And we'll come on over here and we'll start with our chutney first

I'm going to use like two and a half cups of diced mango

Oh, it smells good already. I've got some vinegar. Brown sugar. Ginger

Minced up real well. Raisins. And a very hot pepper that's going to give us a spice

and that's a scotch bonnet. And you'll want to be careful because this is hot

so I'm going to stir this in with a spoon. And I've got one clove of minced garlic

a little bit of salt, and a little bit of pepper. And we're going to turn this eye on

Okay, let's move on to our pork chops. Now at the restaurant, we cut our own pork chops

because we've just found out that it's just so much better. So that what I done today And this one tied up and I just going to nip this string and lay them up here

And I'm going to cut these into chops. And I'm going to cut mine about three-quarters of an inch

Look at that pretty, solid piece of white meat. Almost no fat on these

I guess depending on how you're going to cook them. I was on Emeril's show the other day with him

and I was cooking pork chops like this thick and Emeril had some little thin sissy chops

But his were delicious. Now I'm going to take my pork chops

and I'm going to sprinkle a little garlic powder and house seasoning on them

This pork chop seasoning is my recipe that I've been doing for quite a few years now

And now I'm going to coat it with the jerk. Now I got allspice I got dried red peppers paprika brown sugar chives thyme ginger cloves cinnamon onion salt nutmeg and garlic salt And you know I don know why they call this a jerk seasoning

Now, you can see I'm putting this on pretty heavy because I can't get food too spicy for Michael

Now, you can increase the ingredients and make you up a bottle of this

so that you don't have to make it fresh every time. You can just have it in your cabinets

All right, I'm gonna give our pan a quick spray so those won't stick

And we're gonna put these in a 350 degree oven until they're cooked throughout

and that won't take long. because there's no bone in this, and it's your bone that usually requires more cooking

than just the actual meat. So we're gonna just throw this in the oven
