Hey y'all, I'm Paula Deen, and today I'm the happiest mama in Savannah, Georgia, because
0:07
my boys Bobby and Jamie are coming to join me in the kitchen, because we're going to
0:11
be celebrating Mother's Day, and together we're going to be making some of our favorite
0:17
brunch foods, including a nutty orange coffee cake, and then classy creamy Benedict's sandwich
0:25
which are so quick and easy you're not going to believe it
0:29
And your mama is going to be tickle pink to see these fluffy eggs in a nest
0:34
that taste just as good as they look. So chillin', grab your mama and head into the kitchen
0:40
because it's time for you to make this an extra special Mother's Day
0:55
Hey, y'all
1:18
Jamie and Bobby just sent me out to the garden to pick some parsley
1:22
because today's a very special day. Today is Mother's Day, and they're going to be doing most of the work
1:29
So I'd love for y'all to join me in the kitchen, because girls, today is your day
1:35
Happy Mama's Day! Thank you, thank you, thank you. All right, so what recipe y'all starting on this morning
1:42
We're doing the nutty orange coffee cake today. Oh my goodness, that's my favorite
1:46
Mine too. All right, Jamie, now don't get the white, son. I'm not getting the white, Mama
1:50
Don't go too deep, or you'll make it bitter. Happy Mother's Day
1:58
You don't have to tell y'all what to do. Oh, I did go a little deep a few times
2:03
Yes, you did. Look, I mean, you're to the orange. It's gonna be bitter now
2:09
I'm just listening to you so hard. Great time of day. You love it, don't you
2:14
I love helping you in the kitchen. No, you love me fussing at Jane. That'll be perfect
2:18
That's what you love. That's the truth. Let me get rid of the evidence. I'll eat it
2:22
Wait, let me give it to Lady Bird. I'm not going to throw it away. Don't get rid of it. Lady Bird will eat it
2:26
I just don't want you to constantly look at it and remind me for the next 30 minutes
2:29
Oh, I went too deep on the orange rye. Well, it tastes a little bitter, but it'll be all right
2:37
You know, the beauty of this recipe is your biscuits is your dough
2:42
Did you hear Lady Bird just holler, Mama? I think she knew I was opening biscuits. Well, she knows I was just talking about her
2:48
The beauty is you're going to take cream cheese and roll it in a biscuit. I know
2:52
And that's all you need to know. There is nothing any better. So what are you going to do
2:56
Three quarters of a cup of granulated sugar. And we're going to put half a cup of nuts down in there
3:03
All right, well, let's get all your sugar now. Okay, Mom. And bacon, you have to be very precise
3:12
Excuse me. All right, now, Bobby, you got your canned biscuits busted open
3:16
I do. All right, now, how many biscuits you got? Twenty. Okay, so ten a can
3:21
Right. And I've seen you score your cream cheese, so that's what I'm going to do. Yeah, I go ahead and I get exactly how many squares I need
3:29
Okay, Mom, I've got to melt this stick of butter down, too, okay? Okay. Guys, I can't tell y'all how special it is to be in here in the kitchen
3:39
Do you remember Mother's Day about? It was probably three years ago
3:46
What happened? And Jamie called me up and he said, well, we were still down at 311 West College Street
3:53
What did I do? You called me up and you said, Mama, since it's Mother's Day, I want to, before you have to go to work, I want to send, I want you to come over and let me cook you breakfast
4:06
I said, how sweet is that? Did I do that? Yes, you called me over, you cooked breakfast for me, along with a group of others, and then you sent me off to work
4:19
Rather than saying, Mama, it's Mother's Day, let me go work today and you take the day off
4:26
You made sure you filled me full of breakfast so I'd have plenty
4:30
What are you doing to that cream cheese? You can't have everything. And you sent me off to work, and people couldn't believe it
4:39
You love your work. That's what makes you happy. And the cream cheese, I'm... Oh, my gracious
4:43
I'm cubing the cream cheese. I'm cutting it into cubes. It's all right, isn't it
4:48
There's another word for that, I think. Use it. Use it, will you
4:53
Tell me what it is. All right, so what you gonna do? It's a nice range
4:58
I'm gonna put cream cheese inside of each of these biscuits and fold them over
5:02
These are like little cream cheese fritters. I know, and I love them, love them, love them
5:06
Jamie, what exactly have you got going on? I gonna take that prepared biscuit and roll it first through the melted butter and then I going through the orange rind and the nuts and the sugar See that just going to be so good Oh it wonderful it one of my
5:21
favorites. Now are these going to all fit do you think? Yeah. And if they don't can we force them
