Rice Croquettes

Hey, y'all, we're doing the leftover do-over today

Think of something harder to make a leftover with more than rice

Um, let's see, fried rice and, um, how about a rice croquette

Let's do that. Y'all want to? I got two cups of cooked rice that I'm going to add into our bowl

I've got one cup of Parmesan cheese. I'm going to zest a lemon

Now, we don't eat a lot of rice at our house because Matthew is allergic to rice

but every now and then, Brooke and Jack do like to have rice. It's just not my thing, but my wife loves white gravy

So when she gets a hankering for some white gravy, that's when we have rice at our house

So we've got a little bit of zest that we're going to use, and I'm also going to juice this one lemon

Our mom used to make salmon croquettes when we were kids, and you can pretty much combine a lot of different things

and make a patty and fry it. So I was thinking, why not rice

Rice is something that if you got it left over, there's not a lot of options for you

So how about a nice croquette? This would be a perfect side dish with like fried chicken or you know what would be really super good Country fried steak A little bit of let a little bit of gravy spill over onto your rice croquettes

Sounds like a leftover do-over to me. Got some green spring onions that we're going to add in here

Now this is what's going to bind it together for us y'all. I got two eggs that I'm going to beat

I'm going to add a little bit of Mama's House seasoning. Do a pinch of salt because I know that this rice has probably absorbed that seasoning from last night

And this is it. The eggs are going to bind it up. Now, it is a leftover, so I'm guessing that your rice is going to be chilled

but if you just decide that you want a rice croquette, got to make sure that you chill your rice

otherwise it won't bind that well together. Look how nice that is

The last ingredient that we need is something to coat it with. So I've got some breadcrumbs

Let's start with about a half a cup. You're not going to eat this as an entree

so I'm not going to make them really big. This is going to be a little side dish for us

So make you a cute little patty About that size And let get it coated

We'll stick them off here to the side. I'll do a couple, and then we're gonna fry them

I've got some oil that's nice and hot. We're gonna put these down into our pan

and we're gonna brown them up. Like I said, man, some country fried steak

right next to these things with some brown gravy getting all over it would be delicious

Let's do three. My mama said whenever you're decorating something or if you're adding a garnish

you always do it in odd numbers. So you do three or five or one

Let's try not to burn the house down. Perfect. Ouch, that is hot

Be sure and not dip the tip of your finger into your hot oil when you're doing your leftover do-over

That is probably the best tip that I've offered in the 10 years I've been doing television

Keep your hands out of the frying oil. These will brown up pretty quick

Then I'm going to drain them off. While that's cooking, I'm going to wash my hands. How about it

Oh, it's browning. I might be a little hot here. Let's see if I got me up. It a little brown but you know what Mama not here this morning Oh and that one completely fell apart

Can't always be perfect when you're at the house. This might be good, like, for breakfast, too

You could, instead of rice, you could do hash brown potatoes. You could have potato croquettes

Don't want it to brown too much, so I'm going to go ahead and drain these off. You know what we're going to do with that one

We're going to forget him. Let's get a plate and we'll taste it
