
Michael, if you would get that in the oven for me, baby, just put it in the small oven
4:15
I'll do it. We're going to bake that at 350 for about an hour
4:19
And then I'm going to pull it out, and I'm going to lather it with more of our apple cinnamon salt
4:25
To put our Vidalia onion pie together, it's so simple, y'all. Now, we have just used a refrigerator crust, and you can see I'm using a real deep pie dish
4:36
All right, so I'm going to measure out a half cup of milk
4:40
I'm going to add three tablespoons of flour to my bowl because that's going to make our pie like custardy
4:50
All right, now I've got my two eggs. Why? The baby dogs have just come in here
5:00
Hunting dogs. Hunting dogs. That's what Michael said when we first met
5:05
He would walk my dogs. And of course his friends would see him with these two little sissy dogs with their rhinestone collars And Michael would say Hey guys I walking my hunting dogs
5:20
All right, so there we go. I wanted to beat my flour up first with those eggs before I added my liquid so I could control the lumping
5:31
I'm going to go ahead and add the milk. I'm going to add about a teaspoon of salt
5:40
We're going to need one and a half cups of sour cream, and I recommend using a full-strength sour cream, not a light
5:51
And that's it. We've got our custard now for our Vidalia onion pie
5:57
Look how smooth that is. Isn't that pretty? How you coming, baby
6:03
I think they're about ready. Okie doke. All right, so I'm going to take our bacon and I'm going to just crumble it up because we're going to put this on top of our pie
6:14
Okay, Mikey. You want to dump your onions, baby? Yeah. Just dump them into the bottom of our pie crust
6:23
I'll do it. We're just going to pour our custard on top of our onions
6:31
All right, so look at this, Michael. How yummy is that? Now I'm just going to take our bacon
6:37
We're just going to pile that on top. And we're going to bake that in the oven
6:42
a 325-degree preheated oven for about 30 minutes. Just long enough for those eggs and the milk to set
6:54
It's going to be delicious. Coming up, y'all, I've got a perfectly sweet side dish
7:01
to complete our savory meal. Mm-mm-mm. And later, I'm fixing coffee and dessert all in one delicious bite
7:10
Yum. We're back, y'all. Michael's taking our onion pie out
7:20
He's taking our meatloaf out. Oh, look how pretty it is. Look at that onion pie
7:26
Just sit it right there on the trivet. Oh, gosh. That is beautiful
7:34
Beautiful, beautiful, beautiful. Y'all, we're going to finish off our meal by making our vegetable to go with that wonderful onion pie and meat loaf
7:44
And we're going to make carrot bundles. I'm going to start by blanching us off some chives
7:50
Isn't that gorgeous? These need to be softened up a little bit so they'll be pliable so I can tie up our carrots
7:59
And it's not going to take long. Michael, if you would start peeling the carrots and cut them in like bigger than a matchstick for me
8:09
And like I said, you can see these already starting to get soft
8:14
All right, so I'm just going to swish that around in an ice bath so that they'll quit cooking
8:23
And to make the sauce that I'm going to bathe our carrot bundles in is so simple
8:28
I'm going to use three tablespoons of brown sugar, y'all. And about three tablespoons of butter
8:35
So we're going to get that going. The next ingredient is a fourth of a cup of white wine
8:44
And when we get our carrots tied up in bundles, I'm going to let them go swimming in our sauce
8:53
So this is a good way for me to get Michael to eat his vegetables
8:59
because he really is like a little boy. Your mother had a heck of a time getting you to eat your vegetables, didn't she
9:07
Yeah, she was a fabulous cook, too, and we had a garden and would have fresh vegetables all the time
9:15
I would actually hold my breath and chew them up and swallow them
9:19
I remember you telling me the story about you and Hank coming home from football practice
9:26
We would stop on the way home from football practice and eat five hamburgers each
9:31
Then we'd stop at a donut place and eat it. I ate a half dozen. Hank ate a dozen on the way home
9:37