5:27
can we kind of just wedge them in there together? Oh no you just drop them down around in there because they're going to bake and they're going to adhere to each other. Well while y'all are
5:34
doing that I'm going to come down here and I'm going to make. Will you turn my oven on please? It's on, son
5:39
350? Yeah, it's ready. Okay, for 35 minutes. It's ready, so whenever y'all are ready
5:44
While y'all are doing that, I'm going to come down here and I'm going to make the glaze for it
5:48
And the glaze is just powdered sugar and orange juice. This will be ready when the coffee cake comes out of the oven
6:00
And this is going to smell so good while it's baking. You're gonna smell that orange and that's how simple that is. That's that's done
6:11
You know what I'm gonna do. I don't know how you had cream cheese left over but don't just toss it in there
6:17
Yeah, oh excuse me Bobby for stepping all over you I'm just gonna kind of lay it in there
6:23
What's your plan for this butter as if I didn't know let's do it you want to
6:29
There's no stopping you so Yeah. You know what else? I think I'm just gonna..
6:40
I just wanna make sure there's enough sugar, so I'm gonna just..
6:46
Just one little sprinkle. You know, that's just one teaspoon. How bad's that gonna hurt
6:54
Well, it's butter and the cream cheese and the biscuits. I don't like that
6:59
So in the oven it goes, guys. 35 minutes, we're going to have the best orange coffee cake
7:06
you have ever, ever tasted. Well, stick around because they're fixing to fix me a sandwich
7:13
with one of my favorite ingredients. So we'll see y'all back in the kitchen
7:17
Happy Mother's Day. Welcome back, y'all
7:31
Y'all have come back just in time to see me take out our orange coffee cake
7:36
and the smell is unbelievable. The orange zest. Ooh. Look at that
7:43
Wow. Looks wonderful. Now I'm going to kind of turn this out rather quickly, guys
7:50
I'm going to start peeling this cucumber while you're doing that. Okey-doke. Ooh, it's perfect
7:55
Uh-huh, I just want to make sure that it's kind of not stuck to those edges
8:01
And then I'm just going to turn it, the platter, upside down just like that
8:08
And I'm going to invert it. Oh, and I heard a plop
8:13
That's always a good sound when you hear that plop. Oh, it's hot, it's hot
8:22
Look at that. Ooh, smells so good. Now, I've got our topping
8:27
which is just a little confectionate sugar and orange juice. But you know what
8:33
I think I'm gonna let it cool just a little bit before I add it
8:37
because I don't want it to all melt and seep in there. I want you to be able to see a little bit of it
8:43
So you can sit that off or... You can sit it back here, son. All right
8:47
So we can let that cool while y'all are starting on the sandwiches
8:51
Now, tell me about the sandwiches. There's a caterer at the turn of the 20th century named Jenny Benedictine
8:58
and she started this tradition at her restaurant. She had a catering business as well
9:04
But since it's Mother's Day and we want to do everything that's your favorite, I found the only vegetable sandwich with cream cheese that I know of
9:12
I was going to say, is cucumber supposed to be my favorite ingredient? Cream cheese is coming
9:16
Yes, the cream cheese that goes with it. I'm just going to take these seeds out of here. Mm-hmm
9:22
And, Bobby, you're making the bread. Right. You're cutting the rounds. I'm using this paper-thin white bread to make for
9:28
that's perfect for finger sandwiches. Don't you think? Yeah, it's thin. Now, what are you going to do with your leftover bread
9:34
Tell me you're not going to throw it in the trash. Yeah, I'm going to throw it away. I'm kidding
9:39
Maybe make croutons out of it or those Popeye egg things that you like so much
9:44
You can do that with these. I love them. But I will not waste it. Okay, as long as I know you're not throwing it away
9:49
Oh, you know I know better. How are you coming, son? I've got these peeled, cut, and seeded
9:53
So I'm going to drop them in our food processor, and I'm just going to pulse these until they're ground up
10:02
Okay, I think that's good. That looks good. And there's a lot of water in cucumbers
10:12
Yep, I'm going to strain that out. Okay, I'll kind of mash the water out for you
10:18
While you're doing that, I have to do the same process to a small onion
10:22
Okay. Ooh that onion gonna give it a great flavor It smells so good Okay same thing onions pulse Okay Okay All right Jamie I would suggest maybe using about half as much onion
10:42
And you can see I drained the cucumbers, and you can see how much water came off of them
10:48
So we definitely wanted to get that water out of them because we don't want our sandwiches to be runny
10:56
