Merry Christmas, y'all
0:02
Hey, y'all. Today, we're celebrating the holidays with family. First, my brother Bubba's here to help make a fried green tomato salad with a yummy chipotle dressing
0:12
Oh, Paula, they look delicious. And then it's the king of this meal, y'all
0:17
Cornbread stuffed crown roaster pork. That pork roast is not going to be the only thing stuffed around here, y'all
0:23
And finally, my nephew Jay stops by to whip up a batch of Meemaw's Kitchen Sink Christmas Cookies
0:31
Heavenly, heavenly, and so easy, so simple. We're going to make y'all a fried green tomato and avocado salad
0:43
and you're going to make a wonderful chipotle dressing. Correct. To go on it
0:48
Yep. Now, I'm taking our tomatoes, Bubba, and I'm slicing them maybe a little bit more than a quarter of an inch
0:55
Okay. And I'm just going to lay them right there on paper towels. All right
0:59
So that'll help pull the water out of them. Paula, just to catch up a little bit on the sauce that I'm making here, we're using a quarter cup of mayonnaise
1:07
two tablespoons of adobo, and three tablespoons of lime juice, and a pinch of salt
1:13
That's going to be good with our tomatoes. Now, I like to salt and pepper them on both sides
1:22
The salt draws out some of that water. So are you all ready for Christmas, Bubba
1:27
You done all your shopping? You know me, I'm going to wait until the last minute
1:33
But three Christmases ago, I came over here for Christmas. And what did you give me
1:38
You wanted a brown Labrador. Uh-huh. So I found it, Bubba, at the last minute
1:44
And Bubba loves that dog. That was such a great Christmas. Now for our breading, y'all, I'm gonna need about a cup of flour
1:53
Now I'm just gonna put a little salt and pepper into my flour
1:58
and then I'm just gonna dredge my tomato slices. All right, so I'm gonna drop the tomatoes in
2:05
I've got my fryer set on 350. We fry and peanut oil
2:10
They're bubbling. And while these are frying, Bubba's gonna set up our salad
2:14
with our masculine mix and our avocado slices. I love avocado. I do too, Bubba
2:21
I just love them. So, Bubba, I remember the Christmas that Mama had more presents than us
2:28
because Mama was so tired of not getting anything for Christmas, she went and bought every Christmas present that she wanted
2:37
And she had no idea that Daddy was getting her a mink stole
2:42
diamond rings and she just felt so bad, Bubba, because she had more presents than us
2:51
But that's the Christmas I remember. Well, I remember one year Daddy had gone out of town on business
2:57
or something. He brought me a toy back and it was a helicopter
3:02
And he sat in the living room and played with it more than me. He wouldn't even let me play with it
3:07
You don't remember that little helicopter? Well, Dad was a big kid. big cut up, big kid
3:12
Yeah, I never got to play with it until I was about 19 or 20. Oh my goodness
3:20
I need to wash my hands. Did you ever sneak behind Mama's back
3:24
and open Christmas presents? Every year. Oh my gosh, I'll never forget the Christmas
3:29
I did that, Bubba. I was so angry over the gifts that I got
3:35
because they weren't good. I was so mad with myself because Christmas morning, I had to get up and act surprised
3:44
and I didn't like a dadgum thing I got. I never did it again after that, y'all
3:50
I remember one year, there was this one box that had my name on it, and I wanted to find out what was in it
3:57
So I went in the little bathroom, you know, down the hall. We didn't have but one
4:01
Yeah. I go in there, I lock the door, unwrap it, open it, and slid the box out
4:08
It was a brown belt. Yeah, see, some things should just be a surprise
4:16
Are those tomatoes ready? We got to make this salad. I think they are, Bubba
4:20
They look fabulous. They're getting brown. They do. I'm going to cut our fryer off
4:25
Okay. Do you like the way those look? Oh, Paula, they look delicious. Now let's top off our salads with these fried green tomatoes
4:35
We're just going to drizzle a little dressing on. Looks good. This is a wonderful little salad for first course
4:47
I love tomatoes just about any way you can make them or grow them
4:53
Mm, Bubba. Is it good? Mm, mm. You like my sauce? Mm, mm
4:58
