Our team started early this morning. We lined up 20 80-quart stockpots side-by-side-by-side

to get ready for the world's longest crawfish boil. We ended up driving in with about 1,000 pounds of fresh Louisiana crawfish

and garlic and onions and a lot of fresh corn. And then what we did is started filling up all of our stockpots

Next, we got all the water at a raging boil. We seasoned each stockpot with some Creole seasoning

which has got some cayenne pepper, some garlic, some onions, a lot of salt in there

And then we started adding our potatoes. Our artichokes went in, all of our corn went in

and we returned all those ingredients to a boil. We cooked those for about half an hour. Then we started adding in our mushrooms, a lot of our lemons

And next, we added the crawfish. We brought the pots back up to a simmer. We cooked them for just a couple of minutes, and then we cut off the heat

All right, and what that does, the crawfish start to sink to the bottom. All right, we start pushing them down to get all the air out of the back of the heads

and all that great Creole seasoning starts to sink into the heads and also the meat