No, can't have that. So smell that and see what you think
11:01
See if you think it needs a little bit more of that onion. It's Mother's Day. What would you like
11:09
I don't really smell the onion in it. You don't? Well, I tell you, it's strong
11:16
Here comes your favorite part. I have the cream cheese. Eight ounces of cream cheese
11:26
The last thing I'm going to do to this, I'm going to put in a pinch of salt. Just a dash of hot sauce
11:36
And one single drop of food color. There's a whole piece of onion skin
11:43
Okay. One drop just to get that pretty green color. This would be good to serve St. Patrick's Day
11:51
since we do everything green here. So, Bobby, you're just putting a light coat of mayonnaise..
11:57
Yes, ma'am. ...on your bread. All right. And, Jamie, you've got that all ready
12:03
so if you'll move down there, you can start putting our sandwiches together
12:08
While y'all are doing that, I'm going to take our orange coffee cake
12:13
and I'm going to finish pouring the glaze over it. But you know what, guys
12:20
Mother's Day is one of those days that can give y'all the opportunity
12:25
to honor any woman that's had an influence on your life, not necessarily your mother
12:33
Those look good. Well, if I hadn't told you lately, I sure do love you
12:37
and I sure appreciate everything you've done for me. I know you do, son, and I love you, too. I love both of y'all so much
12:45
Happy Mother's Day, Mom. Thank you. Great. Aren't they delicious? Mm-hmm. They're just real cool and refreshing
12:53
Is it all right if I go ahead and slice this? No, thank you. And taste it
12:57
Mm. And look, I'll do it so tiny. And let me show you what else I'll do
13:02
Is it hot? Yes, it's hot. Look. Wow. No one will ever know
13:07
You'll never know. How slick is. Wow! Mm. Mm. Mm-hmm. Oh, God, it's hot
13:14
It's not as well. Mm. So we've got one more dish you're preparing, aren't you
13:20
Mm-hmm. But we're not going to tell them what it is, are we? Mm-mm. But does it have something to do with a..
13:26
Your favorite bird? Does it have something to do with a chicken
13:31
It does. I'll see y'all back here in a couple of minutes, and we're going to find out what the next dish is
13:37
that Jamie and Bobby is fixing for their mother. So don't go anywhere
13:43
Happy Mother's Day, y'all. All right
13:56
Hey, y'all. I'm glad you're back with us. So, what's this next recipe that Jamie and Bobby are cooking up for the old mama
14:03
What? Did I say it had something? I mean, bock, bock, bock, bock. Well, is it the chicken or the egg
14:09
Which came first? The chicken. Oh, I think the egg came first
14:15
Actually, the nest came first. because this is going to take the longest. Okay. All right, so tell us what you're doing
14:20
We're doing eggs in a nest, Mom. I've just melted some butter down here, Mom. Uh-huh
14:24
And I'm going to do six of them today, so I've got to... Just six
14:28
Just six. We've got to butter six of these muffin spots before we infuse our garlic into our butter
14:37
Okay. So you don't want to paint it with garlic, but I want to add it now. Do you need to saute that to pull out the flavor or anything
14:45
or just? We don't want it so garlicky. Just that'll be perfect. Okay. And we're working with phyllo dough
14:53
I love phyllo. I do too. And it's kind of delicate. We have to be careful working with it
15:00
So what we're going to do is we're going to use three sheets of this. Your phyllo is like paper
15:07
thin unlike your pastry, your puff pastry dough, isn't it? It is. And it'll dry out quickly
15:15
on you. Look how thin that is. Unbelievable. Okay, and what we're going to do, I need
15:24
I'm doing six cups. So I'm going to cut this one time down the center. And I'm going to
15:31
make two more cuts. Okay. That'll give us our six pieces that we work with
15:39
Okay Okay and there gonna be butter between every one of these layers Yes And this is where we gonna bring our garlic flavor in Okay And it okay that it pokes up because this is gonna give it our texture and make it look really neat
15:54
All right, so you wanna just brush each layer. Yep, and we're gonna do that between, so this will help it adhere and kind of stick together
16:04
All right, well, while you're working on those... Perfect. That looks perfect
16:09
Those are gonna be delicious. So what are you doing to... Well, I got the easy part
16:14
I'm just scrambling eight eggs to make the ingredients to go in our nest there
16:18
Can mama suggest something to you? Sure, please do. I tell you what, it would be more beneficial to you
16:26
if you'll crack each egg into this bowl because if you've got a bad egg
16:32
you won't ruin your whole batch. Gotcha. I mean, the chances of you getting a bad egg are slim, but, you know, that's better than..
