We today are going to make our mini mufaletas
0:07
I call it mufaleta. I call it muffaleta. What you call it, Perler
0:11
Mufaleta. Mama, what you call it? A sammich? A sammich. A big sammich
0:21
Well, we're going to make a mini mufaleta. Since we're so mini and petite
0:26
We make these a lot for our caterings, and it's pretty simple to do
0:31
We're going to make an olive salad. What I'm going to do is I'm going to start cutting up some CRE
0:36
and get this going. And why don't you, while I'm fixing all this
0:40
why don't Britannica Jr. here tell them a little information on some muffaletta
0:45
There is a little old history lesson. There is. So you never know what you're going to get on the Paula Deen Network
0:50
You're going to get history. You're going to get comedy. You're going to get..
0:55
I ain't going to tell you all about these women down here. but, and this is what I'm going to throw some
1:00
look-a-there, look-a-there. You know, who would have ever thought? Y'all can always go on the network and get this recipe
1:07
along with all the other fantastic recipes that we steal from Paula Deen
1:13
So there's this little market in New Orleans. It started in, I think it was 1908
1:18
What's the name of it? It is called Central Grocery. I went there
1:24
No, you didn't. I most certainly did. We went there for lunch, and guess who was..
1:29
I'm jello. I've never been. Well, listen to this. I was back there trying to decide on a sandwich
1:35
and guess who walked in? Who? John Goodman. Are you kidding me
1:40
Yeah, they said he lived kind of like across the street. Oh, really? He came in every day for a muffaletta
1:47
All right we going to put some Anyway I love that story So the Sicilians that were working in the farmer market would go in to grab lunch and they would get the salami and the ham and the olive salad
2:00
and they would get the round loaf of bread, the muffalata. And they would take it outside in front of the grocery
2:07
and eat it all separately. Well, the store said, well, Dad, we need to be making sandwiches like that
2:14
So they put it all together and made a sandwich, and it just took off
2:19
So it was actually the Sicilians that started the sandwich, but the Cajun, you know, took it over
2:26
I knew that there was a lot of history behind this particular sandwich
2:32
Because it's more like an Italian thing, you know? I've got roasted red peppers, olives, green and calamata. Calamata
2:42
Olives. and I've got celery, garlic, olive oil, and a little vinegar
2:49
But the great thing about an olive salad is you can just put a little bit of this, a little bit of that
2:54
and it's going to be good. Yes. It's all to your tasting
2:59
You know, I'm sitting over here with your mama. Why don't y'all introduce your mama, your mother
3:05
This is our Marmee. This is the... And we get the name Marmee
3:10
Paula, you used to call her Marm. Marmy. And then we started calling her Marmy
3:15
Exactly. This is the woman that created the best of the best of us. Us
3:23
That's a fact, Jack. And she told us so much in the kitchen
3:29
and Suzette and I were talking about this today. These ladies would not let us in the kitchen to actually help them
3:35
We would sit at a bar similar to this and the boys on the other side like this Because that where all the action went on all the good gossip And they would cook cook cook and we would taste taste taste And Daddy and Jimmy would be outside
3:49
grilling and doing some other things. Y'all have heard me talk about
3:55
Suzette and Amy's mama and daddy. The mama is the southern belle
4:02
That's correct. All right, we're going to make y'all some sandwiches. And these are great during the football season, too
4:11
You know, if you're having some friends come over, it's great. You can even, you know, have the bread, you know, laid out
4:17
and all the sandwich meat like we have displayed here and let them make their own and then just have your salad out
4:24
and they can make it. And it's also great to run them under the broiler. But what I'm doing first is I'm going to put
4:30
I would just put a little butter on the bread, and this is going to help so your sandwich won't get soggy
4:35
We don't want you serving any soggy. They serve them cold, though, don't they? Yeah, but I run it under the broiler, too
4:41
Yeah, it's good. It's good. So I'm going to cut the ends off. All right, I'm going to go ahead and down with that. Look-a-there
4:47
All right, we're going to pulse this just to get it all the goodness in there
4:53
Let's see. Why don't y'all put on a little mask for us? I don't think my eyelashes will fit through the hole
4:59
All right, let's see. Let's get this a-going. Look-a-there. Look-a-there. Oh, I love your nose
5:05
You look like a green name eater. Oh. All right, what I did was I put all my meat together
5:13
and all my cheese together. What kind of cheese is your mama and I was talking
5:17
We've got a provolone. Uh-huh. And a mozzarella. Mozzarella. Provolone. We got salami. Pepperoni
5:28
I wish I could roll my tongue. All right so I going to quarter it Your mama doesn like her mass She wants feathers Imagine that Let me show you what you look like You did not like a green ant eater
5:43
All right. I'm going to go ahead and put this. Or a mosquito
5:48
Well, I don't have any glasses on. I can't. Ladies, could y'all pay attention to us
5:52
Oh, yeah. I mean, gosh, this ain't all about you, Paula. It really is, y'all
6:00
Your mama's distracting me. I know, and that's not hard to do
6:05
No, it ain't. And, Paula, you're not a big fan of olives, are you
6:09
I am not. I just remembered that. But Bobby Dean could eat one gallon of olives by himself
6:17
I love them. And he drinks the olive juice first. Let's take a bite before we take them any
6:23
Yeah, they can wait. Cheers to me, baby. Cheers. I can't believe
6:31
What about your elders? Y'all are disrespecting your elders I'm not that disrespectful
6:37
Oh my gosh That don't look like the muffaletta I ate You want one without the olive
6:42
No, no, no Oh, minis Yeah, but you can make a full oven back if you want to
6:48
Your mama was talking to me No, I'm gone That is delicious
6:53
You really like it? I really do I love it on the rye bread
6:58
Mm-hmm. But you could use a pumpernickel, or it's good on a pumpernickel, too
7:03
Muffiletta? Muffiletta, whatever you want to call it, it's mm-mm good. Get in my belly
7:08
And you can find it on the Paula D. Network and some more of our recipes and some of hers, too
7:13
Well, my brother's gone. Because remember, it ain't all about me. Thank you
7:25