Sauce good? It's delicious. This is not too filling, but yet it has substance to it because of the fried green tomatoes
5:06
Right. But speaking of full I gonna fill us up What we gonna make next A stuffed roast of pork That pork roast is not gonna be the only thing stuffed around here y Coming up your stomach not gonna believe your eyes y when they catch a peek of this dish
5:23
These bones are gonna be so good to gnaw, it's gonna be incredible
5:28
Then, my nephew Jay is here to help me load this roast with one unforgettable stuffing
5:34
I was here first. You gotta get in the back of the line. And later, we make a batch of cookies that has all of my favorite ingredients
5:45
Merry Christmas again. This is going to be a very, very special meal, Bubba
5:51
I see. Is this not beautiful? Yum. This is going to be a cornbread stuffed crown roast of pork
5:58
And you're not going to believe how easy and simple this is to prepare, y'all
6:03
Good. The only thing is, I want to caution you to make sure you do it right
6:08
Don't overcook it. You'll want to check with your butcher. Prearrange for him to have this ready for you
6:16
Heavenly, heavenly and so easy, so simple. How many pounds is this
6:22
We're using about a five-pound roast. Five pounds. Okay. So, Bubba, if you'll move down there and start the stuff for our stuffing
6:30
Okay. I'm going to get this in the oven. Now, I'm just going to rub it down with salt and pepper
6:36
I'm going to manhandle this piece of meat, y'all. These bones are going to be so good to gnaw
6:43
It's going to be incredible. And I'm going to turn it every which way
6:48
All right, so the next thing I'm going to do is rub it down with my sage, garlic, and olive oil mixture
6:54
Now, you can go on foodnetwork.com and get your exact measurements. Remember to rub your meat, y'all
7:01
Rub your meat. Smells so good. The freshness of the herbs is divine
7:09
So, Bubba, what are you doing down there? Tell everybody what you're doing. I'm prepping for our dressing
7:15
I've got one stalk of celery, a medium white onion, one clove of garlic
7:22
and we're going to chop up two tablespoons of rosemary and a cilantro
7:27
Okay. And y'all, I am making sure that I rub the spices into those bones
7:34
because that's my favorite part is I'm a bone-knower, y'all. We used to fight over them
7:39
We used to fight over them. Yes, we did. Mom and Daddy used to cook when we'd have steak
7:44
They would cook one big sirloin steak and it'd have the long bone
7:49
And Bubba and I would fight. But you always would. No, I did not
7:53
if I had a date and was in a hurry, you would win
7:58
Okay, Paulie, now we're going to do a half a stick of butter. Who are you kidding, Bubba
8:03
Who are you kidding? A half a stick of butter? That'll just make us mad, won't we
8:08
Yeah, enough to make your mouth mad. Well, why don't we get the roast in the oven
8:13
Okay, well, you got it. So our oven is preheated. I'll open the door for you
8:17
Well, it's looking great. Doesn't that look wonderful? All those fresh herbs
8:22
It's going to be so delicious and so succulent Alright, so 15 minutes at 450
8:29
That's going to get a nice brown crust on our roast Then we're going to lower the temperature to 350
8:36
And we're going to cook it for maybe another 45 minutes to an hour
8:41
Alright, so I'm going to help you While you are chopping up your herbs
8:48
I'm going to dice up your bell pepper for you Okay. So we can get our stuffing underway
8:56
We're not using our traditional stuffing recipe for our pork loin. We're doing something just a little bit different
9:04
Because we're making it special for the holidays. And we're sauteing this for about five minutes, y'all
9:14
Five to seven minutes in half a stick of butter. Good. Oops
9:24
Oops. There we go. And I have some cornbread that I baked off
9:31
All right. Now I'm going to need six cups. I'm going to whip us up a couple of eggs
9:45
And I've got a wonderful chicken stock. I'm probably going to use almost two cups
9:52
and then I'm going to add a little hot sauce, about a teaspoon of that
9:58
and I'm just going to pour that into our cornbread, and you can stir that up
10:03
and I'm going to go back down here and see about our herbs
10:07
