hey friends y'all come on in the house
0:03
because i have got so much to talk to
0:05
y'all about
0:07
uh do you recognize this kitchen
0:11
have y'all ever seen this kitchen no
0:15
you've never seen this kitchen
0:18
so i want to tell y'all all about it
0:22
michael and i decided
0:25
that we were going to become
0:35
i told michael i said i can't hardly say
0:37
it i hope i'm gonna be able to do it
0:39
we have gotten to the age where we feel
0:42
like
0:42
we want less to take care of so
0:46
we uh are busy busy busy
0:50
renovating dogwood you know it was the
0:54
house that we built
0:55
when we got married and that was gonna
0:57
be our forever home
1:00
and uh so we never ever even dreamed of
1:04
ever letting go of that property because
1:07
michael and i actually
1:08
felt like that we might eventually go
1:12
back to that as we got a little older so
1:16
river bend was sold
1:20
we sold it to some wonderful
1:23
younger people that are going to be able
1:25
to enjoy that five acres
1:28
so much uh so
1:31
michael and i are just an exciting and
1:35
exciting
1:37
next phase of our life so
1:40
i was so blessed y'all because my son
1:43
bobby
1:44
lives on the on the marsh he lives on
1:48
salt water right here
1:50
and on his property he has the home that
1:53
he and
1:54
his wife and triplets live in and then
1:58
the house next door is his guest house
2:01
for folks
2:02
and seems like there's a lot bobby has a
2:06
lot of folks coming and going in this
2:08
house
2:08
well i was so thankful because it was
2:10
vacant
2:12
so i asked him i said son would you
2:15
would you mind
2:16
if michael and i move in
2:19
uh your guest house while we're under
2:22
construction at dogwood
2:24
so he said oh mama you know i'd love to
2:27
have you
2:28
i would love to have you so
2:31
i'm right next door to those three
2:33
babies
2:35
and i've got a beautiful water view to
2:37
look at
2:39
uh so i'm already starting to enjoy
2:43
having it less uh
2:46
last night the last two nights i've
2:49
cooked a big meal
2:50
for us and i until michael i said
2:54
it's so strange michael that i'm in here
2:57
cooking our supper and i can see you on
2:59
the sofa
3:01
you're in this room with me i said
3:04
that's
3:04
really really nice he said i know paula
3:07
i
3:08
i felt the same way he said i'm just
3:11
really ready for smaller
3:15
and i said you know me too so
3:18
but we're having to do a lot of
3:19
renovation because i can't believe y'all
3:21
it's been 15 years
3:23
since we built dogwood it's hard to
3:26
believe maybe it's been 16
3:28
i don't know but anyway i just wanted to
3:31
catch y'all up on my life
3:33
and what's been going on uh we're very
3:36
very happy
3:37
very thankful god has been so good
3:41
and uh we're ready to go to that next
3:44
phase
3:45
so speaking of good stuff y'all
3:49
i have had so many people tell me
3:53
how much they love the lady and sons
3:56
barbecue
3:58
and you know at our restaurant at the
4:00
lady and sons we don't have
4:01
outdoor pits or anything like that we
4:04
have to make
4:05
do with our ovens and you know what
4:10
we do a dadgum good job at it because
4:14
our barbecue is
4:16
delicious and uh
4:19
one of the things that that makes it
4:21
good
4:22
is liquid smoke
4:26
uh this will give you your hickory
4:29
flavor
4:30
like you've cooked it out of doors over
4:33
wood
4:34
but most of us don't have a luxury of
4:38
having a smokehouse in our backyard
4:41
so i'm going to start by
4:44
just rubbing this down with that liquid
4:46
smoke
4:47
and this is uh a boston
4:51
butt y'all i don't know why they
4:55
stuck up a boston with a butt
4:59
i don't have any idea teresa eddie do
5:02
y'all know why boston got stuck with a
5:04
butt
5:06
i don't either so
5:10
anyway boston your butt show is
5:14
good all right
5:18
now we've got that covered good with the
5:22
liquid smoke it smells good it smells
5:25
like a fire is burning outside
5:27
all right so the next thing i'm gonna do
5:30
is
5:32
and the recipe that that is
5:36
on our website or somewhere it um
5:40
it costs an eight pound and of course
5:43
this
5:43
is just a five pound butt but it calls
5:46
for like
5:47
four tablespoons of house seasoning
5:51
so i don't think this smaller butt is
5:53
going to require
5:56
that much i have used two already
6:02
three maybe it is gonna take four
6:11
and then it calls for some
6:15
lowry's seasoning salt
6:18
so i'm not going to put a whole bunch
6:22
because i don't want this to salty we
6:23
can't eat it
6:26
all right and i'm going to cook
6:30
this in my pressure cooker y'all
6:33
because
6:36
it doesn't take hours and hours and
6:39
hours
6:40
uh you know and if you cook
6:44
a butt on a smoker or on the grill
6:47
you're looking at four to five six hours