16:43
In your case, that'd be 50-50. Yeah. Wait, which one of us is the bad egg
16:49
Building a nest. These all look pretty good. Yeah. This is something I learned from you
16:56
I'm going to add a tablespoon of water to my eggs. Water will make your eggs fluffier, so I always use water instead of milk
17:04
Milk tends to make your eggs a little on the tough side. Now, if you want really light and fluffy eggs
17:12
you can use the hand mixer and really froth them up. Is that right
17:17
Yeah, and it makes them so fluffy. All right, now, Jamie, you're fixing to put in the nest
17:24
Yep. They have to cook at 375 for about 10 minutes. Okay. So I've got some ready to come out
17:29
I'm going to put these in here. Good. Okay, now, son, so you're putting about a cup of diced ham, is that right
17:37
That's about right. And about a cup of cheddar cheese. Now, you can use any kind of cheese you want, can't you
17:45
Mom, look. These are my favorites. When I pull this out, you're going to want to pull them out and let them drain
17:50
so they can really crisp up and not fall apart on you. So be very careful with them
17:55
All right, and the eggs are done. Look how beautiful. Oh, they're just beautiful
17:59
Super, super delicate. So all y'all are going to do now is just fill these, right
18:05
And this is beautiful. This looks like you've put a lot of work into it, too, doesn't it? Yeah, and you really have
18:11
Okay. Gorgeous. Golly bum. These look wonderful. I can't imagine a mother not loving these
18:20
Or a daddy, as far as that's concerned. They're perfect. Well, let's get everything cleaned up
18:25
because I've got one more thing that I want to share with everybody
18:30
I'll see y'all in just around the corner. Now, we can't have all these special little dishes
18:44
without fixing Mom something special to wash it down with. And I'm going to just quickly mix up some wine spritzers
18:53
Now, I'm using a white wine, but you can use a rosé. And I'm going to put about a fourth to a half a cup of white wine over ice
19:06
Now we're just going to cap them off with sparkling water. And it's going to give it that nice spritzy taste
19:16
And just that easily, we have a special drink for that special mom
19:25
A little fresh peach, a little fresh mint, and it's just that easy
19:35
Kick back and enjoy, Mom. I have to say that the most wonderful experience in the whole world has been being a mother
19:49
It's just made my life so complete, and today's been very, very special
19:53
And I'm so proud of these children. And look at them. Happy Mother's Day, Mom
19:58
Happy Mother's Day, Mom. Happy Mother's Day. Thank you. Thank you. Thank you, Michael
20:04
I wouldn't take anything for these boys. Well, except for maybe a couple of granddaughters
20:11
Look what all they've prepared me. Thank you. They have prepared me a nutty orange coffee cake that is out of this world
20:18
and Benedictine sandwiches and eggs in a nest, and they've even prepared Mama some white wine spritzer
20:26
to wash it all down with. Oh, you're going to love it
20:30
Well, I've made that for you before. You know you're going to love it. Mmm, mmm, mmm
20:36
It's so good. Girls out there that are mothers, I hope that your family is going to treat you like a queen today
20:45
I hope they make you think that every day is Mother's Day
20:49
So until next time, I send y'all hugs and kisses and best dishes from our kitchen to yours
20:58
Happy Mother's Day