Okay. They're smelling good. In goes our rosemary, a little cilantro right there at the end
10:14
Now, I don't like to overcook these vegetables because I like for them to have a little crunch
10:21
Uh-huh. Right. and I want you to be able to see them So that about all I going to do on those Bubba All right so in goes our herbs Okay And our veggies All right so we going to stir this up I going to add a little pepper
10:39
All right. A little salt. It's looking good. It is looking good. It's going to be delicious
10:45
You're going to have to roll me out of here this Christmas in a wheelbarrow. All right, so Bubba, if you'll spray our pan
10:52
Okay. And we're going to let this bake, y'all, for about 45 minutes at 350 degrees
10:59
Perfect. Okay. Look at that. Look at the colors because we didn't overcook our vegetables
11:09
Look how beautiful. Oh, it is pretty. Yes, it's beautiful, beautiful, beautiful
11:15
and it tastes so good. Bubba, if you could now, just pop that in the oven for me
11:22
It's gonna be so good. It's Christmas time. We'll see y'all back in a few minutes
11:27
Don't go anywhere. Coming up, my nephew Jay is here and I show him why it's better
11:32
to dunk a cookie in chocolate than in milk. Makes everything better
11:37
And later, we're digging in to this Christmas masterpiece. Grab and growl
11:42
All right. Y'all, Bubba has really gotten a lot younger over the commercial, hadn't he
11:54
It's not Bubba. He was never this good looking. This is Bubba's son, y'all, Jay, my nephew
12:04
Love you, Dad. That was pretty good, Jay. Well, Jay has stepped in the kitchen to help me make Meemaw's kitchen sink Christmas cookies
12:13
Now, Meemaw was Brooke's grandmother, and it's really, really good, Jay Bird
12:20
So we're going to do the wet ingredients here, Paula, and what I'm going to use is one cup of vegetable oil
12:24
Okay. And we're going to add it to this half a pound or two sticks of softened butter
12:29
one cup of lightly packed brown sugar, one cup of granulated sugar
12:35
I got one egg and one teaspoon of vanilla extract. Okay. And last but not least, go ahead and get started mixing this up
12:44
Okay. What have you got over there? I've got three and a half cups of all-purpose flour, three-fourths of a teaspoon of salt
12:53
one teaspoon baking soda, and one teaspoon of cream of tartar. So I'm just going to whisk this together, and that's it
13:03
So we're going to slowly add this to Jay's wet ingredients. This recipe, Jay, belonged to Brooke's grandmother, her Memo
13:15
And Memo would start the day after Thanksgiving. And she made like 500 Christmas cookies
13:23
And that's what she gave all of her family, all of her friends
13:27
because that was the way she showed her love. Because a homemade gift is like giving a piece of yourself
13:36
They make wonderful Christmas gifts. And you can see why she called this one Meemaw's Kitchen Sink Christmas Cookies
13:46
Because look at all the stuff. They're easy to make. I think you could probably just clean out your refrigerator
13:51
Yes. But they've got a lot of things in them. So that gets that
13:56
All right. So, Jay Bird. Yes, ma'am. I'm going to measure out now everything that makes this Meemaw's Kitchen Sink Christmas Cookies
14:04
I'm gonna measure out a cup of a puff rice cereal. Nummy, nummy num
14:11
Yum, yum. One cup of oatmeal. Now this is a quick cooking oatmeal
14:16
The next thing I'm gonna add is one cup of coconut. And the coconut is gonna make these cookies so moist
14:26
It's so delicious. All right, the last ingredient is... My favorite, toffee
14:34
Yes. Makes everything better. Put them in before I eat them all. I'm throwing them in the mouth
14:39
Okey-doke. When you're through beating that up, we're just going to stir in our other ingredients
14:47
Okay, and I think that this is all done here. Okey-doke. I'll save the beaters for myself if you don't mind
14:54
No. All right, now, if you would just stir those in. All right, we got it
14:58
And Jay, your dad and I cooked a wonderful roast and made a delicious stuffing for our roast
15:06
Look at that. Yum. That looks wonderful. Yum, yum. How beautiful is that
15:11
Okay, I think I've got this all mixed up here. Okey-doke. I'm actually going to stick this in the refrigerator for one hour and let it chill