6:50
maybe
6:51
depending on how big your buddy is
6:55
people are scared of um pressure cookers
6:58
i know they're scared of why not to be
7:00
scared
7:01
well you know i was actually frightened
7:04
of my mother's
7:06
uh teresa because it was a stove top and
7:08
that little thing a
7:09
jiggle and i had heard so many times
7:13
that you know people wouldn't put the
7:15
top on right and it would explode and
7:18
uh hit the ceiling i heard a story that
7:21
one woman
7:22
when she passed away her children went
7:25
in to redo her house
7:26
they found 23 of those in her ceiling
7:30
in her kitchen
7:33
so apparently she didn't know how to put
7:35
that top on right nor was she scared
7:38
no no she wasn't scared
7:41
so uh
7:44
i i don't want to toot my own horn but i
7:46
have to
7:48
uh because when i worked started working
7:51
on coming up with a pressure cooker that
7:55
i felt was good for my friends out there
7:59
my fans
8:00
uh i wanted it to be
8:04
foolproof and mine is
8:08
it's so so simple now i'm just gonna put
8:13
our butt down in there
8:17
you know what i made and i'm gonna put
8:19
about a cup of water
8:21
you know you don't need to put a whole
8:24
bunch of water i'm just going to
8:27
wash that uh
8:30
seasoning and that
8:34
there you go just
8:37
rinse out
8:40
and like i said now i'm not going to use
8:42
but about a cup of water
8:44
because it's going to be amazing how
8:47
much
8:47
juice this produces so anyway
8:52
to my pressure cooker uh
8:55
when my children were little it's
8:57
already getting hot
8:58
i plugged it in when my children were
9:01
little i wouldn't even let them in the
9:02
kitchen when i was using my mother's
9:04
pressure cooker
9:05
because i was afraid i was afraid it
9:07
would blow up on them
9:09
so my pressure cooker y'all
9:12
i got still some more things to put in
9:14
there but
9:15
you see an arrow and you see where it
9:18
says open
9:21
you just line that arrow up with that
9:25
so let me finish putting the rest of our
9:27
ingredients in
9:31
all right we've got one onion that's
9:33
been sliced up
9:37
oh gosh that was a big onion wasn't it
9:39
y'all
9:40
i don't really understand the difference
9:41
between medium and large
9:45
i know it i just go to the morning
9:49
well you can't have too much onion too
9:51
much butter too much
9:54
yeah you have too much salt all right so
9:57
here we go
9:59
i've lined that up to lock it down all i
10:04
have to do is turn it to close
10:06
it is full proof y'all
10:10
and uh when i'm cooking in my pressure
10:14
cooker
10:14
any of my grandchildren that want to
10:16
come in the room with me
10:18
they are allowed because i know this was
10:22
not going to blow up on them so i'm
10:25
going to set
10:26
this for
10:29
one hour and then we'll come back and
10:33
take a look at
10:34
it uh and i may have to run it for
10:37
you know 15 20 maybe even 30 minutes
10:40
more
10:41
but uh an hour hour and a half is a
10:44
very very very short time compared to
10:48
what you would have
10:49
if you were cooking this on a smoker or
10:51
grill i know
10:53
michael has cooked some butts for us
10:55
before
10:56
and he's cooked in like eight to ten
10:59
hours so
11:00
most of us don't have that kind of time
11:03
and
11:04
uh i don't want to go chopping no wood
11:09
so i'll see y'all in an hour and we'll
11:12
check it out
11:13
okay y'all our butt is done
11:16
i think i wound up cooking it for
11:21
maybe an hour 20 hour and 25 minutes
11:25
which i know may sound a lot but honey
11:27
when you're comparing it with outside
11:31
it is so easy and you want this like
11:34
fork tender i tried to take it out
11:38
and it fell apart all right look at this
11:42
and i did trim that up y'all i cut all
11:45
the fat off of it
11:48
you know i left a little bit of fat but
11:51
because a little bit of fat makes it so
11:53
good
11:54
but i didn't want it where it'd just be
11:56
so greasy
11:58
so paula when you release the brush yes
12:00
you just i'm sorry i always ask about
12:02
that no that's all right
12:03
ask me um so when you went to release it
12:05
since we didn't show it
12:07
you actually have to do it a little bit
12:08
and then do it a little bit well you can
12:10
stand there and hold it but i'll do it
12:12
for a while and then i have something
12:13
else
12:13
i've got to do so i'll stop and come
12:16
back
12:18
you can let it self release and it
12:21
really doesn't take long but sometimes i
12:23
just get impatient
12:25
and that takes away all the stuff i love
12:28
this pressure cooker
12:31
i love it that's why i want other people
12:33
it's safe
12:34
it saves me saves my life when i've got
12:37
to get a quick meal together
12:39
all right so here is what i would do
