It's Bobby here, and I am bringing you a great recipe.
0:04
Sort of a blast from the past.
0:05
This is a Dean brothers recipe, from one of our books,
0:09
a few years back and something that I really like.
0:11
I'm a big fan of proteins,
0:13
and pork tenderloin is one of my favorites.
0:19
Cooks fast, and you know, it's just a piece of cake.
0:23
So, we'll start with...
0:25
Before I get my hands dirty,
0:27
we'll go ahead and start with our,
0:29
what we've got to whisk together here.
0:30
I've got some maple syrup.
0:35
So you know it's gonna be good.
0:37
And what goes with maple syrup?
0:40
Oh, I don't know, how about some good old Tennessee whiskey.
0:46
And a little bit of mustard powder.
0:54
And we will give this a little whisk.
1:10
So to our tenderloin.
1:12
We've got about two and a half pounds of tenderloin here.
1:14
It looks really, really nice. Nothing fancy.
1:17
We're just gonna season it
1:18
with a little bit of salt and pepper.
1:22
Let's go ahead and put it in our pan here
1:24
and we'll season it over here.
1:28
Beautiful. I love tendered one.
1:32
You gotta watch 'em though,
1:33
'cos there's not a lot of fat here
1:34
and these things will dry out on you.
1:36
So, we're gonna, what we're gonna do is
1:39
we're gonna put it into a 400 degree oven.
1:41
I've already got it preheating,
1:43
and we're gonna put our wet mix,
1:46
our maple syrup and Tennessee whiskey mix on top of it.
1:50
We'll pop it into our 400 degree oven,
1:52
and in probably about 20 minutes I'll check it,
1:55
'cos we wanna baste it anyway.
1:57
Good old Turkey baster.
1:59
We're gonna start basting it in about 20 minutes.
2:01
I'm gonna keep a good tight eye on it
2:03
and make sure that it doesn't dry out.
2:06
Okay. 'Cos, as you can see,
2:07
there's just not a lot of fat on a tenderloin.
2:24
Just get a good coating of salt and pepper on there.
2:39
So let's take a brush here,
2:45
and brush on or a whispy, whiskey and maple syrup mixture,
2:51
with the mustard powder in it.
2:54
It's a great combination for pork tenderloin.
3:05
This is the time of year too.
3:07
We got good baseball and football games,
3:09
and all sorts of stuff going on television.
3:11
This is a great time of year to be doing your tenderloins,
3:16
your steaks, your chops.
3:20
Something about fall makes me wanna,
3:25
wanna cook a lot of big proteins.
3:29
I've been doing a lot of elk lately,
3:32
and I've been doing some bison, which I really like a lot.
3:36
If you've never had elk, elk steaks are terrific.
3:40
Bison steaks also are terrific.
3:45
And I even have been getting into, I'm not a big hunter.
3:49
Don't really like to hunt.
3:50
I did when I was younger,
3:51
but I've gotten into eating some axis deer.
3:55
I found a place in Hawaii where you can order axis deer.
3:59
And, my gosh, is that good too?
4:02
Alright. I'm just gonna pour the last little bit of that
4:04
Tennessee whiskey and maple syrup glaze on here
4:07
and into a 400 degree oven.
4:11
And in about 20 minutes, we'll start to baste it.
4:14
So, let's go ahead and pop this in the oven now.
4:18
Okay. Our tenderloin is out of the oven.
4:19
We cook this on 350, for about 40 minutes,
4:23
and they look wonderful.
4:25
And I just took a temperature. 160 degrees right now.
4:29
They've been outta the oven for about five or 10 minutes.
4:33
So they were probably 165 on the nose.
4:38
Let's see. This looks and smells so good.
4:42
You can actually smell that bourbon,
4:44
and the maple gave it a nice little glaze.
4:47
It just looks so good.
4:50
So however you chose to eat this.
4:53
You could put it on a sandwich
4:54
or you could make some rice.
4:56
- [Woman] Don't forget to tell them.
4:58
I doubled, I ended up doubling the marinade recipe.
5:02
By the way, that was a very little amount of liquid
5:05
that we had in there.
5:07
There was not nearly enough to baste.
5:08
So we ended up doubling the amount of liquid that we used.
5:12
Look at that. Gorgeous, gorgeous pork tenderloin.
5:36
Pork tenderloin is ready.