And we'd just eat like it was normal. Y'all were chubby guys, weren't you
9:41
Well, I don't know why you used that in the past tense
9:45
So the carrots go in the boiling water, and it doesn't take but like two or three minutes
9:53
You want them to still have a lot of body on them. I'm going to take a couple of chives and just tie them up
10:03
And you don't want to pull it too tight because your chives could break
10:10
And then I'm going to put it down in that wonderful sauce
10:13
You want me to help tie them up? Yeah, you can come help tie
10:20
Aren't those pretty? Mm-hmm. This is a good way to get your kids to eat
10:24
This is a great way to get your kids to eat And they can even come in and tie them up All right Michael I gonna get over here because I just want to make sure that you going to get your kids to eat And they can even come in and tie them up All right Michael I going to get over here because I just want to make sure they get all in that sauce
10:38
Uh-huh. Doesn't that look good? Mm-hmm. You know, these almost take on the taste of sweet potatoes
10:45
when you start adding that butter and brown sugar. And I'm ready to go eat
10:53
Me too. Oh, my goodness. Look at all that onion in there, y'all
10:58
Mmm. Smells so good. Perfect. What a beautiful plate this is. Mmm, mmm, mmm
11:09
Look at those onions. Delicious. Is it good? Mm-hmm. I'm so glad you like it
11:19
Mmm. I'm going in for a carrot now. Okay. Don't you just love that sauce on top of it
11:27
How are the carrots? They're good. They don't even taste like carrots. I told you. Mm-mm-mm
11:35
There's something just comforting about me, love, isn't it? Yeah, that bacon makes it delicious
11:40
Mm-mm. You know, my favorite, I think it's the onion pie. It is delicious
11:47
Mm-mm. Coming up, we're going to make something good and sweet. A little cake gets a big captain kick
11:57
And later, a special frosting for my special man. It's looking good, isn't it
12:03
Yeah. Michael and I, in the last segment, we just had the most wonderful meal
12:12
We're going to take Michael's wonderful coffee, and guess what we're going to make with it
12:17
I can't wait. One of your favorite things in the whole world. We're going to make cupcakes
12:22
Oh, come on. I can promise you this, they're going to be delicious
12:27
So, Michael, if you'd start measuring up the wet ingredients, I need one cup of strong black coffee that's cooled off
12:36
I need a cup of vegetable oil measured out. Okay. And over here, I'm going to start my dry ingredients
12:43
and I'm going to need two cups of sugar. All right, so there's our sugar
12:48
and then I'm going to add two and a quarter cup of all-purpose flour
12:55
And these cupcakes are so easy to make. I'm going to add a half a teaspoon of salt
13:02
one and a half teaspoons of baking soda, a teaspoon of baking powder
13:07
and I'm going to need three-fourths a cup of cocoa. And this is an unsweetened cocoa I'm using, y'all
13:15
And I'm just going to whisk those dry ingredients together. before we start adding our wet
13:21
So you can just dump it right in there, Michael. All right
13:27
So I'm going to start my little electric mixer. And, Michael, if you would start by adding the coffee
13:36
Okay. And add the oil. And, y'all, this oil is going to make these cupcakes so delicious
13:47
and moist. The coffee is what's doing it. That coffee is magical, isn't it? Yeah
13:56
All right, now I'm going to need for you to break three eggs into here, and we'll just add
14:02
them one at a time. Okey-doke. Now you can put in the other one
14:10
So see how easy those cupcakes were to mix up? But now we got two more ingredients to add to it that's really gonna richen this up
14:23
We're gonna use one eight-ounce carton of sour cream. Sour cream is wonderful intake batter, y'all
14:33
Oh, my goodness. And then about a teaspoon of vanilla flavoring. Well, maybe that was a little bit more, but that's all right
14:43
All right, so I'm just going to incorporate that sour cream into our batter
14:50
And, Michael, if you'd reach back there and get our muffin tins. Okay
14:54
We'll start scooping this up. We're going to fill up our liners about two-thirds full
15:02
This makes 30 cupcakes. Now, we're going to put this in the oven