15:19
Okey-doke. Well, in the meantime, I'm going to plate up our crown roaster pork
15:28
First, I'm going to start off with the stuffing. Oh my gosh, look at that stuffing, y'all
15:35
And what I gonna do is just kind of put some around You know I never been a stuffing eater but you may have just changed my mind Oh this is good son Can you tell I ready I can tell you ready All right
15:51
Look-a here. Check it. Check it. I'm gonna pour that juice
16:00
around there. I'm gonna take the rest of our stuffing and stuff it
16:06
I'm gonna stuff it. And we just want to pile this up in the middle of our pork roast
16:17
That is gorgeous. Y'all starting without me? No, Bubba. Well, I see you got the cookie monster with you
16:23
Yes. I was here first. You got to get in the back of the line
16:27
I heard y'all were in here making cookies, and every time I made cookies at home when he was a kid growing up
16:34
I'd go to the pantry, Paula, to get me a cookie. there would be one cookie left
16:41
At least I had the decency to leave the last one, right? I mean, why make cookies if nobody's going to eat them
16:46
Look at that. It looks delicious. Doesn't it look delicious? Yum. Oh, my goodness
16:54
Ooh. You chow down, baby. All right, Jay Bird? Yes, ma'am. I want a meal, not a snack
17:01
You got it. Look at that. All right, guys
17:12
Grab and growl. All right. Are we going to sit here? I'm going to sit right here
17:20
You're going to sit right there. Look at that. Is that not fabulous
17:24
We're at home, aren't we? Yes. Some things never change. See what I'm saying about Bubba and I fighting for a bone
17:35
Isn't that delicious? I'm telling you. It's out of this world. We cooked it perfect
17:40
The stuffing is out of this world. Yes. Look, now, I've gotten straight to the meat of what I want
17:49
Look how moist and delicious. Fabulous, isn't it? Great holiday idea, Paula
17:55
How do you like the stuffing? I love it. I'm sold. Merry Christmas, y'all
18:00
Wish you were here. Yeah, don't forget about the cookies, y'all. Oh, you better hurry up and get one, Paula
18:07
Or he'll eat them all. I'll save you one. Coming up, the perfect way to top this holiday meal, a beautiful Christmas cookie
18:16
I know. Look how pretty they are. Welcome back, y'all. We're finishing up the cookies
18:24
I've got my cookie dough. I'm just going to take a scooper and stick 12 little scoops out on a cookie sheet here
18:33
And Bubba is crushing peppermints for us. I'm melting white chocolate, y'all
18:41
And once our cookies are baked, we're going to dip part of it in our white chocolate
18:49
and then we're going to dip it in the crushed peppermint. Okay
18:54
I'm just going to throw these in the oven on 350 for 12 to 14 minutes
18:58
Okay. How do you like your... I haven't tried. Cheers. Apple and pear cider
19:05
Did you try it, Bubba? No, not yet. Cheers. It's delicious. It's a warm cider, y'all
19:11
You can go to foodnetwork.com for the recipe. Yummy. It's nice and warm
19:16
It feels so good to the tummy. It's kind of cold outside
19:20
So now, Bubba, if you would just pour your peppermint into our dish
19:28
Jay Bird, you want to check and see how our cookies are. I would say they're ready
19:33
Yeah, and they've been in there about 13 or 14 minutes. It's hot. All right, our chocolate looks nice
19:39
And our cookies look great. Because we used parchment paper, y'all, they didn't stick
19:48
So into a little chocolate. And then into the peppermint. Oh, wow
19:57
And Jay Bird, you have the first cookie. Actually, I get the first 11 cookies
20:02
Yeah, you better watch him. And into the peppermint again. There's you a cookie, Bubba
20:10
Okay, thank you. And then mine into the chocolate. And into the peppermint
20:19
A beautiful Christmas cookie. I know, look how pretty they are. Well, eat up
20:25
Aren't they yummy? I love the toffee bits, don't you, Jeopard? Yes
20:31
Definitely taste those And you know at the holiday time There's nothing like family and friends
20:38
That's the most important thing in the world The time that you spend with them
20:42
And the memories So thank y'all For loving me We always, always
20:49
Try to send y'all our best dishes And love from our kitchen to y'alls
20:55
Merry Christmas y'all