12:41
y'all
12:43
we got this scrumptious butt cooked
12:47
so rather than making a big old bowl of
12:51
barbecue i would maybe just use what i
12:55
thought we would eat
12:58
which is this
13:01
and as i was getting out of the pot i
13:04
dropped it
13:05
but it landed in a good spot
13:08
so all we're gonna do
13:09
[Music]
13:12
oh look look at that
13:15
it is so tender you know
13:19
take a bite theresa just use your
13:21
fingers
13:22
what's hot well maybe a little
13:26
[Music]
13:29
oh my god is that delicious or white oh
13:32
my gosh
13:34
i know i have to be honest i haven't had
13:36
a butt
13:37
in a pressure cooker so i was a little
13:39
concerned oh really
13:41
but that was really juicy i know look
13:44
look how tender
13:50
and i swear it would take six to eight
13:52
hours
13:53
to cook that foot but so i can decide it
13:57
4 30 or even 5 o'clock you know i'm
14:01
hungry so for some barbecue
14:03
and i can make it happen in time for
14:06
supper now this other part
14:10
oh michael's gonna be so happy when he
14:12
gets home and sees he's got bbq
14:17
so you can eat this on a bun
14:23
or you can just eat it plain bust you
14:25
had a bag of potato chips and some
14:28
baked beans and coleslaw yes
14:31
so what i'm gonna use
14:34
for uh sandwiches
14:38
i would just come in here usually i make
14:40
my own barbecue sauce y'all but
14:42
i'm kind of topsy-turvy in a new kitchen
14:45
so all you have to do is just toss that
14:50
and i
14:50
love a mustard barbecue sauce
14:56
you could actually mix it with a red and
14:59
a mustard
15:01
whoops get back in there or in there
15:04
um now taste this theresa
15:09
if that's not irish world
15:13
already on this piece oh okay
15:20
all right eddie
15:23
is that too big of a bite for you yes
15:29
no you can't wait you got to
15:32
you got to tell us
15:36
is that too big of a bite
15:45
here it's wonderful give me that camera
15:48
give me that camera son tell them what a
15:49
mess you're making
15:51
i'm sorry i dropped it but what do you
15:55
think
15:55
that little bite that you got that's
15:57
great
16:00
i mean you'll be the hit of the party
16:04
all right so there's our barbecue
16:06
sandwich meal
16:10
and now this
16:15
my mother used to cook
16:18
pork roast and i thought they were out
16:22
of this world which they were
16:24
and she'd make pork roasting gravy
16:27
theresa
16:27
did your mother ever make that eddie did
16:30
your mother ever make it
16:31
yeah yes yes yes she would cook
16:35
pork roast and gravy i know your mama
16:37
cooked a lot of pork boiling
16:38
well it was yeah pork loin and then
16:40
remember i thought it was a pork roast
16:42
with bone-in yeah yeah which i don't
16:46
see those here uh pork on bone-in but
16:53
so for a more of a meal meal
16:58
i would take this half
17:01
and i would make some pork roast gravy
17:04
and you know what in those little
17:06
envelopes
17:07
at the grocery store they actually have
17:10
a pork
17:12
pork roast gravy that's good and i
17:15
thought
17:16
you know i'm gonna have to buy that and
17:17
try it
17:19
to see if it really is and it really was
17:23
really because i think it was hard to
17:24
make well pork roast gravy i mean you
17:27
got to
17:28
you got to get that stuff from somewhere
17:32
so it just made it very very easy
17:35
uh look at that we have friday night
17:37
dinner and sunday dinner yes
17:39
all in the following night hot yes in an
17:42
hour and a half
17:43
yes so that's what i would do
17:46
and there's probably more things that
17:47
you could do with this you could
17:49
probably do
17:50
some type of pasta i used to do
17:54
oh my gosh and it was so good i used to
17:55
do a three meat pasta
17:58
and it would be pork chicken and i think
18:00
ham
18:02
and uh that recipe is out there in the
18:05
twilight zone somewhere
18:07
but you could do that with it but
18:11
i'm telling you so this will get sliced
18:16
i'll make some wonderful pork roast um
18:20
oh and you know what else is good y'all
18:23
slice this make your gravy slice it and
18:25
do an open face hot
18:28
pork roast um
18:33
you know what i'm talking about open
18:35
face oh i'm gonna eat that
18:37
open face pot well you made
18:41
are they beans available no honey
18:43
they're gone
18:44
those pole beans were so good we made
18:47
those in the pressure cooker so yeah
18:49
yeah and i cooked uh
18:53
fresh ladyfinger peas in my uh
18:56
pressure cooker day before yesterday i
18:58
cooked them for 10
19:00
minutes 10 minutes and they were ready
19:04
to eat
19:06
like i said i love this sheen and i love
19:09
it
19:11
so i hope that y'all enjoy this recipe
19:15
i think if you try it you'll really like
19:17
it
19:18
so you know i'm sending you love and