15:07
Michael, you can go ahead and do that. We're putting those in a 350-degree oven, y'all
15:12
and we're going to bake them for about 16 to 18 minutes
15:16
Michael, I'm going to put you a surprise in the center of these cupcakes after they come out of the oven
15:24
I'm going to use a three-ounce package of cream cheese that's softened to room temperature
15:30
If you would measure me out a fourth of a cup of coffee liqueur
15:36
I'm going to beat this real, real good, y'all, because I don want any lumps And it going to be very important that your cream cheese is at room temperature That a pretty color That a pretty what
15:52
I said it was a pretty color. Pretty color, like color. Did y'all get that corny joke
16:00
You're so cute. And see, I just think all your corny jokes are so funny
16:07
You're probably the only one. Listen, that's why you liked me. Because I laughed at your funny jokes
16:14
Took me a long time to send somebody. I appreciated them. So I'll just add this liqueur just a little at a time
16:24
And now I'm going to fold in a chocolate-flavored frozen topping. Like whipped cream
16:32
Yeah. We're going to use an 8-ounce container. So we're just going to take that, and I'm not going to beat it
16:40
because I'm afraid that if we do too much beating, it could deflate it
16:48
So I'm just going to fold and then kind of mash until all that cream cheese is in there
16:57
It's looking good, isn't it? Yeah. Stick your finger in there and tell me how you like it
17:05
Mmm. I think that's going to be fabulous inside those cupcakes. And you know what
17:12
We're still not going to be through with these cupcakes. And we're not done with your coffee yet
17:19
Don't you go anywhere. Now for the fun part. Michael and I have one last step to make our cupcakes complete
17:27
You want me to taste one? No, not yet. All right, we're ready to finish up those cupcakes that we started
17:40
And Michael, I need for you to measure me out three cups of confectionate sugar, please
17:46
I've dumped a stick of softened butter into our bowl. One, two, three
17:57
All right, now I need for you to measure up about a fourth of a cup of that strong cold coffee of yours
18:05
You know, it doesn't take much liquid for confectionate sugar, So you want to add just a little bit at a time
18:15
All right, a little bit more. There we go. We don't want this too thin because it won't stay on our cupcake
18:27
Right. So I think we've about got enough coffee in there, Michael
18:32
So that was a little less than a fourth of a cup of coffee that we poured in here
18:38
Look-a-there. Wasn't that fast and easy? Yes. All right, we've got our cupcakes down here
18:45
and I filled a pastry bag with our coffee-flavored filling. Now for the fun part
18:52
We're going to take our piping bag, and we're just going to put our little needle down into that cupcake
18:59
and we're going to squeeze about a tablespoon in there. And I tell you what, I'm going to let you do that
19:08
Uh-huh. And you don't want to put your needle too deep because you don't want to break through the paper
19:17
So we're just going to frost our cupcakes now with that wonderful coffee-flavored icing
19:25
Oh, these look so good, don't they? You don't want me to taste one
19:30
No, not yet. In just a second. So I've got some chocolate-covered coffee beans
19:39
and I'm just going to garnish our cupcakes with a few of those
19:45
Michael, it's time for you to taste. Let's see what we've got inside of there
19:53
Oh, my goodness. Doesn't that look good? Mmm
20:04
Do you like it or do you love it? Those are delicious
20:10
Aren't they yummy? I've got my own, baby. Mmm. They are wonderful
20:17
Mmm. There's nothing more gratifying than having somebody in the kitchen with you that you just love
20:26
What's so fun cooking with you? Because I get to test your food. Yes, you do
20:31
And I hope you won't stay away long. I hope in no time you'll be back in the kitchen with me
20:37
Grab your man, grab your woman, and get in the kitchen with them today and cook
20:44
You never know what it might lead to. Isn't that right? Michael and I send y'all loving best dishes
20:52
from our kitchen to y'all's
