- Hey, y'all, it's Jamie Deen.
0:01
It's Friday. That means we must be in the Chicken Box
0:04
and I'm at Fun Friday.
0:05
I'm at the end of my week and guess what else?
0:07
Theresa's favorite day to film.
0:09
So today, it's Fun Friday at the Chicken Box
0:12
and I'm filming with her today
0:13
and I'm excited to see y'all.
0:14
It is hot. It is summer and we're doing a side salad today
0:17
that is recognized the world over.
0:19
It's a traditional southern summer salad.
0:22
This is our cucumber salad with vinegar and tomatoes
0:25
and onions and some fresh dill.
0:27
And just yesterday, Renaia,
0:29
one of my favorite people in the whole world
0:31
that I work with said,
0:32
"Do you know what I want? I want some cucumbers
0:35
That's what she wanted me to make her
0:37
just a couple of days ago and I wasn't able to.
0:39
So today, she's here and I'm excited.
0:41
So I'm making this for Naia today.
0:43
It could not be more simple, y'all.
0:45
We have got our cucumbers that we've prepped.
0:48
Theresa, thank the Lord, did 'em all.
0:50
I got three peeled. We sliced them pretty thin
0:53
and we've got our container of grape tomatoes
0:56
that she's cut top to bottom,
0:57
and then we have some sweet onion that we're gonna use.
1:00
Not a whole lot goes into this, y'all.
1:02
We've got white vinegar. Oh, let's do it this way.
1:07
I'm like, let's do this.
1:11
We'll do this in here, so we have our white vinegar,
1:15
and we have our oil, we have our sugar.
1:19
I'm gonna give this a real quick whip.
1:23
The reason why I wanted to do this before is just in case
1:27
I feel like this needs a little bit more sugar
1:30
or maybe a little bit of salt.
1:33
I just wanna see what I'm working with
1:34
before I dump it all over my fruit.
1:39
You don't need a whole lot,
1:41
because it's very strong.
1:42
That white vinegar is gonna permeate this
1:44
and it's gonna sit for a while before we get done.
1:47
So let's take our Vidalia onions right on top.
1:52
If you wanted to put purple onions in here,
1:55
y'all know I'm an artist caught in a cook's body.
2:00
Purple would be really pretty with this red and green
2:06
Look how pretty that is.
2:10
Now we've got our sauce right here ready to go.
2:12
Let's get into our dill.
2:14
We're gonna do two tablespoons of fresh dill,
2:20
so I'm gonna take this right off the top.
2:23
Y'all know there is nothing that I love to do more
2:26
than measuring things,
2:28
but I don't think I'm gonna measure this today.
2:31
I'm gonna direct them.
2:37
This right here is about it, get me.
2:53
Rough chop on here and that's pretty goddamn close.
2:57
I think it's what I need. That seems to be enough.
3:01
On top of this, give it a little bit of salt.
3:08
I somehow wound up with fine ground pepper
3:11
instead of rough, so I'm gonna be careful with this.
3:15
This may be a half a teaspoon or so of that.
3:20
All right, and now we'll take this.
3:31
You want a little bit of that sugar.
3:34
It's gonna cut some of that acidity for you.
3:37
So sugar in it doesn't really make it sweet.
3:39
All of these flavors work together to kind of
3:41
balance out into one thing.
3:45
Now, my Aunt Peggy's cucumber salad that she would make,
3:48
she would float hers.
3:50
It would be completely under vinegar
3:53
and she would let it sit and we have a recipe
3:55
that we do here at the restaurant where
3:57
I use a purple vinegar and we let that sit as well
4:01
until it turns a little bit different,
4:02
but for this recipe, I think what mama wants is
4:06
for everything to just taste like summer,
4:10
so we're not gonna soak it too long.
4:12
We're not gonna overload it with a lot of flavors.
4:17
And when you invite one of your girlfriends
4:19
or your family in to eat and it's hot outside,
4:23
few things say summer in the south
4:27
like our cucumber salad, right?
4:32
And so, let's see if it's worth eating.
4:49
I think it is the perfect amount of everything in there
4:55
and I know exactly what mom was trying to do.
4:57
Keep it fresh, keep it simple, and keep it good
5:00
and y'all know that's good food.
5:01
I'm Jamie Deen. Thanks for tuning in.
5:03
(Jamie clears throat)
5:04
We'll see you around the Chicken Box. Cucumber.
